The button mushroom, Agaricus bisporus is one of the most widely cultivated mushroom species. Mushroom growers inoculate compost beds with spawn, which is the vegetative mycelium and serves as the inoculum or seed for cultivating mushrooms. Various cereal grains, such as wheat, millet, barley, sorghum, brown rice, rye, and oat can be used in the spawn production of button mushroom. In this study rice seed bag spawn was compared with wheat grain bottle spawn in the spawn production. When the physical properties of two cereal grains were compared the 1000-kernel weight were 32.0g in wheat grain and 24.9g in rice seed. Number of kernels per milliliter were greater in rice seed compared with wheat grain with 24.5. Wheat grain showed 41.0% of total carbon level and 2.49% of total nitrogen level resulting 16.6 C/N ratio. Nitrogen content of rice seed was lower compared to that of wheat with 0.96 resulting 39.5 C/N. It was possible to produce 50kg of rice seed spawn in 22×49cm polypropylene filter bag with only 1~2 shakings compared to 0.45kg of wheat grain spawn in 1,000mL Ringer bottle with 4~5 shakings. Based on the results obtained, rice seed bag spawn would be appropriate substitute for wheat grain spawn in button mushroom.
Spawn is the vegetative growth of the mycelium and serves as the inoculum or seed for cultivating mushrooms. Various cereal grains, such as wheat, millet, barley, sorghum, brown rice, rye, and oat were assessed to compare their characteristics and suitability for spawn production of button mushroom (Agaricus bisporus). The mycelial growth rates, density, and the number of completely colonized grains were measured from the twentieth day of inoculation. Wheat grains showed fastest mycelial growth with 8.4 cm followed by rye, oat, barley with 8.2, 7.5 and 7.3 cm, respectively. In the mycelial density, foxtail millet, barley, and sorghum were best compared with that of wheat grains. Especially, the number of grains which were completely colonized by mycelia were greatest in foxtail millet with 5,123 grains followed by proso millet, and wheat with 3,052 and 914, respectively. Based on the results obtained, barley, foxtail millet, and sorghum grains would be appropriate substituting for wheat grain in spawn production of button mushroom.
Cordyceps militaris is a entomopathogenic ascomycetous fungus and cultivated as a medicinal mushroom having many valuable biological and pharmaceutical activities. It was cultivated on five different grain media which were compared with silkworm pupa medium for the artificial fruiting body production. C/N ratio of pupa and bean media was low at 5.9 and 5.8 respectively, which was attribute to low nitrogen contents compared to others. The various media had a significant effect on mycelial growth, cordycepin contents, fruiting body production. The mycelial growth were greatest at barley and wheat media but least at pupa medium. The cordycepin contents were highest at bean and pupa media with 2.9 and 2.6 mg/g, respectively. This was followed by wheat, corn, barley and brown rice media. The yield of fruiting body was greatest at barley and wheat media but the yield and days to harvest were least at silkworm pupa medium.
To elucidate optimum environmental condition for artificial cultivation of Grifola frondosa, light condition and CO2 concentration have been examined. First, the effects of light quality(blue, green, white) and light intensity(200, 500, 800, 1200 lux) on primordia formation, fruit body yield and morphological properties of Grifola frondosa in bag culture method were tested. Among different color fluorescents, white light(400∼620 nm) had a high mushroom yield(242 g) and a shorter cultivation period(52 days) In particular, morphological properties of G. frondosa using blue light(400∼560 nm) was obtained a wide and deep colored pileus. We also investigated that the appropriate light intensity for production of G. frondosa. The experimental results indicated that 500 lux light was the most effective on mushroom production, whereas, primordia formation was effective at 200 lux. In summary, we propose that the optimal light condition for the bag culture of G. frondosa is white source of fluorescent light and 500lux of light intensity. Second, G. frondosa were cultivated at four CO2 level, 500, 800, 1000, and 1500 ppm after spawning. Comparison in production of fruit body in G. frondosa better result were obtained at lower CO2 levels below 800 ppm. The higher ratio of primordia formation, faster time of primordia initiation and days to harvest(57 days), higher yields and quality of fruit body at lower CO2 levels below 800 ppm than higher that over 1000 ppm, whereas shape of fruit body at higher CO2 levels over 1000 ppm were showed abnormal and lower quality.

The effect of the Pholiota adiposa on the alcohol fermentation and its antihypertensive angiotensin I-converting(ACE) inhibitory activity of Korean traditional rice wine, Yakju was investigated. The ACE inhibitory activity of traditional rice wine was increased about 8% by the addition of 0.1% of the edible mushroom Pholiota adiposa ASI 24012 fruiting bodies into the mash containing 1% Lycii fructus, cooked rice, koji and antihypertensive S. cerevisiae and its Pholiota adiposa PAD-022 which showed anticholesteromia HMGCoA reductase inhibitory activity. Its quality characteristics and stability were investigated during the storage of room temperature and 40℃ for 3 months. It showed very high acceptability and also was very stable at 40℃ for 3 months[This study was supported by a grant from ARPC, 2005-2007].

The carbon and nitrogen sources for the optimum mycelial growth were fructose and peptone, respectively. Highest mycelial growth was observed when the C/N ratio was 10∼20. Significant differences among lines were found for production yield and crop cycle time. KME44009 had a short spawn run time, high yield, good color and quality compare with other strains. To find out the suitable medium composition of G. frondosa, physicochemical conditions were investigated. The T2 formulation (55:25:8:12 mixing ratio of oak sawdust, oak chip, wheat bran and soybean cake) showed the shortest time to complete the crop cycle and the highest yields(weight of fresh mushrooms harvested at maturity). Among the physicochemical factors, pH, crude oil and total nitrogen may affect mushroom yield. Therefore, development of suitable medium would benefit from increased production efficiency of G. frondosa mushrooms and be commercial potential.
