        This study measured the quality characteristics of Yulmu-added kimchi with different manufacturing methods to present primary data for the food development of kimchi and the optimal Yulmu manufacturing method. pH, salinity, and soluble solids tended to decrease during the storage period in all sample groups. The chromaticity differed depending on the mixing ratio of the material, and WYS showed the highest values for all L, a, and b values. Total polyphenol content and ABTS free radical scavenging activity were higher in the Yulmu-added sample groups than in the control group. Citric acid was reduced in range in the control group and all sample groups during the storage period, and lactic acid tended to increase in content in all sample groups. The dietary fiber content was higher in the Yulmu-added sample group than in the control group during storage. As a result, it was found that Yulmu-added kimchi had higher total phenol content, antioxidant properties, and dietary fiber content than the control group. YFF, YF, and WYF were found to be excellent, confirming their nutritional value, and are considered suitable for developing healthy and functional food materials for kimchi.

        This study measured coffee’s quality and antioxidant properties by adding sweet sapphire grapes with different extraction conditions to develop materials for a new, healthy, functional coffee menu. As for pH, the control group showed a higher value than the sample group, and ES-SP was the highest at 11.47±0.06oBrix in the soluble solid content. As for organic acids, ES-SP showed the highest values in shikimic acid, formic acid, and acetic acid. In glucose and fructose, ES-SP showed high contents of 19236.80 mg/ml and 24578.21 mg/ml among sample groups. Trigonelin and chlorogenic acid showed the highest values of ES-SP at 1349.44±0.50 mg/mL and 1132.58±0.51 mg/mL. In caffeine, the control group and ES-SP showed high content. In DPPH, all sample groups showed higher values than the control group. The total phenol content was the highest in the control and ES-SP groups. As a result of the above espresso extraction conditions, coffee has high organic acid, free sugar, trigonelin, chlorogenic acid, antioxidant, and total polyphenol content, providing suitable manufacturing method for developing coffee menus using sweet sapphire.

        This study measured the biochemical properties, antioxidants, free sugars, organic acids, trigonelin, chlorogenic acids, and caffeine content of coffee prepared using different extraction methods by adding dried apple powder to develop high-quality functional drinks. Espresso had the highest soluble solids content and brownness at 9.17±0.88oBrix and 1.85±0.57. Its organic acid content was higher in the sample groups than in the control group, whereas the espresso group was highest in citric acid at 2184.11±0.01 mg/mL, malic acid at 2181.35±0.03 mg/mL, fumal acid at 40.42± 0.01 mg/mL, lactic acid at 32.04±0.02 mg/mL, and formic acid at 49890 mg/mL. Additionally, it had the highest sucrose, glucose, fructose, and sorbitol contents (p<0.05). In the trigonelin content, the sample groups showed a higher content than the control group, with the order being espresso > mokapot > water drip > frenchpress > sippon > hand drip (p<0.05). In the content of chlorogenic acid and caffeine, the sample groups showed higher content than the control group, with the order of espresso > mokapot > water drip > siphon > frenchpress > hand drip (p<0.05). As a result, espresso was found to be suitable for developing coffee drinks in manufactured coffee with different extraction methods.

        This study examined the quality characteristics and antioxidant properties of fruit and vegetable jellies mixed with Boswellia. Jellies were prepared with 0, 2, 4, 6, and 8% Boswellia, sugar and konjac. As a result, the pH of Boswellia jellies decreased to 5.19, 5.05, 4.94, and 4.84, respectively (p<0.001). Their L-value, a-value, b-value, and hardness increased significantly with increasing levels of added Boswellia (p<0.001), while individual phenolic compounds increased significantly with increasing levels of added Boswellia. Free sugars and organic acid contents had the highest bw10. The total phenolic compounds had the highest BW5 (112.9 mg TAE/g), BW10 (99.41 mg TAE/ g), and while the ABTS activities showed higher values than the control group. Overall, Boswellia can be used to produce high-quality jelly, which is expected to help develop excellent functional jelly products.

        This study analyzed the quality characteristics and antioxidant activity of a mixture of apple and carrot juices with different amounts of beet. The pH of the mixed juice sample group increased as the beet amount increased, and the acidity and soluble solid content tended to decrease. As for the L value, the control group was the highest, the beet addition rate decreased, and the a value and b value showed a decreasing trend. As for dietary fiber, B0.1 was found to have the highest dietary fiber content at 0.20 mg/L. As for the mineral, Zn, Fe, and Ca had the highest control group, Mn, Mg, and K had the highest B0.5, and Na and P had the highest B0.1 and B0.3 juices, respectively. Compared to the control group, free sugars increased sucrose as the beet juice added increased. DPPH radical scavenging and total phenol content significantly increased DPPH scavenging as the beet added increased. Therefore, it was found that B0.3 was the most suitable when manufacturing apple and carrot mixed juice with different amounts of beet added, and it is considered as a manufacturing optimization method to improve the marketability and functionality of the product.

