        A study was conducted to determine the rheological properties of pomegranate puree (PP) as affected by different gums (xanthan and guar gums) and temperatures (25, 35 and 45°C). The rheological properties of the samples were determined using a rotational rheometer at a shear range of 1 to 40 s-1. The PP added with xanthan and guar gums were found to be Non-Newtonian fluids following the Herschel-Bulkley model. The yield stress and consistency coefficient of the PP with xanthan gum at different temperatures were higher than those of the PP with guar gum but the opposite was observed for the flow behavior index. Moreover, all rheological properties of the PP regardless of type of gum addition decreased with increasing temperature. The consistency coefficient was related to temperature using an Arrhenius-type relationship. The PP with xanthan gum (16.11 kJ/mol) has higher activation energy than the PP with guar gum (11.44 kJ/mol). The yield stress values of the PP with xanthan gum and guar gum can be related to temperature by linear regression equations and the flow behavior index values by exponential regression equations.

        The physical properties of jellified soybean curd residue (Biji) with the addition of various gums were investigated to optimize the direct availability of a by-product of the tofu production process. The lightness (L value) of the jellified Biji prepared with various gums was approximately 77~80, regardless of the concentration of gum used. Especially at the concentration of 0.1% and 0.3%, a pectin showed a significantly higher value compared with other gelling agents (carrageenan and agar). The strength of samples prepared on the basis of carrageenan showed the value of 335~569 g/㎠ and 234~335 g/㎠ according to the addition of locust bean gum and xanthan gum, respectively. On the other hand, the samples made with pectin and agar were 134~272 g/㎠ and 50~215 g/㎠, respectively. Where locust bean gum was used as a viscous agent, the adhesiveness of sample prepared by adding carrageenan was greater than those made with pectin or agar. The values were -6.0~-11.0 g, -2.7~-10.2 g and -3.7~-7.0 g, respectively. Overall, the strength and adhesiveness of samples according to increase of the added amount of Biji showed constantly increasing trend regardless of the type of gelling agent used. In the sample containing carrageenan this trend was most noticeable.

        본 연구에서는 효소의 활성을 증진시킬 수 있는 새로운 방법의 개발을 위하여 정제된 polygalacturonase(PGase)에 guar gum, xanthan gum, locust bean gum 등과 같은 교질물질을 첨가함으로써 효소의 활성을 특이적으로 향상시킬 수 있는 방법 조사하였다. 정제된 PGase를 0.2%의 상술한 교질물질을 함유하는 동일한 완충용액에 잘 혼합시켜 30oC에서 배양하여 상대활성을 구한 결과, guar gum 첨가 시 는 PGase의 상대활성이 105%가 증가 되었으며, xanthan gum 첨가 시는 87%, locust bean gum 첨가 시는 90%가 증가되어 상술한 교질물질들이 효소의 활성 촉진제로서의 기능이 있음을 확인할 수 있었다. Guar gum 처리에 의해 당근 단세포 생성 반응을 수행한 결과 모든 반응시간에서 guar gum을 가했을 때가 PGase만을 가하여 단세포화 반응을 수행한 경우 보다 높은 수율을 보였으며, 단세포화 반응 2시간 경과 후에 대조군 대비 13%의 가장 높은 수율 향상을 보였다. 이상의 결과에서 PGase에 guar gum, xanthan gum, locust bean gum 등과 같은 교질물질을 첨가함으로써 효소의 활성을 특이적으로 향상시킬 수 있으며, 이를 이용한 단세포 당근의 제조에 있어서 효소반응의 수율 증진을 위한 방법으로 활용될 수 있음을 확인하였다.

        Gum is known as natural polymer. Biodegradable films were prepared by solution blend method in the weight ratio of natural gums(Xanthan, Locust bean, Guar) for the purpose of useful bioimplants. The possibility of bioimplants, which prepared from natural gums as a skin substitute was evaluated by measuring biodegradability. This biodegradable films were inserted in the back of rats and their of biodegradability were investigated by hematological change evaluation as a function of time to the biotransformation. Rats implantation test results showed that Guar induced increments of monocyte and basophil after 48 hours of implantation. And Locust bean showed increase of monocyte and neutrophile counts after 48 hours of implantation. And Xanthan induced decrease of monocyte and neutrophile at 24 hours after implantation. Guar and Locust showed high hemoglobin contents and hematocrit after 48 hours of implantation. Guar and Locust induced some suspects of incompatibility in the tissue after 48 hours, but three were little effects to the skin inflammation at 24 hours. These values of biodegradable films, which prepared from prepared from natural gums measured in this were some satisfiable results at short period with those of ideal skin bioimplants.
