“Li chao jie lu”(历朝捷录) is a history book of Gangjian style compiled by Gu Chong(顾充) in the Ming Dynasty. It records the governance of the emperors of all dynasties during the 1,700 years from King Weilie of the Eastern Zhou Dynasty to Emperor Bing of the Song Dynasty. The style imitates Zhu Xi’s “Zi zhi tong jian gang mu”, but the narrative is more concise. Therefore, it has been favored by readers after its release. Especially it‘s convenient for beginner spreparing for imperial examinations. There are many versions of this book. Among them, in addition to the original version compiled by Gu Chong, various sequel versions and annotated versions have also been derived. However, under the strict banning policy of the Qing Dynasty, “Li chao jie lu” and its derivative versions have been repeatedly banned, but some versions are still circulated to today. In this article, the author investigated existing relevant versions, took “Li chao jie lu da cheng” 2 juan, “Xin juan zeng ding Li chao jie lu quan bian” 4 juan, “Xin juan zeng ding Li chao jie lu quan bian da cheng” 4 juan, “Chong ke yin zhu Li chao jie lu” 4 juan, “Xin ke kai ji han lin ping xuan Li chao jie lu zong yao” 4 juan, “Juan chong ding bu zhu Li chao jie lu shi jian ti heng” 4 juan, “Xin ke yu geng zhi xian sheng jian ding Li chao jie lu” 7 juan, “Li chao jie lu” 12 juan, “Li dai jie lu” 8 juan, a total of nine versions as the research object, analyzed the content composition and characteristics of each edition, and aimed to provide readers with a reference for the choice of editions.
This study was designed to establish Korean food culture by considering traditional fruit preserve. A historical approach of traditional fruit preserve were reviewed by the cooking book published from 1670 to 1988 in Korea. The results obtained from this study are as follows. Cooking method of fruit preserve was firstly published to Omshikdimibang in 1670 and published moderate cooking book in 1988 but fruit preserve has not been cooked yet. Cooking method of fruit juice and starch had been started in Samkuk dynasty and was completed in Lee Dynasty. Compared with the western fruit jelly, mung bean starch was used as a gel forming material in Korean traditional fruit preserve while gelatin was used as a gelling agent in western fruit jelly. Western fruit jelly was succeed in innovation, but traditional fruit jelly was failed to innovation.
Yeolgujatang is traditional casserole with meat, fish and vegetables in special pot. Name of Yeolgujatang was in 1800s, as yeolgujatang, yeolgujatangbang, yeolguja, in 1900s, Yeolgujatang, royal feast food in Yi Dynasty was yeolgujatang, Meon-sinseolro, tangsinseolro. Yeolgujatang frame has legs and a lid, and a cylinder that can contain charcoal at the center of its rounded pot. with this charcoal, food can be cooked. Its material has changed from brazier to brassware, stainless steel, and silver. Nowdays electric sinseolro was also launched, which uses electric power instead of charcoal. Materials in yeolgujatang are beef, intestines, pork, chicken, pheasant, fish, sea bream, abalone, shrimps, vegetables, mushroom, ddock, guksu, cooked rice, seasening and garnish. Nutrition of Yeolgujatang per capita contains 221.5kal of calory, 17.3g of protein, 16.5g of fat, 6.1g of carbobydrates, 2g of fiber, 57.6mg of calcium, 208mg of phosphorus, 4.3mg of ferrum, 2177μgRE of vitaminA, 1.58mg of vitamin B1, 0.3mg vitamin B2, 6.6mg of vitaminC and 5.26mgNE of niacin. Yeolgujatang is excellent in nutrition, except for calcium and vitaminC.
Literally, the mean of Tae-gye is highest brook. And on the basis of the acupuncture theory, Tae-gye point is the Soo earth point and source point of the Kidney Channel as well. In addition, Tae-gye point is one of the Yang-Returning Nine points. We were trying to study bibliographically on the Tae-gye point because Tae-gye point can be used very broadly across the symptoms in the theoretical aspect described above. As a results, we found out that according to the classical books of acupuncture, Tae-gye point is entering point of the Meridian Water as a source point and can be used at both Kidney-Sufficient Syndrom and Kidney-Deficient Syndrom. And Tae-gye can be applied to the disease of kidney or bladder that is urogenital symtoms. Also, Tae-gye is an useful option of tooth-ache, asthma, indigestion, constipation, edema etc whose cause is related with decrease of Kidney ki.
