        This research was peformed to investigate the anthropometric data, blood profiles, and nutrient intakes of elderly persons living in a rural area. The subjects were 67 undernourished people who participated in follow-up nutrition intervention programs for9 weeks. Anthropometric data showed that the mean heights and weights in the management group were 157.6 cm and 59.1 kg, respectively, for the males and 152.6 cm and 51.0 kg, respectively, for the females. The mean BMIs of the management group were 23.8 kg/m2 in the males and 22.4 kg/m2 in the females. The total cholesterol, HDL-cholesterol, and albumin levels of the subjects were 181.7-191.4mg/dL, 48.3-53.0mg/dL, and 3.85-4.00g/dL, respectively. Energy, ash, P, Na, vitamin B1, vitamin B2, vitamin B6, and niacin increased significantly after intervention for the management group. The mINQ, however, did not significantly increase after intervention. Also after intervention, there was no significant difference in mINQ between the management group and the comparison group. MAR (14) in the management group was significantly increased from 0.62±0.2 before intervention to 0.68±0.2 after intervention (p=0.022), and it was significantly different between the management group and the comparison group (p=0.017). MAR (8) in the management group was not significantly different (p=0.915) before and after intervention. However, MAR (8) between the management group and the comparison group did show a significant difference (p=0.031). MAR (3) in the management group was significantly increased from 0.48±0.2 before intervention to 0.55±0.2 after intervention (p=0.045), however, MAR (3) was not significantly different between the management group and the comparison group (p=0.093). For the probability of nutrient insufficiency, in the management group the probability of nutrient values below the EAR (except for Fe) decreased after intervention compared to before intervention.         The objectives of this study were to develop calcium enriched menu for the aged and to investigate physicochemical characteristics and consumer acceptances of the menus. four kinds of the menu were developed with emphasis on calcium enriched food materials of red pepper leaves seasoned vegetables for menu1, shrimp for menu2, anchovy for menu3, seaweed for menu4. one portion of calorie, polysaccharide, protein, fats and calcium for the aged were calculated as 567kcal, 92.8g, 21.3g, 12.6g 223.1mg, respectively based on the recommended daily allowances for adults. Calcium content increased in the lowest value of all(p<0.05). The hunter lightness(L) values of barely rice in menu 1, radish soup in menu 1, chopped roast chicken in menu 4 and radish salad in menu 2 had significantly the highest values of all(p<0.05). The calcium enriched menus for the aged were successfully developed and these data could be used as basic informations for the improvement in health and life of the aged.

        Four dietary fiber enriched menus for the aged were developed and physicochemical were analyzed. Major foods enriching the dietary fiber were as following; kimchi & bean sprouts soup and sweet potato for menu 1, chamcheunamul and grape for menu 2, mushroom and kimchi for menu 3, dried radish leaves and green pepper for menu 4. One portion of calorie, carbohydrate, protein and fats for the aged were calculated as 567 kcal, 92.8 g, 21.3 g and 12.6 g, respectively based on recommended daily allowances for adults. Dietary fiber content increased in the menus 1, 2, 3 and 4 were 17.27%, 20.84%, 16.91%, and 23.64%, respectively. The menu 1 had significantly the highest acceptance scores among the rice, soups, side dishes and overall desirability with the acceptance sores of 4.77, 4.58, 4.62 and 4.69, respectively(p<0.05). Female showed significantly the higher acceptance scores of all of the enriched fiber menu than those of male. Moisture contents of the boiled rice with barely in menu 3 had significantly the highest value of all(p<0.05) and the side dishes of all menus did not show any significant differences at p<0.05. The pH value of boiled rice with barely in menu 3 was significantly the highest and menu 1 of kimchi & bean sprouts soup had significantly the lowest pH values(p<0.05). Hunter L value was significantly the highest in boiled rice with barley. The dietary fiber enriched menus were successfully developed for application and standardization in the meal service planning for the aged as one of trials of basic data collection.

