The structure of isoflavone moiety in soybean could be altered by thermal treatment. Thus, this study analyzed the isoflavone profiles of raw soybean extract (RSe, no pretreatment), blanched soybean extract (BSe, at 85oC for 3 min), and cooked soybean extract (CSe, at 95oC for 30 min) and measured their α-glucosidase inhibitory activities. The content of malonylglucosides in RSe decreased considerably during their transformation into BSe and CSe. The total content of isoflavones in RSe and BSe was fairly similar, although there was a significant difference in the respective values for RSe and CSe. It was concluded that the cooking treatment significantly impacted soybean isoflavone content and, eventually, one-quarter of isoflavones were lost in CSe. According to authentic isoflavone tests, the inhibition of α-glucosidase by isoflavone aglycones was more effective than that of the corresponding isoflavone glucosides. The α-glucosidase inhibitions were observed in the order of BSe (70.0%), CSe (53.3%), and RSe (32.3%). However, it was challenging to identify which isoflavone derivative had contributed to the phenomenon mentioned above. Hence, the blanching of soybean seemed to be more appropriate than cooking for preparing soybean extract to inhibit α-glucosidase due to the higher loss of isoflavone during cooking.

This study aims to investigate the physicochemical properties of meat analogs by using high and low moisture extrusion processes to create a plant-based analog burger patty material. The isolated soy protein blends of low- and high-meat analogs (LMMA and HMMA) were texturized using the twin-screw extruder equipped with a cooling die. The highest hardness, cohesiveness, chewiness, and cutting strength were observed in beef, but the highest stringiness was indicated in HMMA. The highest integrity index was seen in beef, while LMMA had the highest nitrogen solubility index (NSI). LMMA also had the highest water holding capacity (WHC) and water absorption capacity (WAC), whereas beef had the highest oil absorption capacity (OAC). LMMA had the highest emulsifying activity (EA) and emulsion stability (ES) in emulsifying properties. Further, the highest protein digestibility was revealed in LMMA. This study suggested that extrusion process types influence the quality of meat analog, which could be the elementary source for manufacturing the analog burger patty.

To isolate aerobically and identify the diversity of halophilic bacteria in the soil around two ports, Daepopogu and Hwasun Port, on Jeju island, a total 46 halophilic bacteria strains were isolated and phylogenetically analysed. The isolated strains were divided into 3 phyla, 8 families, 16 genera and 23 species. The main taxa was the Bacilli class, which included 50.0% of the strains with 3 families, 10 genera and 15 species of Bacillaceae, Exiguobacterium_f and Planococcaceae. The second taxa was the Gammaproteobacteria class, which included 45.7% of the strains with 4 families, 5 genera and 7 species of Aeromonadaceae, Halomonadaceae, Marinobacteraceae and Vibrionaceae. The isolated strains were tested for hydrolytic enzymes, amylase, lipase and protease activity, and 31 strains showed activity of at least one enzyme. Furthermore, auxin activity was determined in 7 strains. This study showed that the isolated strains have possible applications in the food and agricultural industries and have importance as a genetic resource in Korea.

In this study, the quality properties were compared by replacing allulose with a ratio of 0%-100% instead of sugar used in sponge cake. There was no significant difference in specific gravity, pH, and degree Brix of the dough according to the allulose content, but the brightness decreased and the redness, and yellowness increased as the allulose content increased. The volume of the sponge cake decreased as the content of allulose increased. Symmetry was uniform in the cakes replaced with allulose compared to 100% sugar. There was no significant difference in baking loss and moisture content. Hardness, gumminess and chewiness increased as the replacement rate of allulose increased, and adhesiveness was highest in 100% allulose. In the hedonic evaluation, 100% sugar and allulose 25% samples showed no difference, and the other samples were evaluated lower than the control. The maximum replacement ratio of allulose for sponge cake is considered to be 50%.

This study investigated the quality characteristics of emulsion-type chicken breast sausages containing black soldier fly larvae (BSFL) powder. The chicken breast and BSFL powder were added at various mixing ratios (C:chicken breast 56% and BSFL powder 0%, 1%:chicken breast 55% and BSFL powder 1%, 2%:chicken breast 54% and BSFL powder 2%, 3%:chicken breast 53% and BSFL powder 3%). The pH, moisture content, and water holding capacity of the sausages increased with the powder amount. In the instrumental color evaluation, the L* and b* values were significantly different among the samples (p<0.05). However, there was no significant difference in a* value (P>0.05) with the amount of powder added. Volatile basic nitrogen and acid value tended to increase with the amount of BSFL powder. The total phenolic content tended to increase, but the value of IC50 according to DPPH radical scavenging decreased as the amount of powder increased. This study concluded that BSFL powder can be used in meat products processing as a substitute for meat protein and may also improve antioxidant activity.

