        Black Soldier Fly Larvae (Hermetia illucens, BSFL) is an environmental purification insect utilized as an animal feed source due to its high protein content. BSFL need to be dried to preserve quality, and the optimal drying method should be cost-effective. In this study, various drying methods (hot air (HD), freeze (FD), vacuum (VD), and combined-drying (CD)) were applied to BSFL, and then BSFL powders were characterized. Crude protein content was highest in HD and lowest in CD, and there was no significant difference in crude fat content (p>0.05). In the measurement of the total amino acid content of BSFL, glutamic acid and aspartic acid were the highest regardless of the drying method. The total amino acid content was the highest in HD and the lowest in CD. Total polyphenol content was higher in VD and FD than in HD and CD. Also, hydrogen peroxide and DPPH radical scavenging showed similar results. In the antioxidant measurement results, VD and FD showed higher antioxidant capacity, but considering cost-effectiveness, HD was the most available method for drying BSFL.

        This study investigated the quality characteristics of emulsion-type chicken breast sausages containing black soldier fly larvae (BSFL) powder. The chicken breast and BSFL powder were added at various mixing ratios (C:chicken breast 56% and BSFL powder 0%, 1%:chicken breast 55% and BSFL powder 1%, 2%:chicken breast 54% and BSFL powder 2%, 3%:chicken breast 53% and BSFL powder 3%). The pH, moisture content, and water holding capacity of the sausages increased with the powder amount. In the instrumental color evaluation, the L* and b* values were significantly different among the samples (p<0.05). However, there was no significant difference in a* value (P>0.05) with the amount of powder added. Volatile basic nitrogen and acid value tended to increase with the amount of BSFL powder. The total phenolic content tended to increase, but the value of IC50 according to DPPH radical scavenging decreased as the amount of powder increased. This study concluded that BSFL powder can be used in meat products processing as a substitute for meat protein and may also improve antioxidant activity.

        본 연구는 흰점박이꽃무지 유충 분말의 첨가량에 따른 닭 가슴살 소시지의 품질특성에 대한 영향을 분석하였다. 분석 결과 흰점박이꽃무지 유충 분말 첨가 유화형 닭고기 소시지와 첨가하지 않은 대조구 간의 일반성분 차이는 보이지 않았다(p>0.05). 흰점박이꽃무지 유충 분말 첨가량에 따라 명도는 감소하고 황색도는 증가하는 경향을 보였으며, 흰점박이꽃무지 유충 분말의 높은 pH가 육제품의 pH를 상승시켜 가열감량은 감소시키고 보수력은 증가시키는 긍정적인 영향 을 보였다. 유화형 소시지의 물성 중 경도에서 흰점박이꽃 무지 유충 분말 첨가구가 대조구 보다 높은 값을 나타내 조직감에 변화를 주었으며, 자유라디칼 활성도와 총 페놀 함량은 흰점박이꽃무지 유충 분말의 첨가량에 따라 증가하는 경향을 보였다. 이러한 결과를 통해 흰점박이꽃무지 유충 분말의 우수한 항산화 활성이 육제품에서도 발현이 가능 하며 기능성 첨가물로서 흰점박이꽃무지 유충 분말을 활용 한 기능성 소시지 제조 또한 가능할 것으로 판단된다.

        본 연구는 저장 온도를 달리하여 높은 상대습도의 환경에서 건조 감자를 저장하였을 때 발생하는 품질변화를 관찰하였다. 저장기간 및 건조온도가 증가함에 따라 L* value 는 감소하였고, a* 및 b* value는 증가하는 경향을 나타내었다. 수분활성도는 높은 습도 조건으로 인해 10일차부터 급격히 증가하였으며, 환원형 비타민 C 함량은 급격히 감소하는 경향을 나타내었다. pH 값은 저장기간 동안 완만하게 감소하였으며 40oC에서 저장했을 때 큰 폭으로 감소하였다. 저장기간 동안 대장균군은 검출되지 않았으며, 일반 세균 수는 저장 온도가 증가함에 따라 많이 검출되었다. 전체적으로 20oC와 30oC에서 저장한 시료 간의 차이는 크지 않았으나, 40oC에서 저장한 시료의 경우 큰 품질변화를 나타내었고, 밀봉된 상태로 저장한 대조구의 경우 품질변화가 적게 나타나는 것을 확인할 수 있었다. 따라서 본 연구결과를 종합해 볼 때, 밀봉하여 산소와 수분을 차단한 상태로 저장하는 것이 제품 고유의 특성을 유지하는데 가장 효과적이며, 높은 습도의 환경일 경우 낮은 온도로 저장하는 것이 품질 변화를 지연시키는데 도움이 될 것으로 판단된다.

