        본 연구에서는 한식의 해외 현지화를 목표로 take-out형 franchise system 개발을 위한 기초자료를 얻기 위하여 한국적인 특성을 나타내면서 미국인들에게 선호도가 높았던 4 개의 품목을 선정하여 한국식단의 영양적인 우수성을 확인 하고자 실시하였다. 실험기간은 총 9주로서 전반기 5주(실험 1期)는 모두 고지방식을 급여하였고, 후반기 4주(실험 2 期)는 동결건조된 한식(제육볶음, 김치볶음, 두부조림, 나물 무침)을 첨가한 실험식이를 급여하였다. 대조군은 실험 전 기간 동안 고지방식만 급여하였다. 실험종료시 체중은 실험 군간에 유의적인 차이가 없었고, 실험기간 동안 일당 증체 량과 식이효율도 차이가 없었다. 장기무게는 대조군(A)이 한식식이군(B~E)에 비해 낮은 경향이었다. 체지방의 축적 지표로서 내장지방량(RFP, EFP)은 대조군(A)보다 김치볶음군(C)과 두부조림군(D)이 20% 감소하였다. 고지방식을 급여한 후 한식첨가식이를 4주 동안 급여후 혈청 지질 중 TC농도는 나물무침군이 94.13 mg/dL로 실험군중 통계적 으로 유의하게 낮았다(p<0.05). TG농도는 실험군간에 통계 적인 차이가 없었다. 고밀도지단백-콜레스테롤(HDLC) 농 도는 제육볶음군(20.38 mg/dL)이 두부조림군(17.25 mg/ dL) 보다 유의하게 높았고(p<0.05), 김치볶음군과 나물무침군은 차이가 없었다. 저밀도지단백-콜레스테롤(LDLC) 농도는 두부조림군이 가장 높았던 반면 나물무침군이 통계적으로 가장 낮았다(p<0.05). 이상의 결과에서 김치볶음과 두부조림 및 나물무침은 한국적인 특성과 건강기능성을 갖는 한식품목으로서 향후 이들 품목과 제육볶음을 적정하게 응용하여 미국인의 입맛에 맞는 take-out형 음식이 개발된다면 미국인들에게 한식의 영양적인 우수성과 인지도를 높여 널리 보급할 수 있을 것으로 기대된다.

        A survey of food intake and waste rate on 60 Korean style restaurants in Seoul. The results were summarized as follows: 1. The total served weight of Pibimbab(mixed rice) was 475.66 g per person, waste rate was 6.0%, frequent side dishes were bae-chu kimchi, kak-du-gi, suk-ju-namul by the order. 2. Han- jeong-sik(Korean style full course food) were served with many kinds and varied numbers of side dishes, and waste rate of those were higher than other menu items. 3. The average serving size of Naeng-myeun(Cold noodle) was 641.00 g, and the waste rate was 11.1%. The waste rate of side dishes was about zero. 4. Man-du kuk(dumpling soup) was served 695.34 g. Most of side dishes served has high waste rate which is more than 50%, average. 5. Seol-nong tang(meat soup) was served 755.70 g, side dishes of that were simple such as kak-du-ki or paek kimchi. The average waste rate of side dishes was about 40%. Yuk-gae-jang(Hot meat soup) was 494.83 g a person, waste rate of that were 24.1%, and minimum and maximum waste rate of side dishes were 3.3, 100%, respectively. 6. Kimchi chigae(Kimchi stew) and Doen-jang chigae(fermented soy stew) were served with varied number of side dishes. 7. Deong-sim gui(grilled meat) and Pulgogi(grilled meat with sauce) were served 196.83 g and 308.98 g. The average waste rate of those were 0.7% and 5.8%, respectively. But waste rate of side dishes was 33%. We would like to decrease waste rate by proposing recommended items and weight of some food for 「Good Menu」.

        A food life style itself is substrative relations with culture, and is concerned with our daily life. Especially a food taboo comes from the intelligence which resulted from an ancestor's life experience. Accordingly, we can say a food taboo began with human appearance, settled in convention of folklore society, and forms it's own boundary todays. Since a practice of a food taboo is combinded firmly with various sociological factors such as religion, custom, and so on, it is very hard to change, even though the belife of a food taboo is not true. According to the result, first, significant factors effecting on a practice of a food taboo was a level of age, a level of education, religion, family pattern, behavior of subject and her mother for food life management, education of subject and her mother, and religion of subject and her mother. Second, in analysis of factors according to classification of food taboo a practice of a food taboo which classified to food of animal, food of plant and the other food showed significant differences, comparing religion of subject with her mother. Third, a result examined practice frequency and review of science, non science indicated that foods such as Egg of Globefish, Lettuce, Coffee, Persimmon, dried Persimmon, Soybean and Sugar are tabooed on the basis of science, and foods such as Vinegary food, Thieved food, Soup of Tangle and Dogmeat tabooed on the basis of non science. But in the case of Puja, it's basis of science is not identified. These food taboos are tabooed by more then 50% of subjects including who answerd 'there is some case to practice it' Therefore, we should continue analysis of science for the reason of a food taboo, at the same time, provide the origin and try to have a rational food life.
