This study was conducted to evaluate the industry foodservice management practices in Pusan Kyeung Nam provinces and to suggest the guideline for the effective foodservice management. Questionnaire survey method were used in this study. Questionnaire were administered to 307 dietitians in Pusan Kyeung Nam. Data were analyzed for frequency, percentage, and χ2-test using SPSS-X Package. The results are as follows: 61.7% of industry foodservice establishment serviced foods over three times a day and 18.0% of them were less 500 won in the cost of food. 64.5% of the dietitian had less 3 years experiences, and they are not fully performed the effective management in nutrition education, job design and utilization of standardized recipes. Equipped facilities in surveyed foodservice operations were assessed as the insufficient condition, especially, efficient facilities such as a cutting machine were scarcely make up.
Unit price of meal provision in industrial foodservice differs with each business. It is believed that menu management work, contents of menu, and nutrition supply performed by dietitian are different with unit price of meal provision. In this sense, purposes of this study are to examine meal management work and contents of menu, by food cost, at industrial foodservice in Taegu, Kyungbuk area and to evaluate variety of menu and nutrition supply. Results of the study are as follows: 1. Average number of side dishes provided at meal, including Kimchi, was 2 at low unit price, 3.0 at middle unit price and 3.1 at high unit price. 2. Possession ratio of account books using for menu management was low. 3. With regard to kind of menu, high unit price was most various and showed more various, compared to low unit price, especially in cooking oil-used cook methods such as broil, pan-fried food, fry, and roast. 4. High unit price was found as the highest in kind of used food and supply volume. 5. Sugar, Mineral, Vitamine, and Protein were satisfied with standard food content, but fat and calcium were not. 6. Supply volume of food was positively correlated to supply volume of nutrient, but kinds of cook methods and food type were not correlated to that of nutrient.
본 연구는 증권사업의 개방을 앞두고 한국증권사의 국제경쟁력 강화방안 모색하기 위한 방안으로서 한국 증권사간 경쟁구조에 대한 분석을 목적으로 한다. 한국증권산업내 증권사의 경쟁구조를 분석하기 위하여 경쟁의 결과인 경쟁성과와 경쟁성과에 영향을 미치는 경쟁전략변수(strategy variable)와 경쟁특성변수(firm-specific variables)들간의 관계를 살펴보았다. 또한 증권사간 경쟁구조분석 연구대상은 증권사의 주된 수입원인 brokerage 시장과 underwriting 시장으로 했다. 먼저 주식 유통시장 경쟁형태 및 구조를 분석한 결과는 첫째, 지점수가 위탁약정고 순위를 결정짓는 가장 중요한 요인이었다는 점과, 둘째, 약정고 경쟁에 있어서 영업점별 실적관리 체제가 과당경쟁을 유발한 하나의 요인이라는 것이었다. 다음으로 채권 인수시장 경쟁행태 및 구조분석 결과는, 첫째, 발행금리가 실세금리를 하회하고 있어 꺽기 등 변칙행위에 의한 경쟁이 이루어지고 있다는 점과, 둘째, 자금력이 인수시장 경쟁성과에 어느정도 영향을 미쳤으나 자금조달 및 운용면에서의 자율성 제한으로 실질적 경쟁이 이루어 지지는 못한다는 점, 셋째, 일부 증권사의 전문성 발휘가 엿보이긴 하나 전문성의 수준은 매우 미약하다는 점 등이었다. 결국 증권업에는 투자가 및 기업에 대한 서어비스 차별화경쟁을 통한 체질강화를 지향해야 하며 이를 위하여 정보자원, 전문인력자원, 지원체제 확보를위한 과감한 투자가 지속되어야 한다. 정부도 변칙경쟁이 아닌 유효한 경쟁을 유도하기 위한 환경조성을 자율성 제고의 측면에서 고려해야 하며 업계에 경쟁력 강화를 위한 적극적인 투자가 이루어질 수 있게끔 수익창출이 가능한 신규업무 지원을 고려해야 한다.
This survey was carried out to investigate the effects of dietary attitude on the nutrition knowledge, food habits and the intake of instant food, convenience food and fast food between two groups of college women, a nutrition major group and nutrition non-major one. Questionaires were completed by 214 nutrition majors and also by 145 non-majors. Nutrition majors showed better average in meal time regularities per week than nutrition non-majors. And nutrition non-majors had a higher frequency rate in taking of instant food and fast food than nutrition majors. In the case of both college women, those who take a meal regularly at each meal times have a higher score in food habits. The women who ate instant foods more frequently got a lower score in food habits, but the frequency of the intake of instant foods did not affect the score of nutrition knowledge. On the other hand, the women who had fast foods more frequently got a higher score in food habits and lower score in nutrition knowledge. When college women have a little of nutrition knowlege, they have a tendency to keep their meal time regularity and right dietary attitude pattern. In the dining -out pattern, the college women liked to eat flour foods and they preferred western foods than Korean foods. The motivation of food selection was for convenience and for time saving which were the reason for satisfaction to the products of food service industry. The products of food service industry were found to be unsatisfactory in nutrition and sanitation. Therefore, we must be more aware of preventing the disappearance of Korean traditional foods and for developing dietary culture successively, the products of food service industry which are more suitable for Korean should be developed.
Patterns in the outbreaks of senile diseases were investigated on 1, 264 workers by special examination among the 43, 210 industrial workers by the screening test performed in Kwang-ju and Chon-nam Branch of Korean Industrial Health Association from January 4 to December 31 in 1991. The results are summarized as follows : 1) Prevalence rate of senile diseases of industrial workers was 2.9%. And prevalence rate according to the kinds of senile diseases was observed in the order of hepatitis (0.9%), hypertension(0.7%), diabetes mellitus(0.5%), anemia(0.4%). 2) Prevalence rate of complicated senile diseases of industrial workers was 0.5%. And prevalence rate according to kinds of complicated senile diseases was observed in the order of others hypertension and arteriosclerosis(0.1%), HBV and others chronic hepatitis(0.1%), essential hypertension and arteriosclerosis(0.03%), iron deficiency anemia and leukopenia(0.03%).
개도국의 대선진국 직접투자는 흐름방향면에서 역투자로서의 의미를 지니며 전통적인 해외직접투자와는 그 특징이 상이하기 때문에 기존의 해외직접투자이론으로서는 그 설명이 어렵다고 할 수 있다. 본고에서는 한국제조업 중 대선진국 직접투자가 가장 활발한 가전산업의 해외투자를 분석한 결과 가전산업의 대선진국투자는 i) 독점적 우위의 부재, ⅱ) 방어적이고 생존적인 차원에서의 진출 ⅲ) 미성숙한 유형의 투자라는 특징을 가짐을 알아내고 이를 바탕으로 기존이론의 설명력 한계를 살펴본 다음, 대선진국 역투자를 설명할 수 있는 새로운 이론을 제시하고자 한다. 즉 한국가전산업의 역투자는 우리 경제의 성장구조적인 특징으로 인해 선택된 대량생산- 저가수출전략이라는 기존의 의사결정을 단기간내에 바꿀 수 없는 경직성으로인해 독점적 우위없이 불가피하게 이루어진, 수출시장보호라는 생산차원에서 내려진 구조적 시장방어행위임을 알 수 있었다. 이러한 특성으로 인해 가전 산업의 대선진국투자는 그 생명이 길지 못할 것으로 예상되므로 독점적우위확보, 글로벌 네투워크화, 전략적제휴 등을 통하여 이에 대한 대책을 마련해야 할 것이다.
