        본 연구는 밤묵의 개발가능성을 제시하고자 밤을 이용한 밤묵을 제조하여 그 품질을 기존의 도토리묵과 비교, 검토하였다. 탄닌의 함량은 밤전분에 비하여 도토리전분의 함량이 4배 정도 높았다. 묵의 견고성은 농도가 높아질수록 증가하였으며, 밤묵이 도토리묵보다 더 단단한 것으로 나타났다. 응집성도 밤묵이 도토리묵보다 높게 나타나 분자간의 결합력이 큰것으로 나타났다. 격자 구조를 갖는 내피가 가장 높은 견고성을 보였고, 격자구조가 조금 무너진 외피, 과육

        This study was carried out to investigate change in the components according to drying methods of jujube. Raw jujube was dried with five methods such as sun-drying, hot-air drying after pretreated with sunlight, blanching, microwave treatment, respectively. The contents of soluble sugar and protein in sun-dried jujube were higher than those of other drying methods. The free sugars of dried jujube were consisted of sucrose, glucose and fructose. And the contents of free sugar was not different by drying methods. The major organic acids of dried jujube were oxalic acid, citric acid and malic acid. The contents of glutamic acid, glycine and alanine were higher than those of other amino acids, and the content of each amino acid was not different by drying methods.

        대추의 연화현상을 연구하고자 건조중에 세포벽 구성성분의 변화를 조사하였다. 알코올 불용성 물질, 세포벽 및 수용성 물질의 함량은 건조 6일까지는 변화가 없었으나 건조 9일째에는 알코올 불용성 물질과 세포벽은 감소하였으나 수용성 물질은 증가하였다. 펙틴질과 헤미셀룰로오스는 건조 6일까지는 거의 변화가 없었으나 건조 P일째에는 펙틴질과 알칼리 가용성 헤미셀룰로오스가 감소한 반면 산가용성 헤미셀룰로오스는 증가하였다. 셀룰로오스는 건조 중에 증가하였다.

        The Soysauce wastewater removal characteristics of submerged biofilters filled with two filter media respectively were experimentally examined with constant temperature, pH value and variable BOD loading and recirculation ratio. The decreasing order of BOD removal is Netring(random plastic media), cubic wire meshes(plastic module). This is mainly due to the media characteristics such as void ratio, specific surface area and media shapes. The BOD removal ratio decreases with increasing BOD_5 volumetric loading rate, and the loading rate for the BOD removal over 85% is lower than 1.5㎏BOD_5/㎡d for the plastic media of Netring and cubic wire meshes. The BOD_5 removal rate increases with the recirculation ratio, but the rate of increase become smaller as the recirculation ratio increases over 20. When BOD_5 volumetric loading is 1.5㎏BOD_5/㎡d, the required recirculation ratio to obtain 85% BOD_5 removal is about 20 for Netring and it was about 30 for cubic wire meshes.

        This study was carried out to investigate the effects of calcium and galactose treatments on ethylene productions in persimmon fruits for the study on the study of persimmon fruits. Ethylene was producted in green mature persimmon fruits treated with water, calcium and galactose after 24hrs of treatment. Ethylene productions of persimmon fiuits treated with galactose was very higher than those of persimmon fruits treated with water and calcium after 72hrs of treatment. Ethylene productions of persimmon fruits teated with water and calcium were similarly to that of persimmon fruit tested with calcium. The treatment of glucose was not effected on ethylene production of persiommn fruits. The ACC contents and ACC synthase activity in persimmon fruit treated with galactose were higher than those of other groups after 72hrs of storage, but the ACC contents and ACC synthase activity of persimmon fruits treated with calcium were lower than those of control and persimmon fruits treated with water.

        This study was investigated to viscosity, color, chemical properties, and lipid and fatty acid composition for examination of physical and chemical characteristics of sesame oils. Yield of sesame oil was higher in Ansan sesame than that of Chinese and Dambaek sesame. Viscosity of sesame oils was higher than that of shame oils from Dambaek and Chinese sesame, but turbidity and sedimentation rate were higher in Dambaek's sesame oil than those of Ansan's and Chinese sesame oils. In the acid value, saponification value and iodine value of sesame oils, and chemical characteristics of Dambaek's sesame oil were better than those of the others. The neutral, glycolipid and phosholipid contents of sesame oils were 91.1∼92.1, 2.5∼3.5 and 5.5∼6.4%, respectively. The major fatty acids of sesame oils were oleic, linoleic palmitic and stearic acid. The content of oleic acid was higher in Dambaek's and Ansan's sesame oil than that of Chinese sesame oil, and the content of linoleic acid was higher in Chinese sesame oil than the others. The fatty acid composition of neutral lipid, glycolipid and phospholipid were similar to those of total lipid. The ratio of unsaturated fatty acid and saturated fatty acid was higher in Korean sesame oils than those in Chinese sesame oil. The mineral(Mg, Cu, Fe, In, Al, Mn) content of Korean sesame oils was higher than that of Chinese sesame oil. and heavy metals(Cu, Ag, Pb, Cd, As) were not detected.