This study examined the quality characteristics and antioxidant properties of fruit and vegetable jellies mixed with Boswellia. Jellies were prepared with 0, 2, 4, 6, and 8% Boswellia, sugar and konjac. As a result, the pH of Boswellia jellies decreased to 5.19, 5.05, 4.94, and 4.84, respectively (p<0.001). Their L-value, a-value, b-value, and hardness increased significantly with increasing levels of added Boswellia (p<0.001), while individual phenolic compounds increased significantly with increasing levels of added Boswellia. Free sugars and organic acid contents had the highest bw10. The total phenolic compounds had the highest BW5 (112.9 mg TAE/g), BW10 (99.41 mg TAE/ g), and while the ABTS activities showed higher values than the control group. Overall, Boswellia can be used to produce high-quality jelly, which is expected to help develop excellent functional jelly products.

The study investigated the chemical components, antioxidant activities, and glucose-regulating enzyme activities of red chicory (Cichorium intybus L.). On a dry weight the contents of moisture, crude protein, crude fat, crude ash, crude fiber, and carbohydrate were 7.36, 28.0, 4.33, 19.63, 10.84 and 40.52%. The contents of mineral were Na (772.39 mg/100 g), K (5,686.03 mg/100 g), Mg (307.48 mg/100 g), Ca (804.94 mg/100 g), Fe (8.61 mg/100 g), and P (1,145.24 mg/100 g). Chlorophyll a, Chlorophyll b, total chlorophyll (793.80, 363.06, 1,156.86 mg/100 g,), total carotenoid (171.82 mg/100 g), and anthocyanin (79.49 mg/100 g) contents were measured. Antioxidant activities were analyzed for water and 70% ethanol extract. The polyphenol contents 23.67, 32.58 GAE mg/g, and flavonoid contents were 18.15, 28.76 RE mg/g, respectively. The DPPH scavenging activity IC50 was 694.48, 76.12, μg/mL, and the ABTS scavenging activity IC50 1,154.90, 566.00 μg/mL, respectively. In reducing power, the 70% ethanol extract showed a higher reducing power. In α-glucosidase and α-amylase inhibition activity IC50, the 70% ethanol extract (5.87, 17.91 mg/mL, respectively) showed a higher than water extract (8.87, 100 < mg/mL, respectively). This study is expected to provide basic data for developing functional food ingredients for red chicory.

This study examined the antioxidant activity and quality of Jeung-pyun prepared with different concentrations of hardy kiwi powder at 0%, 2.5%, 5%, 7.5%, and 10%. When the moisture content of Jeung-pyun was between 49.94-53.33%, the pH measurement showed a significant decrease with the increase of the hardy kiwi powder from 3.95 to 4.82. The L (lightness) values and the (redness) values decreased, whereas the b (yellowness) values increased with increasing amounts of hardy kiwi powder. The study showed a significant decrease in hardness, chewiness, and gumminess as the proportion of hardy kiwi powder in the Jeung-pyun increased. The total polyphenol content and DPPH radical scavenging activity increased noticeably as more hardy kiwi powder was added to the Jeung-pyun. As a result, the study groups with added hardy kiwi powder showed higher antioxidant activity than the control groups. Based on the results, this study recommends hardy kiwi as a good ingredient for enhancing the functionality of Jeung-pyun.

This study was carried out to examine the physical characteristics of bacterial cellulose (BC) and its optimal culture condition using coffee by-products. Recently, recycling resources and employing eco-friendly materials have been raised as significant issues in the food industry. As the coffee industry develops, interests and efforts for recycling coffee wastes are also growing. This study attempted to confirm the production of BC by utilizing spent coffee grounds filtrate as a medium. In order to confirm the optimal culture conditions for BC production, different culture methods, initial pH, culture temperature, and culture period were examined. The optimal pH and temperature were 6.0 and 30oC, and the optimal culture period was 14 days. The cultivated BC was dried by hot air drying, freezedrying, and mold drying, respectively. Then, the properties of the BC films, such as tensile strength, elongation, water-solubility, thickness, and chromaticity were compared. The drying method affected the shape and structure of the final BC films. The production of BC film is expected to expand opportunities for recycling coffee by-products and contribute to solving environmental problems caused by food waste.

Cassia tora seed was processed by germination and roasting to develop a germinated Cassia tora tea. The effects of extraction temperature on antioxidative compounds in tea extracts were examined and compared to four different commercial Cassia tora tea products. The contents of antioxidative compounds, such as phenolics, flavonoids, and β-carotene, increased as the extraction temperature increased (5 to 80oC), subsequently increasing in vitro antioxidant activities (DPPH and ABTS radical scavenging activities). Germinated Cassia tora tea had higher antioxidative activity than selected commercial Cassia tora teas, and the difference was significant at low extraction temperature. Therefore, the germinated Cassia tora tea could contribute to a new type of tea product with enhanced bioactive and antioxidative activities by adopting appropriate processing and extraction conditions.