        The purpose of this study was to develop protein enriched menu for the aged and running an acceptance test on the protein enriched menu. Four kinds of the menu were developed with emphasis on protein enriched food materials of chicken and beans for menu1, chunggukjang for menu2, pork for menu3, beef and mackerel for menu4. one portion of calorie, polysaccharide, protein and fats for the aged were calculated at 567kcal, 92.8g, 21.3g and 12.6g respectively based on recommended daily allowances for adults. Protein content increased in the menus 1, 2, 3 and 4 were 13.2%, 17.5%, 12.4%, and 13.3%, respectively. In the result of the acceptance test, the cooked rice with black beans and chicken soup of menu1 had significantly the highest acceptance score among the rice and soup groups, respectively (p<0.05). In the side dish, bean curd, cucumber and onion salad in menu1 had relatively higher acceptance scores than the others with significant difference at p<0.05. Overall acceptance of menu 1 had significantly the highest acceptance scores of all. Female showed significantly the higher scores of overall acceptance on menu 2 and 4 than those of male from the t test results of acceptance test.

        초기재령 콘크리트 수화과정의 메카니즘과 초기재령 콘크리트 균열 제어기법의 개발은 주로 매시브한 콘크리트를 대상으로 실험적 연구와 수치해석적 연구가 이루어져 왔으나 철근 콘크리트 라멘교의 상부슬래브와 같이 비교적 두께가 적은 부재에 대해서는 연구 내용이 거의 없는 실정이다. 본 연구에서는 4개의 철근 콘크리트 라멘교의 상부 슬래브에 대한 수화열을 현장 실측하여 온도이력과 강도 발현 모텔 및 건조수축 모델에 의한 응력들을 근거로 하여 초기 재령 철근 콘크리트 라멘교의 상부슬래브에 발생할 수 있는 균열을 제어할 수 있는 설계기법을 제시하였다. 본 연구의 해석기법을 이용하여 초기재령 철근 콘크리트 라멘교의 상부슬래브에 발생되는 균열 폭을 계산하여 균열제어를 위한 철근량 산정방법을 제시하였고, 설계하중 재하 시 배력철근으로만 취급되는 헌치부의 철근이 초기재령 철근콘크리트 라멘교의 온도응력 검토 시에는 주철근이 됨을 알 수 있었다. 제안한 해석기법은 초기재령 철근콘크리트 라멘교의 온도균열제어를 위한 설계에 적용될 수 있을 것으로 판단된다.

        바인더의 노화로 인한 성능변화는 침입도 또는 점도시험을 실시하여 판정하여왔다. 기존의 시험방법으로 아스팔트 바인더의 점탄성 특성과 실제거동을 평가할 수 없기 때문에 새로운 분석방법이 요구되어 왔다. 본 연구에서는 기존시험 방법을 사용하여 침입도지수와 잔류침입도를 판정하였고, 양방향 반복회전 모드와 일방향 반복회전 모드 시험을 실시하여 단기 노화된 아스팔트 바인더의 유변학적 특성을 분석하였다. 시험결과 단기 노화된 아스팔트 바인더는 시험주기(frequency) 즉, 차량속도의 변화에 따라 서로 다른 복합계수와 위상각을 나타냈으며 단기 노화 전후의 크리프 컴플라이언스 및 전단점도 시험결과에도 영향을 미치는 것으로 나타나서 포장 설계시 이러한 특성이 고려되어야 한다.

        The purpose of this research was to investigate the relationships between the socioeconomic condition, health attitude and the eye health of the elderly. Thereupon, this study is attributed to promote the eye health of the elderly. Data were collected through questionnaire by one-to-one interview in a community. The content of original questionnaires were revised by literature review and the pilot study. The sample was consisted of 285 elderly with a mean age of 71.8 years. In the study group, female was 52.3% and male was 47.7%, respectively. In age group, over 80 years was 16.5%, 75-79 was 21.0%, 70-74 was 29.5%, 65-69 was 26.0% and 60-64 was 7.0%. In maritai status, married and living with spouse was 54.4%, widowed was 45.6%. The elderly were suffering with diseases of arthritis(33.3%), hypertension(20.1%), cataract(14.2%) and diabetes(9.7%), respectively. Socioeconomics conditions were measured with monthly allowance money : The upper group those who can spend over 310,000 won was 13.6%, 110,000-300,000 won was 34.0%, less than 100,000 won was 52.5%, respectively. Therefore, the person who were very active health practice group were correlated positively with the wealthier group. Of the total, 33.2% of the elderly answered, they are suffering from two kinds of diseases combined at the same time. For the elderly who have the more concem on eye health were positively correlated with the higher educational level, live with spouse, and the ones who can spend the more monthly allowances. Eye health concem is positively correlated to health attitude.

