        To establish the organic cultivation of pepper using green manure crops, this work studied the growth characteristics and yield of green manure crops, mineral composition of green manure crops, mineral uptake in shoots of green manure crops, chemical composition in soil of green manure crops, and the growth characteristics and yield of pepper in vinyl house. Shoot dry weight of green manure crops was higher level in Sorghum bicolor and Sorghum than in Crotalaria juncea and Glycine max. Also, the roots were spread deeply into soil in Sorghum bicolor and Sorghum. Density of root-knot nematodes in rhizosphere of green manure crops was significantly more decrease in Crotalaria juncea and Sorghum than in Glycine max and Sorghum bicolor. Total nitrogen and CaO content of green manure crops was significantly higher in Crotalaria juncea and Glycine max than in Sorghum bicolor and Sorghum. K₂O content was significantly higher in Sorghum bicolor and Sorghum than in Crotalaria juncea and Glycine max. MgO content was not significant difference at all green manure crops. Cations content ratio of K₂O : CaO : MgO was 3.4 : 1.4 : 1. Total nitrogen uptake in shoots of green manure crops was high level in Glycine max, Sorghum bicolor and Sorghum compared with in Crotalaria juncea. K₂O and MgO uptake was significantly higher in Sorghum bicolor and Sorghum than in Crotalaria juncea and Glycine max. Value of pH in soil of green manure crops was more increase in Crotalaria juncea and Glycine max than in Sorghum bicolor, Sorghum and control, but after cultivation of pepper pH in soil was recovered with initial soil pH before seeding of green manure crops. EC value in control, green manure crops, and pepper cultivation decreased by 44%, 15~18%, and 38~61% level, respectively, compared with initial soil of green manure crops treatment. K content in soil of control, Crotalaria juncea and Glycine max cultivation was increased by 14%, but the K content in soil of Sorghum bicolor and Sorghum decreased by 24~38%. Cation exchange capacity (CEC) in soil of Crotalaria juncea and Sorghum bicolor decreased by 11%, but CEC in soil of Glycine max, Sorghum and control increased by 11%. Harvest fruit yield was higher in Crotalaria juncea, Glycine max, and Sorghum bicolor cultivation than in control and Sorghum.

        Calyx-end browning in sweet persimmon (Diospyros kaki) fruits is the postharvest disorder during the storage and shows different proportions by the cultivars. This study was to evaluate fruit texture characteristics at harvest and to learn how browning in fruits affects the cell structures in different cultivars. Persimmon cultivars included ‘Fuyu’, ‘Jiro’, ‘Uenishiwase’, ‘Daiandangam’, and ‘Ro-19’, which were harvested at the end of October in 2003 and investigated after 100 days storage. Fruit texture varied with different cultivars. ‘Jiro’ and ‘Ro-19’ fruits did not have browning symptoms while ‘Daiandangam’ fruits had approximately 80% browning of them. There were no visual differences for the cell structure in fruit peels between fruits without browning, such as ‘Jiro’ and ‘Ro-19’, and fruits with browning, such as ‘Fuyu’, ‘Uenishiwase’, and ‘Daiandangam’. The most outer layers in a ‘Jiro’ fruit peel arranged one to two epidermis which could not induce browning in the tissues, while ‘Fuyu’ had two to three layers, inducing a browning symptom. Although there were no differences for the tissue structure between browning and normal fruits, browning fruits did not have apparent cell organelle and proceeded degradation of cell walls in the flesh.

        This study was established to investigate the effects of Ca application on fruit mineral nutrients, quality, and browning of ‘Fuyu’ sweet persimmon (Diospyros kaki). Ca foliar application at 40㎖/20L/tree had a greater fruit Ca concentration than did control, Ca fertigation (40㎖/20L/tree), and Ca foliar application (40㎖/20L/tree) coupled with IBA fertigation (40 ㎖/20L/tree). Fruit mineral nutrient concentrations for Mg, B, and Mn were similar or lower in the foliar treatment compared to other treatments. Fruit color was not affected. Ca treatment, whether foliar applied or fertigated, was effective in maintaining fruit firmness and in decreasing the browning symptom in fruit after MA storage at 0℃ for 60 and 100 days. Although Ca foliar application + IBA fertigation treatment improved fruit firmness, the positive effect on the browning and decay occurrences in fruit was not shown.

        터널에서 외기에 접촉되는 부분은 입, 출구부와 환기구가 있으며 이러한 부위의 열화와 그 진행속도는 외기의 영향을 받지 않는 구간과는 다른 차이를 보여준다. 실제로 터널에서 외기에 접촉되는 부분뿐만 아니라 외기의 영향을 받는 구간은 일반적인 구간과는 다른 관점에서 접근해야 할 필요가 있고 보수나 보강공법 적용시에도 우선 고려가 되어야 한다. 그럼에도 불구하고 터널의 유지관리시, 점검 및 정밀안전진단시 외부온도의 영향을 받는 구간의 결함 및 열화는 그 범위가 광범위함에도 불구하고 구조체의 안전성에 미치는 영향이 미소하다는 이유로 소홀히 되고 있는 실정이며 일시적인 계절영향, 온도 변화요인에 의한 것으로 판단하여 특별한 관리가 되지 않고 있는 실정이다. 이에 본 논문은 외부온도, 기온의 터널내 영향범위를 산출하기 위해 2개소의 도심지 터널에 대해서 적외선 열화상카메라를 활용하여 터널내의 외부온도 영향범위를 결정하고 그 영향범위에서 발생되는 콘크리트라이닝 또는 콘크리트 구조체의 결함 및 열화원인을 분석하고 유지관리시 중점을 두고 시행해야 할 사항을 제시하였다.

        난 가공식품인 구운 계란의 포장유통을 목적으로 구운 계란 제조공정 중의 미생물 오염도를 평가하였으며 미생물 살균방법으로 감마선 조사와 고온가압살균법을 비교하여 제품의 보존 안정성 및 유효 유통기한 확보를 위한 살균 기준을설정하였다. PE 포장지에 낱개 포장한 구운 계란의 미생물오염도는 일반세균 > 10 CFU/g, 대장균군 < 10 CFU/g, 곰팡이 포자 > 10 CFU/g 수준이었으며 대부분의 미생물은 제품포장과정에서의 2차 오염에 의하여 오

        The objective of this study is to determine the effect of soy protein isolate (SPI) film coating on the color, firmness, viscosity and weight loss of Rice Cake stored at 15, 20 and (RH 50%) for 30 days. Raw materials mixed with SPI and cocoa powder (10:0, 7:3, 5:5, 3:7, w/w) were prepared. After adding sugar and shortening to raw materials, the mixture were refined to 25 micron of particle size. Coating of Rice Cake were carried out at . SPI coated Rice Cake had higher internal and external firmness comparing to the control at . SPI coated Rice Cake showed smooth surface morphology and had 0.71-1.01 mm of thickness. SPI coated Rice Cake showed less weight loss for 30 days compared to controls. SPI coating solution was successfully coated on Rice Cake and extended shelf-life over 15 days at room temperature.

        혹미의 취반과정 중 lipoxygenase 작용에 의해 생성되는 휘발성 향미 성분의 분석을 위한 기초 자료를 제공하기 위해 진도산 흑미의 lipoxygenase activity를 비색법을 이용하여 측정하였다. 20-60% 포화농도의 ammonium sulfate를 첨가하여 활성을 비교한 결과 30% 포화농도에서 23.9 unit/mg으로 가장 높은 활성을 나타내었다. pH 6.0-9.0에서 조효소액의 활성을 측정한 결과 pH 7.0에서 24.97
