        This study was conducted to know effects of forage cutting height and inoculants application on chemical composition, fermentation characteristics and fatty acid profile of barley silage. Barley forage(Yuyeon hybrid) was harvested at two different cutting heights(5 vs. 15cm) and applied with or without Lactobacillus plantarum, and ensiled for 0, 2, 7, 28, 49 and 100days. On 0 to 49-d of ensiling, higher cutting height resulted rapid drop (p<0.05) in pH caused by higher lactate content. Crude protein (p<0.01) content of 100-d silage was decreased by inoculation, but increased by higher cutting height. However, neutral detergent fiber and acid detergent fiber contents were decreased (p<0.05) by both inoculation and cutting height. In vitro dry matter digestibility was improved by higher cutting height (p=0.01), while yeast and mold counts were reduced (p<0.0001). The C18:3n-3 content in barley silage was decreased (p=0.001) by inoculation, but increased (p=0.034) by higher cutting height. The DNA analysis indicated L. plantarum dominating fermentation in inoculated silages. The results showed that higher cutting height can improve silage quality in terms of increasing crude protein content and digestibility as well as reducing yeast and mold counts in barley silage.

        A total of 30 Korean native pigs (gilt 15, boar 15) were used to investigate the carcass characteristics, meat quality, amino acid, and fatty acid composition by gender. The carcass weight of boars were significantly higher than gilts, whereas the carcass yield of gilts had significantly higher than boars (p<0.01). Boars had significantly higher moisture contents in loin muscle than gilts, whereas the protein contents of loin muscle had significantly higher in gilts than boars (p<0.01). In the results of meat quality analysis, the cooking loss (p<0.01), shearing force (p<0.05), lightness (L) and yellowness (b) in meat color (p<0.05) were significantly higher, but the pH was significantly lower (p<0.01) in gilts compared with boars. Arginine (p<0.05), alanine, aspartic acid, histidine, leucine, lysine, phenylalanine, serine, threonine and tyrosin (p<0.01) for gilts were significantly higher than those for boars. The results of fatty acid composition showed that gilts had significantly higher contents of C16:1n7, C18:1n9, C20:1n9 (p<0.01) than boars in intramuscular fat, whereas boars had significantly higher contents of C18:2n6, C20:4n6 (p<0.01) and C18:3n3 (p<0.05) than gilts in intramuscular fat.

        This study was conducted to examine the effect of dietary n-3/n-6 fatty acid (FA) ratio on in vitro dry matter digestibility (IVDMD), fermentation indices and FA profile. Rice bran was mixed with oil sources (cotton seed oil and linseed oil) to make the diets at 0.02, 0.29 and 0.61 of dietary n-3/n-6 FA ratio. These diets (0.5g) were placed into the incubation bottles with 40 ml of anaerobic culture medium, which contained rumen fluid and Van Soest medium at 1:2 ratio. Five replicates of each diet and two blanks were incubated at 39℃ for 48 hours. After incubation, the incubated contents were centrifuged. The residues were freeze-dried for DMD and FA analyses. The supernatant was used for pH, NH3-N and volatile fatty acid analyses. The concentrations of lactate (p<0.001) and iso-valerate (p<0.001) decreased linearly with increasing dietary n-3/n-6 FA ratio, but acetate concentration (p=0.056) and the ratio of acetate to propionate (p=0.005) was increased linearly. The concentrations of n-3, n-6 FA and the ratio of n-3/n-6 FA in residues increased (p<0.001) linearly with increasing dietary n-3/n-6 FA ratio, but C18:1n-9 FA concentration was decreased (p<0.001) linearly. With these results, it could affect fermentation characteristics and FA profile of rumen content by dietary n-3/n-6 FA ratio.