        본 연구는 정수압 처리와 초음파 처리가 20일 숙성기간 동안 돈육의 삼겹살과 목살 부위의 품질특성에 미치는 영향에 대해 조사하였다. 다양한 품질특성을 관찰한 결과 정수압에서 숙성하고 초음파 처리한 돈육은 부위별로 효과의 차이는 있지만, 품질향상에 효과적인 것으로 나타났으며 또한, 초음파 처리했을 때 특히 고기의 연도와 관계가 있는 pH, 보수력, 경도 품질을 높이는 것으로 관찰되었다. 본 연구에서 이용한 저온 정수압 숙성 및 초음파 처리공정은 낮은 온도에서 돈육을 빠른 시간안에 숙성하는데 적용 가능할 것으로 판단된다.

        The level of β-glucan which is a major soluble dietary fiber found in the grain endosperm cell wall was highly variable among 25 barley genotypes grown at four locations including Suwon, Naju, Jinju, and Jeju. Statistically significant genotypic effects were observed for β-glucan content at each or across growing sites (P<0.001). On average, 'Chalssalbori' showed the lowest percentage β-glucan (4.04%) among genotypes in the grain, whereas 'Yonezawa Mochi' was highest in percentage β-glucan (6.46%) compared to other genotypes. The significant difference between genotypes was approximately 1-2% across environments. The effects of location or interaction between locations and genotypes were not significant on the variation of β-glucan contents. High β-glucan content seemed to be greatly associated with such grain traits as waxiness and presence of husk except for 'Chalssalbori'. The waxy genotypes had a mean of 5.37% and values ranging from 5.28 to 5.47%, but normal genotypes had a mean of 4.78% and values ranging from 4.69 to 4.88% over environments. Hulless barley genotypes were also higher than hulled barley genotypes for the average β-glucan content in both individual and over all environments. The difference between the hulled and hulless gene pools was on average of 0.37% with ranges from 0.19% to 0.56% at four environments. β-glucan content measured from a mapping population of F5 -derived 107 lines derived from the cross between 'Yonezawa Mochi' and 'Neulssalbori' was not significantly associated with other agronomic traits except for 1,000-kernel weight at the '01 Suwon environment. Not too much information on the relationship of β-glucan content to agronomic traits was available.

        Molecular-based genetic diversity for a set of 141 accessions of Korean barley cultivars and 24 accessions of foreign exotic cultivars were analyzed using random amplified polymorphic DNAs (RAPDs). Different level of genetic variability was observed with 30 random decamer primers in the Korean barley varieties and breeding lines which were preliminarily classified by morphological (hulled & hulless barley) and end-use (malting barley) and/or by the released periods. A total of 74 RAPD bands were scored, and the number of bands per primer varied from 1 to 7 with an average of 2.74. The hulled barley pool had one more marker genotype per primer than the hulless barley pool. The polymorphic information content (PIC) values based on the band pattern frequencies among genotypes varied depending on genetic pools where mean PICs of hulled, hulless and malting barleys were 0.62, 0.57, and 0.43, respectively. Certain genomic loci amplified by opR04, opF01, opB05, and opC13 were highly polymorphic with PIC>0.8. Patterns and temporal trends of genetic diversity assessed over the period from 1970s to 1990s had a tendency to increase, and in particular, this upward slant was quite clear and significant for the hulless barley pool. In the cluster analysis using genetic similarity matrix calculated from RAPD profiles, two major groups and several small subgroups were classified. Major grouping of materials was not affected by the presence of the husk but by their genetic background and the spike-row type. The validity of information on the genetic diversity and relationships between genotypes will have been reviewed to predict their yield potential.

