        This study is carried out in order to develop food materials for the promotion of rice consumption. In this study, we researched the physicochemical properties of extruded rice flour (ER) and gelatinization popped rice flour (GPR) by the extrusion process and by the popped method with milled rice and brown rice. The extrusion process used a couple of screw extruders. The extrusion parameter was kept constant at a feed moisture content of 25%, barrel temperature of 120℃ and screw speed of 400 rpm. GPR was prepared by batch popping machine after gelatinization of rice. In order to evaluate the physicochemical properties of ER and GPR, as well as the gelatinization rate, water soluble index (WSI), water adsorption index (WAI), DPPH radical scavenging activity and total dietary fiber content, the color value was carried out. The gelatinization rate was similar to 71.1~73.8%. Further, the results of WSI and WAI were increased at ER and GPR compared to the raw materials; ER was also higher than GPR. DPPH radical scavenging activity and total dietary fiber content showed a tendency to reduce after extrution and popping. As a result of the color value, the L value of ER decreased more than the raw materials, whereas GPR increased at a and b values.

        In this experiment, I used three samples of oils. The oils that I used were hydrated soybean oil, pure soybean oil and regular soybean oil. The group of rice was fried in the each sample of oil that had not been used for a few seconds. Rice was used after frying at 230-235℃ every four hours terms and total frying hours was 12 hours. The hydrated soybean oils was least affected in rancidity. The other two oils were more affected in rancidity than the hydrated soybean oil. However, the trans fatty acid in hydrated soybean oil was 36.5%. The diameter of the poped rice that was fried in pure soybean oil and regular soybean oil that had been used 12 for hours was reduced while the diameter of the popped rice fried in the hydrated soybean oil was not reduced. Also, the groups of rice fried in the pure and the regular soybean oil that had been used for 12 hours reduced the hardness in rice while the group that fried in the hydrated soybean oil at the 12th hour kept the hardness well. In sensory evaluation, rancidity order was found apparently in the pure soybean oil that had been used for 12 hour and in the regular soybean oil that have been used for eight hours and 12 hours. Only the hydrated soybean oil did not have distinctive rancidity order at all. The degree of the crispiness was reduced in the pure soybean oil and in the regular soybean oil at 12th hour frying. However, the hydrated soybean oil preserved the crispiness well until the end of 12 hours of frying. In overall preference test, the pure and regular soybean oil that had been used for 12 hour were not preferable. In conclusion, I found that the group fried in the hydrated soybean oil was better in every evaluation than the groups fried in the pure soybean oil and in regular soybean oil. The hydrated Soybean oil may be better to be used in food manufacturing if the trans fatty acid in the hydrated soybean oil can be reduced.

        This study was conducted to confirm the effect of drying method on quality of popped rice for making salyeotgangjung(popped rice lump with malt syrup) in process of drying gelatinized rice. The drying were performed at dry oven or convection oven, at 30℃, 50℃ and 105℃, respectively. There were not significant differences in the hardness of popped rice among the drying methods. The dry at 30℃ constant in dry oven showed higher popping rate, good external surface, uniformed and well developed internal cell size. The dry at 30℃ in convection oven and 50℃ constant temperature in dry oven showed low expansion and poor external surface, respectively. In conclusion, the drying at 30℃ in non-convection oven had the highest quality of popped rice for salyeotgangjung.

        본 연구는 된장 제조 시 자연발효 시킨 control과, B. subtilis KACC15935, B. subtilis HJ18-9균주를 starter로 접종하여 발효시킨 팽화미된장의 효소활성과 품질특성을 측정하였다. 환원당을 유리하는데 관여하는 α-amylase 효소활성의 경우 control과 HJ18-9를 접종한 시료에서 높게 나타났다. 또한 된장의 단백질을 분해하여 특유의 구수한 맛 성분을 유리하는 protease 활성의 경우도 control과 HJ18-9를 접종한 시료에서 높게 나타났으며, 이는 아미노태질소 함량에서도 같은 경향을 나타냈다. 또한 cellulose를 분해할 수 있는 능력을 가지고 있어 유용성분의 장내 이용성 증진을 위해 널리 사용되는 효소인 cellulase활성이 있는 HJ18-9균주를 처리한 접종구에서 115.45±30.05 unit/g로 control과 B. subtilis KACC15935 처리구에서 53.75±15.91, 43.75±13.51 unit/g 인 것에 비해 높게 나왔다. 이러한 결과로 본 연구를 통해 선별한 균주를 스타터로 접종하여 된장 제조에 알맞은 균주를 개발, 평가하여 가공품으로 개발의 기초연구가 되고자 하였다.

        This study was carried out to know the substitute effect of Yacto (leaf mold compost) on popped rice hulls compost (PRHC) in Yang-jik nursery bed of Panax ginseng. PRHC was mixed with Yacto as 50:50 ratio, and 1 ~ 2% of the mixed oil cake, rice bran and urea were also added to promote decaying the mixed compost. The mixed compost made by PRHC and Yacto was showed that positive effect on the growth of ginseng seedling when it was mixed with 1% of oil cake and rice bran, and 2% of mixed oil cake. But addition to the 2% of urea in the mixture of PRHC and Yacto was not positive effect on the growth of ginseng seedling. Root yield of the mixed compost was similar to that of conventional compost by made 100% of Yacto. Therefore, the mixed compost can substitute for Yacto when PRHC and Yacto were mixed by 50:50 ratio and added 1% of oil cake and rice bran.
