        새싹삼의 곰팡이 발생을 조사하기 위해 18점의 유통중 인 새싹삼을 수집하여 곰팡이 발생빈도를 분석하였다. 전체 시료의 총 곰팡이 발생빈도는 평균 113.3-174.1%였고 Penicillium spp.의 발생빈도가 가장 높았다. 곰팡이 발생 빈도는 이끼가 잎, 줄기, 뿌리보다 유의하게 높았다. 잎과 줄기에서는 Penicillium spp.이, 뿌리에서는 Fusarium spp.의 발생이 높았으며 각각의 우점종은 P. olsonii와 F. oxysporum으로 동정되었다. 계통발생학적 분석을 통해 Fusarium spp.은 총 9개 종, Aspergillus spp.은 A. westerdijkiae와 A. favus, Penicillium spp.은 총 11개 종이 동정되었다. 곰팡이독소 생성 종으로 알려진 25균주의 독소형을 PCR로 검정한 결과 19점의 균주에서 각 독소형이 확인되었다. 이 중 A. flavus 2점과 A. westerdijkiae 11 점이 aflatoxin과 ochratoxin A을 각각 생성하였고 일부 균주는 높은 독소생성능을 보였다. 이 결과는 새싹삼 생산에 있어 곰팡이 발생에 대한 지속적인 모니터링 및 관리방안이 필요함을 시사하였다.

        본 연구에서는 나노버블수로 재배한 새싹인삼(NB-4)과 일반수로 4개월간 재배한 새싹인삼(NA-4)의 이화학적 차이와 조사포닌 및 진세노사이드의 함량을 비교하여 나노버블수로 재배한 새싹인삼의 우수성을 확인하였다. 또한 NB-4 새싹인삼의 상업적 적용 가능성에 대한 기초자료를 확보하고자 시판 효소 3종으로 가수분해하여 이화학적 특성 및 항산화 활성을 비교 하였다. 생장 특성에서는 NB-4 새싹인삼이 NA-4 새싹인삼에 비해 길이나 굵기 면에서 더 높은 생육 증진 효과가 확인되었다. 잎과 뿌리 모두에서 회분과 조지방 함량은 시료간에 유의적인 차이가 없었다. 조사포닌 함량은 NB-4 새싹인삼에서 더 높았으며, 총 진세노사이드 함량은 NA-4가 더 높았는데 특히 잎에서의 Rb2 함량은 NB-4 새싹인삼에 더 높았다. 총 페놀화합물의 함량은 NB-4의 잎과 NA-4의 뿌리에서 유의적으로 높은 함량이었고, 플라보노이드는 잎에서만 검출되었으며, NB-4와 NA-4 간에는 유의적인 차이가 없었다. 상대적으로 조사포닌 함량이 높았던 NB-4를 viscozyme, cellulast 및 fungamyl 각각으로 가수분해 한 결과 viscozyme으로 가수분해 했을 때, pH는 가장 낮고, 산도, 환원당 함량과 총 페놀화합물의 함량은 가장 높았다. 효소 분해물의 항산화 효능을 DPPH와 ABTS 라디칼소거능으로 평가한 결과 각각 viscozyme과 fungamyl 분해물의 항산화 활성이 우수한 것으로 확인되었다. 이상의 결과를 종합하여 볼 때 나노버블수로 재배한 새싹인삼에서 사포닌함량이 더 높으며, 효소분해물 제조시는 적용되는 효소에 따라 항산화 활성을 높일 수 있으므로 액상 추출물의 제조에는 효소의 적용이 적합한 것으로 판단된다.

