        The world mushroom market is continuously expanding due to the improvement of production technology and the continuous increase of demand. Production and consumption of mushrooms are increasing in Korea and imports are increasing year by year. Most of the imported mushrooms are from China. The Lentinus edodes (shiitake mushroom) are in dry form, but Tricholoma matsutake (pine mushroom) and Sarcodon aspratus (Neungi mushroom) are imported in frozen form. It is suspected that frozen Tricholoma matsutake and Sarcodon aspratus are coated with water to increase the weight excessively. In this study, we compared the moisture content and drip% of Chinese and Korean frozen Tricholoma matsutake and Sarcodon aspratus to determine the presence or absence of water coating. The moisture content of frozen Tricholoma matsutake was highest in Yunnan (China) at 94.7%, followed by Tibetan (China) at 92.5%, Yanji (China) at 90.6% and Korea at 88.5%. The moisture content of frozen Sarcodon aspratus was 92.4% in China and 91.6% in Korea. The drip% of frozen Tricholoma matsutake was 23.1% in Tibetan (China), 22.1% in Yunnan (China), 14.5% in Yanji (China) and 11.7% in Korea. The amount of drip% of Korea and Chinese frozen Sarcodon aspratus was 20.8% and 22.7%, respectively. Moisture content and drip% of frozen Sarcodon aspratus were similar to those of Chinese and Korea. Frozen Tricholoma matsutake imported from China showed high moisture content and drip% than Korea ones. These results indicated that water coating is possible in frozen Tricholoma matsutake imported from China.

        붉은곰팡이는 곰팡이독소를 생성하는 식물병원균으로 수확된 보리 알곡에 잔존하여 저장 중 적절한 환경이 조성 되면 곰팡이독소를 생성할 수 있다. 저장 중 겉보리의 저장온도와 곡물수분함량이 붉은곰팡이와 곰팡이독소 오염에 미치는 영향을 알아보기 위해 전라도에서 수집한 겉보리 시료 3점의 수분함량을 14%와 20%로 조절한 후 온도 조절이 되지 않는 상온창고와 12oC 이하로 온도를 조절한 저온창고에 각각 저장하였다. 창고의 온도와 습도를 실시간으로 측정하면서 1, 3, 6, 12개월 후 시료의 수분함량, 붉은곰팡이와 곰팡이독소의 오염 정도를 조사하였다. 창고의 온·습도 조사결과 상온창고는 월별 평균온도가 최 저 3oC에서 최고 29oC였으며, 평균습도는 58~70% 인 반면 저온창고는 평균온도가 3~13oC 였으며, 평균습도는 62~74% 였다. 시료의 수분함량은 상온창고에서 감소하였으나 저온창고에서는 초기수분함량 14% 시료는 수분함량이 증가하였고, 초기수분함량 20% 시료는 감소하였다. 붉은곰팡이 오염립은 상온창고에서 저장기간이 경과할수록 감소하였으나 저온창고에서는 시료의 수분함량이 높아감 소폭이 적었다. 곰팡이독소는 대부분의 시료에서 저장 12 개월 후에는 상온창고에서 니발레놀이 더 많이 검출되었 으나 1, 3, 6개월에는 뚜렷한 차이가 없었다. 따라서 겉보리의 건조가 덜 된 경우 저온창고에 보관하는 것이 붉은 곰팡이의 오염을 줄이는데 효과적이며, 겉보리를 1년이상 장기 저장할 경우 저온창고에 보관해야 니발레놀의 오염을 줄일 수 있다.

        The objective of this study was to determine the effect of moisture contents (40, 50, 60%) and CO2 gas injection (0 and 800 mL/min) on physicochemical properties of extruded soy protein isolate (SPI). The expansion ratio and the specific length increased, but piece density decreased with the increase in CO2 gas injection from 0 to 800 mL/ min at both 40 and 50% moisture contents. On the contrary, the expansion ratio and the specific length decreased, but piece density increased with the increase in CO2 gas injection from 0 to 800 mL/min at 60% moisture content. Extruded SPI with CO2 gas injection at 800 mL/min had small cell size and higher amount of cell than extruded SPI without CO2 gas injection. The water holding capacity and nitrogen solubility index increased, and the integrity index and the texture decreased with the increase in CO2 gas injection from 0 to 800 mL/min. In conclusion, extruded SPI with the CO2 gas injection at 800 mL/min showed better expansion properties and cell formation than extruded SPI without the CO2 gas injection.