        본 연구는 김치에 사용되는 젓갈을 대체할 수 있을 것으로 예상되는 천연 소재들(고기추출물, 해산물추출물, 채소추출물)이 김치의 휘발성 향기 특성에 미치는 영향을 조사하였다. 모든 실험군에서 김치가 발효·숙성되면서 원재료에서 유래되는 황화합물이나 aldehyde류는 감소하고, alcohol류와 acid류 등과 같은 발효산물이 증가하여 김치의 휘발성 향미를 이루었다. 발효·숙성 28일째에 젓갈을 첨가한 김치에서 휘발성 물질 중 acetic acid가 가장 낮은 비율(4.90%)로 검출되었으며 채소추출물(5.39%), 대조구 (6.28%), 해산물추출물(6.47%), 고기추출물(8.08%)을 첨가한 김치 순서로 acetic acid가 높은 비율을 나타내었다. Acetic acid 비율이 증가함에 따라 산도가 증가하고 pH는 감소하였는데, 젓갈을 첨가한 김치는 숙성 28일에 가장 낮은 산도와 가장 높은 pH(산도 0.80, pH 4.37)를 나타내었으며, 그 다음으로는 채소추출물을 첨가한 김치(산도 0.84, pH 4.32), 고기추출물을 첨가한 김치(산도 0.89, pH 4.31), 대조구(산도 0.93, pH 4.27), 해산물 추출물을 첨가한 김치(산도 0.97, pH 4.23) 순서였다. 산도와 pH의 변화 그리고 발효산물인 acetic acid나 alcohol의 함량 비율로 볼 때, 김치에 첨가되는 젓갈 및 젓갈을 대체한 부재료는 발효·숙성에 시간적인 차이를 제공하는 것으로 생각된다. 담금 직후 (발효·숙성 전)에는 각각의 다양한 부재료로부터 유래되는 향미물질이 관능적 특성에 영향을 줄 수도 있으나, 김치의 휘발성 성분의 구성은 숙성이 진행됨에 따라 유사한 패턴으로 변화하는 양상을 나타내며 부재료에 대한 관능적 영향이 줄어들었다. 본 연구결과에 따르면, 젓갈과 젓갈을 대체하기 위한 천연 소재들은 초기 김치 담금시에 관능적 특 성에 영향을 주고 발효·숙성이 진행되는 속도에 영향을 줄 뿐, 최종 김치의 기호도에 영향을 주는 향기 특성과 관능적 특성에는 큰 영향을 미치지 않는 것으로 판단된다.

        목적 : 본 연구는 작업·물리치료사들의 근골격계질환 유해인자를 확인하고 이에 따른 근골격계질환 예방프로그램의 적용이 통증 및 직무스트레스에 미치는 효과에 대해 알아보고자 하였다.연구방법 : 2010년 5월부터 동년 7월까지 경남 창원에 위치하는 C병원에 근무하는 21명의 작업·물리치료사들을 대상으로 근골격계질환 유해인자를 Quick Exposure Checklist(QEC)를 통해 확인한 후, 이에 따른 근골격계질환 예방프로그램을 8주간 적용하였다. 대상자들의 중재 전·후의 통증과 스트레스 변화를 측정하기 위해 시각적 상사척도(Visual Analogue Scale; VAS)와 한국인 직무스트레스 측정도구를 각각 사용하였다.결과 : QEC를 통해 작업·물리치료사들의 업무환경은 개선이 필요한 수준임을 알 수 있었고, 중재를 적용 후 중재 전에 비해 VAS와 한국인 직무스트레스 측정도구의 결과가 유의하게 감소함을 알 수 있었다(p<.05). 또한 VAS와 한국인 직무스트레스 측정도구의 상관관계 분석을 통해 통증변화와 직무스트레스변화 간에 양의 상관관계가 있음을 확인하였다(p<.05). 결론 : 본 연구는 작업·물리치료사의 업무환경 분석을 통한 근골격계질환 예방프로그램을 적용함으로써 근골격계질환 예방활동이 작업·물리치료사의 통증 및 직무스트레스 감소에 긍정적인 효과가 있음을 제시하였다.