        Immature and mature embryos of 18 Korean wheat genotypes were cultured in vitro to develop an efficient method of callus formation and plant regeneration, and to compare the responses of both embryo cultures. Immature and mature embryos were placed on a solid agar medium containing the MS salts and vitamins, 30g/l maltose, 2 mg/l 2,4-dichlorophenoxyacetic acid (2,4-D), and amino acids. The developed calli were maintained on regeneration medium containing MS salts and B5 vitamins, 20 g/l sucrose, and the combination of two plant growth regulators, 6-benzylaminopurine (BAP) and indole-3-acetic acid (IAA). Immature embryos in most genotypes showed high efficiency of callus induction except three genotypes; Eunpamil, Chunggemil, and Namhaemil, and significant differences among the genotypes. Plant regeneration of calli induced from immature embryos showed high efficiency in Geurumil (56.5%), Tapdongmil (50.5%), Gobunmil (45.5%), and Urimil(42.2%). The analysis of variance showed significant differences for regeneration frequency among the genotypes. Mature embryos showed low callus induction frequency compared with that in immature embryos, and significant differences among the genotypes. Plant regeneration of calli induced from mature embryos showed high efficiency in Keumkangmil (33.33%), Tapdongmil(28.13%), and Geurumil (27.78%). The analysis of variance showed significant differences for plant regeneration frequency among the genotypes.

        Allelic diversity of 44 microsatellite marker loci originated from the coding regions of specific genes or the non-coding regions of barley genome was analyzed for 19 barley genotypes. Multi-allelic variation was observed at the most of marker loci except for HVM13, HVM15, HVM22, and HVM64. The number of different alleles ranged from 2 to 12 with a mean of 4.0 alleles per micro-satellite. Twenty-one alleles derived from 10 marker loci are specific for certain genotypes. The level of polymorphism (Polymorphic Information Content, PIC) based on the band pattern frequencies among genotypes was relatively high at the several loci such as HVM3, HVM5, HVM14, HVM36, HVM62 and HVM67. In the cluster analysis using genetic similarity matrix calculated from microsatellite-derived DNA profiles, two major groups were classified and the spike-row type was a major factor for clustering. Correlation between genetic similarity matrices based on microsatellite markers and pedigree data was highly significant (r=0.57** ), but these two parameters were moderately associated each other. On the other hand, RAPD-based genetic similarity matrix was more highly associated with microsatellite-based genetic similarity (r=0.63** ) than coefficient of parentage.

        Barley Yellow Dwarf Virus (BYDV) has been a major disease causing a severe loss of yield in winter cereals worldwide. It has been recently reported that BYDV occurs frequently in wheat field and also causes serious yield reduction in Korea. This study was performed to investigate the regional distributions of BYDV strains in Korea and to identify the resistant cultivars or lines of wheat to the predominant BYDV strains, providing basic information for the breeding of BYDV-resistant wheat varieties. Using RT-PCR and EcoRI digestion methods, the regional distribution of BYDV strains in Korea from 1999 to 2000 showed that PAV strain was mainly detected about 65% (Vic-PAV 52.6% ; CN-PAV 47.4%) and MAV strain about 3%. Using ELISA test for the examination of BYDV resistance with 17 cultivars and 4 lines among Korean wheat, three cultivars, Gurumil, Topdongmil, and Olgurumil, were susceptible to BYDV and the others were resistant. In plant growth and yield component responses to BYDV infection, Gurumil showed significant difference between the uninfected and the infected, suggesting the most susceptible to BYDV among Korean wheat, but Eun-pamil and Seohae118 did no difference, an indication that they have the highest resistance.

        Barley Yellow Dwarf Virus (BYDV), an aphid-borne luteovirus, is a major plant pathogenic disease causing a huge economic loss in the grain production of a wide range of Gramineae species throughout the world. It has been recently reported that BYDV also occurred frequently in wheat field of Korea. Here, we performed to develop the detection and classification methods of BYDV strains that were accomplished by reverse transcription-polymerase chain reaction (RT-PCR). Since there are high variations among BYDV strains, three pairs of primers were designed to detect BYDV strains such as PAV (Vic-PAV and CN-PAV) and MAV (primer A) simultaneously, specifically Vic-PAV(primer B), and MAV (primer C) based on the genomic RNA sequences of BYDV strains previously published. The validity of the primers was confirmed using several BYDV strains obtained from CIMMYT. Though three BYDV strains were able to be detected using primer A, PCR products were not distinguished between two PAV strains. It was possible to separate them with a restriction enzyme, EcoRI, whose restriction site was present in the amplified DNA fragment from Vic-PAV, but not from CN-PAV.
