This study evaluated the quality of school milk programs and analyzed the relative importance of school milk program selection attributes using conjoint analysis. The survey was conducted on students from middle and high schools in metropolitan cities that provide school milk programs. Responses were received from 414 students and the data was subjected to frequency analysis, t-test, and conjoint analysis using the SPSS Statistics Package. While evaluating white milk in the school milk program, middle school students rated ‘packaging condition’ (4.23) the highest, high school students rated ‘nutrition’ (4.64) the highest, and their evaluation of all the quality attributes was significantly different from that of middle school students (p<0.001). Overall satisfaction scores too, showed a significant difference between high school (4.46) and middle school students (4.01) (p<0.001). Processed milk & dairy products had the highest satisfaction score in the attribute of ‘serving time’ (4.57). The relative importance of the choice attributes of the school milk program was in the order of ‘number per item’ (62.260%), ‘temperature’ (25.708%), and ‘serving method’ (12.032%) for all students. The school milk program most preferred by all students and middle school students was to provide milk at a refrigerated temperature, select white milk three times a week, processed milk, fermented milk, and cheese twice a week, and provide it at the desired time.
The study was aimed to investigate the operational meal costs by kindergarten size in Seoul and to analyze recognition for optimal meal prices. A survey (31.6% recovery rate) was conducted on all kindergartens (779 kindergartens) in Seoul on April 2021 using descriptive analysis, t-test, and dispersion method. A price sensitivity measurement (psm) method was used to determine optimal meal prices. Result showed an average food cost for kindergartens of 2,647 won, an average labor cost of 605 won, an average operating cost of 146 won, and the total meal cost of 3,506 won. Total meal cost decreased with increasing kindergarten size (p<0.001). On the other hand, kindergartens with more students decreased the ratio of food cost to total meal cost, and operating cost and labor costs (p<0.001) increased. The optimal price of kindergarten operators' meal cost (OPP) was KRW 3,673. Furthermore, the analysis showed the sensitivity of operators' meal costs to kindergarten size was insignificant.
The purpose of this study was to analyze the operators' perception of the allowable price range and the optimal price of kindergarten meals by using the PSM (price sensitivity measurement) technique and provide basic data on calculating kindergarten meal costs reflecting realistic meals. From April to May 2021, 779 kindergartens in Seoul were surveyed, based on 246 (31.6%) of the respondents. According to the survey, kindergarteners spent 3,506 won for meals on average, followed by 3,822 won for kindergarten attached to elementary school, 3,316 won for public kindergartens, and 2,896 won for private kindergartens (p<0.001). The allowed price range for the kindergarten meal service workers was estimated at 3,447~3854 won, 3,447 won for PMC (Point of Marginal Cheapness), and 3,854 won for PME (Point of Marginal Expensiveness). The appropriate cost of the kindergarten meal service provider was 3,950 won for kindergartens attached to elementary school, 3,425 won for public kindergartens, and 3,546 won for private kindergartens.
The purpose of this study was to investigate the perception of the quality of school meals by parents of kindergarten children in Seoul, analyze the acceptance price and the optimal school meal cost using PSM (price sensitivity measurement) techniques, and provide basic data for improving the quality of kindergarten meals. The survey was conducted using descriptive statistics and PSM analysis of the responses of 1,272 parents of 779 kindergarten children belonging to the Seoul Metropolitan Office of Education from April to May 2021 and prior research analysis related to kindergarten meals. 74.1% of the parents surveyed were women, with 61% of children attending kindergartens attached to elementary schools, followed by private kindergartens (28.9%) and public kindergartens (10.1%). According to a study of the quality of meals, private kindergarten parents are highly satisfied with all the quality attributes of meals, such as “sanitation of dining environment” and “nutritionally balanced food” (p<0.001, p<0.01). The analysis of the acceptance price range and the optimal price for school meals showed that there was no significant variation based on the type of kindergarten establishment, with parents' acceptance price range ranging from 3,596 won to 4,454 won with an optimal price of 3,948 won.
This study examined the relative importance and the effective utility of fermented milk by consumers. The questionnaire was developed by an in-depth interview and literature review and was surveyed on-line. Statistical analysis was carried out descriptive analysis, ANOVA, paired t-test, and conjoint analysis using the SPSS package. First, an analysis of the consumption status of fermented milk found that the consumption frequency was 1-2 times/week (36.2%), 3-4 times/week (26.5%). The product choice attributes of fermented milk were found to be the same with ‘taste’ (3.93) and ‘manufacturing date/expired date’ (3.92), rated the highest, followed in order by, ‘sanitary quality’ (3.82), ‘origin of ingredient’ (3.81). Comparative analysis of the importance and satisfaction level of the choice attributes of fermented milk showed that the choice attributes with lower satisfaction compared to importance were ‘taste’, ‘nutrients’, ‘manufacturing data/expired date’, ‘sanitation quality’, ‘price’, ‘manufacturing method’ and ‘certification of quality’ (p<0.001, p<0.01). ‘Price’ and ‘certification of quality’ were the choice attributes of fermented milk classified as ‘Focus Here’ because of its high importance and low satisfaction. The preferred combination of relative importance in choice attributes of the fermented milk was ‘domestic resource’, ‘Eat with spoon’, and ‘none additives’. Therefore, it is believed that sales will increase if dairy companies can improve the ‘price’ and ‘certification of quality’. In addition, the use of domestic ingredients in the development of new fermented milk products in the future could be an important marketing factor in consumer choice.
