        Four types of metal oxide semiconductor gas sensor arrays were used to observe the aroma and spoilage odor emitted during the ripening process of plum & banana fruits. All gas sensors showed a high correlation (R=0.82~0.90) with the olfactory. The TGS 2603 sensor showed a high correlation of 0.90 between the odor generated and sensory perception of smell in the process of ripening and decaying fruits. In addition, it showed a very high correlation of 0.91 with the decay rate of the plum sample, and the significance probability through one-way ANOVA was also less than 0.05, which confirmed it as an optimal gas sensor (TGS 2603). Principal component analysis was performed using all the data. The cumulative variability was 99.54%, which could be explained only by two principal components, and the first principal component was 95.11%, which was related to the freshness of the fruit. It was analyzed as fresh fruit in the negative(-) direction and decayed fruit in the positive(+) direction.

        Since the implementation of the Odor Prevention Act in 2005, the number of odor complaints has continuously increased due to the increased interest in the living environment. The current odor control means is a concentrationbased method for the source of odor. That is why there is a difference between the odor sensitivity and the result of the odor measurement in the odor damage area. The government is considering the introduction of the grid method, which is the odor management method of Germany, as the method of odor investigation in the odor damage area in the second comprehensive Odor Prevention Policy (2019-2028). The grid method is receptor-based odor measurement method that investigators use to judge odors in the field, task that expensive and requires substantial manpower and time. To study an odor measurement method that is suitable for domestic conditions, this study compared the correlation between results based on the odor frequency concept grid method around the livestock facilities and the result of ammonia concentration measured by passive air sampler. The correlation coefficient (R) that is between the frequency of odor per spot for the entire odor and the ammonia concentration that was measured by passive air sampler was 0.65 which is relatively good. Among the entire odor detected by the grid method, the correlation coefficient (R) between the odor frequency selected only for livestock odor and the ammonia concentration was significantly increased to 0.80. In addition, the correlation between odor exposure (ECPexist) and the ammonia concentration for the overall odor was 0.81 (linear) and 0.86 (index). If only the livestock odors were selected, the correlation between odor exposure and the ammonia concentration was very high at 0.96 (linear) and 0.95 (index).

        There has been growing concern over the emissions of formaldehyde and VOCs from automotive interior materials, as these could have an important impact on the in-vehicle air quality (IVAQ) of automotive vehicles. Odor, the components of which may include VOCs, refers to the automotive interior smell emitted directly or indirectly from any part of an automotive interior, based on human olfactory senses and a comfort evaluation of vehicle quality. The objective of this paper is to compare the instrument analysis with the sensory characteristics of an odor using GC/MS/Olfactometry. From the test, it was possible to identify the cause of odor, which can be difficult to distinguish among multiple odors, through the simultaneous performance of instrumental analysis and sensory evaluation.

        The changes in the aroma and spoilage odor emitted from eleven ‘Hongro’ apples during ten weeks’ storage were investigated using six types of metal oxide semiconductor gas sensor arrays. The gas sensors used in the evaluation were sensitive to apple-emitted aroma or spoilage odor, and a high reproducibility of 5% relative standard deviation or less was confirmed. Significantly, the change in apple-emitted aroma or spoilage odor was easily distinguished by the optimal gas sensor and a significant correlation (r=0.992) between decay rate and sensitivity change was observed. The results of a principal component analysis of the signal patterns obtained by data standardization using the optimal gas sensor showed a clear classification between decayed sampler groups and undecayed sampler groups.

        The object of this study is to investigate the relationship between the air dilution sensory test and the threshold odor number (TON) method for evaluating the odor of domestic wastewater, plating plant wastewater, food plant wastewater and lake water. The dilution factor of raw wastewater evaluated by the air dilution sensory test was in the order of food plant > plating plant > domestic > lake, and that evaluated by the threshold odor number method was in the order of food plant > domestic > plating plant > lake. The same results were obtained when the raw wastewater and lake water were diluted 2 and 5 times with pure water. The relative geometric standard deviation determined from the threshold values of each panel on the air dilution sensory test was much larger than that calculated from results derived from the threshold odor number method. The relative geometric standard deviation obtained from samples with a low dilution factor was greater. There was a very good linear correlation (correlation coefficient = 0.968~1.000) between the air dilution sensory test and the threshold odor number method. But, the reduction in odor intensity (the slopes of regression curves) by dilution was dependent on the types of the odor-emission sources.

        Changes in major volatile odor components (VOC) and sensory properties of kimchi during ripening for 4 days were investigated, and major VOCs of the raw materials of kimchi were also analyzed. Seven of eight major VOCs of kimchi originated mainly from garlic, while one originated from ginger. During 4 days of kimchi ripening, the amount of ethanol, which was substantially higher than that of other VOCs, increased continuously but decreased slightly on the fourth day. The amount of diallyl disulfide decreased during ripening, while that of allyl mercaptan decreased on the first day and increased slightly thereafter. The amount of methyl allyl sulfide, diallyl sulfide, and methyl trisulfide increased continuously during ripening, while that of dimethyl disulfide and methyl propyl disulfide increased until the second day and decreased thereafter. Scores of overall acceptability, taste, and odor for kimchi ripened for 2 days were significantly higher than those of other samples (p<0.05). The correlation between scores of overall acceptability and the amount of dimethyl disulfide or methyl propyl disulfide was higher than that of other VOCs.