        The objectives of this study were to provide fundamental information on how individual phenolic compounds form on the inside of apple slices during cold storage, the changes in the content of four types of phenols, ingredient variation of individual phenolic compounds and the influence of phenolic compounds on enzymatic browning. This study measured the changes in the content of soluble solids, pH and vitamin C in order to investigate the correlations between these variables. HD and FA were the main phenolic compounds found in the apple slices, and HD was the most prevalent phenol. Furthermore, comparison of the CG and EP content revealed that there were more CGs than EPs. The phenol content tended to decrease considerably in the fresh apple slices and water-dipped apple slices but only slightly in the CP from sucrose-dipped apple slices and 0.5% ascorbic acid solution-dipped apple slices. The degree of browning increased in the following order: fresh apple slices, water-dipped apple slices, 0.5% ascorbic acid solution-dipped apple slices and CP from sucrose-dipped apple slices. The vitamin C content tended to decrease in the fresh apple slices, water-dipped apple slices, 0.5% ascorbic acid solution-dipped apple slices and CP from sucrose-dipped apple slices. The pH tended to increase in all sample groups, but the pH of the water-dipped apple slices was lower than that of the comparison group. The CP from sucrose-dipped apple slices had the lowest value of pH. The change in soluble solids tended to increase in all treatment groups, but this increase was less in the CP from sucrose-dipped apple slice. Correlation analysis revealed a high degree of correlation between browning and chlorogenic acid content. The results of the present study show that, when stored in the fridge, the change in phenol ingredient content in apple slices influences the browning of the slices. The results also showed that HD and FA were the main phenolic compounds, while CG was shown to have the greatest influence on browning.

        The study results regarding the ingredient differences, sensory characteristics, purchasing type, usage and improvement direction for home-made traditional doenjang and factory produced commercial doenjang are as follows. The L-value indicates that home-made traditional doenjang has a higher value in average than the factory produce done, and the a-value indicates the opposite. Home-made traditional doenjang had higher water content than commercial doenjang ; however the pH values of commercial doenjang and home-made were 5.34 and 5.32 respectively, which was very similar. Factory produced commercial doenjang showed higher protein content than the home-made traditional doenjang. Regarding the correlation between ingredients, there was a significantly negative relationship between the L-value and a-value but a significantly positive relationship between the L-value and b-value. There were no significant relationship with water content, pH and protein content. For the color and taste, which are the sensory characteristics, commercial doenjang showed higher value than the traditional doenjang, but for smell, the values were similar. Regarding grittiness, the factory produced commercial doenjang had bigger particles than the traditional doenjang. Preference was a bit higher in the traditional doenjang. Of the 380 study subjects, most were from 40 to 49 years old (65.5%), and the most family type were nuclear families which was a total of 400 people (69%). Moreover, the most residential type was apartment which was 355people (61.2%), and for the monthly income, more than 2,510,000won was 48.3%. For the educational background, college education was 304 people (52.4%), and high school education was 199 people, 34.3%. In the usage, most of the people eat doenjang more than once a week, and usually their parents make the doenjang. People used both commercial doenjang and home-made traditional doenjang >home-made only >factory produced commercial doenjang only in that order. The reasons for using the home-made traditional doenjang aredelicate taste and flavor>more nutritious> anti-cancer ingredients in that order. The reason they use the factory produced commercial doenjang is because they don't know how to make it at home. The things that needed to be improved in the home-made traditional doenjang are bad smell> entire quality> flavor> color in order, indicating that studies for reducing bad smell are required. The things that needed to be improved in the factory produced commercial doenjang are taste & flavor> entire quality>bad smell> color in that order, indicating that people are more concern about it tasting like home-made than the smell. From the above results, we can see that better functional doenjang should be developed for family health and to increase the consumption of the doenjang, which has good functional psychological activities, also more various types of foods that use doenjang and scientific studies to reduce the home-made doenjang smell should be continuously studied. Moreover, studies on how to make the factory produced commercial doenjang taste more like traditional doenjang should be performed.

        `Kyukonyoram Dyusikbang` is an old cooking book hand-written in Korean by unknown writer, housed in Shinam-mungo of the Korea university. This book introduces Tojungbigyul and Dyusikbang(the part about food), and explains in detail how to handle emergency cases at home, take care of women who deliver a baby and give it name and so on. It can be summarized as follows. (1) 29 'Koi's seem to keep unexpected accidents and encourage people to enjoy stable life at home. (2) In this book are not only 27 ways of how to make liquors but also ways of how to cook dishes using 12 kinds of food with cold water and one kind of rice cakes. (3) It says good yeast is critical for good quality liquors and also emphasizes the. taste of good 'Jang' to enhance the taste of other food and the importance of having basic food materials and spices at home. (4) It describes in detail the day of good or ill luck while mentioning how to name a baby. It can be seen that there were somethings that were considered especially important such as the process of making Jang, the day of placing the rooftop, or the good or ill luck of people.
