This study was intended to help children to cultivate and develop a sound attitude toward food consumption and eating habits through the analysis of food and nutritional information in news articles and advertisements in three major daily children's newspapers in Korea: The Chosen Children's Daily Newspaper, The Hankook Children's Daily Newspaper, and The Donga Children's Daily Newspaper. The monitoring period was for twelve months, January to December 2003. Two hundred seventy-nine articles and three hundred thirty-five advertisements were analyzed. The results were as follows. 'Cooking and health' were the most frequent subject in food and nutrition articles. The articles' contents are evaluated positively in morality and explanation; but negatively in fairness, specialization, and objectiveness. The articles were insufficient in the explanation of professional terms, scientific bases, and practical measures for real life. It therefore seems that they were difficult for children to understand well. The most frequent themes in the advertisements were 'processed fats and sugars' such as chocolate, candies, and cookies. Frequently, they were exaggerated and accompanied by phrases promoting consumption. They did not provide sufficient well-grounded information, and focused too much on events or gifts to instigate consumer sentiment. In conclusion, the most serious problem was that most food and nutrition information in these children's newspapers was lacking in specialization. More specialized and objective information should be provided in order to enhance the educational value of children's newspapers and their utilization in school education programs. Continuous monitoring should be carried out to discover those news articles and advertisements that contain correct food and nutrition information.

The purpose of this study was to understand current food consumption phenomena in the context of Korea's consumption culture and economy. For this purpose, food consumption phenomena and the underlying meaning of consumption culture were investigated. The study indicated that current food consumption phenomena were characterized by increased eating habits away from home, consuming more fast food and processed foods, westernized diet, eager for taste, and overwhelming well-being products, which could result in environmental problems as well as malign physical and mental defects. It was argued that current food consumption phenomena had been mainly affected by the commercial food industry and consumers' cultural consideration. Finally, this paper discussed several approaches to motivate consumers' awareness and how to change their food consumption culture, and further government policy efforts.

The purpose of this study was to investigate how comparative menu price, human service, amenity, and menu quality affected menu value, and how menu value influenced revisit intention. The model was tested in a family restaurant setting using a sample of customers visiting and enjoying menu in Daegu metropolitan city. Empirical results confirmed that not only do human service, amenity and menu quality increase menu value but that comparative menu price reduces menu value. Menu value was also found to be a significant antecedent of revisit intention. The results obtained have major implications for family restaurant marketers as well as for future research. First, family restaurant marketers should pay attention to menu pricing, as menu price decreased menu value. Second, family restaurant marketers should try to increase menu value through training of human service. Third, family restaurant marketers should try to add menu value by way of recruiting high-skilled cook. Fourth, family restaurant marketers should make efforts to attract customers through interior design.

The purposes of this study were to measure price elasticities of menu items of a family restaurant, identify differences of price elasticity between subgroups, and provide a comprehensive understanding on price elasticity. 3 menu items of a salad buffet family restaurant in Seoul were selected for analyses, and a questionnaire was developed through literature review and modified after pilot test. The questionnaires for main survey were distributed to 250 customers on their visit to the restaurant, and a total of 139 questionnaires were used for analyses (55.6%). Statistical analyses were conducted using SPSS Win (12.0) for descriptive analyses, t-test, ANOVA, and the main results of this study were as follows. The demands were expected very elastic to the changes in prices of all 3 menu items, and there were significant differences between groups of different company types. In addition, the changes in use were less affected by the changes in menu price when customers were satisfied with each menu item. On the basis of these results, it was concluded that price increases of menu items should be companied by quality improvement of products and services, and differentiated marketing strategy for each segments of customers would be helpful to profitability of the restaurant. Overall, measurement of price elasticity could help to predict customer behaviors on price changes, and give much useful information for managers and marketers of foodservice organizations in development of price strategies.

