        Antioxidant activities of 80% methanol, water, and 70% ethanol extracts of Lentinula edodes GNA01 were compared and estimated. The yield of Lentinula edodes GNA01 was identified to be in the following order: water>70% ethanol>80% methanol, but there was no significant difference between 80% methanol and 70% ethanol extracts. The highest total phenolic content (TPC) and total flavonoid content (TFC) were found in water extract, and TPC of 80% methanol extract was higher than that of 70% ethanol extract and TFC of 70% ethanol extract was higher than that of 80% methanol extract. Water extract exhibited the strongest DPPH, ABTS radicals, and nitrite scavenging activities, Fe2+ chelating ability, and FRAP among the three extracts. In addition, antioxidant activity of 80% methanol extract was higher than that of 70% ethanol extract in most of the experiments. As a result, antioxidant activity of Lentinula edodes GNA01 showed a difference according to extraction solvent and concentration; nevertheless, water extract exhibiting high polarity had the strongest antioxidant effect. Consequently, water extract from Lentinula edodes GNA01 is anticipated to be useful for the development of a high value-added functional product

        Nutritional composition and physicochemical properties changes in mustard leaf kimchi were investigated during fermentation of up to 3 months. The pH decreased, and the titratable acidity gradually increased according to increase of fermentation periods. Fructose and glucose were the major free sugars in mustard leaf kimchi, and their amounts were significantly decreased with fermentation periods (p<0.05). Lactic acid content showed a significant increase with maximum increase at 3 months. All types of kimchi contained 20 amino acids, but the content of most amino acid fluctuated during fermentation. Except for K and Zn, the content of other ingredients including Ca, Fe, Mg, Na, Se were the highest in kimchi fermented for 2 months. The unsaturated fatty acid of mustard leaf kimchi was higher than that of saturated fatty acid, and total fatty acid of kimchi significantly decreased after 2 months (p<0.05). Most vitamin contents showed a tendency to decrease with fermentation, in particular, vitamin B complex except for B2 significantly decreased after 3 months (p<0.05). The results provide fundamental data for determining the appropriate fermentation period to improve the quality of kimchi.

        This research was performed to confirm the four emotional eating types and examine the differences in BMI, ego resilience, and the level of college adaptation among those types. The total of 485 Korean college students (male 249, female 236) participated in this study. The main results were as follows, First, the emotional eating types were divided into four types based on positive emotional eating and negative emotional eating, and the type of more - eating with positive emotion and less? eating with negative emotion was the largest one among all the types. Second, there were no significant distinctions on frequency between emotional eating types and BMI. Third, individuals with less - eating for both positive and negative emotions showed the highest ego resilience level, whereas those with more - eating for both positive and negative emotions showed the lowest. Fourth, individuals with less - eating for both positive and negative emotions showed the highest score in the level of adaptation in college whereas those with more - eating for negative emotion and less - eating for positive emotion showed the lowest. Limitations of the present study and suggestions for future research were discussed.

        Nutritional and physicochemical changes of mustard leaf kimchi were examined during fermentation periods up to 3 months. As the fermentation processed, pH decreased, and titratable acidity gradually increased. The crude ash and protein contents increased during fermentation, but crude lipid content was significantly reduced from 5.97 to 5.07%. Crude fiber and carbohydrate showed no distinct changes. Dietary fiber contents were slowly changed between control and 1 month fermentation sample, and were maintained thereafter. The major free sugars of mustard leaf kimchi were fructose and glucose, and the amount of them were significantly decreased at the end of fermentation stage. Lactic acid showed a dramatic increase and reached its maximum at 3 months. All kimchi contained 20 amino acids; in particular, glutamic acid was the highest in mustard leaf kimchi. Amino acid contents fluctuated during fermentation. Except for calcium and selenium, the content of other ingredients (Fe, K, Mg, Na, and Zn) increased with prolonged fermentation time. Fermentation promotes a significant increasing in the content of linoleic acid and DHA. The highest antioxidant vitamins (β-carotene, tocopherol) contents were determined at mustard leaf kimchi fermented for 2 months. The results will provide fundamental data for proposing an appropriate fermentation periods to promote quality of kimchi

        The sensory properties of Kalopanax pictus and Cedrela sinensis shoots were analyzed according to their blanching conditions and the thawing methods used. For the Hunter colors, the K. pictus that was blanched without adding salt for 6 min had the highest L value, and the C. sinensis that was blanched with 1% salt for 6 min had the highest L value. The chlorophyll content of K. pictus was 141.1 mg% when it was blanched for 3 min with 2% salt, and the chlorophyll content of C. sinensis that was blanched without adding salt for 6 min was highest (124.8 mg%). When K. pictus and C. sinensis were blanched without salt addition for 3 min, their texture showed a higher value than that of the other samples. The sensory test result showed the highest overall preference for the sample that was blanched without adding salt for 3 min, among all the samples. The L value of the K. pictus that was thawed in a microwave oven was significantly higher than that of the other samples, but the L value of the C. sinensis that was thawed at 4℃ was higher than that of the other samples. As for the overall preference for the samples according to the thawing method used, K. pictus and C. sinensis scored highest in the case of thawing in a microwave oven.
