        본 연구는 설기떡에 보리수를 이용하여 보리수의 첨가량에 따른 설기떡에 미치는 품질 특성을 알아보고 건강 기능성 떡으로의 이용 가능성을 연구하였다. 1. 보리수의 수분함량은 81.64%이었고, 조단백질은 1.75%, 조지방은 0.81%이었으며 조회분은 0.56% 이었다. 보리수는 다른 과실에 비하여 폴리페놀 함량이 높고 항산화성을 가진 식품소재로서의 가치가 있 는 것으로 나타났다. 2. 보리수를 첨가하여 설기떡을 제조하였을 때 보리수 첨가량이 증가함에 따라 a, b값, 당도, 경도, 탄 력성, 씹힘성, 검성은 높아졌고, 수분함량, L값, pH, 부착성과 응집성은 낮아졌다. 특성차이검사 결과 보 리수 첨가량에 따라 모든 검사 항목이 강하다고 평가되었으며 기호도 검사 결과 보리수 첨가 설기떡의 제조 시 보리수는 4%를 첨가하는 것이 가장 선호되었다. 3. 보리수 설기떡의 저장에 따른 특성은 저장 기간이 지남에 따라 a, b값, 경도, 탄력성, 씹힘성과 검 성은 증가하였으며, 수분함량, L값, 부착성, 응집성은 감소하였다. 저장기간이 길어질수록 총균수는 증가 하였으나 보리수 첨가량이 증가할수록 총균수는 낮아 보리수를 첨가하였을 때 떡의 저장성을 높일 수 있음을 알 수 있었다. 이상의 실험결과 설기떡을 제조할 때 보리수의 첨가량은 4%가 적합한 것으로 사료되며 적절한 보리 수 가루의 첨가는 설기떡의 기호도에 긍정적인 영향을 미치며, 관능적 및 기계적인 품질 특성의 향상이 가능한 것이 확인되었다.

        목적 : 본 연구는 short thumb opponens splint 착용이 분만성 상완 신경총 손상 아동의 상지 기능과 손 기능에 미치는 효과를 알아보고자 실시하였다. 연구 방법 : 분만성 상완 신경총 손상으로 진단 받은 11세 남성 아동 1명을 대상으로, 증례 보고 방법 중 (single-subject experimental research design) ABA’ 설계를 사용하였다. 총 20회기로 매주 1회기씩 20주간 진행하였다. 기초선 5회기는 중재 없이 평가하였고 중재기 10회기는 하루 6시간 short thumb opponens splint를 착용 하는 중재를 실시한 후 평가하였다. 추적기 5회기는 중재 없이 평가하였다. 평가는 손기능 평가를 위한 상자와 나무토막 검사(Box and Block Test; BBT), 상지 기민성 검사(nine-hole pegboard test)와 분만성 상완 신경총 손상 환자의 상지 기능 평가를 위한 Mallet scale, active movement scale 검사를 통해 변화를 알아보았다. 결과 : short thumb opponens splint 중재 결과, 상지 기능(Mallet scale, active movement scale)과 손기능(BBT, nine-hole pegboard test)은 중재 전에 비해 유의하게 향상되었다. 결론 : short thumb opponens splint 착용이 분만성 상완 신경총 손상 아동의 상지 기능과 손기능향상에 효과가 있다는 것을 확인하였고, 향후 분만성 상완 신경총 손상 환자의 임상적 중재의 기초 자료로 활용될 수 있을 것이다.

        This study evaluated the quality and sensory characteristics of sulgidduk added with yam powder (5~20%) during 4 days storage. The moisture content of samples initially decreased as the yam powder content increased, but subsequently increased during storage. The pH values also increased during storage, although there was no significant difference. L values decreased and both a and b values increased as yam powder content increased. The decreased L values during storage were not significantly different from control group. The hardness of samples decreased with increasing yam powder content, while hardness of control group markedly increased during storage. Cohesiveness increased as yam powder content increased, and tended to decrease during the storage. Springiness also initially increased as yam powder content increased. No change was apparent during storage in control group or samples added with up to 10% yam powder, while springiness was decreased insignificantly in samples with over 10% yam powder. Lightness, yam odor and savory taste of sulgidduk tended to increase as yam powder content increased, while chewiness decreased. The savory odor was the highest in sulgidduk added with 10% yam powder. Sulgidduk added with 10% yam powder was the most preferred in appearance, taste, texture and overall preference.