The purpose of this study was to develop protein enriched menu for the aged and running an acceptance test on the protein enriched menu. Four kinds of the menu were developed with emphasis on protein enriched food materials of chicken and beans for menu1, chunggukjang for menu2, pork for menu3, beef and mackerel for menu4. one portion of calorie, polysaccharide, protein and fats for the aged were calculated at 567kcal, 92.8g, 21.3g and 12.6g respectively based on recommended daily allowances for adults. Protein content increased in the menus 1, 2, 3 and 4 were 13.2%, 17.5%, 12.4%, and 13.3%, respectively. In the result of the acceptance test, the cooked rice with black beans and chicken soup of menu1 had significantly the highest acceptance score among the rice and soup groups, respectively (p<0.05). In the side dish, bean curd, cucumber and onion salad in menu1 had relatively higher acceptance scores than the others with significant difference at p<0.05. Overall acceptance of menu 1 had significantly the highest acceptance scores of all. Female showed significantly the higher scores of overall acceptance on menu 2 and 4 than those of male from the t test results of acceptance test.

This study was designed to : (a) analyze the menus of the French restaurant in tourism hotel using the menu analysis techniques of Kasavana & Smith and Pavesic, (b) compare the characteristics of the two analysis techniques. The calculations for the menu analysis were done using the MS 2000 Excel spreadsheet program. The menu mix % and unit contribution margin were used as variables by Kasavana & Smith and weighted contribution margins (WCM) and potential food cost % (PFC%) by Pavesic. In two cases, a four-cell matrix was created and menu items were located in each according they achieved high or low scores with respect to two variables. The items that scored favorably on both variables were rated in the top category (e.g., star, prime) and those that scored below average on both were rated in the lowest category (e.g., dog, problem). While Kasavana & Smith's method focused on customer's viewpoints, Pavesic's method considered the manager's viewpoints. Therefore, it is more likely to be desirable for decision-making on menus if the menu analysis techniques chosen is suited to its purpose.

The purpose of this study is to investigate exploratory wine consuming behavior based on demographic characteristics of wine consumers. A questionnaire was organized and distributed widely to a thousand of wine consumers who could be easily met at wine bars or restaurants, retail stores, wine expositions and wine sampling parties. Total of 793 completed questionnaires (Male: 48.4%, Female: 51.6%) were obtained and analyzed using SPSS package (v.10.0) program. The results of the present study discuss general demographic characteristics of participated subjects, the expenditure for wine, frequency and amount for wine taking, preference of the origin of wines, and preferred wine style. The results also show that why the consumers purchase wine, where they drink or purchase the wine, and what makes they prefer a particular wine bar. Consumers' information search behavior and important factor on wine selection process are presented at the end of the results as well. The current research suggests that gender and age are critical factors to understand wine consuming behavior of customers and improving the knowledge and service level of wine specialists is powerful marketing tool at practical fields.

본 연구에서는 난소화성 전분의 대체비율을 0%, 10%, 20% 및 30%로 하여 호두 빵을 제조하고 이화학적 검사, 관능검사 및 기호도 검사를 통하여 품질 특성을 조사하였다. 반죽의 pH는 10% 시료군과 대조군이 높은 값을 나타내었다. 반죽의 수분함량은 난소화성 전분을 대체한 시료군이 대조군에 비해 유의적으로 높은 값을 나타내었다. 완성된 빵의 부피는 대조군이 가장 큰 것으로 평가되었으나 10%와 20% 시료군과는 유의적인 차이를 보이지 않았다. 빵의 밝은 정도는 난소화성 전분을 대체한 비율이 높을수록 유의적으로 낮게 평가되었다. 빵의 경도는 10%와 20% 시료군이 대조군보다 유의적으로 낮은 특성을 나타내었다. 빵의 검성과 깨짐성은 비슷한 경향을 보이며 대조군과 30% 시료군이 강하게 평가되었다. 빵의 관능검사를 실시한 결과 고소한 맛은 대조군이 가장 특성이 강하게 평가되었고 떫은맛은 난소화성 전분의 대체비율이 높아짐에 따라 유의적으로 증가하는 것으로 나타내었다. 난소화성 전분의 대체비율이 높아질수록 떫은맛이 강해지므로 향후 떫은맛을 개선시키는 연구가 필요하다고 사료된다. 빵의 질긴 정도는 10%와 20% 시료군이 대조군보다 유의적으로 낮은 특성을 나타내어 부드럽게 평가되었다. 빵 내부의 조밀성은 대조군이 높게 평가되었으나 30% 시료군과는 유의적인 차이를 보이지 않았다. 빵의 기호도 검사 결과 조직감의 기호도는 10% 시료군이 대조군보다 유의적으로 높은 기호도를 나타내었다. 난소화성 전분으로 10%와 20%로 대체된 빵은 대조구와 비교하였을 때 유의적인 차이가 없거나 유의적으로 높은 기호도를 나타내어 개발 가능성을 보여주었으며, 아울러 품질 향상을 위한 체계적인 후속 연구가 계속 이루어져야 할 것으로 사료된다.

