        이 연구의 목적은 노후준비교육프로그램에 참여한 중년여성들의 성공적 노화에 대한 인식 변화를 분석 함에 있다 평생학습관을 이용하고 있는 중년여성 . 14명을 연구대상으로 선정하여 12주 동안 노후준비교육 프로그램을 실시하였고, 교육프로그램에 참여한 중년여성들을 대상으로 심층면담을 실시하였다. 연구 결과, 노후준비교육 프로그램 적용과정에서 나타나는 성공적 노화에 대한 인식이 변화되어 갔다. 성공적 노화 요소인 자기효능감, 노화수용, 적극적 사회활동, 가족지향에서 인식의 변화가 나타났다. 교육프로그램 참여를 통해 과거의 삶을 돌이켜 볼 수 있었고 자신감을 회복하는 계기가 되었다. 다양한 만남을 통해 적극적으로 살아가기 위한 사회활동의 중요성을 강하게 인식하게 되었다. 노화를 자연스럽게 받아들이면서 삶의 일부로 생각하여 순응해 나갔다. 나이들어가면서 배우자와 자녀들에게 관심받기를 요구했던 자세에서 가족에게 먼저 관심을 보이게 되면서 가족지향으로 변화되어 갔다. 이 연구에서 조사 분석된 연구결과와 논의를 바탕으로 다음과 같은 결론을 도출하였다. 노후준비교육프로그램 참여를 통해 자기효능감, 노화수용, 적극적 사회활동, 가족지향 등과 관련된 성공적 노화 인식에 긍정적인 변화가 나타났다. 따라서 노후준비교육 프로그램은 중년여성의 성공적 노화 인식 변화에 효과적인 프로그램이라고 볼 수 있다.

        평생교육사의 전문성 개발에 대해서는 교과목 확대 및 실습 강화 등 많은 노력을 기울이 고 있다. 그러나 이미 현장에서 실천활동을 전개하고 있는 평생교육사의 전문성 개발에 대한 연구와 지원 은 미흡한 실정이다. 평생교육 현장에는 평생교육사 양성과정을 거치지 않고 평생교육활동에 종사하는 사 람들도 있으며, 앞으로 성인학습이 다양하게 확대되고 평생교육사들의 수도 점차 증가할 것으로 예측된다. 성인학습 지원을 위한 평생교육사의 전문성 개발에 대해 필요성이 대두되고 있다. 평생교육사의 직업사회 화 과정에서는 이론적 지식 습득 뿐만 아니라 성찰적 실천 능력이나 문제해결능력을 중심으로 하는 전문 성 개발 전략이 필요하다. 평생교육사의 전문성 개발과 관련하여 이 논문에서는 성찰적 실천에 관한 논의를 전개하였다. 첫째, 평 생교육사의 실천 능력을 개발하기 위한 성찰적 실천의 의미에 대해 규명하였다. 둘째, 성찰적으로 실천한 결과를 전문성 개발에 활용하기 위한 방안을 탐색하기 위해서는 실천한 결과에 대한 성찰과 실천과정에서 의 성찰이라는 두 가지 개념을 중심으로 논의하였다. 마지막으로, 논의결과를 요약한 다음 성찰적 실천을 통한 평생교육사의 전문성 개발 전략을 제시하였다.

        The purpose of this study was to examine the antioxidant properties resulting from high-pressure homogenization of wheat bran. For this purpose, the researcher compared the radicals clearance of DPPH and ABTS, the ferrousion chelating effects, and the contents of the surface-reactive phenol compounds. In the course of this study, it was possible to reduce the particle size of the wheat bran effectively by means of high-pressure homogenization. This also resulted in structural changes, such as changes in the cellular structure of wheat bran, dissipating the cellulose matrix. It was found that this process, in turn, caused the phenol compounds which were entrapped inside the cellulose matrix or bound by polysaccharides to be released, affecting the antioxidation. As the intensity of high-pressure homogenization process increased, the radical clearance of DPPH and ABTS, as well as the surface reactive phenol compound, increased in return, while the ferrous-ion chelating effect decreased without any statistical significance, however (p > 0.05). Therefore, it would be safe to conclude that high-pressure homogenization could be an effective solution to increasing the antioxidant properties of wheat bran, which, in turn, could be used as a functional material (a natural antioxidant) in food industries

