Hypertension is characterized by excessive renin-angiotensin system activity, leading to blood vessel constriction. Several synthetic compounds have been developed to inhibit renin and angiotensin-converting enzyme (ACE). These drugs often have adverse side effects, driving the exploration of plant protein-derived peptides as alternative or supplementary treatments. This study assessed the phenolic compound and amino acid content and the antioxidant and antihypertensive activity of 5 South Korean staple crops. Sorghum had the highest phenolic compound content and exhibited the highest antioxidant activity. Millet grains, particularly finger millet (38.86%), showed higher antihypertensive activity than red beans (14.42%) and sorghum (17.16%). Finger millet was found to contain a large proportion of branched-chain, aromatic, and sulfur-containing amino acids, which are associated with ACE inhibition. In particular, cysteine content was positively correlated with ACE inhibition in the crops tested (r=0.696, p<0.01). This study confirmed that the amino acid composition was more correlated with the antihypertensive activity of grains than the phenolic compound content. Finger millet mainly contained amino acids, which have higher ACE inhibitory activity, resulting in the strongest antihypertensive activity. These findings underscore the antihypertensive potential of select crops as plant-based food ingredients, offering insight into their biological functions.
Reported positive ion fragmentation of phenolic acid derivatives in rice (Oryza sativa L.) were summarized based on the literature. A total of eight phenolic acids (4 derivatives of ferulic acid, 3 derivatives of sinapic acid and p-coumaric acid) were isolated and identified from rice (raw and steamed) using UPLC-DAD-QToF/MS. Results revealed that 6-O-feruloylsurose was the major component with 3'-O-sinapoylsucorse being tentatively identified in Oryza sativa L. for the first time as a new hydroxycinnamoyl derivative in rice grains. In our study, raw brown rice had the highest phenolic acid contents with Samkwang showing higher phenolic acid content than Saeilmi and Sindongjin (12.41 vs. 7.89 and 3.10 mg/100 g dry weight, respectively). Of all varieties, brown rice had higher phenolic acid contents than white rice. These contents decreased considerably when rice was steamed whereas, p-coumaric acid and ferulic acid contents were increased. Additionally, contents of rice (raw and steamed) can be used as a fundamental report for new rice varieties.
This study was conducted to develop HTHP ginseng (high temperature and high pressure ginseng) with improved antioxidative activity and phenolic acid composition by high temperature and high pressure process. The HTHP ginseng extract was analyzed for the total phenol content, DPPH radical scavenging activity and phenolic acid composition. The total phenol content was increased in HTHP ginseng (14.76 ㎎/g) compared to raw ginseng (3.59 ㎎/g) and red ginseng (3.93 ㎎/g). DPPH radical scavenging activities of HTHP ginseng, raw ginseng and red ginseng extracts were 4.8~78.4%, 1~47.4% and 1.8~56.5% at 1~100 ㎎/㎖ concentration. Also ABTS radical scavenging activities of HTHP ginseng, raw ginseng and red ginseng extracts were 8.9~99.8%, 3.4~96% and 1.2~96.5% at 1~100 ㎎/㎖ concentration. In HPLC analysis, amounts of measured phenolic acid of HTHP ginseng greatly increased than raw ginseng and red ginseng, but salicylic acid was not detected in HTHP ginseng. In addition, DPPH radical scavenging activity of phenolic acid from HTHP ginseng was increased. Consequently, we believe high temperature and high pressure process is better method than existing method to increase the bioactivity of ginseng.
본 연구에서는 인산코팅된 것과 되지 않은 OXI-PAN섬유를 사용하여 제조된 무질서 배향의 OXI-PAN/페놀수지 복합재료를 불활성분위기의 여러 열처리온도에서 탄화하였을 때, 섬유표면에 인화합물의 존재 유.무가 복합재료의 물리적특성 및 미세구조 변화에 미치는 영향을 조사하였다. 두 종류 복합재료의 물리적특성 변화를 탄화온도 영향에 대한 섬유와 매트릭스 및 그 계면에서의 미세구조 거동변화와 기공형성의 관점에서 해석하였다. 열처리시 온도상승에 따라 섬유와 매트릭스 계면에서의 화학반응에 의해서 그 구분이 점차 사라지면서 국부적으로 치밀하고 균일한 상을 이루고 있는 것으로 조사되었다. 또한, 탄화 조건에서도 인산코팅은 OXI-PAN 섬유의 직경의 감소를 억제하고 열안정성을 향상시키므로 복합재료의 부피수축률을 줄이고 탄화수율을 증가시키는데도 어느정도 기여할 수 있으리라 판단되었다.