본 연구결과 동결건조한 새송이 버섯 분말의 수분함량은 9.0%였고 당질이 63.06%로 가장 높았으며 조단백질 20.70%, 조회분 5.20% 및 조지방 2.0%의 순이었다. 새송이버섯은 높은 당질 중 대부분이 열량을 내지 않는 식이섬유질이 50% 이상으로 많은 부분을 차지하고 있으므로 저열량, 고식이섬유질 식품으로 건강에 유익한 기능성 식품으로 각광을 받을 수 있을 것으로 사료된다. 새송이버섯 분말의 무기질은 Ca, Cu, Fe, Mn, Mg, Na, K, Zn등 8종의 무기질을 확인하였는데 모든 부위에서 K이 가장 함량이 높았으며 그다음으로는 Mg이 모든 부위에시 700.00 mg/kg으로 함량이 높았다. 기둥의 Mn 함량이 무기질 중 가장 함량이 낮았다. 또한 새송이버섯 분말의 총당은 30410.0 mg%로 매우 높았으며 환원당은 873.5 mg%를 나타냈으며 유리당 중 Fructose의 함량이 1671 mg%으로 가장 높았으며 maltose 함량이 가장 낮았다. 새송이버섯 추출물의 전자공여능은 갓, 전체, 기둥 에탄올 추출물이 91.12%, 79.68%, 62.90%의 순이었으며 이는 총 폴리페놀 함량과 같은 경향을 보여주었고, 0.02% α-tocopherol과 BHT의 경우 93.92%, 95.72%로 활성이 매우 높았지만 갓 추출물의 경우 91.12%로 새송이버섯의 항산화효과를 확인 할 수 있었다. 또한 분리 정제된 SF를 α-tocopherol과 BHT와 같은 농도인 0.02%와 0.05%, 0.1%로 추출물의 농도를 조절하여 전자공여능을 측정한 결과 0.02%에서는 57.78%, 0.05%에서는64.20% 및 0.1%에서는 77.33%의 활성을 보였으며 대조군인 α-tocopherol과 BHT와 비교하면 α-tocopherol은 93.92%, BHT는 96.72%로 SF 0.02%와는 차이가 컸지만 다른 버섯추출물들과 비교하면 결코 낮은 값이 아니었다. 이상의 결과를 종합하면, 새송이버섯은 식이섬유질과 무기질 함량이 풍부하면서 저열량 식품이며 총 폴리페놀 함량과 전자공여능 활성이 높아 항산화효과가 우수한 식품으로 기능성 식품 및 산업 소재로서의 활용도가 매우 높을 것으로 사료된다.