The Guk was divided Malgunjangguk, Tojangguk, and Gooumguk as to cooking method. Gooumguk was boiled with several materials of beef, bone, organs and water for the long time, and a good source of protein, calcium, and phosphorus. In the thesis, according to the kinds of Gooumguk, the reference frequency to them, the adding foods in them, and the variety cooking method in the Gooumguk were analyzed by the cooking books published from 1670 to 1988 in Korea. 1. There were 41 kinds of Gooumguk and Kaejang, Joktang and Byultang were firstly published to Omshikdimibang in 1670. 2. Many kinds of Gooumguk were generally used on royal parties in Yi dynasty and were used by several substances. 3. The main substances of Gooumguk were meat, poultry, fish, and shellfish. The seasoning substances were green onion, garlic, ginger and black pepper etc, and were used for the removal of the meat's or fish's off-flavor. 4. Yangtang, Kalbitang, Joktang, Yeongebacksuk, and Chooatang etc expressed the taste of the one main substance and Japtang, Sulnongtang, Yukgejang, Yongbongtang etc were combinated the taste of the several materials. 5. Cooking methods of Yukgaejang and Koritang before 19 century were different in present.: Yukgaejang was not used Gochoojang or powdered red pepper and Koritang was used Gochoojang.
The Guk had lessened to use Gang, Whak, Tang. The Guk was classified into cooking method as a soup stock, the used main substances, and the temperature of the Guk. According to the soup stock were divided clear soup, Tojangguk, and Gooumguk. Another classification of Guk by main substances were Yuktang (meat soup), Otang (fish soup), bongtang (poultry soup), Shotang (vegetable soup), Japtang (vary substance soup) and Yonpotang (soybean-curd soup), and by the temperature of the Guk were divided Doounguk (warm soup) and Naengguk (cold soup). In the thesis, according to the kinds of Tojangguk, the reference frequency to them, the adding foods in them, and the variety cooking method in the Tojangguk were analyzed by the cook books published from 1700 to 1988 in Korea. 1. There were 29 kinds of Tojangguk. 2. The main substances of Tojangguk were meat, poultry, fish, shellfish, vegetable, mushrooms and seasonings. 3. The Tojangguk was boiled with the rice water and fermented soybean paste and fermented soybean-pepper powder paste. For the development of taste were added beef, shellfish, dried anchovy, dried small prawn, and soup stock of beef bones in winter. Seasoning substances were green onion, garlic, black pepper, sesame powder and oil.
찜은 각종 수조육류, 어패류, 야채류에 조미를 하여 김을 올려 찌거나 삶는 습열조리의 하나이다. 조선시대의 조리서를 중심으로 수조육류를 주재료로 한 찜의 종류와 사용된 재료 및 조리법의 변화, 계량단위, 용어, 조리용구 등을 분석 고찰한 결과 다음과 같이 요약할 수 있다. 1. 수조육류를 중심으로 만든 찜의 종류는 37가지였다. 2. 수조육류를 중심으로 만든 찜에 사용된 주재료는 다음과 같다 : 쇠고기, 갈비, 우설, 곱창, 곤자소니, 사태, 양, 돼지새끼, 돼지새끼집, 돼지가리, 개, 양, 닭, 생치 3. 수조육류를 중심으로 만든 찜에 사용된 부재료는 다음과 같다. (1) 수조육류 : 쇠고기, 양, 곤자소니, 곱창, 대장, 우신, 도간리, 업진, 우둔, 봉채, 제육, 조골, 양지머리, 닭, 생치, 닭가리, 부아, 홀데기 (2) 어패류 : 차조기, 도미, 대구, 마른홍합, 전복, 해삼, 마른북어, 숙복, 오징어 (3) 채소류 : 나물, 부추, 상추, 쑥갓, 숙주, 시금치, 무우, 도라지, 감자, 오이, 양파, 당근, 토란, 청근, 박오가리 (4) 버섯류 : 석이, 목이, 송이, 표고, 느타리 (5) 종실류 : 밤, 호도, 대추, 은행 (6) 기타 : 카레가루, 녹말, 밀가루, 다시마, 두부, 당면, 모밀가루, 조협씨, 흰떡, 을섶나무, 황납 4. 수조육류를 중심으로 만든 찜에 사용된 양념류는 다음과 같다 : 파, 술, 기름, 겨자, 생강, 된장, 유장, 천초, 소금, 깨소금, 후추, 마늘, 참기름, 설탕, 초간장, 정종, 고추가루, 풋고추, 간장, 생강즙, 초, 고추장, 청장, 조피가루, 계피, 막걸리, 젓국 5. 수조육류를 중심으로 만든 찜에 사용된 고명류는 다음과 같다 : 통고추, 계란, 실백, 실고추, 은행, 호도, 완자, 잣가루 6. 수조육류를 중심으로 만든 찜에 사용된 재료의 계량단위는 43가지였다. 그 중 용량단위는 18가지, 수량단위는 12가지, 길이단위는 4가지, 기타는 9가지였다. 7. 수조육류를 중심으로 만든 찜에 사용된 기구는 26가지였다. 8. 수조육류를 중심으로 만든 찜에 사용된 용어는 27가지였다. 그 중에 가열용어는 11가지, 써는 용어는 16가지였다. 찜은 수조육류, 어패류, 채소 등이 골고루 이용된 전통음식으로서 조리법이 간단하고 쉬우며 조리 기구의 이용도 간단하다. 요즘에는 예전에 사용하던 재료는 사용하지 않고 구하기 쉬운 재료로 바뀌어 가고 있으며 기구도 압력솥을 이용하여 시간의 단축과 연료의 절약, 영양손실의 감소 등을 할 수 있게 되었다. 한편 계량도 짐작으로 하던 것이 계량기구를 이용하여 많이 과학화 되었다. 문헌적인 연구를 기초로 하여 실험적 조리과정 중의 영양의 변화와 기호도 연구가 계속되기를 바란다.