        In resent year there has been research on benefits of conjugated linoleic acid (CLA) and docosahexaenoic acid (DHA) for human health. The effect of a fat supplement made from seaweeds meal plus palm olein meal (FS) and replacement of concentrate on milk production, and milk fatty acid (FA) profiles of dairy cows fed grass silage based diets was evaluated. Ten Holstein lactating cows were divided into a two groups. The cows in a group were fed concentrate at 40% on TDN basis (control). The cows in another group (Treatment) were supplemented 0.5㎏/day/cow of FS as a substitute for 2㎏/day/cow of concentrate. The medium chain fatty acids and DHA content of FS were 345 ㎎/g DM and 35 ㎎/g DM, respectively. Total DMI, DM digestibility and milk production as well as milk composition did not differ between the two groups. The intake of ether extract was higher (P<0.01) in Treatment than control group (1.1 ㎏/day/cow vs. 1.3 ㎏/day/cow). The short and medium chain of FA in the milk did not differ between two groups. The trans11C18:1vaccenic acid, cis9trans11CLA and C18:3 concentrations in the milk were higher (P<0.01) in Treatment than control group(1.88 g/100gFA vs. 1.03 g/100gFA, 0.93 g/100gFA vs. 0.51 g/100gFA and 0.48 g/100gFA vs. 0.48 g/100gFA). However, the C18:2 concentration in the milk was lower (P<0.05) in Treatment than Control group (1.38 g/100gFA vs.1.17 g/100gFA). There were detected 0.13 g/100gFA of DHA in the milk in Treatment group. Results indicated that addition of the FS has the potential of increasing CLA and DHA in cow's milk.

        This study was conducted to investgate the effect of gamma irradiation on the lipid oxidation, olfactory properties, fatty acid isomer and volatile compound profiles of five different oil sources. Three plant oils, canola oil, corn oil and soy oil, and two animal fat, tallow and fish oil, were irradiated with 0, 5, 10, and 20 kGy level of dose by Co-60 as a radiation source. Lipid oxidation parameters, FFA, POV and TBARS, were determined according to the AACC and AOCS method. Olfactory property of irradiated oil sources was analyzed using electronic nose (FOX3000, AlphaMOS Co., France) with 12 metal oxide sensors and the result was interpreted using principle component analysis program. Fatty acid isomer profiles and volatile compound profiles of irradiated oils were also measured by GC and GC-MS, respectively. Although the free fatty acid level of oil were the highest by high dose level (20 kGy) of irradiation, changes of both TBARS and POV values by gamma irradiation were varied between oil sources and irradiation level of dose. Electronic nose analysis showed a distinct difference among dose levels of irradiation. Although there was no new volatile compound produced by gamma irradiation, amounts of each volatile compounds were increased by irradiation. Only cis isomer, 9c12c15c of linolenic acid was dose-dependently decreased as irradiation level increased but there was no difference among other isomer profiles of linoleic acid and linolenic acid by gamma irradiation. This study showed that changes in physico-chemical properties of both plant and animal oil were remarkable by gamma irradiation. Therefore, a further study should be needed to scrutinize the interaction among lipid oxidation, production of volatile compounds and off-flavor, and isomerization of fatty acid by gamma-irradiation.

        The distribution of Listeria spp. in various foods and its fatty acid composition were examined. A total 60 samples of dairy products(15), seafoods(20), meat products(18), factory wastes(2), and salades(5) were tested. Listeria spp. was found 10 samples, showing about 16. 7% detection ratio; dairy products 0(0%), seafoods 1(5%), meat product 7(38.9%), factory wastes 2(100%) and salades 0(0%). L. monocytogenes was isolated from 6 samples(10%); seafood 1(5%), meat products 3(16.7%) and factory wastes 2(100%). L. innocua was isolated from meat products 7(38.9%) and factory wastes 2(100%). Whereas L. welshimeri was isolated from meat product 1(5. 6%) and factory wastes 1(50%). The cellular fatty acid composition determined by gas chromatography was found not to differ among L. monocytogenes and L. innocua. Twenty three strains of L. monocytogenes and twenty two strains of L. innocua isolated from foods has similar fatty acid profiles when grown at 30℃, 24 hrs on the tryptic soy plate with C_(15) and _(17)' anteiso branched acids accounting for about 80% of total.

        The present study aimed to examine the effects of dietary illite as a feed additive on the Haugh unit and fatty acid profiles of eggs. One hundred and twenty laying hens (48-week-old Hy-line Brown) were randomly assigned to one of the following two treatments: control or 2% illite powder. At 2 and 4 weeks, the Haugh unit values between the control and 2% illite powder groups were not significantly different (p>0.05). In addition, individual fatty acid content at 2 and 4 weeks did not differ between the treatments (p>0.05), except for palmitic (C16:0) and palmitoleic acid (C16:1) content. The addition of 2% illite powder caused no difference between the total saturated and total unsaturated fatty acids at 2 and 4 weeks (p>0.05). In conclusion, the addition of dietary illite at a rate of 2% did not improve the Haugh unit values or fatty acid profiles of eggs.

