The purpose of this study was to analyze the food-related lifestyle choices of female baby boomers and to investigate variables regarding home meal replacement (HMR) buying behaviors and future needs. This study was conducted on 358 female baby boomers 53 years of age living in Gyeonggi and near Seoul. Out of 420 distributed questionnaires, 358 were returned and used for analysis (response rate: 85.2%). As a result of cluster analysis, three groups were identified based on the food-related lifestyles : a value-seeking group, a convenience-seeking group, and a health-seeking group. Among the three groups, there were significant differences in two socio-demographic characteristics, education level (p<0.05) and regular exercise (p<0.01), and in several health- and food-related habits, type of breakfast (p<0.01), type of dinner (p<0.05), dinner details (p<0.05), frequency of eating out (p<0.05), and eating habits score (p<0.01). The health-seeking group was significantly more likely to purchase ready to cook (RTC) items (59.1%) than were the other groups (p<0.001). However, the ratio of HMR purchasing for the purpose of meal replacement (p<0.05) and an HMR purchasing frequency of more than twice a week (p<0.001) were significantly lower in the health-seeking group. Reasons for selecting HMR showed a similar tendency among groups in taste (26.2%), convenience (18.7%), price (16.9%), safety (15.3%) and type of food (14.3%). However, the satisfaction scores for hygiene and safety reported by the health-seeking group were significantly lower than those reported by the other groups. More than two-thirds of all respondents were willing to purchase HMR in the future, though there were significant differences according to group: convenience-seeking group, 73.1%, health-seeking group, 70.1%, and value-seeking group, 65.7% (p<0.05). Our results suggest that the number of baby boomers purchasing HMR products will continue to grow and baby boomers will want HMR products to be more healthy (52.0%), safe (28.5%) and delicious (13.4%). An emphasis on taste was high in the convenience-seeking group, whereas an emphasis on health was high in the health-seeking and value-seeking groups. In conclusion, this study shows various food-related lifestyles amongst female baby boomers and illustrates the need to develop HMR marketing strategies targeted to these different lifestyles.
베이비붐 세대는 현재와 미래에 영향력 있는 주 소비계층 으로 기존 노인세대와는 차별화된 식행동을 보이고, 다양한 라이프스타일로 새로운 시장을 형성할 것으로 예측되는 바, 본 연구에서는 예비노년층인 50대 베이비부머 세대 여성들 을 대상으로 현재의 건강과 생활습관, 식습관 상태, 그리고 식생활 행동 양식 및 미래 식생활 요구도를 조사, 분석하였 다. 본 연구결과를 요약하면 다음과 같다. 1. 조사 대상자의 평균 연령은 52.6±2.3세이었고, 대부분 고 졸 학력(63.1%)에 핵가족 형태(76.1%)를 이루고 있었으며, 58.8% 가 아파트에 거주하고 있었다. 전업주부는 39.0%이었고, 29.7% 가 종일제 직장을 갖고 있었으며, 한 달 수입은 200만 원 미 만이라고 응답한 사람들이 44.3%로 가장 많았다. 현재의 삶 에 대해 8.1%만이 불만족하다고 응답하였고, 스트레스 정도는 75.6%가 약간만 느낀다고 하여 스트레스가 매우 심하거나(11.5%), 거의 없다(12.9%)는 비율보다 훨씬 많았다. 2. 조사 대상자들의 BMI는 59.0%가 정상군이었으나, 38.2% 가 체중 과다 및 비만으로 평가되었다. 현재 응답자의 2.8% 만이 흡연을 하고 있었고, 비음주자가 63.0%로서 음주 및 흡 연률은 높지 않은 것으로 나타났다. 그러나 과반수에 가까운 42.9%의 응답자는 규칙적인 운동을 하고 있지 않다고 하였 고, 정기적으로 건강검진을 받고 있다고 응답한 사람은 78.0% 이었다. 3. 식생활 습관을 평가한 결과, 100점 기준 본 조사 대상자 의 평균 점수는 70.6±11.8점으로 ‘보통’군에 속하였다. 식습 관 점수는 교육 수준(p<0.01), 소득 수준(p<0.01), 가족 형태 (p<0.05), 삶의 만족도(p<0.001), 스트레스 정도(p<0.001)에 따 라 유의적인 차이를 보였다. 또한 건강 및 생활습관 요인 중 흡연(p<0.05)과 음주(p<0.05), 규칙적 운동 실시 여부(p<0.001), 정기적인 건강검진 유무(p<0.05), 수면시간(p<0.05)과 관계가 있어 건강한 생활습관을 가진 사람들의 경우, 식습관 점수가 유의적으로 더 높았다. 4. 하루 3끼 결식률은 아침, 점심, 저녁식사 각각 18.2%, 1.1%, 5.2%이었다. 외식 빈도는 월 1~3회(32.4%)와 주 1~2회 (28.5%)라는 응답이 많았다. 식재료 구매 횟수는 55.7%가 1주 에 1~2회 정도라고 하였으며, 주로 구매하는 물품은 채소와 과일, 육류와 같은 식재료로서(79.6%), 응답자의 84.0%가 직 접 집에서 반찬을 만들고 있었다. 가정 내에서 식사를 준비하 는 사람은 주부 본인인 경우가 91.3%로 가장 많았고, 평균 식 사 준비시간은 1시간 내외이었다. 5. 