This study investigated the quality characteristics and antioxidant activities of salad dressing prepared with Jerusalem artichoke powder (0%, 4%, 8%, and 12%). The pH, soluble solid content, and viscosity increased as the content of Jerusalem artichoke powder increased. The titratable acidity showed no significant differences between samples. The lightness values decreased, while the redness and yellowness values increased with increasing amounts of Jerusalem artichoke powder. The total polyphenol content ranged from 52.00-69.64 μg GAE/g, and increased with the increase in Jerusalem artichoke powder levels. The antioxidant activities measured via DPPH and ABTS radical scavenging activity and reducing power also increased with increasing Jerusalem artichoke powder, at a higher rate than in the control. These results suggest that it is beneficial to add Jerusalem artichoke powder when in salad dressing.
In this study, we evaluated the nutritional components and functional activities of Wooung (burdock, Arctium lappa L.) and Jerusalem artichoke (Helianthus tuberosus L.) tea. Roasting burdock’ contained 75.87% carbohydrates; in addition, the moisture content, crude fat, crude protein, and crude fiber were 10.43%, 1.77%, 8.50%, and 3.43%, respectively. Roasting Jerusalem artichoke showed 77.477% carbohydrate content, with moisture content, crude fat, crude protein, and crude fiber of 10.67%, 1.23%, 7.83%, and 2.80%, respectively. Roasting burdock’s water-soluble dietary fiber content was 4.8 g/100 g and insoluble dietary fiber content was 1.5 g/100 g; whereas, roasting Jerusalem artichoke’ water soluble dietary fiber content was 2.4 g/100 g and insoluble dietary fiber content was 1.6 g/100 g. The highest mineral contents in roasting burdock and Jerusalem artichoke were potassium and magnesium, in order. The results of amino acid analyses s indicated a total of 25 types in roasting burdock, with total amino acid content of 1,382.112 mg/100 g, and essential amino acid content of 766.031 mg/100 g. In total, 24 types of amino acids were separated and identified in roasting Jerusalem artichoke, with total amino acid content of 2,678.018 mg/100 g, and total essential amino acid content of 157.294 mg/100 g. Roasting burdock and Jerusalem artichoke’ polyphenol contents were 32.56 and 29.56 mg GAE/g each, and their flavonoid contents were 16.54 and 16.71 CE/g each. IC50 values of DPPH radical-scavenging activity of roasting burdock and Jerusalem artichoke were 12.99 and 19.74, respectively; and IC50 values of hydroxyl radical-scavenging activity were 25.96 and 22.93, respectively.
This study aimed to evaluate the efficacy of the antioxidative and antidiabetic activities of the flowers, leaves, and roots of the Jerusalem artichoke (Helianthus tuberosus L.). The total polyphenol and flavonoid contents of the leaves were higher than those of the flowers and roots. However, the DPPH radical-scavenging and hydroxyl radical-scavenging activities of the flowers were higher than those of the leaves and roots. The nitrite-scavenging ability under acidic conditions was high in Jerusalem artichoke flower extracts. The α-glucosidase inhibitory activity and α-amylase inhibitory activity of a methanol extract of Jerusalem artichoke roots were about 60% (5 mg/mL concentration). Based on these experiments, it can be concluded that the flowers leaves, and roots of the Jerusalem artichoke can be used as natural preservatives. Therefore, they can be developed as functional foods, to take advantage of their antioxidant activity and abundant polyphenols. This study suggests that the whole Jerusalem artichoke, including roots, leaves, and flowers, is useful as a functional, nutritious food product.
