Mealworm is the most widely used edible insect in Korean traditional food. In this study, the quality characteristics and antioxidant activity of Garaedduk containing different proportions of powdered mealworm (0%, 3%, 6%, 9%, and 12%) were evaluated in order to enhance the utilization of mealworm. The results revealed that moisture content decreased while pH and starch elution increased, with increasing amount of mealworm. Furthermore, the amount of total amino acids, essential amino acids, and non-essential amino acids increased with increasing amount of mealworm. Regarding chromaticity, the L value decreased while the a and b values increased as the amount of mealworm increased. The addition of 6% mealworm showed slight differences in the pore size and surface smoothness as compared to plain Garaedduk. Texture, hardness, chewiness, and gumminess increased, but cohesiveness decreased with increasing amount of mealworm. The preference test evaluating the appearance, flavor, taste, texture, and overall preference showed that 6% mealworm additive group had the highest preference. In addition, antioxidant activity of the newly developed Garaedduk increased with increasing amount of mealworm. In conclusion, Garaedduk enriched with 6% mealworm showed promising results for developing rice cake with improved nutrition and antioxidant activity and excellent overall preference and quality.
This study was conducted to investigate the quality characteristics of Yanggaeng prepared with different concentrations of mealworm powder: 0, 1, 2, and 3%. Regarding the proximate composition, moisture, crude lipid and ash contents showed no significant differences among groups, while crude protein contents increased as the mealworm powder increased. The value of lightness (L) and yellowness (b) were higher in 3% added groups than those of control groups. Consumer acceptance test showed that no significant differences between the controls and added groups were observed in color, smell, taste and overall acceptability. The total polyphenol content ranged from 19.87 to 51.37 mg GAE/100 g, exhibiting the increase with increasing mealworm powder level. DPPH radical scavenging activity and reducing power increased as the amount of mealworm powder increased. In conclusion, it is suggested that mealworm powder can be incorporated into Yanggaeng up to 3% without affecting the sensory quality of Yanggaeng.
This study was performed to evaluate the quality characteristics of functional Dasik prepared with a mixture of freeze-dried mealworm (Tenebrio molitor) powder and dried pollack powder along with assessment of the general and fatty acid compositions of mealworms. General compositions, except for moisture content of freeze-dried mealworm powder, were higher than those of raw mealworms. The ratios of saturated fatty acids and unsaturated fatty acids of freeze-dried mealworm powder and raw mealworms were 1:3.31 and 1:3.19, respectively. Amounts of oleic acid, which was the most abundant among unsaturated fatty acids, of freeze-dried mealworm powder and raw mealworms were 41.12 and 37.84%, respectively. For color values, greater content of freeze-dried mealworm powder in functional Dasik resulted in lower L and b scores, whereas a value increased. In the case of mechanical properties, greater content of freeze-dried mealworm powder resulted in significant reduction of hardness, chewiness, and gumminess. In the case of sensory evaluation, color, taste, and overall quality of DPMD50, which was prepared with a 1:1 ratio of freeze-dried mealworm powder and dried pollack, were the highest. It was concluded that DPMD50 is a nutritious combination of edible insects and fish for protein fortification for growth and the elderly.
본 연구는 고기능 미래 식량자원으로서 이용 가치가 높은 밀웜과 검은콩을 첨가한 쿠키를 제조하고, 밀웜 및 검은콩 첨가량에 따른 품질특성, 항산화 활성, 기호성을 비교해 보고자 수행되었다. 밀웜의 첨가량을 0%, 10%, 20%, 30%로 증가한 쿠키와 밀웜과 함께 검은콩 분말 10%, 20% 를 첨가한 쿠키를 제조하여, 품질특성, 항산화 활성, 관능 특성을 비교한 결과는 다음과 같다. 팽창율, 손실율은 밀웜만 첨가한 쿠키와 밀웜과 검은콩 분말을 함께 첨가한 쿠키 모두에서 밀웜 분말 첨가량이 증가함에 따라 유의적으로 증가하였다. 총 폴리페놀 함량, DPPH 라디칼 소거능, FRAP, ABTS 측정 결과 밀웜 분말과 검은콩 분말을 첨가한 쿠키 모두에서 아무것도 첨가하지 않은 쿠키보다 활성이 높게 측정되었다. 밀웜 분말의 첨가량이 증가할수록 항산화 활성은 증가하여 밀웜 분말 30% 첨가군에서 가장 높은 항산화 활성을 나타내었다. 또한 동일한 양의 밀웜에 검은콩 분말을 함께 첨가한 쿠키는 밀웜 분말만 첨가한 쿠키 보다 총페놀함량, DPPH 라디칼 소거능, ABTS 라디칼 소거능이 높게 측정되었다. 밀웜만 첨가한 쿠키의 색도는 첨가량이 증가할수록 쿠키의 밝기(L 값)와 황색도(b 값)는 유의적으로 감소하고, 적색도는(a 값) 증가 하였고, 밀웜과 검은콩을 함께 첨가한 쿠키는 적색도(a 값), 밝기 (L 값), 황색도 (b 값)가 모두 감소하는 것으로 측정 되었다. 쿠키의 조직감 측정결과 밀웜 첨가량이 증가할수록 쿠키의 강도가 유의적으로 감소하였으나(p < 0.05), 검은콩을 함께 첨가한 쿠키는 강도가 강하게 나타나 밀웜 증가에 의한 쿠키 강도의 감소를 검은콩을 첨가함으로써 개선할 수 있었다. 이상의 결과에서 밀웜 쿠키의 품질특성, 항산화 활성, 기호성을 모두 향상하기 위해서는 밀웜 분말을 10% 첨가하여 제조하는 것이 가장 우수하다는 것 을 알 수 있었다.
