The purpose of this study was to prepare bread added with sea buckthorn (Hippophae rhamnoides L.) berry powder (SBBP) (1, 3, and 5%) using a straight dough method. The quality and antioxidant characteristics of the bread were analyzed. The results indicated that the pH value and dough raising power of the dough decreased and the moisture content of the bread added with SBBP increased compared to that without the SBBP. The crust color of the bread did not change significantly. However, the crumb lightness value decreased and the redness and yellowness value increased respectively to the concentration of the SBBP. The texture measurement indicated that the hardness, gumminess, and chewiness of the bread increased with the addition of the SBBP. The total polyphenol content of the bread supplemented with the SBBP was increased (4.60~16.14 mg GAE/g) compare to the control (1.67 mg GAE/g). Dose-dependent, significant-high DPPH (26.86%) and ABTS (42.52%) radical scavenging activities were observed in the bread with the addition of the SBBP up to 5%. Based on these results, the optimum amount of the SBBP to add for baking bread would be 3% and the SBBP could be considered a functional agent.
Sea-buckthorn fruits (Hippophae rhamnoides L.) are used in Mongolia as traditional medicine due to the health-benefits associated with its bioactive components. The purpose of this study was to investigate the chemical composition of Mongolian sea-buckthorn fruits. In terms of proximate composition, crude fat content was the highest, whereas its crude ash content was the lowest. In organic acid contents, malic acid content ( mg/g) was the highest. Free sugars were composed of sucrose, xylose, glucose and mannitol. Vitamin C and carotenoid content were 320 mg/100 g and 715.25 mg/100 g, respectively. The major fatty acids were palmitic (C16:0), palmitoleic (C16:1), caprylic (C8:0) and linoleic (C18:2) acid.
본 연구에서는 갈매보리수 나무 열매 착즙액(SBFE)을 첨가하여 최상의 관능적 품질을 제공할 수 있는 맥주를 제조하는데 목적을 두었다. 이를 위해 SBFE의 첨가량을 달리하여 맥주를 제조하였다. 갈매보리수나무 열매는 몽골산을 이용하였으며 열매를 갈아 과즙과 침전물, 씨앗으로 분리하여 착즙액을 만들어 사용하였다. 이 착즙액을 네 가지 맥주(Golden Ale: GA; Amber Ale: AA; Golden Lager: GL; Pale Ale: PA)에 첨가하여 맥주를 제조하였다. 만들어진 맥주의 품질을 확인하고자 총산, 알코올, 환원당, 총당 함량을 측정하였다. 네 가지 맥주 모두 착즙액을 첨가하였을 때 총산이 증가하는 경향을 보였으며 AA를 제외하고 알코올 함량이 증가하였다. GA는 착즙액을 첨가하였을 때 환원당과 총당 함량이 증가하였으나 AA, GL, PA는 환원당과 총당 함량이 감소하였다. 맥주 관능평가는 40명의 패널을 대상으로 실시하였으며 전체적인 기호도, 색, 냄새, 전반적인 맛, 신맛, 단맛, 쓴맛, 탄산의 기호도가 평가되었다. 맛에 대한 평가에서는 착즙액 첨가군과 무첨가군이 유의적 차이를 보이지 않았으나 색과 향에 대한 평가에서는 첨가군이 무첨가군에 비해 낮은 점수를 받았다. 전반적인 기호도를 조사한 결과 PA, GL, PA3%-S, GL3%-S, AA, AA3%-S의 순으로 선호하는 경향을 보였다.
Sea Buckthorn (Hippophae rhamnoides L.) has been used in traditional medicine for the treatment of cough, indigestion, circulatory problems and pain. The associated anti-inflammatory effect of this agent is achieved via the inhibition of Nf-kB signaling, a property that has been demonstrated to effectively control the symptoms of various skin disorders, including atopic dermatitis. Accordingly, the purpose of this study was to assess the efficacy of Sea Buckthorn in reducing the production of lipopolysaccharide (LPS) activated nitric oxide (NO) by inhibiting the Nf-kB pathway, as measured by the symptoms of atopic dermatitis (AD) occurring secondarily to inflammation and immune dysregulation. Our data demonstrate that Sea Buckthorn significantly decreased the LPS-induced production of NO (p〈0.001). Atopic dermatitis was induced by repeated application of 2,4-dinitrochlorobenzene to the dorsal skin of mice. Topical application of 5% Sea Buckthorn extract improved the symptoms of AD, specifically reducing disease severity scores, scratching behaviors and epidermal thickness. When compared to the control group, animals treated with Sea Buckthorn exhibited increased serum IL-12 levels and decreased serum TNF-α, IL-4 and IL-5 levels. Such a modulation of biphasic T-helper (Th)1/Th2 cytokines may result in a reduction in serum IgE levels. Our findings suggest that mechanism of action of Sea Buckthorn in the treatment of AD is associated with a marked anti-inflammatory effect as well as an inhibition of Th2-mediated IgE overproduction via the modulation of biphasic Th1/Th2 cytokines. Such results suggest that topical Sea Buckthorn extract may prove to be a novel therapy for AD symptoms with few side effects.
