Nutritional composition and physicochemical properties changes in mustard leaf kimchi were investigated during fermentation of up to 3 months. The pH decreased, and the titratable acidity gradually increased according to increase of fermentation periods. Fructose and glucose were the major free sugars in mustard leaf kimchi, and their amounts were significantly decreased with fermentation periods (p<0.05). Lactic acid content showed a significant increase with maximum increase at 3 months. All types of kimchi contained 20 amino acids, but the content of most amino acid fluctuated during fermentation. Except for K and Zn, the content of other ingredients including Ca, Fe, Mg, Na, Se were the highest in kimchi fermented for 2 months. The unsaturated fatty acid of mustard leaf kimchi was higher than that of saturated fatty acid, and total fatty acid of kimchi significantly decreased after 2 months (p<0.05). Most vitamin contents showed a tendency to decrease with fermentation, in particular, vitamin B complex except for B2 significantly decreased after 3 months (p<0.05). The results provide fundamental data for determining the appropriate fermentation period to improve the quality of kimchi.
This study was conducted to analyze the nutrient compositions of stem and fruit of Opuntia ficus-indica var. saboten (OF) and Opuntia humifusa (OH). The results of the two-way analysis of variance test indicated that the parts, varieties and parts*varieties had influence on nutrient content except crude protein, soluble dietary fiber, Fe, Se, I, vitamin E, niacin and vitamin C. Moisture and crude ash content was higher in stem than in fruit, while crude lipid and insoluble dietary content was higher in fruit than in stem. Mineral content revealed that K (1,313.67 mg% in OF, 1,351.38 mg% in OH) was the highest in fruit and Ca (5,146.29 mg% in OF, 1,388.19 mg% in OH) was the highest in stem. Vitamin C was the most abundant vitamin in the fruit of OF (199.98 mg%) and OH (187.12 mg%). Polyunsaturated fatty acid was the highest among fatty acids (66.9~70.1%), with higher content in the stem (753.89 mg%) than fruit (578.01 mg%) in OF, while higher in the fruit (1,093.63 mg%) than stem (475.07 mg%) in OH. Moisture, crude protein, Mg, Se and riboflavin was higher in OF than OH; whereas, crude lipid, insoluble dietary fiber, total dietary fiber and monounsaturated fatty acid were higher in OH than OF. These results indicated that OF and OH could be a good food source for Ca, K and Vitamin C. Also, different nutrient content by parts and varieties, can be helpful in choice of parts or varieties for consumer purposes.
본 연구에서는 식품공전에 제시되어 있는 microwave digestion 전처리방법과 유도결합 플라즈마 방출분광기을 이용하여 식품 중의 9종의 무기질(Na, Ca, K, P, Mg, Fe, Cu, Mn 및 Zn)을 측정하는 분석법에 대한 직선성, 정밀성 및 정확성 등의 분석법 유효성 검증을 실시하였다. 본 연구에 사용된 표준시료는 Certificated reference material1849a 조제분유로 미국 national institute of standards & technology에서 구입하였다. 직선성은 표준품을 사용한 표준검정곡선 측정농도범위에서 상관계수 0.9999 이상의 양호한 결과를 나타내었다. 검출한계는 0.1005 mg/kg, 정량 한계는 0.3351 mg/kg 으로 각각 나타났다. 또한 정밀도는 상대적표준편차(relative standard deviation)가 일내(withinday, n=3), 반복측정의 경우 0.09~4.80%, 일간(between-day, n=12)의 경우 1.19~18.19%로 양호한 결과를 나타내었으며 정확성은 회수율 90.35-110.63%로 매우 양호한 결과를 나타내었다. 따라서 microwave 전처리방법과 유도결합 플라즈마 방출분광기 측정법은 식품 중 9종의 무기질을 측정하는데 매우 유용할 것으로 사료되며 국민 건강 증진을 위한 식품성분표 데이터베이스 구축, 유통식품의 품질평가 등 공익적 분석사업에 이용될 수 있을 것으로 생각된다.
