        경북 동해안 일대의 전통 향토식품인 꽁치 과메기의 건조방법을 자연건조와 인공건조로 달리하여 각각 15일 건조기간 중의 핵산 관련물질, 아미노산 함량의 변화를 조사하였다. 핵산 관련 물질은 건조기간중 ADP, AMP 함량은 서서히 감소하는 반면 IMP함량은 증가하여 IMP 축적현상을 보였으며 건조기간 중 inosine과 hypoxanthine의 함량이 증가하였다. K value의 변화는 건조과정 중 점차 증가하여 건조 중 핵산 물질의 부해가 진행됨에 따라 신선도는 떨어지는 것으로 나타났고 핵산 물질의 변화에 의한 신선도 측면에서 인공건조가 자연건조보다 유리한 것으로 나타났다. (특히 IMP 등의 조합에 의한 맛의 상승작용으로 과메기 특유의 맛을 내는 것으로 사료된다.) 총 유리아미노산 함량은 2.98이었으며 glutamic acid, aspartic acid, histidine의 함량이 전체 유리 아미노산의 함량이 34% 이상 차지하였다. 자연 및 인공건조동안 총 유리아미노산 함량은 서서히 증가하였으며 glutamica acid, histidine은 건조 3일째 이후부터 9일째까지 급속히 감소하였고 자연건조보다 인공건조의 감소가 더 크다. 자연 및 인공건조 중 lysine함량은 점차 증가하였으며 threonine은 거의 변화가 없었다.

        본 논문에서는 건물 기초 설계의 자동화를 위한 규칙 기반 시스템을 개발하였다. 상부구조의 설계 결과와 지반 조사 보고서로부터의 지반에 관한 자료를 읽어 들여 허용지내력을 추정하고 주어진 상황에 적절한 기초형식을 추론하는 방법을 제안하였다. 허용지내력은 표준관입시험치로부터 추정하였고, 이를 바탕으로 각 기중과 벽체의 기초형식은 우선 독립기초와 벽체기초라고 가정하여 그 크기를 계산하고 각 기초의 중첩여부를 조사하여 중첩되는 기초들은 본 논문에서 개발한 기초 합병의 방법을 이용하여 새로운 기초형식으로 변경되도록 하였다. 개발된 시스템은 주어진 상부구조 설계결과와 지반조건에 대하여 적절한 기초형식을 선정하여 그에 따른 배근 설계를 쉽게 할 수 있도록 해준다.

        4.5 Pb(Zn1/3Nb2/3)O3-40.5Pb(Ni1/3Nb2/3)O3-55PZT와 PLZT(10/70/30, 11/60/40)를 경사조성으로 하여 경사기능 재료를 제조하였으며, 그 유전 특성과 압전 변형율 특성을 조사하였다. 경사기능재료는 A/B/A의 세층으로 성형하고 소결한 후 한 층을 연마해내어 제작하였다. 닥터블레이드용 슬립에는 acrylic계 유기 결합제가 34-36wt% 혼합되었으며, 건조 후 균열이 없는 양호한 thick film을 제조하였다. 1250˚C, 2시간의 소성에 의해 경사기능화된 시편은 Nb와 La등의 조성 차이에 의한 구배를 이루었으며, 구배영역은 약 30μm 정도였다. 경사기능재료에서 유전상수나 큐리온도롸 같은 유전특성은 조합한 조성층의 특성들사이의 값을 나타내었다. 인가 전압에 따른 변형율 특성은 단일 조성의 시편보다 현저하게 증가하였다. 실제로 경사기능 압전엑튜에이터를 제조한 결과 약 3μm/100V 정도의 변위향을 나타내었다.