        Background : This study was conducted to select a optimal combination of LED light sources for stable production of sprout ginseng used as vegetables throughout the year. Methods and Results : The treatments to select the optimum LED light source for the production of functional sprout ginseng were ①Blue40%: Green40%: Red40% (B40 + G12 + R20 umol·m-2S-1), ②B50: G25: R10 (B50 + G8 + R5 umol·m-2S-1), ③B50: G20: R40 (B50 + G6 + R20 umol·m-2S-1), ④B35: G20: R35 (B35 + G6 + R18 umol·m-2S-1), ⑤B20: G0: R40 (B20 + R20 umol·m-2S-1), ⑥control (a general fluorescent lamp for plant cultivation, FL40W, PG, 35.0 umol). The ginseng seedlings used in the test were subject to preconditioning process for one week after the cold treatment at 4℃ for at least three months. The root media were composed of porous artificial soil 40% + peat moss 30% + perlite 20% + Vomito (brand name)10%. We planted 35 seedlings (planting density 5 × 7 ㎝) in a 480 × 380 × 295 ㎜ plastic box. The two liters of water were irrigated per a plastic box when water potential reached -33 kPa using a tensimeter. The cultivation room was maintained at 25℃ with 45% of the relative humidity, and 16 hours of lighting for growing conditions. The growing period was 40 to 60 days after planting. The results were as follows; the treatment of LED B50%: G25%: R10% (B50 + G8 + R5 umol·m-2S-1) increased the diameter of the sprout ginseng by 10.3% (4.95 → 5.46 ㎜), root weight 27.3% (1.1 → 1.4 g), fresh weight 38.9% (1.8 → 2.5 g) in comparison with the control. The contents of ginsenoside such as Re, Rg2, Rc, Rb2, and Rd increased 24.2% (24.8 → 30.8 ㎎/g). Conclusion : The optimal light source for sprout ginseng was LED B50%: G25%: R10% (B50 + G8 + R5 umol·m-2S-1), which increased sprout production by 38.9% in comparison with the control.

        Background : Currently sprout ginsengs are produced in extensive variations of cultivation times, methods and specifications that are different in each farm in Korea. Also, regardless the effective ingredient content of ginseng, overgrown sprout ginseng are distributed so that the quality standardization of sprout ginseng is urgently required. The sprout ginseng market is only a segment of the Korean ginseng market still. However, If development of processed products utilizing the functionalities is connected, the market may exponentially grow. Also, if the use of sprout ginseng is extended to productions of drinks, cosmetics, facial masks and others in the cosmetics and health functional food industries, the export competitiveness to the global market is expected to increase. Therefore, this study aims the quality standardization of sprout ginseng to secure the market competitiveness in Korea and overseas by examining the property change following the cultivation period. Methods and Results : Growth of sprout ginseng were investigated on 20 th, 30 th, 40 th and 50 th days after planting on May 30 th. Growth of above-ground parts and underground parts of 2-years-old sprout ginseng increased with longer growing period. As the growing period became longer, the sprout ginseng weight increased, that is the result of the increase of the above-ground part. Also, according to the examination on the leaves, stems and roots properties of 2-year grown sprout ginseng in each growing period, a trend that, as the growing period is longer from 20 days to 50 days, the hardness, gumminess, chewingness and fracture of leaf, stem and root are higher. Conclusion : In case of cultivating sprout ginseng in a green house, as the growth period of 2-years-old sprout ginseng was prolonged, the growth of above-ground parts and underground parts was improved. And, as the growing period of sprout ginseng was prolonged, the properties of leaves, stems and roots tended to increase.

Methods and Results : For the overground growing in green houses, the sprout ginsengs planted in early April and early June show to be better in growing than the ones planted in early August. For the underground growing, while no significance is found among the cultivation periods, the sprout ginsengs planted in early June are excellent in terms of the root length and the weight of overground portion. Also, according to the examination on the stem properties of 2-year grown sprout ginsengs in each cultivation time, a trend that, as the growing period is longer from 25 days to 35 days, 45 days and 95 days, the hardness, gumminess, chewingness and springiness of stem are higher. And, on the hardness, gumminess, chewingness and springiness of leaf, while no statistically significance is found in the growing periods from 25 days to 45 days, the 95-day sprout ginsengs show high figures referring that the leaves becomes tougher. Conclusion : In case of cultivating sprout ginsengs in a green house, cultivating in April - June is advantageous for the overground and underground growing. And, it is determined that cultivating sprout ginsengs for 35 - 45 days produces leaves and stems with the most excellent chewing textures felt by consumers when chewing.