        The cell wall components of fruit include cellulose. hemicellulose, pectin, glycoprotein etc., and the cell wall composition differs according to the kind of fruit. Fruit softening occurs as a result of a change in the cell wall polysaccharides : the middle lamella which links primary cell walls is composed of pectin. and primary cell walls are decomposed by a solution of middle lamella caused due to a result of pectin degradation by pectin degrading enzymes during ripening and softening, During fruit ripening and softening, contents of arabinose and galactose among non-cellulosic neutral sugars are notably decreased, and this occurs as a result of the degradation of pectin during fruit repening and softening since they are side-chained with pectin in the form of arabinogalactan and galactan Enzymes involved in the degradation of the cell wall include polygalacturonase, cellulose, pectinmethylesterase, glycosidase, etc., and various studies have been done on the change in enzyme activities during the ripening and softning of fruit. Among cell wall-degrading enzymes, polygalacturonase has the greatest effect on fruit softening, and its activity Increases during the maturating and softening of fruit.         The wind generated circulation model describes the phenomenon based on the following physical assumptions: a) As the horizontal dimension of the flow domain is several orders of magnitude larger than vertical dimension, nearly horizontal flow is realistic. b) The time taken for circulation to develop may effect on the flow domain of the earth's rotation, the contribution of the Coriolis force. c) A flow domain of large dimension results in quite large Reynolds number and the Reynolds stresses are approximated by the turbulent mean velocity gradient. d) The circulation is forced by the shear stresses on the water surface exercised by the wind. Modification made to the depth average approximation of the convective terms and the bed shear stress terms by adopting a certain distribution of current over the depth and laboratory measurements for the bed shear expression. Modification circulation patterns, energy evolution and surface profile gave the significant differences comparing with the classical model results. The modified model results in higher free surface gradients balancing both the free surface shear and the bed shear and consequently to higher surface profiles along the coast.

        This paper was carried out to investigate changes in chromatograms of polysacctatides and soluble pectins on Sephadex G-50 and non-cellulosic neutral sugars of polysaccharides isolated from cell wall of persimmon fruits treated with polygalacturonase and -galactosidase in vitro. The chromatogram pattern of soluble pectins extracted from cell wall treated with -galactosidase on Sephacryl S-500 column were similar to those of untreatment, but contents of soluble pectins treated with -galactosidase were different from those of untreatment. The patterns of chromatograms In soluble pectins extracted from cell wall treated with polygalacturonase were more complex and lower molecular polymer than those of other cell wall-degrading enzyme treatments. Non-cellulosic neutral sugar of polysaccharides in fraction I of soluble material treated with polygalacturonase was rhamnose, those in fraction II were similar to those in fraction III and contents of arabinose, xylose and glucose were higher than contents of other non-cellulosic neutral sugars. Non-cellulosic neutral sugars of polysaccharides in fraction I in soluble material by -galactosidase treatment were rhamnose, arabinose, galactose and mannose. Content of glucose of polysaccharides in fraction II was higher than that in fraction I . Non-cellulosic neutral sugars treated with mixed enzyme were rhamnose, fucose, arabinose, xylose, mannose, galactose and glucose. Compositions of non-cellulosic neutral sugars of polysaccharides in fraction I were similar to those in fraction II and III.

        This paper was carried out to Investigate changes in the activities of cell-degrading enzymes, cell wall components and cell structure of peach during maturation and storage for valuation of quality. The firmness of peach was decreased during maturation and storage, and was remarkably decreased in Daegubo than Yumyung. Polygalacturonase and -galactosidase activities of peach were increased during maturation and storage, and were remarably increased in soft peach and in mature and soft peach, respectively. Contents of alcohol-insoluble substance, cell wall, and total and insoluble pectin of peach were decreased during maturation and storage, but cellulose and soluble pectin were increased. Intracellular space was enlarged during maturation and middle lamella was gradually degraded during maturation.

        Large offshore structure are to be considered for oil storage facilities , marine terminals, power plants, offshore airports, industrial complexes and recreational facilities. Some of them have already been constructed. Some of the envisioned structures will be of the artificial-island type, in which the bulk of structures may act as significant barriers to normal waves and the prediction of the wave intensity will be of importance for design of structure. The present study deals wave scattering problem combining reflection and diffraction of waves due to the shape of the impermeable rigid upright structure, subject to the excitation of a plane simple harmonic wave coming from infinity. In this study, a finite difference technique for the numerical solution is applied to the boundary integral equation obtained for wave potential. The numerical solution is verified with the analytic solution. The model is applied to various structures, such as the detached breakwater (3L×0.1L), bird-type breakwater(318L×0.17L), cylinder-type and crescent -type structure (2.89L×0.6L, 0.8L×0.26L).The result are presented in wave height amplification factors and wave height diagram. Also, the amplification factors across the structure or 1 or 2 wavelengths away from the structure are compared with each given case. From the numerical simulation for the various boundary types of structure, we could figure out the transformation pattern of waves and predict the waves and predict the wave intensity in the vicinity of large artificial structures.