        고려인삼중 홍삼의 산성다당체 성분이 암독소 호르몬-L의 지방분해 저해활성의 영향을 검토하고자 본 연구를 하였다. 지방분해 및 식욕억제 인자로 알려진 암독소 호르몬-L은 Sarcoma-180을 접종한 암 mouse의 복수중 액으로부터 부분 정제하여 사용하였다. 홍삼으로부터 정제하여 얻은 각 분획의 산성다당체 성분들이 in vitro에서 암독소 호르몬-L유도 지방분해를 10㎍/㎖ 반응농도 이상에서 억제작용이 있었고, 각 분획 중에서 반응농도가 50, 100, 200, 500 및 1, 000 ㎍/㎖일 때 억제율은 PG_4와 PG_4-3 성분이 가장 높았다. 그러나 인삼시료 g당 총저해활성 (unit)은 각 분획중에서 비흡착분획인 PG_1성분이 가장 높았고 다음이 흡착분획 중의 PG_4와 PG_4-3성분이 다음 순위였다.

        압전 actuator를 위한 새로운 형태의 재료를 개발하여, 그 특성들을 조사하였다. 이 압전 actuator는 세 층으로 구성되어 있다: 압전 세라믹 층, 조성이 점차로 변하는 중간층, 그리고 또 다른 압전 세라믹 층, 이러한 형태이 재료는 경사 기능 재료(Functionally Gradient Material, FGM)라 불리운다. 경사 기능 재료를 제작하기 위한 재료설계의 개념을 도입하여, FGM화에 있어서 열팽창에 의한 시편의 박리를 막기 위해 (Pb, La)(Zr, Ti)O3계에서 서로 다른 세라믹스의 조성을 선택하였다. 1300˚C, 2시간의 소성에 의해 경사 기능화된 PLZT는 약 20μm정도의 중간층을 형성하는 미세구조를 가지고 있었다. 경사 기능 재료에서의 유전 및 압전 등의 여러 특성은 두 접합 조성층 특성의 사이의 값을 나타내었다. 인가 전압에 따른 strain특성은 전반적으로 단일 시편의 특성보다 증가하였으며, 특히 접합 조성층에서 고압전-저유전성 조성과 저압전-고유전성 조성을 경사 기능화하였을 경우에 변위의 증가 정도가 더욱 향상되었다.

        This study aimed to investigate the improvement effect of 5% (w/w) mung bean (Phaseolus aureus L.) on lipid composition and protein concentration in hyperlipidemic rats. Seven-week-old male (Sprague-Dawley) rats were divided into four groups (n=6, each), and fed experimental diets containing mung bean meal [basal diet+5% (w/w) mung bean (BM), basal-hyperlipidemic diet+5% (w/w) mung bean (BHM)], basal-hyperlipidemic diet (BH), and control (basal diet, BD). Lipid composition in the mung bean diet groups (BM and BHM) evidenced significant reductions in serum total cholesterol, low-density lipoprotein cholesterol, atherosclerotic index, cardiac risk factor, triglyceride, phospholipid, free cholesterol, cholesteryl ester, blood glucose, nonesterified fatty acid, and an elevation in high-density lipoprotein cholesterol. The serum albumin/globulin ratio was increased in mung bean diet-supplemented rats compared to that in hyperlipidemic rats (p < 0.05). Total calcium, phosphorus and potassium concentrations in sera were higher in the BM, BHM and BD groups than in the BH group. Concentrations of sodium and chlorine in sera were lower in the mung bean diet-supplemented groups than in the hyperlipidemic group. The in vivo experiments showed that ingestion of mung bean was effective in improving lipid composition, protein concentration, and blood glucose.