In order to improve the usability of mealworm and the nutritional quality of acorn Mook mostly composed of carbohydrates, we prepared acorn Mook using with different levels of mealworm powder, and the physico-chemical and sensory evaluation were investigated. In the content of proximate chemical composition, moisture content did not show any significant difference. But crude protein, crude ash, and crude fat contents were increased with increasing mealworm content. Carbohydrate content was reduced as mealworm content increased. Lightness showed no significant difference among treatments, redness was increased, and yellowness was decreased as the amount of mealworm powder increased. In physiological properties, hardness, gumminess, chewiness, and springiness were significantly increased as the amount of mealworm powder decreased. However, adhesiveness and cohesiveness were not significantly different. Ascorbic acid content, activities of DPPH and ABTS radical scavenging activities were decreased with increasing amount of mealworm in acorn Mook. In sensory evaluation, acorn Mook containing 0.75% of mealworm powder showed highly preference compared with the control.
This study was performed to develop and evaluate cookies prepared with various amounts (0 g, 12.5 g, 25 g and 37.5 g) of mealworm powder to serve as not only sports snacks but also for the general population as a new protein source. In the chromaticity of mealworm cookies, lightness and yellowness decreased whereas redness increased with more mealworm powder. The hardness of the mealworm cookies increased as more mealworm powder was added. In sensory evaluation, higher preference was shown with the measure of color, taste, and overall preference for mealworm cookies prepared with 50% mealworm powder (MP2). For the general composition of MP2, the moisture, carbohydrate, crude protein, crude fat and crude ash were higher compared with the control cookie. For the mineral contents of MP2, the contents of Ca (33.44 mg/100 g), P (225.13 mg/100 g), Mg (82.21 mg/100 g), Na (246.22 mg/100 g), and K (503.49 mg/100 g) were higher compared with the control cookie. The essential amino acids (valine, isoleucine, leucine, methionine, threonine, phenylalanine, and histidine) in MP2 were also higher compared with the control cookie. It was concluded that MP2 can be used as a new protein source for not only the maintenance of muscle but also for the prevention of muscle loss in old people.
This study was performed to develop patties with quality characteristics using mealworm powder, followed by assessments of general compositions and the branched-chain amino acid (BCAA) levels of the patties. An analysis of the chromaticity of the patties shows that the lightness and yellowness were decreased, whereas the redness was increased, as the amount of mealworm powder was increased. According to the sensory evaluation, the mealworm patty that contain 20% of mealworm powder (M20) showed an overall high preference level. In terms of the mechanical properties, the hardness, gumminess, and chewiness were significantly increased, whereas the springiness and cohesivensee were decreased, as the amount of mealworm powder was increased. The general composition of the M20 consists of 41.84% (moisture), 8.78% (carbohydrates), 34.42% (crude protein), 13.15% (crude fats), and 1.81% (crude ash). The BCAA contents (leucine, isoleucine, and valine) significantly increased in correspondence with the increases of the as mealworm-powder amount regarding the M20, the BCAA composition consists of the following: leucine (2,906.25 mg/100 g), isoleucine (1,459.09 mg/100 g), and valine (1,813.18 mg/100g). The conclusion of this study suggests that mealworm is a potential food material that could possibly replace meat.
This study was conducted to examine the performance of poultry production and ammonia emissions from poultry litter when the mealworm (Tenebrio molitor L.) powder was fed to broilers and ducks. In Experiment 1, a total of 180 1-day-old broilers (Arbor acres) were allocated to two treatments with three replicates in a completely randomized design. In Experiment 2, ducks were used in the same method as in Experiment 1. The dietary treatments were as follows: basal diets as control and basal diets with 1.5% Tenebrio molitor L. powder as T1. In Experiment 1, broiler production was not affected by the addition of mealworm powder (p>0.05). Ammonia from broiler litter was observed significantly different in the two treatments at 4 and 5 weeks (p<0.05); however, in other weeks ammonia measured did not show significance different (p>0.05). In Experiment 2, feeding of mealworm powder had no statistical significance on duck productivity (p>0.05). Ammonia emissions from duck litter were not statistically significant in the two treatments at 2 to 5 weeks (p>0.05); however, there was a difference at 6 weeks (p<0.05). Therefore, the addition of mealworm powder to broiler and duck diets did not only improved weight gain and feed efficiency, but also effectively reduced ammonia in poultry litter.