미래 식생활 요구 형태를 조사하였던 바, 나이가 들면서 가장 어려울 것으로 예상되는 가사일인 식사 준비(49.4%)가 문제가 되는 이유는, 조리하기가 점점 귀찮아지기 때문(55.2%) 이었으며, 향후 노인이 되었을 때는 46.4%만이 본인들이 직 접 조리하여 먹겠다고 하였다. 실버타운을 포함한 노인복지 시설에서의 급식에 대하여 영양사가 계획한 건강한 음식이 고(40.7%), 식사 준비에서 해방될 수 있을 것이라는(36.3%) 긍 정적인 반응이 있던 반면, 시설급식을 원하지 않는 이유는 노 인복지시설에서 살고 싶지 않거나(48.8%), 시설급식이 맛이 없을 것이라는 선입견도 31.3%나 되었다. 국이나 반찬 배달 전문업체에 대한 인지도 조사 결과, 조사 대상자의 60.1%는 이미 알고 있었고, 응답자의 39.9%가 향후 이러한 배달식업 체로부터 국이나 반찬을 정기적으로 배달하여 먹을 의향이 있다고 하였으며, 학력이 높을수록 배달식을 이용하겠다는 경향이 높았다(p<0.05). 배달식업체를 이용할 경우, 국과 반찬 모두 구입하겠다는 응답자는 33.3%이었고, 가능한 지출금액 은 38.9%가 10~15만 원을, 26.8%는 5~10만 원이라고 응답하 였다. 배달식을 이용할 경우 고려하는 사항으로는 위생(43.7%), 영양(28.7%), 맛(18.4%), 가격(6.3%), 회사의 인지도(2.9%) 순 으로 나타났다. 이상의 결과들을 종합해볼 때 베이비붐 세대는 경제발전 과 건강 및 교육 수준의 향상, 그리고 이에 따른 사회․문화 적 욕구의 상승 등으로 인해 식생활 형태에서 기존의 노령 세대와는 다름을 알 수 있었다. 일례로 본 연구에서 지적되었 듯이 많은 응답자가 식사 준비를 귀찮아하고 있음에 따라 외 식을 하거나, 편이식품을 구입하여 집에서 간단히 조리해 먹 겠다는 경향을 보이고 있다. 가족관계 및 사회경제적인 다양 한 요인들로 인해 가정 내 식생활 패턴이 변화되고 있는 것이 다. 이러한 라이프스타일의 변화에 맞추어 가정에서 짧은 시 간에 간편하게 조리할 수 있는 가공식품이나 반찬 전문 서비 스 사업, 조리에 대한 부담과 시간을 덜어주는 배달 메뉴의 이용은 앞으로 새로운 트렌드를 형성해 나갈 것으로 전망된 다. 현재 노년 여성과 현 중년 여성의 이러한 여러 상황의 차 이를 고려하고, 베이비붐 세대의 식생활 가치 및 식생활 행동 에 초점을 맞추어, 고령화시대에 중요한 위치에 있지만 상대 적으로 연구가 이루어지지 않은 이들 세대에 대한 적절한 식 생활 모델의 개발이 이루어져야 한다고 사료된다.
To investigate the importance and practice of well-being related dietary life pattern such as purchasing food materials, food habits and eating out, a survey was conducted by questionnaire and 5-point Likert score in Seoul and Gyeonggi-Do, September, 2004 and April, 2005. The responses of 732 housewives who were over 40 years were analyzed by SPSS package program. The results were as follows. Most of them were 40-49 years(74.4%), graduated highschool (66.6%) and their family type was nuclear family type(81.4%). Almost half of them had full-time job (37.1%) and part time job (15.4%). The average importance score of 'food habits', 'purchasing food materials' and 'eating out' were 4.15±0.91, 4.06±0.96 and 3.25±1.01 respectively. But the average practice score of 'food habits' was greater(3.58±1.06) than 'purchasing food materials (3.19±1.19)' and 'eating out(2.54±1.05)'. Among 5 types of 'food habits', the type of 'cut down on eating fast food' had the greatest score of importances (4.31±0.97) but the difference between importance and practice was greatest(0.94). Also 'consume home-made food rather than processed or ready to food' showed great scores in importance (4.28±0.87) and practice(3.87±1.04). 'Consume fruits and vegetables rather than meats' and 'avoid heavy use of oils' had the importance score of 4.04~4.19. But the practice score of 'avoid heavy use of oils' was the lowest(3.39±0.97). Among four types of purchasing of food materials, 'purchase domestic agricultural food' was greatest(4.37±0.78) and 'don't purchase genetically modified food' 'purchase organic food' and 'purchase whole grain products' were also great (3.92~3.99). But the practice score of 'purchase organic/low chemical foods(2.77±0.98)' and 'don't purchase genetically modified food(2.99±1.41)' were lowest. 'Go to well being restaurant' in three types of 'eating out' showed greatest in importance(3.35±0.96) but the practice score(2.47±0.10) was lower than the importance score. Also 'choose menu with comparing calories' had the lower score in practice(2.45±1.06) rather than importance score(3.22±1.03). In regarding to 'food habits', the importance score were significantly affected by type of food expense (p〈0.05) and health status (p〈0.05). The importance score of 'purchase food materials' were significantly affected by the type of food expense (p〈0.001), type of residence(p〈0.05), and self assessment of weight(p〈0.05). Monthly income, especially more 400 million won, was the commonly significant effector in practice score of 'purchase food materials' and 'eating out'.
