The milling characteristics of rice using different milling methods (dry and wet) were investigated. Generally, average particle sizes of dry-milling flours were bigger than those of wet-milling flours due to low moisture content. Three theoretical models for milling, such as the Rittinger, Kick, and Bond model, were applied to characterize the milling process of rice. The wet-milling method showed higher value milling constants including Bond’s work index. Baeksulgi was used to study the effect of the milling method and particle size on rice flour’s physicochemical property (water content, color value, and texture). Moisture content and hardness of Baeksulgi were smaller as the particle size became smaller. L value of Baeksulgi was greater as the particle size became smaller. The energy requirement for the milling of grains to obtain a suitable size of particles was estimated by the grinding models. The results of our study might provide a systematic way to estimate the energy requirement to obtain a suitable particle size by milling

Quality characteristics were evaluated for whole barley yogurt prepared with lactic acid bacteria combination such as Lactobacillus acidophilus, Lactobacillus delbrueckii subsp. Bulgaricus, and Streptococcus thermophilussei (1:1:1) with the addition of whole barley flour at 3%. The barley yogurt had lower pH, higher titratable acidity, and higher sugar content than control yogurt. The viable cell number of the barley yogurt was lower than the control yogurt. However, the viscosity and antioxidant activity of the barley yogurt were higher than those of the control yogurt. In up to 12 d of storage at 4oC, pH decreased while titratable acidity increased in both control yogurt and barley yogurt. The sugar content and brightness increased slightly. The viable cell number of the barley yogurt decreased during storage. However, the viable cell number of the barley yogurt met the standard suggested by the KFDA. Although the viscosity of the barley yogurt decreased, it corresponded to the required viscosity of a curd yogurt. Antioxidant activity slightly increased up to 9 d and then decreased, but the decrease of antioxidant activity was smaller in barley yogurt than in the control yogurt. During storage, there was no curd separation, change in scent, etc. Thus the storage quality of barley yogurt was relatively good.

Consumption of angelica leaves (Angelica utilis) juice as a health-improving drink faces some limitation due to its bitter taste. In this study, fermented angelica leaves was prepared using some lactic acid bacteria from kimchi with their sensory properties and biological activities examined. The addition of ALm (angelica leaves fermented by Leuconostoc mesenteroides) in plain yoghurt increased umami and preference compared to the yoghurt where dried angelica leaves were added. The ALm extract showed higher DPPH radical scavenging activity than other extracts and its flavonoid content was the highest. In case of A549 (lung cancer cell line) in CCK-8 assay, ALp (angelica fermented by Lactobacillus plantarum) extract exhibited inhibiting activity at 400 ppm level. When it comes to HT29 (colorectal cancer cell line), ALm, as well as Alp, depicted inhibition effects. In the fermented angelica leaves including ALm and ALp, the characteristic bitter taste of angelica leaves decreased through fermentation process so that both of them could be used as a health drink ingredient.

The nutritional composition of polished (unparboiled rice) and parboiled rice was compared using three high-yielding Tong-il types. Crude protein, crude lipid, and crude ash of proximate composition after parboiling were higher than those in polished rice. In terms of mineral composition, K scored the highest followed by P, Mg. Ca, and Na. All the compositions increased after parboiling except in Ca. The total content of mineral composition of polished and parboiled rice were 257.5-276.5 mg/100 g, and 533.2-588.6 mg/100 g, respectively, which resulted in 2.1 times increase after parboiling. Vitamin B1 content was the highest among the polished rice of the Dasan cultivar with 0.1530 mg/100 g and increase in parboiled rice by 2.0 times. The total amino acid content was highest in the polished rice of the Dasan cultivar. An increase in amino acid content in Saegyejinmi cultivars was observed after parboiling while the others showed a decrease. In terms of essential amino acid content, the highest was leucine while the lowest was methionine. Glutamic acid scored the highest and cystine the lowest in terms of non-essential amino acid content.

A microencapsulated cinnamon oil (CO)-coated film was developed using a pilot-plant scale film coating system. CO microencapsulated with polyvinyl alcohol was incorporated with a printing ink and the ink mixture was applied to the surface of a polypropylene (PP) film as an ink coating using a gravure printing press at a speed of 20-200 m/min. The tensile strength, percentage elongation at break, elastic modulus, and water vapor permeability of the PP films with and without coating with the microcapsules were not significantly different (p > 0.05), which indicates that the coating did not alter those properties of the films. Microencapsulation effectively prevented the volatilization of CO in the films. The microencapsulated system may be extended to other food-packaging films for which the same ink-printing platform is used. The results from this study imply that the oil-microencapsulated films could be potentially produced by a modern film manufacturing system.

The blending schemes of Saengshik powder with water were established to retain the dispersion stability of the Saengshik beverage in order to develop a ready-to-drink type product. The effect of the blending on the rheological properties and the dispersion stability of Saengshik beverage were determined. The Saengshik beverages, blended with low shear force for a short time, showed dilatant fluid characteristics, while those with high shear force for a long time had pseudoplastic fluid ones. The consistency of Saengshik beverage increased with the blending speed and time. Saengshik beverage blended at low shear showed rheopexy while becoming time independent by a highshear blending action. A logarithmic model fitted well to the changes in backscattering light flux with the rest time of Saengshik beverage. Based on sedimentation kinetics, the migration speed of clear front, and the thickness of sedimented layer, Saengshik beverage with maximum dispersion stability was obtained by a high shear blending at 15,120 rpm for 25 s.