This study was conducted to evaluate the quality characteristics and antioxidant activities of rice flour sponge cakes containing 0, 20, 30, 40, and 50% Helianthus tuberosus powder (HTP). As HTP content of sponge cake increased, the pH of sponge cake batter significantly decreased, whereas specific gravity significantly increased (p<0.05). Meanwhile, volume and symmetry indices of sponge cake were inversely proportional to HTP amount. Further, with higher HTP content in sponge cake, L and b values of crumbs significantly decreased (p<0.05), whereas a value significantly increased (p<0.05). L, a, and b values of crust significantly increased with higher HTP content. For texture characteristics, hardness, cohesiveness, gumminess, and chewiness of sponge cake significantly increased (p<0.05),whereas cohesiveness did not significantly change. In the sensory evaluation test, rice sponge cake prepared with 10% HTP showed the highest sensory scores in terms of color, flavor, taste, softness properties, and overall preference. The levels of total polyphenol compounds and DPPH radical scavenging activities of rice sponge cakes significantly increased with higher HTP contents (p<0.05). The results of this study suggest that rice sponge cake containing 10% HTP is the most appropriate for quality characteristics and sensory evaluation. This study also provides a way to increase the quality, texture characteristics, and organoleptic properties of sponge cake while reducing HTP content to less than 10% in order to satisfy consumer tastes.

This study investigated in vitro antioxidant, anti-inflammatory and cytotoxicity on human lung epithelial A549 cells of different solvent extracts from Jerusalem artichoke (Helianthus tuberosus L.) tuber. The EtOH extract contained amounts of phenolics (22.20 tannic acid equivalent ㎎/ɡ) and exhibited the highest antioxidant activity and anti-inflammatory activity. Several methods were employed for measure the antioxidant activity: 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity (IC50 = 206.79 ㎍/㎖), reducing power activity (21.26 ascorbic acid equivalent ㎎/ɡ) and total antioxidant activity (19.05 ascorbic acid equivalent ㎎/ɡ). Meantime, the EtOH extract inhibited the NO production completely with a concentration of 800 ㎍/㎖. Besides, the H2O extract exhibited more potent effect on human lung epithelial A549 cells. This study suggested that Jerusalem artichoke tuber had antioxidant, anti-inflammatory and cytotoxicity on human lung epithelial A549 cells.
This study investigated the changes of antioxidant activity and α-glucosidase inhibitory effect of Jerusalem artichoke (Helianthus tuberosus) 100% methanol extracts by various heat treatment. The contents of total phenolic and flavonoid compounds in methanol extract tended to increased gradually with the rise of temperature to 180℃. The maximum yield of gallic acid (51.52 ± 2.17mg/g extract weight) and quercetin (13.39 ± 0.03mg/g extract weight) were obtained with extraction temperature of 180℃ for 120min. In addition, the improving extraction efficiency resulted in the increased biological activities, such as electronic donation ability (EDA, 90.36± 0.57%), reducing power (Abs 1.14) and α-glucosidase inhibitory effect (92.14 ± 1.14%). Overall, the results of this study indicate that the optimum conditions for the extraction process were an extraction temperature at 180℃ for 120 min, and will provide the basis for future research on the improving extraction yield of phenolic and flavonoid compounds.
This study was aimed to investigate the difference for carbohydrate accumulation in both the red skinned tuber and white skinned tuber of Jerusalem artichoke (Helianthus tuberosus L.), and to evaluate their tuber yield of seven lines collected from Korea. Jerusalem artichoke tubers were divided into two groups regarding to their skinned colors. Red skinned tuber collected from Euisung region showed the lowest tuber yield as 3,100 kg per 10a, otherwise white skinned tuber collected from Imdong region resulted in the highest tuber production as 6,300 kg per 10a among the six kinds of white skinned tubers. Yield of white skinned tuber was higher than that of red skinned tuber. It was inferred from the result that carbohydrate accumulation in white skinned tuber was highly increased compared to red skinned tuber since after early tuber enlargement.