Addition of the mealworm has the merit to fill in high-quality protein and unsaturated fatty acids which are insufficient in rice. Thus, the physicochemical properties were investigated through the process of extrusion cooking. As the extrusion process varied, the die temperatures were set to 120oC and 130oC. Also, the moisture contents were adjusted to 30% and 35%. The specific length, the expansion ratio, and the water absorption index increased as the added content of mealworm became higher. On the contrary, the density, the breaking strength, the apparent elastic modulus, and the water solubility index decreased. As mealworm and moisture content increased, DPPH radical scavenging activity significantly increased but the rancidity decreased. As a result, the addition of mealworm to the extruded rice snack was effective in improving texture, nutrition, and antioxidation.

        The objective of this study was to determine the effect of the moisture content and pellet mill type on the physical and chemical characteristics of Italian ryegrass (IRG) pellet. Moisture content of raw material significantly (p<0.05) affected IRG pellet formation. Moisture content at 25% was the best condition for IRG pellet formation in terms of shape, power load and temperature changes. The hardness of pellet was decreased when moisture content was increase. However, the hardness of pellet was not affected by pellet mill type. Moisture content at 30% dramatically (p<0.05) decreased the durability compared to moisture content at 25%. Dry matter content of IRG pellet was increased (p<0.05) after pelleting. Total count of microorganism was decreased in pellet due to pressure heat and moisture losses during the pelleting process. These results indicated that the proper moisture content of Italian ryegrass pelleting would be at 25%. In addition, Roll & flat die type would be more suitable than Ring die and Die & flat die type in IRG pelleting. Pelleting works would be beneficial for improving forage quality and long storage.

        The objective of this study was to determine the effect of moisture content on the physical and chemical characteristics of Italian ryegrass cube. Cube quality according to moisture contents (15, 20, 25, and 30%) was determined. Cubes made with 15 to 20% moisture showed a little cracks. But, the amount of powder generate from these cubes were lower by 10 to 16% compared to other cubes made with 25 to 30% moisture contents. The highest hardness at 159 kg/f was obtained when the cube was made with 15% moisture content and the lowest was 70 kg/f when the cube was made with 30% moisture content. The electrical loading and surface temperature were increased when moisture content was decreased. The chemical compositions of cube were differ from those of raw materials. Crude protein (CP) and ether extract (EE) contents were increased after cubing works. However, crude fiber (CF), acid detergent fiber (ADF), and neutral detergent fiber (NDF) contents were decreased after cubing. The crude ash content was not significantly (p > 0.05) different between raw material and cube. Higher moisture content resulted in higher crude protein content. However, crude fiber and crude ash content were not significantly (p > 0.05) different between each other. The contents of ADF and NDF were the lowest in cubes made with 30% moisture content. Our results suggest that the proper moisture content of Italian ryegrass cubing is recommended to be 15 to 20% and that cubing works should help increase forage quality.

        본 연구는 국내에서 헤일리지의 생산 및 이용 확대를 위해 수분함량에 따른 헤일리지의 사료가치 및 발효품질의 변화를 구명하고 양질의 헤일리지 생산 확대를 위한 기초 자료를 확보하기위하여 2011년 9월부터 2012년 12월까지 충남 천안시 소재 국립축산과학원 초지사료과 시험포장에서 수행되었다. 수분함량이 다양한 헤일리지의 조제를 위해 이탈리안 라이그라스의 ‘코윈어리’ 품종을 이용하여 수분함량 60~30%까지 5% 차이로 총 7처리로 헤일리지를 조제하였다. 수분함량이 다른 이탈리안 라이그라스 헤일리지의 사료가치는 수분함량에 따라 유의적인 차이를 나타내지 않았다. 수분함량에 따른 발효품질의 변화는 수분함량의 차이에 따라 유의적인 차이를 보였으며 상대적으로 수분함량이 높은 조건(>40%)에서 발효품질이 우수하였으며 수분함량이 낮은 조건에서는 발효품질도 낮은 것으로 나타났다. 수분함량별 헤일리지의 유기산 구성비율은 수분함량이 상대적으로 높은 조건(>40%)에서 젖산비율이 높게 나타났으며 수분함량이 낮은 조건(<40%)에서는 젖산비율이 감소하고 초산과 낙산비율이 높아지는 것으로 나타났다. 이상의 결과를 종합해 보면 안정적인 헤일리지 생산을 위해 발효품질을 고려해보면 수분함량이 40%가 헤일리지 조제의 한계점으로 사료되며 추후 헤일리지의 장기 저장성 검토 및 저 수분 조건에서 발효품질 개선을 위한 추가적인 연구가 진행되어야 할 것으로 생각된다.