The objective of this study was to investigate the total sugar content of cooked rice (e.g. Bokkeumbap, Deopbap,Bibimbap, Gimbap, Chobap) and side dishes (Jjigae, Kimchi, Jangajji) by using HPLC analysis. Samples were col-lected from six regions in Korea (Seoul, Gyeonggi-do, Chungcheong-do, Gangwon-do, Jeonla-do, Gyeongsangdo).In cooked rice, the total sugar content in Bibimbap (8.537g/100g), Jangeo-deopbap (3.207g/100g), and Saladgim-bap (2.394g/100g) was higher than that of other cooked rice. Also the analysis results showed that the total sugarcontent of cooked rice with spice and sauce added was a little higher than that of other kinds of cooked rice. Fromthe analysis of Jjigae, it was shown that Doenjang-jjigae (1.805g/100g) from the Jeonla-do region had the highesttotal sugar content while there was no difference in total sugar content from the other regions. In case of Kimchi,that from Jeonla-do and Gyeongsang-do was very sweet, salty, and spicy, and the total sugar content was higherthan that from the other regions. The highest total sugar content among the analyzed Kimchi was in Godeulppaegi-kimchi with a value of 8.188g/100g. In addition, the total sugar content in Jangajjie, as a pickle among side dishes,was shown to be higher than that of the other side dishes with the highest range among Jangajjie of 32.865g/100gto 41.846g/100g being found in Maesil-jangajji.
The objective of this study was to investigate the total sugar content in take-out foods by using HPLC analysis.Samples of take-out food were collected from six regions in Korea (Seoul, Gyeonggi-do, Chungcheong-do, Gang-won-do, Jeolla-do, Gyeongsang-do). The samples consisted of 30 main dishes (12 Chinese dishes and 18 flour-baseddishes) and 19 desserts (11 rice cakes and 8 breads). In case of Chinese food, the maximum total sugar content ofTangsuyuk, Ganjajang, Jajangmyeon, and Gun-mandu was 10.346g/100g, 2.409g/100g, 1.589g/100g, and 1.988g/100g respectively. The total sugar content in seasoned Chinese food with sauces was higher than that of the otherChinese food. In case of flour-based food as a main dish, flour-based food seasoned with red pepper paste and manysauces such as Tteokbokki, Naengmyeon, and Guksue had a higher total sugar content than Mandutguk, Tteok-manduguk, and Udong. In particular, Hoe-naengmyeon had the highest total sugar content of 7.194g/100g. Also,desserts (rice cakes and breads), except for Garaetteok, had a high total sugar content with the highest in Glutinousdoughnut and Glutinous rice tteok with red bean paste, which among all the regions analyzed had a maximum totalsugar content of 19.602g/100g from Gyeongsang-do and 30.339g/100g from Seoul respectively.
서울, 충청도 및 강원도 지역의 김장김치 담금방법을 알고자 203개 가정에서 설문조사를 한 결과 3지역에서 김장김치류중 배추김치는 95%이상 남았는데 배추선택시 결구도를 가장 중요시 하였다. 배추는 천일염을 주로 사용하여(66∼78%)소금물에 적신 후 다시 소금을 뿌려 약 7∼10시간 동안 절였다. 김치숙성시 서울과 충청도는 배추상태가, 강원도는 양념이 가장 큰 영향을 미치는 것으로 인식되었으며 김치보관은 70%이상이 김치 항아리를 이용하였는데 김치보관용기와 주거형태(단독 및 아파트)간에는 x^2=49.87(P<0.000)로 유의적인 관계가 있는 것으로 밝혀졌다.
매실의 성숙도와 품종별 주요 성분의 변화를 조사한 결과, 수분함량은 수확시기와 품종간에 차이가 없었으며, 회분함량은 '소매'를 제외한 3품종 모두 성숙과 함께 약간 감소하였다. 가용성고형분은 품종간에 차이가 없이 완숙기에 이르면서 서서히 증가하였고, 산도는 성숙과 함께 증가하고 pH는 감소하였다. 색상은 '남고'가 개화 후 92일경에도 -3.81로 녹색값을 유지하였다. '소매'의 경우 개화 후 71일부터 클로로필이 급격히 소실되었다. 매실의 주요
