        본 연구에서는 울산지역에서 유통되는 로컬푸드 농산물 367건에 대해 다성분 분석법을 이용하여 잔류농약 350종 을 분석한 결과 다음과 같다. 로컬푸드 농산물에 대한 잔류농약 분석 결과 21.5%(79 건)의 검출률을 보였으며 부적합률은 1.1%(4건)으로 나타 났다. 품목별로 과일류는 65건 중 27건(41.5%), 채소류는 242건 중 50건(20.7%), 두류는 7건 중 1건(14.3%), 곡류 11건 중 1건(9.1%) 검출률을 보였고, 취나물, 곤달비, 파, 살구에서 기준치 이상의 잔류농약이 검출되었다. 검출된 잔류농약은 총 58종 163회로 살충제 성분이 가 장 많이 검출되었고 고독성 농약 1회, 보통 독성 농약 9 회, 저독성 농약이 48종이었다. 부적합 처리된 품목을 포함한 검출된 잔류농약 항목에 대한 위해도 평가 결과 위해지수(%ADI) 가 0.0000- 63.1043% 으로 모두 100% 미만으로 위해하지 않은 수준 으로 판단되었다. 지속적으로 로컬푸드 농산물의 운동 추진 방향인 지역 활성화와 안전한 먹거리 공급체계구축의 목적을 위해 엄 격히 관리되는 기준으로 안전성 검사를 실시하고, 신뢰성 확보를 위한 생산자 교육 및 홍보, 출하 전 안전성 검사 관리시스템이 정착된다면 울산지역 로컬푸드 농산물 사업 이 더욱 활성화되고 지속적으로 추진 될 수 있을 것으로 판단된다.

        본 연구는 위장 단계의 소화과정에 관여하는 Gastric lipase (GL)를 반려견을 위한 정적 체외 소화모델(Static in vitro digestion model)에 적용을 검토하기 위하여 실시되었다. GL의 첨가가 체외 소화과정 동안 건물(Dry matter; DM), 조단백질(Crude protein; CP) 그리고 조지방(Ether extracts; EE) 소화율에 미치는 영향을 평가하였다. GL은 위장 소화단계에서 첨가되었다. 위장(39℃, 2 hr.)과 소장(39℃, 4 hr.) 소화 후에 비소화 분획을 분리하였다. 그리고 실험사료와 분리된 비소화 분획에서 DM, CP 그리고 EE 수준을 측정하고 각각의 소화율을 계산하였다. 위장과 소장 소화단계에서 측정된 DM, CP 그리고 EE 소화율은 Control과 GL 그룹 사이에서 통계적으로 유의한 차이는 관찰되지 않았다(p>0.05). 결과적으로 우리의 체외 소화모델에서 GL의 첨가는 DM, CP 그리고 EE의 소화율에는 영향을 미치지 않는 것으로 나타났다. 따라서 이와 같은 결과는 정적 체외 소화모델을 이용한 소화율의 평가에 있어서 GL의 역할은 다소 제한적일 수 있다는 것을 시사한다.

        반려동물을 키우는 가구 수가 증가함에 따라 펫푸드(반려동물 식품) 산업이 급속하게 성장하고 있다. 이에 본 연구는 국내외 펫푸드(반려동물 식품) 연구와 산업 현황을 살펴보 고, 국내 펫푸드 산업에 활용할 수 있는 기초 연구자료를 제공하는데 목적이 있다. 펫푸드 산업은 반려동물 문화가 발달한 선진국 중심으로 발달되어 있으며, 반려동물 산업에서 지 출 비중이 매우 큰 분야이다. 해외의 경우 펫푸드관련 소비자 연구가 다각적으로 시행되 며, 제품개발을 하고 있다. 하지만 국내의 경우 국내 소비자 연구나 제품개발이 부족한 실정으로 국내 소비자 대상에 맞는 소비자 분석과 제품개발 연구가 필요하다.

        The site used for a nuclear facility can be released after decommissioning if the results of dose estimation meet the regulatory requirements and the site release is approved by the regulatory body. RESRAD-ONSITE, developed by the Argonne National Laboratory, is a computer code used to estimate the dose to the residents on radiologically contaminated sites. The dose estimation for site release should consider various exposure pathways, including inhalation, ingestion, and external exposure. This study used RESRAD-ONSITE to evaluate the internal exposure dose and identify radionuclides due to the intake of food produced on radiologically contaminated sites. The upper limit of the clearance level of radionuclides expected to remain at the site was used as the source terms for the dose evaluation. In addition, the amount of food intake per capita was obtained from eight countries using nuclear power generation as of 2020. The default values of RESRAD were used for other parameters except for intake by type of food and source terms. As a result of the dose evaluation, the contaminated water and vegetables showed a great contribution to the exposure dose. The dose due to tritium in drinking water was highest in the third year. In addition, regarding the intake of vegetables, the internal exposure due to 90Sr was the highest in the first year.