        무토양재배에서 작물의 생산성 향상을 위하여 최적의 수분관리가 중요하기 때문에, 배지의 종류에 따른 수분 이동을 포함한 배지의 물리적 특성의 분석이 필요하다. 본 연구의 목적은 현재 상업적으로 많이 이용되고 있는 대표적인 배지를 대상으로 물리적 특성을 분석하고 수분의 이동 형태 및 함수율과 FDR 센서 측정값과의 관계를 파악하는 것이다. 로드셀을 이용하여 배지의 중량을 측정하고, 이 데이터를 바탕으로 배지의 기본적인 물리적 특성을 파악하고자 하였다. 중량에 따른 실제 함수율과 FDR 센서값의 비교를 통해 배지 종류에 따른 FDR 의 정확성을 비교하였다. 암면에 비하여 코이어 배지는 입자가 크고 거친 특성 때문에 전체적으로 보수력이 낮았다. 중량 기준의 동일 함수율 조건에서 FDR센서 측정 값은 코이어에서 큰 오차를 보였으므로 FDR센서 사용 전 보정이 필요하다. 그리고 코이어의 낮은 보수력과 재수화력 때문에 관수제어에 적합한 함수율 범위도 암면에 비하여 좁았다. 무토양재배에서 최적 관수제어를 위한 관수전략 수립에 실험을 통한 위와 같은 데이터가 유용 하게 이용될 수 있을 것으로 기대된다.

        The short-grain rice cultivar Choochung with a rough rice moisture content of 21% was air-dried to equilibrate themoisture content to 15, 16, and 17%. After dehulling, brown rice was packaged for storage in laminated paper orLDPE/OPP plastic-film bags (10-kg size). After storage of the packaged rice kernels in plastic and paper bags at10, 15, and 20oC, the quality characteristics of the rice were evaluated weekly for 16 weeks. Serious losses in theinternal moisture content of the kernels were observed during storage in paper bags, regardless of the moisture con-tent of the kernels or the storage temperature. The plastic-film packaging was effective in maintaining the weightof the kernels for all treatments, but severe fat oxidation problems were encountered, especially when the initialmoisture content of the kernel was 17% and/or the storage temperature of the kernels was 20oC. Before two weeks,the fat acidity value of the kernels reached 20mL KOH/100g, a marginal limit for an acceptable taste of cookedrice. Based on this study, the recommended environment for the storage of brown rice for efficient economic storageof the kernels is an initial kernel moisture content of 16%, laminated plastic-film packaging, and a sub-refrigerationtemperature of 15oC.

        The effects of pellet moisture content on physical properties (expansion ratio, density and breaking strength) of vacuum-puffed Yukwa (non-oil puffed Yukwa) were investigated in this study. The Yukwa was made from the waxy rice steeped at 25 and 30oC for 3, 5 and 10 days with pellet drying times (6, 8 and 10.5 hr), respectively. As the drying time increased from 6 to 10.5 hr at 50oC, the highest value of pellet moisture content (29.4%) was found in the samples made from the steeped waxy rice at 25oC for 5 days after 6 hr drying, while the lowest value (16.3%) was found at 25oC for 3 days after 10.5 hr drying. Both redness and yellowness values of vacuum-puffed Yukwa increased as the drying time increased. The expansion ratio of Yukwa was greatly affected by drying time, ranging from 2.07 (26.8% pellet moisture content) to 7.01 (24.0% pellet moisture content). From the data, it was concluded that the pellet moisture content had a significant influence on the physical characteristics of vacuumpuffed Yukwa. With vacuum puffing condition of 3 min heating and 2 min puffing, the pellets with about 25% moisture content showed higher expansion ratio, and lower density and breaking strength.

        이 연구는 고품질 귀리 사일리지의 제조를 위한 수확시기별 적정 예건시간을 도출하고자 수행하였다. 시험은 국내 육성품종인 삼한귀리를 가을에 파종하고 이듬해 봄인 출수 후 20일 부터 10일 간격으로 3회에 걸쳐 수확하여 각 수확시기별로 0, 4, 8, 32시간동안 예건을 실시하였으며, 각 예건시간별 식물체의 수분변화와 사일리지 제조 후 품질을 분석하였다. 그 결과 귀리는 출수 후 20일 정도에 수확할 경우 4시간 정도 포장예건을 하고, 출수 후 30일 정