        The purpose of this study was to define more precisely the anatomy of the thumb flexor pulley system and to determine the relative contribution of each of the pulleys to the biomechanics of thumb motion at the metacarpophalangeal (MP) and interphalangeal (IP) joints. For this, 22 hands from 11 cadavers were used and randomly assigned to two groups. In the first group, the first annular (A1) pulley was cut first followed by the variable annular (Av) pulley and then the oblique pulley. In the second group, the oblique pulley was cut first followed by the, pulley and then the Av pulley. In 7 of 22 hands, it was a transverse structure parallel to the, pulley with a gap between the A1 and Av pulleys, referred to here as type I. In 9 hands, the A1 and Av pulleys were connected without any gap (type II). In 6 hands, the space between the A1 and Av pulleys were triangular in shape with fibers of the Av pulley converging toward the radial side (type III). In biomechanical study of both first and second experiments, there was no significant difference in MCP joint flexion between the all intact, A1 section, A1/Av section, A2 intact (A1/Av/oblique section), and no pulley configuration (p>.05). In occurring displacements less than 10 mm, there was no significant difference in IP joint flexion (p>.05). However, there was a significant decrease in IP joint flexion occurred in both 15 mm and 20 mm excursion (p<.05), when the oblique pulley was resected additionally after cutting the A1 and Av pulleys in first experiment, and when the A1 pulley was resected additionally after cutting the oblique pulley. According to the results, the injury of only the oblique pulley does not decrease thumb motion significantly. The oblique pulley injury with both the A1 and Av pulleys laceration decreased thumb motion significantly. The additional laceration of the A2 pulley does not decrease thumb motion.

        Thumb adduction is an abnormal pattern typically noted in children with spastic cerebral palsy. This abnormal pattern can limit hand function, specifically in the type and quality of prehension pattern used and in the coordination of release. This ABAB single-subject research was designed to examine the effects of short thumb opponens splint on hand function in cerebral palsy. The subject was a 4 years and 8 months old boy with right upper extremity spasticity. The child was fitted with a short thumb opponens splint, which was worn for 8 hours per day during the daytime. Two different measures were used: (a) prehension component scores; (b) Bruininks-Oseretsky test of motor proficiency. Data was collected three times a week for 10 weeks. Visual analysis of data indicate that after the application of a short thumb opponens splint, improvements were noted in the prehension pattern and fine motor functional task. The results of this study suggest that short thumb opponens splint may prove efficaciousness in the treatment of the child with cerebral palsy.

        This study was carried out to investigate inhibitory effect of extracts from Artemisia capillaris Thumb. on maltase, sucrase, α-amylase, nonspecific α-glucosidase, and postprandial hyperglycemia. Methanol extract and organic solvent (n-hexane, ethyl acetate, butanol, aqueous) fractions from the medicinal herb were determined for the inhibitory activities against maltase, sucrase and α-amylase. The methanol extract from A. capillaris strongly inhibited maltase (57%) and α-glucosidase (72%) at the concentration of 100 μg/ml. Among the four fractions (n-hexane, ethyl acetate, butanol, aqueous) examined, the butanol fraction from A. capillaris showed potent inhibitory effects on maltase (73%), sucrase (33%), and α-amylase (75%) at the concentration of 100 μg/ml. The butanol fraction from Artemisia capillaris also exhibited significant reductions (20%) of blood glucose elevation in mice loaded with maltose. These results suggest that the extract from Artemisia capillaris can be used as a new nutraceutical for inhibition on postprandial hyperglycemia

        The influence of packaging methods(0.03mmPE, 0.05mmPE, 0.1mmPVC, VACUUM) and marketing temperatures(2, 1) on the shelf-life and quality were investigated in yam(Dioscorea). Respiration, weight-loss and rotting-rate was reduced in polyethylene film packaging in the order of VACUUM, 0.1mmPVC, 0.05mmPE, 0.03mmPE and the effect was more outstanding at 1 than 2. The ethylene concentration of PVC packaging group was higher than that of other packaging methods, which was related with sprouting. firmness was higher in low-temperature than in room-temperature. PPO activity was lower in vacuum than in other packaging methods, which was associated with browning. The shelf-life of yam was the longest in vacuum Packaging, 3 weeks at 2 and more than 4 weeks at 1.