        Microbial proteases are more economical than plant- and animal-derived proteases due to their ease of production and high activity. This study aimed to optimize the production of proteases from fermentative food-derived microorganisms. Five strains with proteolytic activity among 50 Bacillus sp. were first screened. Two strains with high protease activity were identified: Bacillus amyloliquefaciens SRCM 102139 and Bacillus subtilis SRCM 104999. SRCM 102139 strain and SRCM 104999 strain had the highest protease activity in 0.8% glucose and 0.3% yeast extract, and in 0.8% starch and 0.1% soy peptone, respectively. The production of protease for two strains was optimized by the Central Composite Design (CCD) under response surface methodology. The optimal conditions for protease production in SRCM 102139 were 0.5% and 0.347%, pH 6.0, for carbon (glucose) and nitrogen (yeast extract springer 0202) sources, respectively, with a predicted value of 0.929 U/mL. Additionally, the optimal conditions for protease production in SRCM 104999 were 0.5% and 0.5%, pH 6.7, for carbon (starch) and nitrogen (soy peptone HSP-349) sources, respectively, with a predicted value of 0.431 U/mL. The actual protease activities of SRCM 102139 and SRCM 104999 under the established conditions were 0.926 U/mL and 0.428 U/mL, respectively, closely matching the predicted values.

        This study investigated the hazard factors based on imported food non-compliance and global food hazard information for the last 4 years to suggest imported food safety management. Food safety management on utensils or packaging containers is appropriately managed for the compounds derived from them. Food safety management on health-functional foods, processed foods, and agricultural products is concentrated on ingredient contents, food additives, and pesticide residuals. Additional hazards are illegal compounds, mycotoxins & pesticide residuals, hygieneindicator microorganisms and food-borne pathogens in health-functional foods, processed foods, and agricultural products, respectively. The continuous increase in hazards related to safety and hygiene in global food hazard information needs additional attention. To reduce the hazard factors, this study proposes that imported food be limited to products certified by HACCP or an equivalent food safety management system because registering foreign food facilities for processed and health-functional foods is mandatory. Additionally, the customs clearance inspections should focus on the hazard factors derived from the global food hazard information system. This study suggests a global food hazard information system that could derive frequently issued hazard factors at a given period and newly issued hazard factors in aspects, such as food items, subcategories, and exporting countries.

        The surge in food delivery systems during the coronavirus 2019 pandemic necessitated this study of heavy metal migration from food contact materials (FCMs). A total of 104 samples of FCMs, comprising 51 polypropylene (PP), 21 polyethylene (PE), and 32 polystyrene (PS) samples of six different types of FCMs (containers, covers, table utensils, cups, pouches, and wrappers) used for food delivery distributed in Korea, were collected and investigated for migration of three heavy metals (Pb, Cd, and As) using inductively coupled plasma–mass spectrometry (ICP-MS) to determine whether they complied with Korea’s Standards and Specifications for Utensils, Containers, and Packages. Acetic acid (4%, v/v) was used as the food simulant, and tests were performed at 100oC (in harsh conditions) for 30 min. Linearity of Pb, Cd, and As showed acceptable results with a coefficient of determination (R2) value of 0.9999. Limit of detection (LOD) and limit of quantification (LOQ) of Pb, Cd, and As were 0.001, 0.001, and 0.001 μg/L and 0.002, 0.003, and 0.003 μg/L, respectively. Accuracy and precision results complied with the criteria presented in the European Commission Joint Research Centre guidelines. The average concentration of Pb, Cd, and As migration detected in a total of 104 samples was 0.009–0.260 μg/L, which was very low compared with the migration specification set in the Standards and Specifications for Utensils, Containers, and Packages. The maximum level of Pb corresponded to 0.23% of the migration limit. There were no samples exceeding the limit. Thus, this study confirmed that the heavy metal contents of FCMs used for delivery food distributed in Korea were safely managed. The data from this study represent an invaluable source for science-based safety management of hazardous heavy metals migrating from FCMs used in the food delivery industry.

        This study compares and analyzes changes in users’ perceptions of industrial catering food service quality before and after COVID-19. The survey enrolled 226 subjects at five industrial catering establishments in Seoul and Gyeonggi Province; a total of 204 customers with complete data were included in the final analysis. Factor analysis was conducted to verify convergence validity and construct reliability; results pertaining to ‘service and environmental hygiene’ and ‘quality of food’ were extracted. Among the general variables of food service quality, differences were obtained in the user’s perceptions of food service qualities according to gender, education, and marital status. Our results revealed that women, low education, and married people perceived significant differences in all attributes before and after COVID-19. Additionally, varied altered perceptions were determined for service quality according to the occupations of the subjects. However, no differences were obtained for pleasant dining environment in the ‘service and environmental hygiene factor’ and variety of desserts in the ‘food quality factor’.

        This study summarizes the research methods, subjects, research processes, and achievements of major researchers by analyzing previous research results on Korean food history. The goal of the current study aimed to seek the methodology and direction of ‘food history research’. Literature data from 1945 to 2022 were examined. Results of excavation research on ancient food literature were divided into the following stages: the 1980s, when the foundation for ‘cataloging’ was laid, and the 2000s, when ‘digitization’ was achieved. Achievements of each period were collected, and the achievements and limitations were analyzed. Next, the research results were classified into ‘Food technology history’, ‘Recipe change history’, and ‘Food culture and dietary history’. We observed that around the 2000s, anthropology and folklore research perspectives were reflected, and the research on ‘history of diet’ reached a turning point. Our results indicate the possibility that food history can develop as a special historical area. This could be achieved by establishing an exchange system with other disciplines and creating a systematic curriculum.

        Since delivery food has become a new dietary culture, this study examines consumer awareness through big data analysis. We present the direction of delivery food for healthy eating culture and identify the current state of consumer awareness. Resources for big data analysis were mainly articles written by consumers on various websites; the collection period was divided into before and after COVID-19. Results of the big data analysis revealed that before COVID-19, delivery food was recognized as a limited product as a meal concept, but after COVID-19, it was recognized as a new shopping list and a new product for home parties. This study concludes by suggesting a new direction for healthy eating culture.
