본 실험에서는 탈지 유채박 중 표면활성물질의 추출을 위 해 초임계 CO2 유체 추출법을 이용하였다. 추출 독립변수는 추출압력(150~350 bar), 온도(33~65℃), 보조용매량(ethanol, 150~250 g)으로 하였으며, D-optimal design에 의한 반응표면 분석을 통해 추출수율, 중성지질 분획, 인지질 분획, 당지질 분획 함량 등의 종속변수에 대한 최적 추출조건을 검토하였 다. 그 결과, 압력, 온도, 그리고 보조용매량이 증가함에 따라 종속변수 즉, 추출수율, 인지질, 당지질 함량 등은 증가하였 으나, 중성지질 함량은 감소하는 것으로 나타났으며, 그중 보 조용매량이 각 종속변수에 가장 큰 영향을 주는 것으로 나타 났다. 본 연구를 통해서 유도된 회귀식 모형은 실험을 통해 얻은 결과와 잘 일치하였으며, 초임계 CO2 유체 추출에 있어 서 종속변수인 추출수율, 인지질, 당지질 함량 등을 최대로 하면서 중성지질 함량을 최소로 하는 최적화된 추출조건은 추출압력 350 bar, 추출온도 65℃, 보조용매량 228.55 g으로 분석되었으며, 이 조건에서 추출수율은 5.98%, 추출물은 중 성지질 3.0%, 인지질 69.43%, 당지질 17.46% 등의 조성을 나 타낼 것으로 예측되었다.
This study aimed to investigate the emulsifying properties of bovine lactoferrin in food emulsion system. First, lactoferrin solution was prepared to study its surface activities, such as surface adsorption characteristics and ζ-potential. Second, some physicochemical properties of lactoferrin emulsion which resulted from variations of environmental conditions (i.e., pH or NaCl addition) were determined. As for surface adsorption characteristics evaluated by surface tension, it was decreased with increasing lactoferrin concentration in solution (1×10⁻⁵→0.2 wt%) and showed a plateau (≒44 mN/m) above 0.01 wt%. It was also changed with pH and the minimum value of 53.8 mM/m was observed at pI of lactoferrin. This was related to changes in ζ-potential of the lactoferrin solution with respect to pH. Fat globule size of lactoferrin emulsion was decreased with increasing lactoferrin concentration and a stable emulsion was formed above 0.5 wt% lactoferrin in emulsion with fat globule size d₃₂ of ca. 0.33 μm as confirmed by creaming stability experiment (i.e., Turbiscan). As with surface tension, fat globule size of lactoferrin emulsion also changed with pH and showed a maximum value at pI. As evaluated by Turbiscan, in the presence of NaCl, the lactoferrin emulsion showed instability in particular above 10 mM.
This study was carried out to investigate the emulsifying properties of surface-active substances from defatted rapeseed cake by supercritical CO₂extraction. Based on the interfacial tension data, a supercritical fluid extract (SFE) with the lowest value of 14.16 mN/m was chosen for evaluation which was obtained from No. 2 extraction condition (150 bar, 65℃, 250 g). For emulsions with SFE, some physicochemical properties (i.e., fat globule size, creaming stability, zeta potential etc) were investigated according to changes in SFE concentration, pH, and NaCl addition in an emulsion. It was found that fat globule size was decreased with increasing SFE concentration in emulsion, with showing a critical value at 0.5 wt%, thereby resulting in less susceptibility to creaming behavior. The SFE emulsion also showed instability at acidic conditions (pH<7.0) as well as by NaCl addition. This was coincided with zeta potential data of emulsion. In addition, SSL (sodium stearoyl lactylate) found to be suitable as a co-surfactant, as it helped considerably in decreasing fat globule size in emulsions and its optimum concentration to be over 0.03 wt%, based on 0.1 wt% SFE in emulsion.
본 연구는 국내산 쌀보리(새쌀, 새찰, 흰찰보리) 전분의 이화학적 특성 및 이들 전분 현탁액의 가열에 따른 호화양상 및 레올로지 특성에 대해 연구하였다. 새쌀보리 전분은 아밀로스 함량이 새찰 및 흰찰보리 전분에 비해 높았으며, 물결합력은 낮았다. 팽윤력은 전반적으로 새쌀보리 전분이 새찰 및 흰찰보리 전분에 비해 낮았고 80oC 이상의 고온에서 급격히 증가하는 특성을 보인 반면, 새찰 및 흰찰보리 전분은 온도의 증가와 더불어 일정하게 증가하였다. 용해도는 새쌀보리 전분이 새찰 및 흰찰보리 전분에 비해 낮았으며, 세 전분 모두 80oC 이상의 고온에서 급격히 증가하였다. 전분 입자의 표면형태는 품종에 관계없이 모두 납작한 원형의 큰 입자와 불규칙적인 구의 형태인 작은 입자로 이루어져 있었다. 전분의 입도분포는 세 품종 모두 큰 입자 및 작은 입자로 구성되어 나타나는 bimodal 분포를 나타냈다. DSC 분석을 통한 전분의 열적특성에 있어서 새쌀보리 전분의 To가 62.25oC로 새찰(63.75oC) 및 흰찰보리 전분(62.53oC)에 비해 낮았으며, 호화온도 범위(To-TC)는 새찰, 흰찰, 새쌀보리 전분 순으로 높게 나타났다. RVA 및 small-deformation measurement로 부터 새쌀보리 전분은 높은 강도의 겔을 형성하는 반면에 노화되기 쉬우며, 찰보리 전분(새찰 및 흰찰보리 전분)은 겔 강도는 낮으나 쌀보리 전분에 비해 현저히 낮은 노화특성을 나타낼 것으로 사료되었다.
This infection includes an allergic bronchial reaction, an aspergilloma, and an invasive aspergillosis, which is more common in immunosuppressed patients and presents as multiorgan disease. The maxillary sinus is a relatively common site for formation of an aspergilloma where it forms around a nexus of foreign body. It has been indicated that the foreign body containing zinc extruded into the maxillary sinus has the potential to become infected and form an aspergilloma. The treatment of this disease is radical surgery and adjunctive systemic antifungal therapy. This is a case report of solitary aspergillosis of the right maxillary sinus. We experienced a case of right maxillary sinus aspergillosis in a 37 years old male who has dull pain on right temporal and zygoma area. We reported a case with review of literature