1670년부터 1943년까지의 문헌 16권을 통하여 견육(犬肉)요리의 종류, 조리법, 양념, 부재료를 조사한 것은 다음과 같다. 1) 견육(犬肉)요리는 14종류로 분류되며, 연대순으로 보면 「찌는법」(증(蒸)) 20회(40%), 「견육순대」 1회(2%), 「견육꽂이구이느르미」 1회(2%), 「견육느르미」 1회(2%), 「국(갱(羹),탕(湯))」 12회(24%), 「익힌 고기 다시 찌는 법」 4회(8%), 「구장」(구장(狗醬)) 4회(8%), 「구적」(구적(狗炙)), 「구장과 젖」(구장(狗醬)과 해), 「구포」(구포(狗脯)), 「구족초」(구족초(狗足炒)),「구이진초」(구이진초(狗彛唇炒)), 「백숙」등은 각각 1회(2%)이며 50회 기록되었다. 빈도면에서는 「찌는 법」 「국」 「익힌 고기 다시 찌는 법」 「구장」의 순으로 「찌는 법」이 주를 이루고 있었다. 2) 견육요리의 전처리에 있어서 씻는 과정은 내장만 씻고 고기는 씻지 않는 것(52.6%)이 전부를 씻는 것(26.3%)보다 많았고, 내장을 많이(42.1%) 이용하였으며 익히는 과정에서는 거의 쪄낸 후(84.2%) 나름대로의 요리를 만들었고 삶어서 이용한 것은(9.0%) 거의 없었다. 3) 전체 견육요리에 이용된 양념은 22가지이며 그 중 많이 이용된 것은 유장(42.1%), 참깨가루(39.4%), 후추가루(36.8%), 식초(36.8%), 간장(28.9%), 고춧가루(26.3%), 참기름(23.6%), 만초가루(23.6%), 천초가루(23.6%) 등이고, 부재료는 5가지이며 그 중 많이 이용된 것은 파(파의 흰부분과 합함 34.2%)와 미나리(21.0%)이다.
Korean Chochgal is a kind of salted, fermentive food mainly made of fish in our country. It has been a suitable side'dish for the diet of rice. It has made use of an accompaniment of wine, seasoning, food of ceremony and a folk remedy. There were various kinds of Chochgal and various way of for preparation. For a long time it has developed in how to cook and how to eat. Nowaday, it has lessened to use Chochgal. In this thesis, the kinds of Chochgal and the reference frequency to them, the material, the measuring unit of material, the making terms, and the cooking kitchen utensils are studied out of the 86 books published in Korea from 1200 to 1984. 1. It was classifed Choch, Sikhae, and Oyukchang as how to cook. 2. There were 147 kinds of Chochgal, 100 kinds of Choch, 40 kinds of Sikhae and 7 kinds of Oyukchang in our traditional documents. 3. Materials were classified into main material, sub-material, and seasonings. As main materials there were fish, internals of fish, spawn, flesh, salt and soy sauce. As sub-materials there were seasoning, flavor, vegetables and cereals. 4. There were 41 kinds of measuring units. Of them, 17 kinds are for volume, 9 kinds are for quantity, 3 kinds are for length, and 12 kinds are for the rest. 5. There were 52 kinds of cooking kitchen utensils. They used mainly a sieve and pebbles. To store Chochkal a kind of jar, a woodenware and a clay ware were used. To shelter it from the wind, they sealed it with leaves and oiled paper. But few of them are used nowaday. 6. There were 209 kinds of cooking terms. Of them, 35 kinds are for the washing process, 51 kinds are for the preparing process, 38 kinds are for the making process, 25 kinds are for the fermenting process, 24 kinds are for the keeping process, and 36 kinds are for the eating(using) process.