        The purpose of the study was to compare the satisfaction level on hospital meal size and actual intake rate of hospital foods between elderly and middle aged patients. Sixty one middle aged and one hundered thirty two elderly patients were surveyed on the foods served in the hospital-rice, soup, meat/fish, vegetable, kimchi and daily products. Compared to the middle aged patients, the more elderly thought the serving size of rice was too big(p<0.05), and those of soup, meat/fish and kimchi tended to be too big. There was no difference in the satisfaction level on the serving size of vegetable dish between two age groups. In actual intake rates of hospital meal there were no significant differences between the elderly and middle aged patients. However, the elderly male ate significantly(p<0.05) less amount of rice than the middle aged male and the elderly female ate significantly(p<0.01) less amount of meat/fish then the middle aged female. Satisfaction levels and actual intake rates were significantly correlated in all food items.

        This study was conducted to find sensitive indicator of food intake and specific food group related to cognitive function and to analyze the pathway among factors affecting food intake and cognitive function of the aged. 179 people over 50 years old were investigated and all the data were analyzed by SPSS 10.0 package. Food frequency was more sensitive indicator to show the relationship between food intake and cognitive function of the aged than the numbers of standard amount of food eaten. Consumption of grains and starch, meat, fish, eggs and beans were strongly related to cognitive function of the aged and intake of vegetables and fruits also have relationship with it. Moreover, the more frequent eating the carbohydrate and the protein, the higher the cognitive level of the aged. Age, education period, income, blood pressure, duration after retirement, frequency of physical activity and BMI were correlated with food intake and cognitive function of the aged. Among them, age and frequency of physical activity were most strongly correlated with food intake, and education period with cognitive function of them. This investigation shows that more stable intake of carbohydrate and protein containing foods need to be supplied to low income aged and the importance of physical activity of the aged must be emphasized with food intake for better life of the aged.

        The purpose of this study was to investigate the cognitive differences among the aged who have different living conditions. 91 free-meal receivers and 86 people with stable lives were asked about their living conditions and cognitive function by using K-MMSE. All data were analyzed by SPSS 10.0 package. Free meal receivers had poorer socioeconomic status than the subjects who had stable lives. Cognitive function of free meal receivers was lower than the people with stable lives in the most cognitive factors. Especially age of 50 to 64, pre-aged group, who had been receiving free meals, showed lowest cognitive level than the other age groups. Among 7 cognitive factors, there was the greatest difference in attention and calculation between 2 groups. Percentage of 'conclusive dementia' among the free meal receivers was statistically higher than the people with stable lives and that of 'conclusively normal' was statistically lower in free meal receivers comparing with the people with stable lives. Moreover, socioeconomic factors like income, former job, marital status, housing and education, blood pressure and physical activity were significantly related to the subject's cognitive function.

        The purpose of this study was to analyze the satisfaction level on hospital foods in elderly and middle aged patients. The subjects were selected among the patients treated in the Inha University hospital during July of 1999. One hundred thirty five elderly patients aged over sixty(68 men, 67 women) and sixty five patients aged in forties(35 men, 30 women) were surveyed through questionnaires in terms of satisfaction level on hospital foods and the food preferences. Satisfaction on general taste, saltiness, serving temperature, appearance, texture and variety of hospital foods was not significantly different according to age. However, elderly men showed significantly higher satisfaction level than elderly women in terms of general taste of hospital foods(p<0.01). The preferences of cooking method for meat, fish, vegetable and the preferred kinds of kimchi and milk & milk products were not significantly different between the two age groups. However, elderly women significantly preferred sauted meat to broiled meat compared to elderly men(p<0.05).