        The purpose of this study was to investigate the improvement effect of mung bean (Phaseolus aureus L.) on the hepatic functional enzyme and catalase activity of streptozotocin (STZ)-induced diabetic rats. Sprague-Dawley (SD) male rats were divided into four groups (n=6), and fed experimental diets containing mung bean meal [basal diet+5% mung bean (BM), basal diet+STZ+5% mung bean (SM)], and control (Basal Diet, BD), BS groups (basal diet+STZ). Serum concentrations of Blood Urea Nitrogen (BUN) and creatinine were significantly decreased (p<0.05) by 5% mung bean supplementation diet. The activities of aspartate transaminase (AST), alanine transaminase (ALT), akaline phosphatase (ALP), lactate dehydrogenase (LDH), amylase and lipase were decreased in the BD, BM and SM group than BS group. The catalase (CAT) activity was significantly increased (p<0.05) in mung bean supplementation diet (BM, SM group) than diabetic group (BS). In vivo experiments with diabetic rats showed that ingestion of mung bean supplementation diet were effective in BUN concentration, and hepatic functional enzyme activities.

        The purpose of this study was to probe the influences of NaF oral administration on a dose-effect relationship between fluoride levels of serum enzyme activity such as alkaline phosphatase (ALP), aspartate aminotransferase (AST), alanine aminotransferase (ALT), and lactate dehydrogenase (LDH) in rats fed experimental diets for 5 weeks. All groups increased the activity of serum ALP, AST, ALT, and LDH levels with increasing NaF. In addition the fluoride levels of serum and organ tissues (liver, brain, heart, lung, kidney) in oral NaF groups (NF3~NF50) were significantly increased by adding sodium fluoride in comparison with normal diet group (ND) (p<0.05). These results, a high concentration of sodium fluoride was determined that the toxicity to various organ tissues.

        The purpose of this study was to investigate the improvement effect of 5% turmeric (Curcuma longa L.) on the blood glucose and lipid metabolism function of streptozotocin (STZ, 45 mg/kg body weight)-induced diabetic rats. Seven-week-old male rats were divided into four groups (n=6), and fed experimental diets containing turmeric meal [basal diet+5% turmeric (BT), basal diet+STZ+5% turmeric (ST)], and control (BD), BS groups (basal diet+STZ). The results of this study, turmeric diet groups (BT, ST) in lipid component as evidenced from the significantly reduction of serum total cholesterol, low density lipoprotein-cholesterol (LDL-cholesterol), atherosclerotic index (AI), cardiac risk factor (CRF), triglyceride (TG), phospholipid (PL), free cholesterol, cholesteryl ester, uric acid, blood glucose, non esterified fatty acid (NEFA), and elevation of high density lipoprotein-cholesterol (HDL-cholesterol). The serum albumin and globulin contents were increased in turmeric supplementation diet than STZ-induced diabetic rats (p<0.05). Concentrations of sodium (Na) and chlorine (Cl) in sera were lower in the turmeric diet than diabetic group. Total calcium (T-Ca), phosphorus (Pi) and potassium (K) concentrations in sera were higher in the BT, ST and BD groups than BS group. In vivo experiments with Sprague-Dawley rats showed that ingestion of turmeric (Curcuma longa L.) were effective in the blood glucose and lipid metabolism functional improvement.

        The purpose this study was to investigate the influences of 5% turmeric (Curcuma longa L.) supplementation on enzyme activities such as aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH), amylase, lipase and catalase in serum of dyslipidemic rats. Sprague-Dawley (SD) rats (24 male) were divided into four groups, namely the ND group (normal-nondyslipidemic diet), NT group (normal-nondyslipidemic diet+5% turmeric), DD group (control-dyslipidemic diet), and DT groups (dyslipidemic diet+5% turmeric). Serum concentrations of blood urea nitrogen (BUN), creatinine and uric acid were significantly decreased (p<0.05) by turmeric supplementation diet. The activities of AST, ALT, ALP, LDH, amylase and lipase in sera of turmeric diet group were significantly decreased (p<0.05). The catalase activity in serum of turmeric supplementation group was significantly increased than dyslipidemic diet (p<0.05). In vivo experiment with dyslipidemic rats showed that ingestion of turmeric were effective in kidney and hepatic functional enzyme activities. Which suggests that turmeric material could be used for further studies as a potential source for nutraceutical foods.

