This study was conducted to investigate the effects of sugars and stabilizers on the qualitative properties of frozen-yogurt. To prepare the yogurt mix, market milk was fermented using a commercial starter culture and sugars, trehalose and sucrose, and to prepare the ice cream mix, stabilizers, carboxy methyl cellulose (CMC) and guar gum, were used. The yogurt and ice cream preparations were mixed in a 1:1 (v/v) ratio to produce frozen-yogurt. Yogurt prepared using trehalose showed a significantly faster increase in pH, titratable acidity, and viable cell count than that prepared using sucrose (p<0.05). Ice cream prepared using guar gum showed a significantly higher viscosity and overrun than the CMC-stabilized preparation (p<0.05). Frozen-yogurt produced using the yogurt-trehalose mix and ice cream-CMC mix showed the highest hardness and lowest overrun. The melt-down rate of frozen-yogurt prepared with the yogurt-trehalose mix was significantly slow (p<0.05). However, there were no significant differences among the yogurt mixes in terms of changes in the viable cell count at 0, 7, 15, 30, and 45 days (p>0.05). In a sensory evaluation, most panels preferred the frozen-yogurt with sucrose over that with trehalose. However, it is expected that using trehalose with other sugar substitutions and guar gums in manufacture of frozen-yogurt have high potentiality than using sucrose and CMC, and it is considered that it could reignite the stagnant domestic milk processing industry.
Background: Scapular dyskinesis is characterized by altered scapular position and motion. Specifically, excess activation of the Upper trapezius (UT) combined with decreased Lower trapezius (LT) and Serratus anterior (SA) have been observed. The Standard push-up plus exercise (SPP) is considered as a therapeutic exercise for increasing SA activity and maintaining the scapular kinematics. In addition, Using the Sling surface can lead to higher muscle activity. However, the advantage of an unstable surface has been uncertatin. Objects: To compare the activation of the UT, LT, and lower serratus anterior (LSA) muscles during various push-up plus exercises with and without sling in subjects with scapular dyskinesis. Methods: Total 18 male subjects with scapular dyskinesis were recruited. The UT, LT, and LSA electromyographic activities and the UT/LSA and UT/LT EMG activity ratios were measured during three push-up plus exercises with and without sling. Two-way repeated of analysis of variance was used to determine the statistical significance. Results: The UT activity was significantly lower in all postures without sling than that with sling. In addition, the LSA activity was significantly greater without than with sling, and significantly large in SPP, Low back supported push-up plus (LSPP), and Quadruped push-up plus. Additionally, the UT/LSA and UT/LT activity ratios were lower in SPP and LSPP without sling than with the other four push-up plus exercises. Conclusion: The push-up plus without sling were considered to decrease UT and increase LSA activity compared with exercises with sling. Furthermore, SPP without sling seems to be a more effective exercise for increasing LSA activity and lowering the UT/LSA and UT/LT activity ratios in scapular dyskinesis subjects.
The purpose of this study was to determine the effect of contralateral hip adduction (CHA) on the muscle activity of lumbar stabilizers and the angle of pelvic lateral tilting during hip abduction in side lying. Twenty healthy male subjects with no medical history of lower extremity or lumbar spine disorders were recruited for the study. Subjects randomly performed preferred hip abduction (PHA) and hip abduction with contralateral hip adduction in side lying. The muscle activities of the dominant side rectus abdominis, external oblique, internal oblique, quadratus lumborum, gluteus medius, and non-dominant side hip adductor longus were measured during PHA and CHA by using a surface electromyography (EMG) system. Pelvic lateral tilting motion was measured by using a three-dimensional motion analysis system. Data on EMG and pelvic motion were collected at the same time during PHA and CHA. A paired t-test was used to compare EMG activity and the angle of pelvic lateral tilting in the two exercises. The study found that the EMG activities of all muscles were more increased significantly in CHA than PHA condition. The angle of pelvic lateral tilting was more decreased significantly in CHA than PHA condition. These findings suggest that CHA could be recommended as a hip abduction exercise for activating lumbar stabilizers and decreasing compensatory pelvic lateral tilting motion.
This study is to consider the introduction of the standard practice which test the asbestos stabilizer efficiency for the spray-applied ACBM, because asbestos stabilizer may be one of operation & management (O&M) program to prevent friable asbestos from spray-applied asbestos containing building materials( ACBM) and some countries like U.S and Japan have introduced the evaluation system or standard practice to test the efficiency of asbestos stabilizer which is used for spray-applied ACBM since 2002 and 2006, relatively. Efficiency test of 8 stabilizers which were manufactured from Japan, Australia and Korea was performed by the method of the Ministry of Land, Infrastructure, Transport and Tourism of Japan. The contents of test method were consisted adhesive strength, penetration depth, impact resistance and wind affection. The efficiency of impact resistance and wind affection was improved 4.1~37.4% and 75.2~95.7% after asbestos stabilizer applied on the spray-applied ACBM. Although the results of adhesive strength were less than that of non-applied materials but that was satisfied the ASTM standard (2.4kPa).
