As the importance of public health increases with the spread of infectious diseases, functionality has become a factor affecting consumers’ purchase of mushrooms. Therefore, the bioactive components of button mushrooms (Agaricus bisporus), which are generally known to promote button mushroom consumption, were analyzed. White and brown button mushrooms were compared and white beech mushroom (Hypsizygus marmoreus) were used as a control. White button mushrooms had higher sugar and inorganic potassium concentrations than brown button mushrooms, whereas sodium, magnesium, and vitamin C concentrations were not significantly different between the different button mushrooms. Moreover, there was approximately twice as much ergosterol in white button mushrooms than brown button mushrooms. Brown button mushrooms had higher concentrations of β-glucan and oxalic acid than white button mushrooms, but there was no significant difference in total organic acid content between the two mushroom types. High concentrations of the essential amino acids, ergothioneine, isoleucine, and leucine and the non-essential amino acids, glycine and alanine, were observed. Concentrations of the vitamin B group and total polyphenols were also high.
Historically recognized as a valuable nutritional source, milk contains essential carbohydrates, proteins, and fats that play diverse functional roles in the human body. While the functional roles of milk nutrients and their derivatives are acknowledged, the corresponding functional foods for each milk component remain inadequately documented in Korea. This review aims to describe the functional roles of milk components and their derivatives, as well as assess the landscape of functional food products available in the Korean market. Milk components demonstrate noteworthy functions such as preventing muscle wasting, fortifying bones, aiding in weight control, stabilizing nerves, and serving as prebiotics. Despite these known functions, there exists a plenty of functional substances within milk that have not been comprehensively investigated. Presently, only a limited number of milk-derived functional ingredients are registered in Korea, with a few making their way into commercialization. To advance this field, scientists and industries need research effort to uncover novel functions of milk ingredients and subsequently introduce innovative products to the market. This proactive approach not only promises to broaden the spectrum of functional ingredients but also stands to positively impact the domestic health functional food market and the dairy industry. The development and introduction of new products derived from milk may hold the potential to significantly contribute to the diversification of functional ingredients, fostering a healthier and more robust health food market.
This study was carried to investigate the effect of illite addition on the growth, bioactive components andvolatile compounds of leaf on Saururus chinensis Baill cultivation in greenhouse. Illite addition on Saururus chinensis Baillcultivation resulted no significant effects on the aerial part. However, the root part was highest in 5% illite addition group.Crude oil and ash amount increased as illite additives was increased. Ca of inorganics and free sugars contents were highestin 5% and 20% illite addition, respectively. Hyperoside and isoquercetin of available component on leaf were highest in 5%illite addition group, 4.02㎎/g and 4.31㎎/g, respectively. The volatile compounds in Saururus chinensis Baill leaf culturedwith illite addition amounts were isolated by solid-phase microextraction fiber (polydimethysiloxane 65㎛) and identifed bygas chromatogtaphy mass spectrometry. As the results, the 22 volatile compounds were identified from in Saururus chinen-sis Baill leaf and major volatile compounds were the α-cadinol (18.50%), myristicin (16.46%), methyl-9-methyl-tetrade-canoate (10.22%), and γ-muurolene (9.75%). Especially, the content of α-cadinol was highest in 5% illite addition group andγ-muurolene on overall illite addition group was lower than no addition group.
삼백초 1회 수확 후 질소 추비량에 따른 생육 및 수량을 검토하여 재배법 확립의 기초자료를 제공하고자, 무시용 등 4처리를 두어 2002년부터 3년간 시험한 결과, 초장, 엽의 크기, 경태, 절수, 상품엽수, 분얼수 등 경엽과 근경의 생육은 1차 수확 후 질소 추비량이 많을수록 길거나, 굵거나, 많은 경향으로 양호하였다. 경엽수량은 질소 추비량이 많을수록 증가되어 무시용 158kg/10a 대비 3, 6, 9kg/10a 사용 시 각각 20%, 42%, 60% 증수되었고, 성분함량 중 rutin은 질소 추비 사용량이 많을수록 증가되는 경향이었으며, quercitrin은 질소 추비 3kg/10a 시용에서 다소 높았다.
