        본 연구에서는 인체에 해가 없으며 항균작용 및 항산화 효과가 있는 오배자, 계피, 로즈마리 추출물을 이용하여 천연방부제 소재로서의 활용 가능성을 연구하였다. 실험식물의 추출방법으로는 계피의 경우 70% ethanol 추출, 오배자는 열수추출법, 로즈마리는 70% ethanol 추출과 열수추출법을 이용하였다. 실험 방법으로는 항균력, DPPH를 통한 항산화능, 화장품의 challenge test, 화장품 안정성 및 안전성 평가를 진행하였다. 시험 결과, 항균력 시험에서 오배자 추출물은 세균류, 계피 추출물은 진균류에서 항균력이 우수, 로즈마리 추출물의 경우 항균력이 미비해 제외, 복합 추출물(오배자·계피)의 경우는 1:1비율로 조합한 복합 추출물(complex C)에서 항균효과, 복합 추출물의 최소저해농도(MIC)와 최소살균농도(MBC)에서는 5종의 실험균주에서 억제효과와 살균효과, 천연 단일 추출물과 복합 추출물(complex C)에서는 항산화능이 확인 되었다. 또한 합성 방부제 대신 complex C 10%를 화장품에 적용한 시험에서 제형의 안정성 및 안전성이 확인되었다. 따라서 본 연구를 통해 천연방부제 원료로서의 발전 가능성을 확인할 수 있었다.

        The interest in and development of healthy foods and nutraceuticals have increased because of the trend for a health-oriented society. Cinnamon is used as a food ingredient as well as a herbal medicine because of its functional properties. In this study, flavoring compounds and antioxidative activities of cinnamon extracts were investigated with different extraction solvents and extraction methods. The contents of flavoring compounds such as coumarin, cinnamic acid, cinnamaldehyde, and cinnamyl alcohol were investigated. The contents of courmarin, cinnamic acid, and cinnamylaldehyde in 70% ethanol extract were higher than those in hot water and subcritical water extracts. The contents of courmarin, cinnamic acid, and cinnamaldehyde in subcritical water extract were higher than those in hot water extract, whereas the content of cinnamyl alcohol was lower. DPPH scavenging activity increased with increasing concentration of the extracts, and the 70% ethanol extract showed the highest antioxidant activity. The ascorbic acid content of the 70% ethanol extract was largest in the antioxidative activity measurement by FRAP analysis. The ascorbic acid contents of the hot water and subcritical water extracts were similar.

        In order to develop antimicrobial substances, many kinds of medicinal herbs were extracted with absolute ethanol and then antimicrobial activities against various microorganisms were investigated. Ethanol extract from cinnamon bark showed the strongest antimicrobial activity on the growth of almost all submitted microorganisms. Specially, molds such as Aspergillus sp. and Pencillium sp. were inhibited strongly. Therefore, the crude antimicrobial substance from the ethanol extract was fractionated with various solvents such as n-hexane, chloroform, ethyl acetate, and n-butyl alcohol and then their antimicrobial activities were tested. Among the various solvent fractions from the ethanol extract, n-hexane fraction was the best in antimicrobial activity especially against molds. There were no significant changes in antimicrobial activity of the n-hexane fraction by heat treatment at 100℃ for 60 min or 121℃ for 15 min and by the change of pH 4.0-10.0. We could get the results that the n-hexane fraction of cinnamon bark extract showed not only antimutagenicity but also no mutagenicity by Ames test with Salmonella typhimurium TA 98 and TA 100.

        Background: A critical features of Alzheimer’s disease (AD) is cognitive dysfunction, which partly arises from decreased in acetylcholine levels. AD afftected brains are characterized by extensive oxidative stress, which is thought to be primarily induced by the amyloid beta (Aβ) peptide. In a previous study, Cinnamomum loureiroi tincture inhibited acetylcholinesterase (AchE) activity. That study identified AChE inhibitor in the C. loureiroi extract. Furthermore, the C. loureiroi extract enhanced memory in a trimethyltin (TMT)-induced model of cognitive dysfunction, as assessed via two behavioral tests. Rosa laevigata extract protected against oxidative stress-induced cytotoxicity. Administrating R. laevigata extracts to mice significantly reversed Aβ-induced learning and memory impairment, as shown in behavioral tests. Methods and Results: We conducted behavioral to examine the synergistic effects of C. loureiroi and R. laevigata extracts in inhibiting AChE and counteracting TMT-induced learning and memory losses. We also performed biochemical assays. The biochemical results showed a relationship between increased oxidative stress and cholinergic neurons damage in TMT-treated mice. Conclusions: A diet containing C. loureiroi and R. laevigata extracts ameliorated learning and memory impairments in the Y-maze and passive avoidance tests, and exerted synergistic inhibitory effect against AChE and lipid peroxidation.

        This study investigated quality characteristics of sourdough bread added with different amounts of lactic acid bacteria culture solution (LCBC) and cinnamon extract (Control: water 700 mL, sample A: water 670 mL+LCBC 30 mL, sample B: water 670 mL+LCBC 22.5 mL+Cinnamon extract 7.5 mL, sample C: water 670 mL+LCBC 15 mL+Cinnamon extract 15 mL, sample D: water 670 mL+LCBC 7.5 mL+Cinnamon extract 22.5 mL and sample E: water 670 mL+Cinnamon extract 30 mL). The weight of dough was not significant between samples, and the weight of bread was highest in samples D. The volume and specific volume were the highest in sample C but the baking loss rate was highest in the control (p<0.05). The L value, springiness and cohesiveness were decreased as addition of cinnamon extract increased. However, a value, b value, hardness, gumminess and chewiness were reversed. The sourdough bread produced by adding lactic acid bacteria culture solution improved the volume and texture. It was thought that it is helpful to add lactic acid bacteria culture solution and cinnamon extract for manufacturing a loaf of bread.

        본 연구는 천연 식물 추출물을 이용하여 화장품 제형 내에서 천연 방부제로서 효능을 확인하기 위한 목적으로 진행하였다. 선별된 15종의 천연 식물 추출물을 이용하여 병원성 세균(Staphylococcus aureus, Pseudomonas aeruginosa, Escherichia coli)과 효모균(Candida albicans), 곰팡이균(Aspergillus niger)에 대한 paper disc법(disc diffusion method)과 최소저해농도측정법(MIC)을 이용하여 항균 활성을 측정하였다. 그 결과 가자, 오배자 추출물은 그람 양성균인 S. aureus와 그람 음성균인 P. aeruginosa, E. coli 에 대한 항세균 활성이 우수하였고, 계피 추출물은 효모균인 C. albicans와 곰팡이균인 A. niger에 대해 우수한 항진균 활성을 나타냈다. 최종 선별된 3종 외 식물추출물은 효과가 없었다. 항균 활성 효과가 우수한 최적 조합비로 구성된 가자, 오배자, 계피 추출물의 혼합 추출물을 화장품 제형에 첨가하여 제형 내 방부 활성을 측정한 결과 상업적으로 널리 사용되고 있는 파라벤 혼합 방부제와 유사한 정도의 방부 활성을 나타냄을 확인하였다. 결론적으로, 화학 방부제를 대신하여 천연 식물 추출물로만 이루어진 넓은 항균 스펙트럼을 갖춘 방부 시스템의 개발이 가능할 것으로 사료되며 최근 다양한 문제가 제기되고 있는 화학 방부제의 단점을 극복한 천연 방부제를 함유한 화장료의 개발에 응용 가능할 것으로 기대된다.