Dock (Korean rice cake) is a peculiar food of Korea made of grain. By means of cooking from, it is defined as 'Pulvberzed food of grain' Dock was one of the daily food, but development of boild rice had narrowed it's use to the food of festive days and ceremonies. Dock is used as a main food of all Kinds of ceremonies from one's birth to death, such as the Three seven day(a baby's twenty-first day of life), one hunderdth day, birthday, wedding, both brithday, funeral and sacrifical rites, vocational ceremonies, such as a sacrifice to spirits and a srevics for a big catch of fish. It is also used as a present and seasonal food. A large variety of Dock is available and its recipe is scientific and reasonable. In this treatise, the Kinds of Dock and the frequency of them, the material, the recipe, the measuring unit of material, cooking kitchen utensils and the cooking terms are studied from the books published in Korea from 1670 to 1943. 1. Dock was classified as Tcbin Dock(steamed), Chin Dock(strikn), Chijin Dock(fried) and Salmun Dock(boiled), according to its way of cooking. 2. There were 122 Kinds of Dock, 57 were Tchin Dock, 35 Chin Dock, 20 Chijin Dock, and 10 Salmun Dock. 3. There were 34 Kinds of measuring units. Of them, 13 for volume, 4 for weight, 9 for quantity, 4 for length and 4 for the rest. 4. There were 55 Kinds of cooking Kitchen utensils but now many of them are not used because of mechanization or automation of tools of living. 5. There were 143 Kinds of cooking terms. Of them 49 for the preparing process, 25 for the mixing process, 27 for well-forming process 10 for process of getting ready to cook, 14 for heating process, 10 for cutting process, 5 for dishin process and 3 for process of soaking in sugar or honey.
밀가루에 기름과 꿀을 섞어서 반죽하여 일정한 모양으로 만들어 기름에 지지고 다시 꿀을 묻힌 약과는 한국인의 대표적인 기호식품의 하나이다. 본 연구는 1600년대부터 1943년까지 간행된 모든 한글 조리서 중에서 약과가 기록된 조리서 13권과 1945년 이후의 조리서 14권을 중심으로 약과의 명칭과 모양의 변천, 반죽 재료와 반죽 방법의 변천, 기름에 지지는 방법, 즙청 재료와 방법, 고명 등을 시대적으로 비교 고찰하므로 약과 문화의 시대적 변천 과정을 연구하였다. 1. 약과의 명칭은 약과 과줄 조과라 칭하였으며, 모양은 새 짐승 원형 네모진 모양이 있었다. 크기는 지름이 약 3.5cm, 두께 0.5~1.5cm 이었다. 2. 약과 반죽의 주재로는 밀가루 꿀 기름 술이었다. 밀가루 이외에 콩가루 찹쌀가루도 사용하였으며 꿀대신 조청 설탕물 설탕시럽 엿녹인 것을 넣기도 하였다. 기름은 주로 참기름을 넣었으나 사라다유 면실유도 넣었다. 술은 청주 소주 약주 막걸리 양주를 넣었으며 물은 끓인물을 넣었다. 그밖에 통깨 생강 후추가루 깨소금 생강즙 잣가루 소금 등을 넣었다. 3. 약과 반죽은 "반죽을 매우 찧어 도마에 놓고 망치로 사방을 모아 두드리라"는 방법과 "국수 반죽 모양으로 너무 치다르지 말고 가볍게 반죽해야 한다"는 두 가지 방법이 있었다. 1940년 이후의 대부분 조리서에서 "가볍게 살살 섞으라"고 하였다. 4. 기름에 지지는 방법은 "기름을 넉넉히 붓고 120~160℃의 기름에서 속이 잘 익고 진한 갈색이 나도록 5~15분 가량 지져내라" 하였다. 이때 "기름의 온도가 너무 낮으면 모양이 부서지고 너무 높으면 단단해진다"고 하였다. 5. 즙청의 재료로 1940년 이전에는 꿀을 사용하였으나 그 후부터는 굴 조청 엿녹인 것 시럽 등을 사용하였다. 그밖에 향취를 위해 강즙 건강 유자즙을 넣었다. 6. 즙청 방법은 튀겨낸 약과의 기름을 빼고 뜨거울 때 넣어 오래 담가 두어야 연하고 맛이 있다고 하였다. 7. 고명은 잣가루 계피가루 설탕이었다.