This study was performed to compare the muscle activity of lumbar stabilizers between stoop and semi-squat lifting techniques at different lifting loads. Twenty healthy subjects (9 males, 11 females) were recruited for this study. Muscle activity of external obliques (EO), internal obliques (IO) and lumbar multifidus (LM) muscle was measured by surface electromyography during stoop and semi-squat lifting at different lifting loads (10%, 20%, and 30% of the subject's body weight). A one-way repeated measure ANOVA was applied. The results showed that EMG activity of EO was significantly increased with a load of 30% of body weight compared to 10% and 20% of body weight in both lifting techniques (p<.05). Muscle activity of LM was significantly increased in 20% compared to 10% and 30% compared to 10% of subject's body weight in stoop lifting and the muscle activity of LM was significantly increased in 20% compared to 10%, 30% compared to 20%, and 30% compared to 10% of the subject's body weight in semi-squat lifting (p<.05). However, there was no significant difference in activity of IO according to lifting loads in both lifting techniques. There were no significant differences in muscle activity of EO, IO, and LM between stoop and semi-squat technique (p>.05). Therefore, the results of this study suggested that the EO can contribute to increase the lumbar stability during stoop and semi-squat lifting at 30% of body weight rather than at lower loads, and the LM seems to act as counteractor to imposed loads during stoop and semi-squat lifting with increasing loads.
The purpose of this study was to determine the effect of contralateral hip adduction (CHA) on thickness of lumbar stabilizers during hip abduction in side-lying. Twenty healthy subjects without back pain were recruited for this study. The thickness of transverse abdominis (TrA), internal oblique (IO) and quadratus lumborum (QL) were measured by ultrasonography. Pelvic lateral tilting motion was measured using a three-dimensional motion analysis system. Measurements were performed at rest position (RP), preferred hip abduction (PHA) and abduction with contralateral hip adduction (CHA) in side-lying at the end of expiration. During the measurements, subjects were asked to maintain steady trunk alignment without hand support. Thickness of TrA and IO was significantly greater in CHA than in PHA and RP conditions. There was no significant difference in thickness of TrA and IO between PHA and RP conditions. Medio-lateral (M-L) thickness of QL was not significant between PHA and CHA conditions. Anterio-posterior (A-P) thickness of QL in PHA and CHA significantly decreased compared to RP condition. Angle of pelvic lateral tilting was significantly decreased in CHA compared to PHA condition. In conclusion, CHA can be recommended for increasing trunk stability without compensatory pelvic motion during hip abduction exercise in side-lying.
오미자 추출물의 가열 및 저장에 의한 변색을 지연시킴으로써 식품 소재로써 오미자 추출물의 이용도를 증진시키고자 식품에 가장 광범위하게 이용되는 첨가물인 당과 색소 안정화제의 효과를 조사하였다. 단당류로써 glucose, fructose, 이당류로써 sucrose, maltose를 처리한 결과 단당류는 가열에 의한 변색을 촉진시켰고 이당류는 가열에 의한 변색을 억제시키는 효과가 있어 maltose를 10%처리하였을 때 40%정도 변색이 억제되었다. 색소 안정화제 로 각각 1%와 5%의 maltodextrin, β, γ-cyclodextrin, ascorbic acid, phosphoric acid를 첨가하여 조사한 결과 β- 및 γ-cyclodextrin과 maltodextrin 5% 처리구의 경우 DI값이 대조군보다 낮게 나타나 가열 변색에 대한 안정화 효과를 나타내었다. 복잡한 구성성분으로 인하여 matrix 효과를 나타내는 식품에의 적용효과를 조사하고자 오미자 색소 추출물을 첨가한 겔 시스템을 모델 식품으로 사용하여 25℃ 및 35℃에서 저장하면서 표면 색도의 변화를 측정하였다. 저장 온도 및 기간이 증가할수록 a값이 감소하는 경향을 나타내었으며 maltodextrin을 5.0% 첨가한 경우 a 값이 15~20%증가하여 matrix effect가 고려된 실제 식품에서도 색소안정화 효과가 확인되었다.
To utilize coastal aquaculture ground bottom sediment in which concentrations of harmful pollutants are low and organic content is high as an organic fertilizer alkaline stabilizers such as CaO, Oyster shell, Mg(OH)2 were added to the bottom sediment organic additives of livestock or food wastes. Nutritive qualities of crude fertilizers were measured to examine effects of alkaline stabilizers and organic waste additions. The Mg(OH)2-added crude fertilizer had significantly lower total carbon(T-C) and nitrogen(T-N) content, reflecting the dilution effect due to great amount of Mg(OH)2 addition. However, the addition of oyster shell had no significant effect on the T-C and T-N content of the fertilizer. P2O5 and K2O content was considerably higher in the mixed sample of aquaculture ground bottom sediments and livestock wastes than in the mixture of the sediments and food wastes, resulting from higher P2O5 and K2O content in livestock wastes. Addition of Mg(OH)2 increased the content of MgO in the crude fertilizer but significantly reduced the content of other nutritive elements such as P2O5, K2O and CaO. Addition of oyster shell as an alkaline stabilizer seemed to have the advantage of saving time and expenses for dryness due to its role as a modulator of water content. Moreover, additions of effect Mg(OH)2 decreased the concentrations of heavy metals in the fertilizer by the dilution while additions of oyster shell had no influence on heavy metal concentrations in the fertilizer.