The purpose of this study is to examine current foodservice management practices at free congregate meal service for elderly people. Forty seven meal service centers as well as randomly selected Seoul and Kyunggido area were surveyed and interviewed and results were summarized as follows: The cost of each meal(lunch) was ranged from 1,300 won to 1,500 won and 68% of target centers were severed over 100 meals per day. Meal time for lunch begins from 10:30 am to 12:00 because great portion of elderly didn't take breakfast frequently. 52.3% of centers severed meal 5 times per week, just weekdays. 21.3% of centers employeed dietitian, 63.8% of center employeed cook. 95.7% of center were supported labor force by volunteers. Volunteer was important contribution to free meal service. Utilizing the labor force more effectively is thus a major challenge facing manager in each center. Ideal supporting system of free foodstuff, foodbank was still minor source of securing foodstuff. Most of centers(46 centers)served lunch, only one of them served breakfast and lunch. Government was the major financial sponsor, the second of them was religious organization. The large portions of financial support provided only food cost of total meal service budget. Most of center adapted self-service system. Standardized recipes were not developed and meal preparation was controlled under the experience of volunteers. Recording system of nutrition management, production control, storage and inventory control was not adapted by most of sites. It is suggested that in order to meet the change of the patterns of social and family structure, the service of the center should be offended in urban area and it is necessary to develop systematic management models for the center. It was suggested that not only financial support but also systematical support on management by the local government may be necessary to meet the goal of supply nutritionally balanced food at center.
The contents of articles on food safety and policy in the Donga and Chosun Ilbo from January 1960 to June 1996 were analyzed for the evaluation of subjects and trends in mass media. Among the total of 490 articles, those on cereals were most frequently appeared (20.0%), followed by the articles on sea foods (10.6%) and meats (10.0%). Articles on fats and oils were the least (2.0%) in frequencies. The proportions of articles classified based on the 10-year interval were 28.0% in the 60's, 28.0% in the 70's, 20.6% in the 80's, and 23.4% in the 90's. Major contents of articles were the safety of imported foods, food contaminations by agricultural chemicals, heavy metals and harmful additives.
The purpose of this study was to evaluate the important changes and the trends in Korean newspaper articles related to 1) food habits and food consumption patterns 2) nutrition, health and diseases 3) food safety and policy. The method used in this study was content analysis of the articles pressed in Donga ilbo and Choseun ilbo from January 1960 to June 1996. Among the total 1814 articles, those on nutrition, health and disease were 922 (50.8%), food safety and policy were 490 (27%) and food habits and consumption patterns were 402 (22.2%). The articles related to food habits and consumption patterns dealt with four contents, food habits reformation, changes in food consumption patterns, nutritional status and food habits. The frequencies of food habits content were highest (51.1%) and especially increased in 1980's and 1990's as the concerns on health and pursuit of convenience were increased. Most of contents related to food habits were health and longevity diet (44%) and eating out (27.5%). The percentile of food habits reformation, the changes in food consumption patterns and nutritional status were 20.1%, 18.4% and 10.0%, respectively. The contents of food habits reformation were most interested in 1960's when food shortage and poverty prevailed. Nowadays, the major subjects of food habits reformation were changed to the problem of wastage and the use of our agricultural foods. The frequencies of change in food consumption patterns were gradually increased from 1960's (7 item) to June 1996 (34 items). And the most of contents related to nutritional status were focused on suffering from food shortage especially in 1960's.
This study was designed to investigate clinical features, allergy-inducing substances as well as foods, and nutritional behavior of allergic patients. Sixty-eight adult male and 78 adult female patients were surveyed by using the self-developed questionnairs. The results were as follows: 1. The common target organs of allergic symptoms included bronchus, skin and nose. 2. 37.7% of the subjects did not recognize their allergy inducing substances. Among the known substances, house-dust mite, food, temperature and weather change, pollens, smoke, air pollution materials, drugs and even stress provoked symptoms. 3. As for the food allergy, a number of foods were found to be implicated in allergic reactions. These foods included pork, chicken, seafoods such as mackerel, crab & shrimp, milk, egg, peanut, apple and pupa. Symptoms and signs of food reactions included urticaria, asthma, and rhinitis. 4. The nutrition adequacy ratio (NAR) of energy was below 0.75 for male patients and about 0.80 for female patients. And 24.0% of the subjects were regarded as excellent, 31.5% as fair, and 44.5% as poor in food related behavior evaluation.