        Studies on the physicochemical properties of physiological activity substance in turmeric (Curcuma longa L.) were analyzed for the use as an functional food materialization. The proximate compositions in the vacuum freeze dried turmeric were carbohydrate 72.90%, moisture 5.74%, crude protein 10.02%, crude fat 4.67%, and crude ash 6.69%, respectively. The mineral contents of turmeric were calcium (Ca) 2,294.77 mg kg-1, potassium (K) 28,780.54 mg kg-1, magnesium (Mg) 2,826.90 mg kg-1, sodium (Na) 1,826.58 mg kg-1, iron (Fe) 190.94 mg kg-1, and manganese (Mn) 620.16 mg kg-1. The vitamin contents of turmeric were pantothenic acid 1.040 mg/100 g, riboflavin 0.166 mg/100 g, thiamin 0.148 mg/100 g, pyridoxine 0.010 mg/100 g, and calciferol 0.008 mg/100 g, respectively. Total amino acid contents in protein of turmeric were 7.66 g%, and major amino acids were aspartic acid 1.45 g%, glutamic acid 1.07 g%, leucine 0.71 g%, phenylalanine 0.47 g%, and arginine 0.46 g%, respectively. The amount of free amino acids of turmeric were 225.81 mg%, and major free amino acids were asparagine, aspartic acid, glutamic acid, serine, and alanine. Especially, in the case of asparagine, it was highest. The compositions of fatty acid were saturated fatty acid 45.09%, monoenes 8.62%, and polyenes 46.30%.

        The present study were conducted to determine physiological activities and antioxidant effects [2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activity, reducing power, Ferric Reducing Antioxidant Power (FRAP) and Fe2+ (ferrous ion) chelating capacity] of 70% methanol, chloroform:methanol, 2:1 volume ratio (CM) and ethyl acetate extract of turmeric (Curcuma longa L.). Bioactive compound of tannin 0.125±0.007 mg Catechin Equivalent (CE)/g dry weight. Turmeric extracts yield were 70% methanol 16.54%, CM 5.64% and ethyl acetate 4.14%, respectively. Antioxidant activity of the samples exhibited a dose-dependent increase. Results showed that extraction solvent had significant effects on total flavonoid content and antioxidant effects of ethyl acetate. But ferrous ion-chelating capacity of 70% methanol extract was higher than CM and ethyl acetate extract. From the results of this study, turmeric can be utilized as a valuable and potential nutraceutical for the functional food industry.

        The purpose of this study was to probe the influences of krill (Euphausia superba) meal with NaF oral administration on a dose-effect relationship between fluoride levels of krill meal and serum enzyme activity such as alkaline phosphatase (ALP), aspartate aminotransferase (AST), alanine aminotransferase (ALT), and lactate dehydrogenase (LDH) in rats fed experimental diets for 5 weeks. There were no significant decreases in the activities of ALP, AST, ALT, and LDH in sera among krill meal diet groups (KF10, KF20, KF30). However, these groups were significantly (p<0.05) lower enzyme activities than normal diet (ND) plus NaF 10 mg group (NF). The fluoride levels of serum and organ tissues (liver, brain, heart, lung, kidney) in NaF 10 mg groups (NF, KF10, KF20, KF30) were significantly increased by adding krill meal in comparison with normal diet group. The results indicate that a difficult to found toxicity to the tissues from krill meal diet groups.

        The aim of the study were to investigate the influences of krill (Euphausia superba) meal on the body weight, lipid metabolism functional improvement, blood glucose level, protein component in the sera of rats which fed experimental diets for 5 weeks. Serum concentrations of total cholesterol, Low-Density Lipoprotein (LDL)-cholesterol, free cholesterol, triglyceride (TG), phospholipid (PL) and blood glucose were higher in the control diet group (G1 group) than the control diet plus 10% krill meal group (G2 group), the control diet plus 20% krill meal group (G3 group), the control diet plus 30% krill meal group (G4 group), and a general dose and time independent one-way analysis of variance was performed to assess efficacy. Conversely depending on the content of krill meal for the High-Density Lipoprotein (HDL)-cholesterol level, it showed higher results. The concentrations of total protein, albumin and globulin in sera, there were not significant difference among the groups (p<0.05). The results indicate that a krill meal diet effectively inhibited increases in lipid elevation, blood glucose level in the sera of rats.