Pericarp and seedcoat removal treatments were tested to determine their effectiveness in the hard-to-germinate botanical seeds of jerusalem artichoke. Fresh seed of five Helianthus tuberosus L.varieties were (A)untreated (B)water soaked overnight (C) soaked overnight followed by renoval of pericarp or (D) soaked overnight followed by renoval of pericarp and seedcoat. The results indicate that treatments which removed the pericarp and seedcoat were the very effective, giving germination of over 90%. A considerable increase in germination did not follow only the peri-carp removal treatments. The factors inhibitory to germination of fresh jerusalem artichoke seed is associated withthe seedcoat. The removal treatment of pericarp and seed-cost is recommended despite its complexity because it givesa high germination percentage and varies least from varietyto variety. Heliarthus tuberosus L., a biomass potential crop, is a member of the family compositae. The genus Helianthushas provided man with two food plants, the sunflower (H.annus) and the jerusalem artichoke or topinambour (H. tube-rosus) . Insidethe ovary wall of mature fruit, there is a papery seedcoat, probably composed of compact cells from endosperm, integu-ments, and nucellus.In general, the efforts to improving this crop havebeen hampered by the hard-to-germinate botanical seed.Seeds did not germinate for at least IL months after harvest.Fresh seeds of some varieties require one year more to gar-minate. 돼지감자의 괴경반식 대신 종자반식에 의해서 건전한 유묘와 식물체를 육성함으로써 돼지감자 유전소재의 수집과 보존 및 개량에 종자반식을 이용하고자 하였다. 이를 위하여 국내외에서 수집한 9종(Mammoth French White, D-19, JA6, K-8, JA 13, Violet de Renne, Medius, Nahodka, Fuseau 60) 돼지감자 화기에서 종자를 채취하여 종피제거 방법에 의해 종자휴면을 타파한 후 종자로부터 발아유도되어 발생한 유묘의 생육특성을 조사하였으며 최종적으로 종자반식에 의한 바이오매스 생산성을 괴경반식에 의한 경우와 비교하여 다음의 결과를 얻었다. 1. 돼지감자 휴면종자는 종피제거방법에 의해 완전한 발아유도가 가능하였다. 2. 종자에서 발생한 유묘는 왜성형태를 유지하며 동시에 하배축을 비대시켜 하배축을 증대시켜 생리적 왜성(physiolo-gical dwarfing)의 특성으로 발현되는 경우가 겨울동안 온실에서 육묘한 경우에 한하여 나타났다. 3. 종자에서 발생한 유묘의 생리적 왜성은 JA6 품종의 경우 유묘령과 무관하게 12시간 미만의 단일에 감응하여 나타난 결과이었다. 4. 일단 발현된 유묘의 생리적 왜성은 생육기간동안 일장이 증가함에 따라 정상 식물체로 회복되었다. 5. 종자반식에 의한 육묘이식 재배시 괴경수량은 3.51 ton/10a으로 괴경반식에 의한 경우 3.02ton/10a에 비교하여 오히려 많았다. 6. 종자를 직접파종하였을 때 괴경수량은 괴경반식에 의한 경우의 52%에 불과하였다.
국내외에서 수집한 5종(JA 2, JA6, Mammoth French White, D-19, K-8) 돼지감자 화기에서 종자결실을 조사하였고 수집 종자들의 발아특성을 밝히고 환경조건을 달리하여 발아유도를 시도하여 다음의 결과를 얻었다. 1. 임실율은 품종에 따라 차이가 있어 JA 2의 2.4%에서 Mammoth French White의 14.7% 범위에 있었으며 1주로부터 채취 가능한 종자입수는 JA2의 88개에서 JA6의 1,058 개 범위이었다. 2. 수확 후 3개월 실내 저장된 종자는 약 0%의 발아율을 나타냈으며 온도, 광 및 GA3에도 발아가 유도되지 않았다. 그러나 실내에서 27개월 저장된 종자는 D-19 품종에서 47.5%까지 발아하였다. 3. 종피제거된 종자는 96.8%의 발아율을 나타냈으며 종피에 바늘로 구멍을 뚫었을 때에도 82.3% 발아하였다. 따라서 종피제거 방법에 의해 완전한 발아유도가 가능하였으며 돼지감자 휴면종자는 종피에 의해 발아가 억제되고 있음을 알 수 있었다. 4. 휴면종자를 약 70일 저온습층처리한 경우 85% 이상의 발아율을 나타냈으며 이 경우 종피존재여부에 관계없이 어느 경우에나 발아하였다.
