        In this study, the dietary fiber content of 33 kinds of agricultural products and seaweeds was compared with that of raw products after heat treatment. To verify the total dietary fiber analysis method, the recovery rate was reviewed by measuring the total dietary fiber content for 4 standard certified substances. As a result, the recovery rate of the analysis value for the true value was 98.8%~103.1%, which was judged to be reliable. The total dietary fiber of vegetables ranged between 0.61~5.36 g/100 g for raw vegetables and 0.55~4.84 g/100 g for heat-treated vegetables. Among the 24 kinds of vegetables used in the analanalysis, the total dietary fiber content of heat-treated Korean radish (3.13 g/100 g) was the highest compared to that of raw radish (0.61 g/100 g). The total dietary fiber of beans was between 13.86~29.69 g/100 g for raw beans and 6.72~18.40 g/100 g for heat-treated beans. In particular, the total dietary fiber content of sword beans was the highest in both raw (29.69 g/100 g) and boiled (18.40 g/100 g) beans. The total dietary fiber content of the three types of seaweed was 1.93~4.85 g/100 g in raw seaweed and 0.99~5.72 g/100 g in heat-treated seaweed.

        Seaweed by-products have been dumped into the sea and induced marine pollution. However, they can be recycled as a valuable natural resources. Approximately 240,000 tons of sea mustard and kelp by-products were estimated to be producted during the last three years. The estimate corresponds 6.7% of the total production of marine aquaculture and 14.9% of the total production of seaweeds. When adding up the by-products from fish and mollusks, approximately 1,000,000 tons of fisheries by-products were thrown out into the sea every year. A three-step strategy is required for the industralization of fisheries by-products. The first step is the construction of the processing foundation of by-products, the second is its food industralization, and the third is its recycling as raw biomaterials. The stable supply of raw materials is the prerequisite for the industralization. Thus, it is necessary to construct the refuse logistics around chief production districts and to build the processing facility and frozen storage of by-products. Cooperation among private enterprises and government investment for research and development is required the second and third steps.

        본 연구는 2018년 경기도내 대형마트, 온라인에서 유통 중인 해조류 및 해조류가공품 80건을 대상으로 중금속 4종(납, 카드뮴, 비소, 수은)의 오염도를 모니터링하고, 해조류 섭취에 따른 위해도를 평가하였다. 현재 해조류에 설정된 중금속 기준은 납의 경우 미역(미역귀 포함)에만 0.5 mg/kg 이하로 설정되어 있으며, 카드뮴은 김(조미김 포함)과 미역(미역귀 포함)에 0.3 mg/kg 이하로 설정되어있다. 검사 결과 기준이 설정된 제품은 모두 기준치 이내로 적합한 것으로 나타났다. 중금속 중 특히 비소의 경우 대부 분의 해조류에서 대체로 높은 함량을 나타내었으며, 유기비소와 달리 독성이 강한 것으로 알려진 무기비소의 함량이 다소 높은 톳과 모자반을 함유한 가공식품에 무기비소 기준을 신설하여 2018년부터 시행중에 있다. 본 연구에서 진행된 톳 제품은 시행일 전에 제조되어 기준 적용 대상은 아니었지만, 건조 톳 8건 중 4건은 수산물, 4건은 기타 수산물가공품으로 분류되어 있어 명확한 유형 분류 기준이 먼저 필요할 것이다. 노출량에 따른 위해도는 안전한 수준으로 나타났으나, 현재 우리나라에서 섭취하는 해조류의 종류에 비해 중금속 기준이 설정이 되어있는 해조류는 미비하기 때문에, 본 연구 결과는 향후 해조류의 중금속 관리 기준 설정을 위한 기초자료로 활용할 수 있을 것 이다.

        In this investigation, 480 high school students attending school in Seoul, Incheon were surveyed for their knowledge of seaweed and their preference of seaweed products provided during school meal service. Female students answered that they preferred seaweed more than male students. When asked to explain their preference for seaweed, most students who preferred seaweed responded ‘it is tasty’ (82.9%), while those that did not like seaweed responded ‘I don’t like the texture when chewing it and it is not tasty’ (47.8%). Most students reported that they usually eat ‘laver’, and the number of times that they at seaweed was ‘3-4 times a week’. The primary place in which they ate seaweed and the place where they feel it had the best taste was a ‘house’. The primary source of information regarding seaweed was mass media including TV, newspapers, magazines and the internet (48.8%). With regard to seaweed in school meals, which is offered twice a week, most students reported, ‘I eat seaweed and leave it to some extent.’ They perceived ‘laver’ to be most often provided in school meals, and 57.7% reported that their favorite seaweed meal was ‘laver’. When asked why they dislike seaweed in school meals, the most common responses were ‘I didn’t like seaweed the first time I tried it’ (27%) and ‘Its taste is different from what I eat at home’ (24.6%). The most common request regarding seaweed provided in school lunches was for the taste to be improved (48.2%). Evaluation of the preference for seaweed menus in school meals revealed that both males and females had higher preferences of more than 4 points for ‘fried laver’ and ‘broiled laver’.