Background : Agaricus bisporus mushroom, which originated from Europe, is an edible mushroom with a unique taste and flavor and is the most widely cultivated mushroom type worldwide, particularly because of the relatively high protein, dietary fiber, and vitamin D contents of the fruit body, which have human health benefits like anticancer and DNA damage protection. However, to our knowledge, few studies have been conducted on the ability to discriminate mushroom’s bioactive compounds according to regional production sites. Thus, this study was aimed to examine the regional difference of selected bioactive compounds in of Agaricus bisporus mushroom.
Methods and Results : The cultivars (cv.) “Saedo” and “Saehan” obtained from five regions of Korea were measured their phenolics and fatty acids profiling by LC/MS and GC-FID system, respectively. Among 54 targeted phenolics, protocatechuic, p-hydroxybenzoic, caffeic, 2,4-dihydrobenzoic, p-coumaric, and salicylic acids were found in the cv. Saedo and cv. Saehan fruit body. Also, tyrosine and phenylalanine, which are precursor metabolites of phemolics, were also observed in the A. bisporus fruit body. In particular, phenylalanine and p-hydroxybenzoic acid were the most abundant phenolic precusor and metabolite present in the A. bisporus, and was significant with the production regions (p < 0.05). The FA content was significant with the production region, but not much differed (p < 0.05). The n-6 FA including linoleic acid was the major FA in the mushroom, accounting > 70% over total FA content. However, the n-3 FA was the n-6 FA was very minor FA metabolites.
Conclusion : These preliminary results can extend knowledge of regional difference of certain targeted bioactive compounds in A. bisporus mushroom produced in Korea, contributing to reliable regional difference with potential broader applications for the international mushroom market.
The propose of this study was to investigate the antioxidant activity of 80% ethanol extracts and various solvent fractions of dandelion (Taraxacmn officinale) leaves and roots, Total phenolics and phenolic acid contents were also examined. The total phenol content of leaves and roots were and respectively. Eight phenolic acids were separated by GC, among which caffeic acid (113.7 mg%)and m-coumaric acid (152.6 mg) were the dominant phenolic acids in leaves and roots, respectively. Amongst solvent functions of leaves and roots, the ethyl acetate fraction showed the strongest radical scavenging activity. A strong correlation was found between total phenol content and electron-donating ability, and ABTS radical scavenging activity showed a similar trend as electron-donating ability. Hydroxyl-radical-scavenging activity and lipid peroxidation were significantly higher in the ethyl acetate fraction than other factions. In particular, the SOD-like activity was highest (43.6%) in the ethyl acetate fraction of dandelion leaves, and was higher than that of trolox. Thus, the ethyl acetate fraction of dandelion leaves exhibited significant phenol content, antioxidant activity, and free-radical-scavenging effects.
인삼원료삼의 안정적인 공급을 위하여 인삼의 기내배양에 의하여 생산된 캘루스 및 모상근으로부터 인삼사포닌, 지방산, 산상다당체, 페놀성화합물 및 유기산함량을 조사하였다. 인삼사포닌의 경우에는 캘루스에 비해 모상근에서 훨씬 많았으며 모상근 세포주간에는 약 10mg/g로 유사한 경향을 보였다. 포화지방산은 인삼 캘루스에서 높은 반면 모상근의 경우에는 불포화지방산이 오히려 많거나 비슷한 경향을 보였다. 특히 인삼 캘루스에서는 palmitic acid가 많이 존재하였으며, 인삼 모상근의 경우에는 불포화지방산인 linoleic acid가 캘루스의 5배 이상 많은 검출되었다. 산성 다당체와 페놀성화합물은 기내 배양한 인삼 캘루스 조직에서는 거의 동량으로 존재하였으나, 인삼 모상근의 경우에는 세포주에 따라서 많은 차이를 나타내었다. 특히 HR-2같은 경우에는 산성 다당체보다는 페놀화합물이 2.26%로 산성 다당체보다 2배 이상 많이 존재하였는데 반하여, HR-3 인삼 모상근의 경우에는 산성 다당체가 1.64%로 페놀화합물보다 4배 이상 존재하는 것으로 분석되었다. 인삼 모상근세포주와 캘루스의 유기산은 모상근 세포주가 34.64 mg으로 가장 많이 존재하는 것으로 조사되었다.
