This study examined dietary habits and mental health according to generalized anxiety disorders (GAD) and caffeine consumption in adolescents. The data were collected from the 18th Korea Youth Risk Behavior Survey with a sample of 51,850 students. The proportion of students in the GAD High-Risk · Caffeine consumption group (GHRCC) who consumed sweet drinks (p< .001), fast food (p< .001), and midnight meals (p< .001) every day was 15.6, 21.9, and 22.4%, respectively. These proportions were higher than those of students who consumed sweet drinks, fast food, and midnight meals 1-2 times a week, 3-4 times a week, or not at all. In addition, the proportions of GHRCC among students who responded “yes” to experiencing sadness and despair (p< .001), suicidal thoughts (p< .001), suicide plans (p< .001), suicide attempts (p< .001), and loneliness (p< .001) were higher than students who responded “no.” The GAD High-Risk group (GHR) had higher odds with the consumption of midnight meals (OR: 2.51, 95% CI: 2.10-2.99), caffeine consumption (OR: 2.46, 95% CI: 2.21-2.74), and fast food (OR: 2.11, 95% CI: 1.75-2.55) than GAD Low-Risk group. Based on the above results, the risk of GHR was higher among students who consumed midnight meals, caffeine, and fast food daily than those who did not.

This study examined the influence of social responsibility awareness (economic and social-environmental responsibility) and trust in corporate social responsibility on sustainable diets. The subjects of the study were 468 university students. The main research results were as follows. First, the social responsibility awareness of the study subjects was 4.03±0.72 points for economic responsibility and 3.48±0.81 points for social-environmental responsibility. An awareness of economic responsibility showed differences according to gender. Trust in corporate social responsibility was 3.62±0.61 points, and there was no statistical significance based on gender. Second, the level of a sustainable diet was food safety and consideration (4.06±0.63), knowledge of the environment and diet (3.94±0.68), understanding of the food circulation system (3.45±0.77), and healthy diet (3.26±0.89). Among the factors influencing a sustainable diet, female students had higher attitudes toward food safety and consideration and understanding of the food circulation system than male students. Third, the social responsibility awareness (economic responsibility and social-environmental responsibility) and corporate social responsibility trust variables influenced university students’ sustainable diet. Among these, social-environmental responsibility awareness had the highest influence.

This study analyzed the changes in the nutritional components, properties, physicochemical properties, general bacteria, and lactic acid bacteria of pickled cabbage depending on the cultivation area. An analysis of the nutritional composition on the first day of storage showed no significant difference in the calories, carbohydrates, protein, fat, and dietary fiber contents regardless of the cultivation region, but regional differences were observed in the vitamin C content in the order of Andong > Pyeongchang > Haenam. The total free amino acid content appeared in the order Andong > Pyeongchang > Haenam, and the GABA (-amino-n-butyric acid) content appeared in the order Haenam > Andong > Pyeongchang. In addition, pickled cabbage was observed on the 1st, 5th, and 10th days of storage at 4oC. No significant change in appearance was observed on the 1st and 5th days, but changes were observed on the 10th day. Regardless of the cultivation area, the salinity (p<0.05) and pH (p<0.05) decreased significantly as the storage period increased, while the sugar content (p<0.05) and acidity (p<0.05) increased significantly. The general bacteria (p<0.05) and lactic acid bacteria (p<0.05) counts increased significantly as the storage period increased, irrespective of the cultivation region.

Sprout products, such as broccoli, alfalfa, and cabbage, have positive health effects. Thus far, sprout foods have attracted attention owing to their good bioavailability. In particular, young broccoli sprouts exhibit anti-inflammatory, antioxidant, and anti-cancer effects. They contain 100 times more chemoprotective substances than adult broccoli. This study examined the anti-inflammatory effects of freeze-dried young sprout broccoli (FD-YB) in vitro using RAW264.7 macrophage cells. The FDYB powder antioxidant ability test showed that the radical-scavenging activity and superoxide dismutase enzyme activity increased in a dose-dependent manner. In addition, FD-YB was not cytotoxic to RAW264.7 cells, and nitric oxide production decreased after the FD-YB treatment of lipopolysaccharide-stimulated RAW264.7 cells in a dose-dependent manner. Furthermore, FD-YB significantly decreased the expression of inflammation-related proteins (Cyclooxygenase-2, Inducible nitric oxide synthase, and Prostaglandin E Synthase 2) and cytokines (Tumor necrosis factor- and Interleukin-6). In conclusion, FD-YB can be a potential nutraceutical for preventing and regulating excessive immune responses during inflammation.

Human bitter taste-sensing type 2 receptors (hTAS2Rs) are expressed in various human tissues and may be associated with various cell signaling pathways, cell progression, and cell physiology in each tissue. hTAS2Rs can be a potential drug target because it is also expressed in some cancer cells. Xanthorrhizol (XNT) has various biological activities, such as anticancer, antimicrobial, anti-inflammatory, and antioxidant. XNT produces a bitter taste, but the specific hTAS2R activated is unknown, and the hTAS2R-mediated effect of XNT on cancer cells has not been studied. This study discovered the target receptor of XNT among 25 hTAS2Rs and confirmed the possibility of the hTAS2R-mediated inhibition of cancer cell proliferation. XNT activated only one receptor, hTAS2R38 (EC50=1.606±0.021 g/mL), and its activity was inhibited by probenecid, a hTAS2R38 antagonist. When HepG2 and MCF-7 cells were treated with XNT or phenylthiocarbamide (PTC), a known hTAS2R38 agonist, both chemicals inhibited cancer cell proliferation. XNT targets the human bitter taste receptor TAS2R38 and inhibits the proliferation of HepG2 and MCF-7 cells mediated by TAS2R38. This suggests that TAS2R38 may be a new target for disease treatment and a potential new factor for drug development.
