The purpose of this study is to optimize the extraction conditions (time, pH, and temperature) for water-soluble dietary fiber (SDF) and solids from Opuntia ficus-indica (OFI) stems and to evaluate the functionality of the optimized extract. The maximum extraction yield was obtained when 100% distilled water was used, indicating that ethanol hampered the extraction. The extraction yields were lower at higher temperatures and lower pHs. The maximum extraction of SDF (27.92%) and solids (5.6 g) was achieved with a 7-h extraction at 50oC and pH 7.0, with desirability being 0.958. The stem extract obtained under the optimum extraction conditions had an antioxidant capacity of 118.10 mg vitamin C equivalents (VCE) using the 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. In a medium containing 30% extract, the growth of E. coli was reduced by 34%, while that of B. cereus was reduced by 23%. These results suggest that OFI stems can be used as a functional resource.

Temperature distribution studies were performed in steam-air retort to investigate the influence of various processing conditions (come-up time, sterilization temperature, and internal pressure throughout the steam-air retort). Retort temperature data were analyzed for temperature deviations during holding phase, maximum temperature difference between test locations at the beginning and after 1, 3, and 5 min of the holding phase, and box-and-whiskers plots for each location during the holding phase. The results showed that high sterilization temperature led to a more uniform temperature distribution than low sterilization temperature (pasteurization). In pasteurization condition, the temperature stability was slightly increased by increasing pressure during the holding phase. On the other hand, the temperature stability was slightly decreased in high sterilization temperature condition. Programming of the comeup phase did not affect the temperature uniformity. In addition, the slowest cold spot was found at the bottom floor during the holding phase in all conditions. This study determined that the temperature distribution is affected by retort processing conditions, but the steam-air retort needs more validation tests for temperature stability.

For the study of the production and availability of biopolymer from Bacillus polymyxa YU-101, its rheological properties were investigated in comparison with other polysaccharides. The intrinsic viscosity of the biopolymer was 35.18 dL/g, showing the characteristics of the polyelectrolyte. The chain stiffness of the biopolymer was 0.55, which was expected to be extremely flexible, and the coil overlap parameter and the critical concentration were 0.722 and 0.15 dL/g, respectively. The activation energy of the biopolymer calculated by intrinsic viscosity showed two linear relationships at 50oC. Biopolymer showed pseudoplastic flow characteristics with increasing shear rate. At a concentration of 0.5% (w/w), the consistency index was 660.39 mPa·S and the flow behavior index was 0.765 and 0.4 at the shear rates of 0-11.7 s-1 and 11.7-105.3 s-1, respectively, similar to guar gum. At the shear rate of 58.5 s-1, the apparent viscosity of the biopolymer with the change of pH showed an abrupt increase in the range of acidity. In addition, the apparent viscosity of the biopolymer showed the maximum value at the 0.3%(w/w) concentration of salt, increased only by sucrose in the tested sugars.

The antioxidant activity, total phenol content, and inhibitory effect of xanthine oxidase (XOase) for six different medicinal plant complexes such as Achyranthes japonica, Acanthopanax sessiliflorus, Carthamus tinctorius, Eucommia ulmides, Viscum album, and Caragana koreana were investigated in this study. The free radical scavenging activity values using DPPH(2,2'-diphenyl-1-picrylhydrazyl) and ABTS[2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt radical cation] analyses were found to be 532.03±86.60 μg/mL and 1376.50±35.01 μg/mL, respectively, in 95% of ethanol extracts among six medicinal plant mixed compositions (6MPMC). The total phenolic content in 70% ethanol extract of 6MPMC was 125.19±1.34 mg GAE/g. The inhibitory activity against XOase was highest at 33.20±0.17% in the 70% ethanol extract of 6MPMC. In the antimicrobial activity test of 6MPMC, the minimum inhibitory concentration (MIC) value showed activities against V. litoralis and E. coli in 70% and 95% ethanol extracts, and these two microorganisms were created in clear zones by method of paper disc diffusion. These results suggest that the 6MPMC, composed of Achyranthes japonica, Acanthopanax sessiliflorus, Carthamus tinctorius, Eucommia ulmides, Viscum album, and Caragana koreana, have both antioxidant and antimicrobial activities and, therefore, may serve as a functional health food product.

The purpose of this study is to develop a method to cultivate lactic acid bacteria (LAB) as a by-product in the fermentation of kimchi through the use of Chinese cabbage leaves. A method to reduce the initial number of microorganisms using citric acid and ethanol to wash cabbage leaves was investigated. In this experiment, Chinese cabbage leaves were washed using a mixture of 3% citric acid and 7% ethanol and the washed cabbage leaves were juiced and used as a sample. The total microorganisms of kimchi cabbage juice (KCJ) was reduced from log 6.53 CFU/g to log 3.69 CFU/g by washing with citric acid and ethanol, and lactic acid bacteria from log 4.40 CFU/g to log 2.01 CFU/g. The salinity of KCJ was appropriate for the growth of lactic acid bacteria but the pH was too low. The yield of washing, juice extraction, and total were 80.82%, 79.32%, and 64.11%, respectively. KCJ made by washing with citric acid and ethanol was good for the culture broth of lactic acid bacteria.