This study was performed by questionnaire to investigate the satisfaction and preference on the menu of Japanese restaurant customers in Seoul. The subjects were consisted of 386 participants in Seoul. The results are as follows: Respondents consider that the preferred menu of Japanese restaurants' foods is menus such as 'assorted raw fish', 'sushi', and 'dessert' rather than menus such as 'jin mi', 'seasonal appetizer', 'raw fish with vinegar' and 'clean soup'. The higher intake Japanese cuisine menus was 'dessert' (3.71 point), 'noodle and soup' 'sushi' 'fried dishes', and but 'jin mi' (1.91 point), 'seasonal appetizer' scored the lowest. In result of analyzing difference between importance and satisfaction of the menu, importance is much higher than satisfaction. In terms of IPA analysis on Japanese cuisine menu, it was noteworthy that the 2nd quadrant with high fulfillment but low importance for customers included 'noodle and soup'. The menus that need continuous keeping management with high importance and high fulfillment included 'assorted raw fish', 'roasted dishes', 'fried dishes', 'beef and seafood casserole', 'sushi', 'deopbap', 'dessert'.

This study aims to investigate the quality characteristics of breads with the addition of sweet pumpkin powder. Farinogram showed that the absorption rate of the dough decreased, the development time and stability became shortened, and the degree of attenuation tended to be grown along with increasing the amount of pumpkin powder. From the amylogram, it was found that the gelatinization starting temperature and the maximum viscosity of pumpkin powder added dough seemed to be decreased as the amount of pumpkin powder was increased. Extensogram showed that there was a decrease in the degree of extension of the dough added with increasing the amount of pumpkin powder, while an increase in the degree of resistance and resistance/extensibility. The lightness (L value) and redness (a value) of bread was found to be decreased with increasing the amount of pumpkin powder, while the yellowness (b value) increased. In terms of the dough texture, for which the hardness, cohesiveness and gumminess of the dough were measured, there were no significant differences between groups, while the dough added with 8.0% pumpkin powder showed a significant decrease in the elasticity. The results of sensory evaluation showed that the highest score of color (p<0.05) and taste (p<0.05) were obtained from the bread added with 6.0% and 8.0% pumpkin powder, while the highest score of texture in control and 3.0% pumpkin bread. In addition, the highest score of flavor (p<0.05) and overall acceptance (p<0.05) were observed in bread added with 6.0% pumpkin powder. Upon the results of this study, it was assumed that the development of food products using pumpkin are prospective in response to health-oriented consumers.

묵은 배추김치의 휘발성 성분들을 고진공승화법을 이용하여 분리, 농축하였으며, GC-MS로 분석하였다. 총 62가지의 휘발성 성분들이 검출되었으며, 7개의 sulfur-containing compounds, 8개의 terpenes, 5개의 esters, 8개의 acids, 15개의 alcohols, 2개의 nitriles, 2개의 ketones, 11개의 aliphatic hydrocarbons, 4개의 miscellaneous compounds등으로 구성되어 있었다. 이 중 특히, acids인 acetic acid와 butanoic acid가 높은 함량을 나타내었다. 묵은 배추김치에서 향기활성성분을 규명하기 위해 고진공승화법을 이용하여 휘발성 성분들을 분리 및 농축 후 향 추출물 희석분석법으로 flavor dilution(FD) factor(Log3FD)를 구하였으며, GC-MS 및 GC-Olfactometry(GC-O)법으로 휘발성 성분들을 동정하였다. 이 결과 묵은 배추김치에서 총 16종의 화합물이 검출되었다. 이중 시큼한 냄새, 군덕내의 특성을 지닌 acetic acid, butanoic acid가 높은 FD factor를 보였으며, acids외에 높은 (FD 〉 9)를 나타내는 성분들로는 linalool, 2-vinyl-4H-1,3-dithin 등이 있었다.