Extracts from Aloe vera leaves, Aloe arborescens leaves, Aloe vera callus, Portulaca oleracea and cacao (Theobroma cacao L.) bean husk (CBH) were prepared using acetone, chloroform, ethanol, hexane, and water. Solvent extracts of Aloe vera leaf had very high antioxidant activities showing IC50 values in the ranges of 0.02-0.17 mg/ mL, and had the highest total phenolic and flavonoid content among the tested samples. We hypothesized that Aloe vera leaf and CBH extracts might possess considerable in vitro anti-glycation activities. Indeed, these extracts strongly inhibited the formation of advanced glycation end-products from RNase in the presence of ribose. The chloroform extract of Aloe vera leaf showed the strongest inhibition of AGE formation (99.9%), followed by the 95% acetone extract (92.8%) at a concentration of 1 mg/mL, exhibiting higher anti-glycation activities than those of AG and rutin (73.4% and 96.1% at 1 mg/mL, respectively). The anti-glycation activity of all extracts was correlated positively with their total contents of phenolics and flavonoids. We conclude that Aloe vera leaf extracts and their constituents may be used as anti-glycation agents.

The purpose of this study was to examine the antioxidant properties resulting from high-pressure homogenization of wheat bran. For this purpose, the researcher compared the radicals clearance of DPPH and ABTS, the ferrousion chelating effects, and the contents of the surface-reactive phenol compounds. In the course of this study, it was possible to reduce the particle size of the wheat bran effectively by means of high-pressure homogenization. This also resulted in structural changes, such as changes in the cellular structure of wheat bran, dissipating the cellulose matrix. It was found that this process, in turn, caused the phenol compounds which were entrapped inside the cellulose matrix or bound by polysaccharides to be released, affecting the antioxidation. As the intensity of high-pressure homogenization process increased, the radical clearance of DPPH and ABTS, as well as the surface reactive phenol compound, increased in return, while the ferrous-ion chelating effect decreased without any statistical significance, however (p > 0.05). Therefore, it would be safe to conclude that high-pressure homogenization could be an effective solution to increasing the antioxidant properties of wheat bran, which, in turn, could be used as a functional material (a natural antioxidant) in food industries

The effects of ultrasound and enzyme treatments on reducing sugar production from Korean 6-row barley Dahyang during the mashing process of brewing were studied. The concentration of reducing sugar produced by the traditional method was 41.5 mg/mL. The treatment of both the ultrasound at 400 W and amyloglucosidase (0.1 U/mL) increased the reducing sugar concentration produced in the mashing process by 15% compared to the traditional method. In addition, both treatments reduced the total mashing time from 115 min to 70 min. The combination of ultrasound and amyloglucosidase treatment increased the reducing sugar production yield by 17% during mashing, in comparison with the traditional method.

This study was performed to determine the total anthocyanin contents, DPPH radical scavenging activity, and SODlike activity of extracted anthocyanins from Bokbunja for analyzing the optimal conditions of enzyme treatment by response surface methodology (RSM) based on three factors: concentration of Pectinex Ultra SP-L, reaction temperature, and reaction time. The optimal enzyme treatment conditions of Pectinex Ultra SP-L concentration, reaction temperature, reaction time, and overall desirability by analysis of multiple response surface methodology with the same weighed value of each dependent variable were 0.5 mL/100 L, 20oC, 2 hr, and 0.63, respectively. Total anthocyanin content, DPPH radical scavenging activity, and SOD-like activity of the conditions stated above were 5.2 mg/ 100 g, 61.3% and 30.5%, respectively. Meanwhile, those of the control were 1.1 mg/100 g, 11.8% and 1.1%, respectively.method.

This study was conducted to develop the domestic production of a controlled atmosphere (CA) storage system, including nitrogen generator and carbon dioxide eliminator using selective gas separation membrane and operating program. Generally, the gas composition inside general cold stores constantly changes due to the metabolic activity of the respiring vegetables and fruits and leakage of gases through doors and walls. However, the CA container developed by our research team is able to control of the level of oxygen and carbon dioxide inside the reefer, making it simple and effective in operation. The efficiency of the nitrogen generator to replace oxygen with nitrogen inside the CA container was approximately 1.33% per hour. The change in oxygen concentration inside the CA container during the operation refrigerator almost did not show any difference for 8 days. Therefore, CA storage container should be a promising approach to maintaining the high quality of agricultural products during storage.

To investigate the antioxidative potential of ramie (Boehmeria nivea L.) leaves, alcoholic extracts with different ethanol concentration were prepared. The extract obtained by using 70% ethanol possessed the highest total phenolic content. The extraction yield and total phenolic content of the ethanolic extract were 15.46% and 105.0 μg chlorogenic acid equivalent (CAE)/mg, respectively. Therefore, the antioxidant activities of the extract were evaluated as 2,2diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, reducing power and nitrite scavenging ability. EC 50 value for radical scavenging and nitrite scavenging activities, which is the effective concentration at which 50% of DPPH radicals and nitrites are scavenged, were 34.72 μg/mL and 52.99 μg/mL, respectively. EC 50 value for reducing power, which is the effective concentration at which the absorbance is 0.5, is 44.39 μg/mL. All antioxidant activities increased as extract concentration increased. These results imply that the ethanolic extract of ramie leaves has the potential to be utilized as an effective antioxidant source.