        This study was conducted to determine the effects of dietary bentonite supplementation on the fatty acid profiles of eggs in older laying hens. A total of 90 Hy-line Brown layers, 74 weeks of age, were confined in 6 wire cages and then assigned randomly to two groups to receive one of the two diets (3 replicates of 15 older layers each) containing 0 and 0.2% bentonite for 4 weeks. After the 4-week feeding trial, no remarkable differences in individual fatty acid, saturated fatty acid (SFA), unsaturated fatty acid (UFA), and mono unsaturated fatty acid (MUFA) levels were found. However, linoleic acid, docosahexaenoic acid, and poly unsaturated fatty acid (PUFA) and UFA/SFA ratio were influenced by 0.2% bentonite. In conclusion, supplementation with 0.2% bentonite improved the profiles of PUFA more than those of SFA, UFA, and MUFA inthe eggs of the older laying hens.

        Ninety ducks (one-day-old Pekins, 45 males and 45 females) were used to evaluate the effects of supplementing diets with Houttuynia cordata powder on the fatty acid profiles of duck breast meat. The ducks were allotted to one of the three treatment diets using a completely randomized design, each treatment-group containing three replicate pens with ten birds each (five of each gender). The experimental diets were: 1) Control (basal diet), 2) T1 (Control+ 1% Houttuynia cordata) and 3) T2 (Control+2% Houttuynia cordata). In spite of significant difference, the addition of Houttuynia cordata resulted in higher unsaturated fatty acid and lower saturated fatty acid contents than in the Control group. However, no remarkable difference was observed between 1% and 2 % Houttuynia cordata groups for fatty acid profiles.

        This study aimed to investigate the effects of dietary supplementation of mixed probiotics on growth performance and fatty acid profiles of Korean native chicken and to provide information regarding producers. Ninety six Korean native chicken (48 males and 48 females, Hanhyup-3-ho) were allocated to 16 wire cages with 4 treatments, 4 replicates and 6 chicks (3 males and 3 females) per wire cage and fed one of four diets containing 0, 0.5, 1 and 1.5% mixed probiotics for 6 weeks. There were no differences among treatments in growth performance of Korean native chicken. For fatty acid profiles, no statistically differences in each fatty acid, total saturated fatty acid and unsaturated fatty acids were observed in all treatments. In the present study, irrespective of statistically differences, inclusion of mixed probiotics tended to improve growth performance, reduce saturated fatty acid and increase unsaturated fatty acids in breast muscles from Korean native chicken compared to controls.

        본 연구는 혀의 분얼최성기의 관수스트레스 시 탁도(청수, 반탁수, 탁수) 및 관수시간에 따라 반응하는 단백질, 지방산 조성 및 지질과산화(malodialdehyde)를 정량하여 관수에 따른 생육장해 및 그 작용기작을 구명하여, 관수에 따른 생화학적 대사의 기초자료를 제공하고자 실시되었다. 관수스트레스에 의해 가용성단백질은 약 20%가 감소하였다. 특히 탁도가 높고 관수시간이 경과할수록 급격히 감소하였으며, 관수 36시간부터 감소량이 크게 나타났다. 단백질 전기영 동패턴은 관수스트레스에 따라 생성이나 소멸한 펩타이드는 없었으나 약 53Kd부위의 폴리펩타이드는 관수초기부터 함량이 증가하였고, 약 28Kd는 48시간, 54시간에서만 함량이 증가하였다. 관수스트레스에 의한 지질의 과산화정도는 약 150%가 증가하였고, 탁도처리에서 청수와 반탁수간의 차이는 작은 경향이었지만, 관수 60시간에서 약 160-180%가 증가하였다. 그러나 탁수에서는 관수초기부터 malondialdehyde함량이 높았고, 36시간이후부터는 약 190-200%로 급격히 증가하였다. Catalase는 탁도가 높고 처리시간이 경과할수록 활성은 급격히 증가하였다. 관수 48시간을 기준으로 catalase 활성변화가 크게 나타났다. 지방산조성의 변화는 포화지방산의 조성비율은 증가하고 불포화지방산은 감소하였다. 특히 불포화지방산 중 monounsaturated은 증가하였고 polyunsaturated의 상대적인 조성비율은 감소하였다. Double bond index는 탁도가 높을수록 관수기간이 경과할수록 감소폭은 커서 불포화정도가 떨어짐을 나타냈다.