This study aims to investigate the physical properties of extruded psyllium husk upon the addition of emulsifiers. Three different emulsifiers−glycerol monostearate (GMS), polyglycerol ester (PGE), and sugar ester (SE)−were added to the mixture of psyllium husk and rice powder before extrusion. Extrusion was performed using a twinscrew extruder at 140°C die temperature, 200 rpm screw speed, and 16% feed moisture content. The physical properties of psyllium husk extrudates including expansion ratio, specific length, piece density, texture profile, color properties, water soluble index, and water absorption index were evaluated. It was observed that the expansion ratio was the highest while the specific length and piece density were the lowest in the control which had no emulsifiers. Texture profile analysis showed that the apparent elastic modulus and breaking strength were highest in the extrudate with a PGE of 0.1%. The adhesiveness was found to be lowest in the extrudates with an SE of 0.1% and GMS of 0.5%. Lightness value was highest in the extrudate with a PGE of 0.1%. Color difference, water soluble index, and water absorption index were highest in the control. The results reveal that some physical properties of extruded psyllium husk were improved with the addition of emulsifiers. This finding provides useful information for the development of psyllium snacks with good physical characteristics.

The characteristics of extracts and precipitates after extraction at different water temperature (25, 50, 75, 95oC), ethanol ratio (25, 50, 75, 100%), and extraction method (stir, soak, autoclave) of yam powder and raw yam were investigated. The total polyphenol content was the highest in the 50% ethanol extract of yam powder. The DPPH radical scavenging activity was the highest in the 75% ethanol extraction and the crude saponin content was the highest in the 95oC water extraction. Tyrosinase inhibitory activity was the highest in 95oC water extraction, low concentration of ethanol extraction, and autoclave extraction. The peak viscosity, trough, and final viscosity of the precipitates increased after ethanol extraction, whereas decreased after the 95oC water extraction and the autoclave, indicating the destruction of starch granules. This was confirmed by observing the starch granules broken using the SEM. The significance of this study was to investigate the possibility of the use of yam resources as a material, processing product development, skin beauty functional food and cosmetic material.

Korean sliced rice cakes, or tteokguk, are conventionally dried and rehydrated during their preparation. In this study, the effects of the perforation process and various drying methods (e.g., hot-air drying, vacuum drying, low temperature drying, and freeze drying) on the quality characteristics of tteokguk (rice cake soup) were evaluated. In the experiment, the rehydration capacity and lightness increased as the pore number increased. The hardness, redness, and yellowness of tteokguk, in contrast, tended to decrease as perforations increased. The texture, taste, and overall acceptability scores of tteokguk increased as perforations increased. With respect to drying methods, the rehydration capacity was greatest for vacuum drying. The hardness of tteokguk was lowest for vacuum drying. The redness, yellowness, pH, and sensory characteristics did not differ significantly among tteokguk samples treated through various drying methods. These results suggest that high-quality ready-to-eat Korean sliced rice cakes could be created by perforation and vacuum drying.

In this study, hardness, which is one of the most important texture properties of meat products, was investigated in order to evaluate the potential of using crushed meat products as food for seniors. The hardness of crushed meat products in the Korean market, such as hamburg steak (12 products), meatball (8 products), ddeokgalbi (rib patties, 13 products), and wanja (meat dumplings, 10 products) were analyzed through a texture analyzer. Also, the hardness of UDF 1st grade hamburg steak (Japanese care food) was assessed in comparison with the texture characteristics of crushed meat products. The mean value of hardness of 43 crushed meat products purchased in the Korean market was 64,733±12,319 N/m2 (23,650-102,780 N/m2) while the hardness of UDF 1st grade product was 50,910±4,990 N/m2. The hardness of 16 crushed meat products was not significantly different from that of UDF 1st grade products (p<0.05). On the other hand, crushed meat products had higher relative standard deviation (RSD, %) values of hardness (mean: 19.6%, from 7.8 to 43.1%) than the RSD of UDF 1st grade products (9.8%) except for three products. Therefore, crushed meat products could be a developable “food for seniors” if deviations of texture are minimized. These findings on texture properties could be an effective data base for the development and quality control of “food for seniors” using meat materials.

Recently, health concerns related to NaCl overconsumption have led to an increased demand for sodium-reduced foods. The purpose of this research is to investigate the possibility of using enzymatically hydrolyzed isolated soybean protein (eHISP) to reduce the level of salt in salad dressing. The intensity of the salty taste enhancing effect was 31%, 29%, 43%, and 52% in the samples with 0.1%, 0.5%, 1.0%, and 1.5% eHISP added, respectively. There are significant differences between the control and samples (p<0.05). The overall acceptability was increased as the amount of added eHISP was increased when eHISP was 1.0%. However, it was lower when 1.5% eHISP was added. The pH of salad dressing was increased as the eHISP addition was increased. The results showed that the addition of eHISP to a salad dressing significantly enhances its salty taste effect.