This study was to investigate the effect of the addition of red ginseng powder in Dasik. The addition of red ginseng powder in Dasik that we used with was in the ratio of 0%, 2%, 4%, 6% and 8% of red ginseng powder to Dasik in weight. Also, we used two different kinds of Dasik. One was made of starch and the other was made of flour. The physic-chemical analysis and sensory test were performed on the Dasik. The red ginseng powder added flour and starch Dasik showed lower moisture content and higher ash content compared with the non-added control group. In color analysis, whereas L value lowed at the addition of red ginseng powder, a and b value increased at the addition of red ginseng powder. In mechanical texture test, addition of red ginseng powder starch Dasik showed high hardness, cohesiveness and brittleness. Addition of red ginseng powder flour Dasik showed high springiness and gumminess. In the sensory test, the addition of the red ginseng powder reduced the sweetness and increased the surface color and the flavor. There was no difference in preference between the Dasik with up to 4% of red ginseng powder added and the control group, but the Dasik with 6% or more red ginseng was found undesirable (p<0.05). In conclusion, the Dasik with up to 4% addition of red ginseng powder would be the useful method to fulfill the traditional quality of Dasik. It was also found that the flour Dasik was to be more preferable than the starch Dasik.

The objectives of this study were to characterize the quality of soy kefir made with soymilk in combination with fructose (5%, 10%) and one of the extracts from orange (10%, 15%) and grape (5%, 10%) with differently adjusted amounts as defendant variables. The lactic acid bacteria, yeast and total microbial counts of soy kefir were respectively 1.3×107 CFU/ml, 1.6×108 CFU/ml, 1.5×108 CFU/ml, soy kefir was propered to drink. pH of soy kefir mixed by orange and grape extracts was decreased significantly according to add fructose 5%. Acidity became significantly high when orange and grape extracts were added, which means acidity showed similar tendency in the opposite direction. The saccharinity of soy kefir was not significantly in orange extract, but soy kefir added fructose 10% was high more than fructose 5% in grape extract. In sensory evaluation, soy kefirs added orange extract 15%, fructose 5% and grape extract 10%, fructose 5% were estimated highly on color, astrigent taste, sour taste, mouth feel and overall quality.

This study examined the consumptive perceptions of herb added breads and cookies with 436 male and 444 female university students. Also this study tested sensory preference of baguette. The results of this study were as follows: First, the intention rate of herb added breads and cookies were high with 85.5% (N=752) and female was higher with 89.6% than male with 81.2%. In terms of consumption prospect, 48.0% of them responded with increasing, 45.6% of them responded quite positively with 'average'. The 4.4% of them responded with decreasing. There was significant difference about consumption between male and female. Second, 45.8% of them responded herb added breads and cookies consumption rate will be increased due to consumers are seeking new tastes. The 59.0% of them responded consumption rate will be decreased due to they are not familiar with new taste. Third, in terms of sensory preference of rosemary added baguette, appearance, flavor, taste, overall acceptability was high with 2% added group. The texture was high with 1% added group. The appearance and flavor preference of mint added baguette breads was high with 1% added group. The taste, texture, and overall acceptability was high with control group. Fourth, while male preferred rosemary 1% on appearance, flavor, taste, texture, overall acceptability, female preferred rosemary 2% on appearance, flavor, taste, overall acceptability. Both of them evaluated mint 4% as the least preferred.

The study aims to examine whether regular leisure activity of the elderly with active and passive types has a beneficial effect to enhance their health condition. The elderly subjects of 164 (82 of elderly who do active leisure and 82 of elderly who do passive leisure) aged over 60 years in Suwon area were employed. Survey questionnaires were administered to investigate general characteristics, life style, and health status along with anthropometric measurement. From the findings, the elderly who do active leisure were highly educated and better in living status. The elderly who do passive leisure showed higher drinking and smoking rates as well as higher obesity and overweight rates in comparison to the other counterpart. Furthermore, the elderly who do passive leisure were poor in health status. 'Painful knee and eye', 'lower back pain', and 'fatigue' were the most prevalent among subjective symptoms of the elderly. In conclusion, the elderly with active leisure activity seemed to have better life style and maintain good health status. Therefore, it is critically important to establish the health program combined with various leisure activity for the seniors to promote and energize the later years of life.