        This study was performed to evaluate the possibility of application of lactic acid bacteria fermentation to increase the anti-allergic activity of the extracts from Houttuynia cordata Thunb. H. cordata Thunb was fermented on 25, 30, 35 and 40℃ for 5 days by two species of lactic acid bacteria, Leuconostoc mesenteroides 4395 and Lactobacillus sakei 383. The anti-allergic activity of water extracts of H. cordata Thunb was then analyzed both before and after fermentation. Anti-allergic activity was determined in vitro assays by using 5-lipoxygenase (5-LO), cyclooxygenase-2 (COX-2) and β-hexoseaminidase release of RBL-2H3 cells (degranulation marker). The extracts fermented at 35℃ by both bacteria had the highest inhibitory activities against 5-LO, and also higher than the control, and the one fermented at 30℃ by both bacteria had the highest inhibitory activity against COX-2. The degranulation of RBL-2H3 cells induced by IgE-antigen complex was estimated as β-hexoseaminidase release rate as reference of 100%, the release rates were inhibited in 25 μg/ml of the extracts fermented at 30, 35 and 40℃ only by L. mesenteroides 4395. These results indicate that anti-allergic activity of H. cordata Thunb is increased by lactic acid bacteria fermentation.

        This study was conducted to investigate the effects of drying methods for Citrus junos peels on quality characteristics of the hot-water leachate from teabags containing those peels. Fresh peels were hot-air (50℃), cold-air (30℃), or freeze-dried (-45℃), powdered to a size of 40 mesh, packaged with a paper sachet, and then the packaged teabags were leached for 10 min with hot-water (70℃). L*value (lightness) and -a* value (greenness) of the peel powder were the highest in the freeze-dried samples. Soluble solids and titratable acidity of the teabag leachate were in the following order; cold-air, freeze, and hot-air dried samples. Among free sugar contents in all samples, fructose content was the highest, followed by glucose and sucrose. Fructose and glucose contents were not affected by drying methods. There was no significant difference in the flavonoid content among the peels dried using three drying methods. DPPH radical-scavenging activity of the leachate was the highest in the cold-air dried sample. These results suggest that cold-air drying would be an effective method to enhance the quality of hot-water leachate of teabags prepared from C. junos peels.

        This study was conducted to develop rice cookies added with young persimmon fruits. Effects of varying amounts (0-12%) of the fruit powder from a young astringent persimmon fruit (picked at July) on the quality characteristics of rice cookies were studied. Ingredients [rice (Oryza sativa subsp. japonica ‘Ilpum’) flours, persimmon (Diospyros kaki Thunb. ‘Cheongdobansi’) powder, sugar, butter, salt, baking powder, egg] were mixed, cut (thickness 3 mm, diameter 35 mm), baked at 170-180℃ for 9 min, cooled, and packaged in polyethylene/nylon bags. The loss rate and spread factor after baking of cookies increased and then decreased with an increase in the amount of fruit powder added. The moisture content and color values (L* and a*) of cookies decreased with an increase in the amount of the persimmon powder added. Phenolic compounds content and DPPH radicals scavenging activity increased with an increase in persimmon powder content; in particular, the DPPH activity of the cookies sharply increased after the addition of 3% persimmon powder. These results suggest that the addition of the young persimmon fruit powder affected the quality characteristics of rice cookies and this fruit powder (approximately 3%) can be utilized as an additive during rice cookie processing.