        Background : In recent, a nationwide decrease in ginseng cultivation area and production is observed, and as the sales of ginseng decreases due to the economic downturn, the ginseng industry in Korea is going through more and more difficulties. However, sales of young ginseng, which are ready for the market after a short-term cultivation - 25 to 45 days - of 1 year old ginseng seedlings or 2 - 3 year old young ginseng in greenhouses and plant factories without using any chemical fertilizers, in large grocery chains and online shops is increasing. However, proper studies on cultivation of young ginseng in greenhouses are yet to be conducted, and thus, experiencing several issues including the cost burden of bed soil and disease occurred from reuse of the soil. Therefore, this study is to provide solutions for farmers cultivating young ginseng by determining the optimal type and amount of bed soil for box culture. Methods and Results : To determine the optimal type of bed soil for cultivation of young ginseng, six types of bed soil were produced by blending bed soil specialized for ginseng, granite residual soil and leaf mold in different ratios. To determine the optimal amount of bed soil for box culture of young ginseng, 1 year old ginseng seedlings are planted in three boxes - each in size of 52 ㎝ × 36.5 ㎝ × 9 ㎝ (W × L × H) filled with soils of 6 ℓ, 7 ℓ and 8 ℓ for an experimentation. Growth and development of 45-day old young ginseng showed satisfactory progress in the following order: 100% commercially available bed soil > 80% commercially available bed soil + 20% granite residual soil > 60% commercially available bed soil + 20% granite residual soil + 20% leaf mold, while the gross weight of below-aerial parts showed the same result. Conclusion : The optimum type of bed soil for greenhouse cultivation of young ginseng is the commercially available bed soil specialized for ginseng cultivation. However, the young ginseng showed relatively satisfactory growth and development in mixed bed soil - 60% commercially available bed soil + 20% granite residual soil + 20% leaf mold - and the growth and development of young ginseng were most satisfactory when the box (52 ㎝ × 36.5 ㎝ × 9 ㎝, W × L × H) was filled with 8 ℓ bed soil.

        Background : The main ingredients of bed soil specialized for ginseng, which is often used in cultivation of young ginseng, are peat moss, vermiculite and cocopeat. These ingredients are imported from overseas countries because they are not produced in Korea, and thus play an important role in pricing of the bed soil. The bed soil products show satisfactory ability to retain moisture but, are known to require different containers and water management methods depending on the components of the soil and the crops to be cultivated. However, proper studies on cultivation of young ginseng in greenhouses are yet to be conducted, and research data on water management methods and irrigation amount for box culture of young ginseng are largely unavailable. Methods and Results : To establish the proper method of irrigation for cultivation of young ginseng, young ginseng were cultivated while providing water once a week through the method of drip irrigation and the method that combines drip irrigation and sprinkler irrigation. To establish the proper amount of water required, each box is provided with 2 ℓ, 3 ℓ and 4 ℓ of water respectively and the growth and development of both above and below aerial parts were examined after 45 days. The growth and development of both above and below aerial parts of young ginseng did not show any statistically significant differences between the two irrigation methods but, the young ginseng provided with water through the method that combines drip irrigation and sprinkler irrigation showed a relatively superior growth. Conclusion : Based on the above results, the proper method of irrigation for greenhouse cultivation of young ginseng is to combine the sprinkler irrigation - before budding - and the drip irrigation - after budding. The young ginseng showed the most satisfactory growth when provided with 4 ℓ water once a week, while those provided with less water – 2 ℓ - showed poor growth. For short-term cultivation of 45 days, the growth and development of young ginseng showed little difference regardless of the irrigation methods and the amount of water provided.