        This research was attempted to investigate the sex bias in nutrition knowledge, food preference and food roles in the family. 152 couples living in Seoul, Cheonan in the 20s∼60s were selected for this research as subjects from October 1 to December 20, 1991. The data analysis was made by way of frequency, percentage, χ^2-test using SPSS package. The summarized results are as follows. 1. The survey on the sex bias in nutrition knowledge related heart disease on the subjects showed that there were no significant differences between men and women. But women had a relatively good nutrition knowledge than men. Especially women had a good nutrition knowledge that low sodium diet and exercise are efficient on preventing heart disease. 2. On the food preference, the subject showed significant difference between men and women. Men showed a relatively highest preference for protein food just as pork, fish, and tofu. Women showed a relatively highest preference for bread, fruit and vegetable. 3. On the food roles, the subjects showed that gender difference in household labor regarding food preparation still exit. Food-related activities are clearly still the domain of women in most families. Husbands and wives in younger families tended to think the husbands showed increase their efforts in food related activities.

        The objective of this study was to improved the limited functional characteristics of mungbean whole` globulin. The mungbean whole globulin was acylated with succinic and acetic anhydride, and the functional properties of acylated protein were investigated. The results obtained were as follows : 1. The UV-absorption spectra of acylated whole globulins with that of the succinylated 74% whole globulin as large blue shift of the absorption maximum and minimum wavelength from 275㎚ to 269㎚, respectively. 2. The mobility of acylated whole globulin were increased on PAGE pattern, and degree of mobility was particulary remarkable in case of succinylation. 3. The water absorption capacity of whole globulin was increased by acylation. The most increased rate of whole globulin was 174.02% from succinylated 74%. The oil absorption capacity of whole globulin was increased by acylation. The most increased rate of whole globulin was 165.41% from acetylated 81.77%. 4. The bulk density of whole globulin was decreased by acylation, and the greater the extent of acylation, the smaller the bulk density. 5. The foaming capacity and stability of whole globulin was increased by acylation, and remarkably high in 74% succinylated whole globulin, in contrast, however, the foaming capacity and stability of native and acylated whole globulin were decreased by heat treatment.

        Aralia elata Seemann (AE) has long been used as a folk medicine for the treatment of various diseases including diabetes mellitus, anti-arthritic, and anti-gastric ulcer agent in Korea, Japan, and China. This study was performed to establish a simple and reliable HPLC/UV analytical method for determination of most active anti-hypertensive compound, a 3-O-α-L-rhamnopyranosyl(1→2)-α-L-arabinopyranosyl hederagenin 28-O-β-D-xylopyranosyl(1→6)-β-D-glucopyranosylester (HE) for the standardization of the shoot extract of AE as a health functional food ingredient. The quantitative analytical method of HE was optimized by HPLC analysis using reverse-phase C18 column at 40°C with H2O and acetonitrile (70:30, v/v) as an isocratic mobile phase at a flow rate of 1.0 mL/min and detection wavelength of UV 205 nm. This HPLC/UV analytical method showed good specificity and high linearity in the tested range of 0.03125-2.0mg/ml with excellent coefficient of determination (R2) of 0.9999. The limit of detection and limit of quantification were 12.0 μg/mL and 36.5 μg/mL, respectively. Relative standard deviation (RSD) values of data from intra- and inter-day precision were less than 0.2% and 0.1%, respectively. These results indicate that the established HPLC/UV analytical method is very simple, specific, precise, accurate, and reproducible and thus can be useful for the quantitative analysis of HE as a functional anti-hypertensive compound in AE extract.

        단호박 가루 첨가량을 달리한 호상 요구르트를 개발하여 요구르트의 품질특성을 비교하였다. 단호박 가루의 첨가량 0%, 0.5%, 1%, 2%, 3%로 첨가하여 요구르트를 제조해 색도(명도, 적색도, 황색도), 점도, pH, 산도, 관능검사(색, 향, 맛, 전반적 기호도)를 측정하고 1일, 5일, 10일, 15일등 5일차 간격으로 저장성 실험을 하였다. 색도에서는 저장기간별 단호박 첨가량이 증가할수록 L값은 감소하였으나 a,b값은 증가하였다(p2%>
