This study compared and analyzed the antioxidant effect of Doenjang prepared from vegetable water, and explored the optimal addition ratio of vegetables of 5 kinds and the possibility of application to Doenjang. The sample is three kinds of vegetable water (VW1, VW2, VW3) prepared by adding different ratios of radish, carrot, green onion, onion and shiitake mushroom and Denjang prepared using it. Doenjang was aged and fermented at about 40°C for 40 days, and then separated and used only solids. The content of their antioxidant compounds was measured the content of total phenolic acid contents and total flavonoid contents. In addition, the antioxidant effect was measured by electron donating activity, SOD-like activity, ABTs radical scavenging activity and reducing power. The total phenolic acid contents and total flavonoid contents were high at VW3 and that Doenjang made with VW3. Electron donating activity and SOD-liked activity were high at VW2 and Doenjang made with VW2. ABTs radical scavenging activity was high in Doenjang made of VW3, and Reducing power was high in VW3. Therefore, if Doenjang is prepared with vegetable water prepared by properly mixing 5 types of vegetables, the possibility of developing Doenjang with high antioxidant effect was suggested.
This study was carried out to investigate the effect of chlorine water and plasma gas treatment on the quality and microbial control of Latuca indica L. baby Leaf during storage. Latuca indica L. baby leaves were harvested from a plant height of 10cm. They were sterilized with 100μL·L-1 chlorine water and plasma-gas (1, 3, and 6hours), and packaged with 1,300cc·m-2·day-1·atm-1 films and then stored at 8±1?and RH 85±5% for 25days. During storage, the fresh weight loss of all treatments were less than 1.0%, and the carbon dioxide and oxygen concentrations in packages were 6-8% and 16-17%, respectively for all treatments in the final storage day. The concentration of ethylene in the packages fluctuated between 1-3μL·L-1 during the storage and the highest concentration of ethylene was observed at 6 hours plasma treatment in the final storage day. The off-odor of all treatments were almost odorless, the treatments of chlorine water and 1 hour plasma maintained the marketable visual quality until the end of storage. Chlorophyll content and Hue angle value measured at the final storage day were similar to those measured before storage in chlorine water and 1 hour of plasma treatments. E. coli was not detected immediately after sterilization in all sterilization treatments. After 6 hours of plasma treatment, the total bacteria fungus counts were lower than the domestic microbial standard for agricultural product in all sterilization treatments. The total aerobic counts in the end storage day increased compared to before storage, whereas E. coli was not detected in all sterilization treatments. The sterilization effect against bacteria and fungi was the best in chlorine water treatment. Plasma treatment showed sterilization effects, but within a prolonged period of time. In addition, the sterilization effect decreased gradually. These results suggest that chlorine water and plasma treatment were effective in maintaining Latuca indica L. baby Leaf commerciality and controlling microorganisms during postharvest storage.
In this study, the physicochemical and sensory characteristics of low-salt Myungran jeotkal (Alaskan pollock roe) were evaluated after fermentation at 4℃ and 20℃ with or without the addition of deep sea water, salt from deep sea water, and vegetable-origin lactic acid bacteria (Lactobacillus fermentum JS, LBF). When fermented at 20℃, the addition of LBF to Myungran jeotkal resulted in a slow increase in lactic acid content, followed by an abrupt increase after five days of fermentation. However, when fermented at 4℃, the lactic acid content did not change significantly. Further, when Myungran jeotkal fermented at 4℃, the pH decreased as lactic acid production increased. The salinity of Myungran jeotkal fermented at 4℃ and 20℃ was 7% and was not affected by fermentation period. When fermented at 20℃, volatile basic nitrogen and amino nitrogen contents increased with increasing duration of fermentation. Further, volatile acid content decreased, however, the content of amino nitrogen increased after 11 days of fermentation with LBF and no salt effects were observed. When fermented at 20℃ for 13 days, preference (sensory evaluation) was the highest in all experimental groups after 9 days of fermentation, and then decreased as the fermentation period increased. The free amino acid content was highest (1,648.8 mg/100 g) in Myungran jeotkal when sun-dried salt and LBF were added, 2.3 times higher than in the control.
본 연구에서는 강원도 춘천지역에서 발생하는 환경 오폐수를 시료로 하여 미생물을 혼합하여 제조한 수질정화제를 실제 하천과 호수의 오염환경과 유사한 배양기내에서 생물학적반응을 시켜 오염물질의 정화정도를 측정하고 평가하였다. 사용된 미생물은 식물성 유산균(vegetable Lactobacillus fermentum), 효모(Saccharomyces cerevisiae)와 고초균(Bacillus subtilis)이다. 두 가지의 미생물혼합제를 투입하여 정화정도를 실험하였다. 실제 하천에 투입하여 정화되는 과정과 유사하게 반응을 시키고자 반응 온도는 21(±3)oC로 하였으며 완전교반을 진행하였다. 사용한 시료의 오폐수의 오염도와 미생물에 의한 정화정도를 평가하기 위하여 총질소 함량과 총인 함량을 측정하였다. V.L.F.와 S.C.의 혼합물로 구성된 혼합제의 경우 총질소함량을 감소시키는데 매우 효과적임을 보여주었으며, V.L.F., S.C.,와 B.S.로 구성된 혼합제의 경우 그 총인의 함량을 저감화하는데 효과적임을 알 수 있었다. 본 실험에서 얻어진 실험 데이터를 통하여 V.L.F.와 S.C.의 혼합제가 오폐수의 정화반응에서 나타나는 반응상수값을 도출하였으며 그 값은 0.178 day-1이었다. 본 연구의 결과를 바탕으로 저감화하고자 하는 성분에 따라 미생물의 종류와 그 혼합비를 조절하는 최적화과정이 필수적임을 알 수 있었으며 또한 곡선적합으로 도출한 반응상수값은 미생물을 이용하여 호수와 하천의 정화정도를 simulation함에 필요한 실험인자로서 응용이 가능하게 되었다.