본 연구는 축산식품과 식중독 세균 조합의 위험순위 결정을 위한 방법으로 축산식품 관련 식중독사고 보고서(2008-2012년 자료), 축산식품 전문가의 견해, 반 정량적 위해평가 도구인 Risk Ranger 를 이용하여 문헌자료를 분석 그 결과를 비교하였다. 본 연구결과에 따르면 지난 2008년-2012년 기간 동안 국내 축산식품에서 식중독 발생 빈도가 높았던 주요 원인균은 Salmonella, Pathogenic E. coli, C. jejuni 순으로 나타났으며 Salmonella 식중독의 주요 원인 식품은 계란인 것으로 보고되었다. 그러나 국내에서 우선적으로 관리가 필요하다고 생각되는 식중독 세균/축산식품조합에 대해 축산식품 전문가들은 가장 우선적 위해 관리가 필요한 Top 5순위 중 첫 번째로 Campylobacter/계육을 제시하였고 그 다음으로 Salmonella/식용란 및 알가공품, Enterobacter sakazakii/조제분유, Pathogenic E. coli/ 분쇄가공육, Pathogenic E. coli/식육을 선정하였으며 Salmonella 는 식육보다는 식용란 및 알 가공품에서 우선적 위해관리가 필요함이 제시되었다. 또한 분쇄가공육, 소시지 및 햄류에 대해서는 Cl. perfringens, L. monocytogenes, S. aureus 의 3가지 병원성 미생물들의 위해관리의 필요성이 제시되었다. 또한 국외에서 개발된 반 정량적 미생물 위해평가 도구인 Risk Ranger 를 이용하여 국내 식중독 발생 통계자료 및 전문가 의견 설문조사 등과 비교 분석한 결과, Risk Ranger 는 식품과 미생물 조합의 위험 순위를 간단하게 평가할 수 있는 장점이 있으나 Risk Ranger 의 결과에 영향을 주는 입력변수에 필요한 데이터가 없을 경우에 최종결과를 신뢰하기에 한계를 보였다. 특히 국내에서는 축산식품 원재료에 대해 식중독 세균의 정량적 오염수준 및 공정에 따라 오염수준에 미치는 효과에 대한 자료가 매우 부족한 것으로 나타났는데 Risk Ranger 결과, 위해순위가 0으로 나타난 경우를 분석해 보면 모니터링 자료가 없거나, 섭취 전의 조리를 통해 99% 가열이 가능한 경우였다. 최종적으로 본 연구에서는 축산식품관련 식중독 발생 통계자료, 전문가의견, Risk Ranger 분석결과를 종합적으로 분석하여 식중독 세균/축산식품 조합에 대한 위해평가 및 관리 우선대상을 순위별로 그룹화하였다. 식중독 사고 발생 및 위해 가능성이 가장 높은 위험그룹 I 에는 Salmonella spp./식용란 및 알 가공품, Campylobacter spp./계육, Pathogenic E. coli/식육 및 분쇄가공육이 선정되었으므로 차후 이들 제품에 대한 정량적 위해평가 연구가 필요할 것으로 사료된다. 본 연구결과는 차후 축산식품 및 그 가공품에 대한 정량적 미생물 위해평가의 효율 성을 높이고 우선 관리 대상에 대한 과학적 근거 자료를 제시할 수 있을 것으로 사료된다.
The purposes of this study were to identify the relative importance attributes, deduct the ideal combination of total utility and establish the marketing strategies for quality improvement of foodservice at funeral halls of medical centers. Data were collected using self-administered questionnaires from 102 funeral foodservice employees and 71 chief mourners or the bereaved. According to the results from a conjoint analysis, among foodservice employees at funeral hall, the relatively important attributes were 'taste (52.84%)', 'menu variety (24.419%)' and 'price (22.741%)'; among chief mourners or the bereaved, they were 'taste (50.004%)', 'price (31.388%)' and 'menu variety (18.008%)'. The ideal combination of total utility was different between funeral foodservice employees and chief mourners or the bereaved; it was higher among chief mourners or the bereaved (1.211) compared to funeral foodservice employees (1.169). Thus, there should an endeavor to improve the foodservice quality in funeral halls of medical centers through better taste, low price and similar menu variety.
This survey was carried out to investigate the effects of dietary attitude on the nutrition knowledge, food habits, the daily average nutrient intakes and the intake of instant food, convenience food & fast food between college women and their mothers. Questionaries were completed by 214 college nutrition majors and also by their mothers numbering at 173. College women`s mothers showed a better average in meal time regularities per week than that of. college women. Also it is the fact that the college women had a higher frequency rate of instant food and fast food than their mothers. In the case of both college women and mothers if they eat at regular meal times they had a higher score in food habits. But the daily average nutrient intakes was not significant because of the fact that the meal time regularity and nutrient intakes did not concide. The higher frequency of instant food intake had a lower score in food habits and nutrition knowledge. The higher frequency of fast food intake had a higher food habits score but it also had a lower score in nutrition knowledge. As in the intake of instant food and convenience food the college women had a higher intake frequency. In the dietary pattern the college women they liked to eat flour foods. But their mothers liked to eat Korean foods. The selective motive and the degree of satisfaction of food service industry product was for convenience and time saving. The food service industry products were found to be unsatisfactory in nutrition and sanitation. Therefore we must be more aware of preventing the disappearance of Korean traditional foods. For the continuing development of our dietary culture we need to have the food service industry to develop more suitable diet for Korean.
