        The purpose of this study was to assess the forage productivity and nutritive value of kenaf at different fertilizer application amounts and various stages of maturity. The experiment was conducted from May to September 2020, the amount of 80 kg of kenaf seed/ha was supplied with different types and amounts of nitrogen fertilizer and the plants were harvested at 10-day intervals from different harvesting dates (24th August and 3rd, 13th, 23rd September). According to the different fertilizer types and application amounts, the highest kenaf height was recorded in the inorganic fertilizer amounts of 200 and 250 kg N/ha and the fresh and DM yield were significantly improved in the inorganic nitrogen amount of 250 kg N/ha. The highest CP and TDN content in the leaf was achieved in the inorganic fertilizer amounts of 150 and 200 kg N/ha, respectively; and the highest TDN content in the stem was also found in the inorganic fertilizer amount of 200 kg N/ha. According to the different harvesting dates, the highest DM ratio was found in the harvesting date of 13th September, the leaf ratio increased with advanced maturity, whereas the stem ratio decreased significantly and the highest DM yield of kenaf was recorded in the harvesting dates of 13th and 23rd September. Besides, the highest CP, CF, CA, ADF, NDF and TDN content in the leaf as influenced by different harvesting dates was 15.4, 31.8, 10.2, 22.1, 34.7 and 76.5%, respectively, and the CP, CA, ADF and TDN in stem decreased significantly with advanced maturity of kenaf. In conclusion, the optimal fertilizer amounts and the appropriate harvesting dates for a high forage yield and high-quality kenaf as livestock feed were the inorganic fertilizer application amounts of 200-250 kg N/ha and from 13th and 23rd September, respectively.

        The effects of supplementing ESP-FM (Erythrobactor sp.), freshwater Chlorella (Chlorella sp.), and baker’s yeast (Saccharomyces cerevisiae) on the nutritional value and mass production of Moina macrocopa, which is used as a live feed for fish fry production, was investigated. Consequently, the effects of feeding the enriched M. macrocopa to the nutritional composition of larval rockfish (Sebastes schlegel) and carp (Cyprinus carpio) was also investigated. Maximum density of M. macrocopa was reached within 15-21 days after inoculation (0.5 to 22 individual/mL), at various temperatures, and either decreased or remained almost constantly thereafter. Protein content and amino acids composition of M. macrocopa were found to be influenced by their respective diets while lipid and ash contents did not considerably change. M. macrocopa fed with baker’s yeast were low in n-3 HUFA content, and those fed on the freshwater chlorella were high in the 18:2n-6 and 18:3n-3 HUFA content, and in cultures treated with ESP-FM were high content in n-3 HUFA. The utilization of M. macrocopa as a substitute fish feed for carp and rockfish showed the enrichment nutritional content.

        This study was conducted from October 2014 to May 2015 to explore forage production and feed values of Italian ryegrass, Rye and whole crop barley as winter forage crops in the Southern region of Korea. The experimental location was over 10 points for each species and each sampling point area was 1 m² (Width: 1 m × Length: 1 m). Air mean temperature and rainfall in the Southern region of Korea during the experimental period was 6.95 ± 5.75℃ and 70.45 ± 54.68 mm, respectively. Fresh forage yield of Italian ryegrass, the most cultivated forage in the Southern region of Korea, was 44.4 ± 7.0 ton/ha. The percentage of dry matter for whole crop barley was 28.9 ± 7.0%. Crude protein (CP) was higher in Italian ryegrass (10.7 ± 5.3%) while total digestible nutrient (TDN) had the highest value in whole crop barley. Crude protein was not significantly different by location. However, the neutral detergent fiber (NDF), acid detergent fiber (ADF) and total digestible nutrient value of forage from Jeonbuk province were higher than in forage from Gyeongnam province.

        Korean foods have the strengths to addresssome of the health problems of modern man. To assess the properties of Korean noodles, daily value %, DVS, DDS and energy density were compared between many kinds of noodles from around the world. Using a variety of reference materials, a nutritional database of noodles was built for this study. For carbohydrate, lipid, vitamin A, vitamin K, vitamin C, niacin, zinc, and copper, the daily values % of western noodles were significantly higher. Also, the serving size of Korean noodles was significantly small. Comparing the average energy density of the noodles, they showed 1.87±0.93 kcal/g (Korean noodles), 2.42±1.08 kcal/g (western noodles) and 1.84±0.84 kcal/g (other noodles). The dietary fiber, polyphenols, and flavonoids content of the noodles showed no significant difference. Neither DVS nor DDS showed a statistically significant difference. In the Korean noodles, the GMDFV pattern showed a diverse choice of food groups. Korean noodles show a lower energy density, and the small serving size to have favorable for the prevention of obesity. Thus, Korean noodles are an excellent choice in terms of diversity and energy density.

        Jersey 종은 다른 품종에 비해 총 건물사료 섭취량당 우유 고형분 생산량이 매우 높은 품종이다. 특히 유지방과 유단백질 함량이 높아 시유 뿐 아니라 아이스크림, 요구르트와 같은 다양한 유제품을 제조할 경우 영양적 우수성은 물론 뛰어난 풍미를 제공한다. 또한, Jersey 우유는 소비량이 점차 증가하는 치즈와 같이 고형분 함량에 따라 수율이 결정되는 유제품에 높은 경제성을 부여할 수 있다. 비록 우유 성분들은 같은 품종이라도 사육 조건, 지역 등에 따라 다소 차이를 보이지만 일반적인 Jersey 우유의 주요 특성은 타 품종에 비해 유단백질내 A1/A2 β-케이신 변이체 비율이 낮고 유지방내중쇄지방산의 비율이 높다. 또한 중성 올리고당 함량이 상대적으로 높아 bifidobacteria와 같은 유익한 세균의 성장을 촉진시키는 프리바이오틱 효과를 발휘한다. 그 밖에 칼슘, 인, 마그네슘의 함량과 α-토코페롤 함량이 높아 고품질의 프리미엄 유제품 생산에 바람직한 특성을 가지고 있어 향후 특성화된 제품 개발에 사용 가능하다.

        소뼈의 효과적인 이용을 위하여 사골뼈와 갈비뼈의 가열시간에 따른 칼슘, 인, 마그네슘, 단백질, 총 유리 아미노산, 콜라겐 등의 영양성분 측정과 관능검사를 실시한 결과는 다음과 같다. 12시간 까지 가열할 경우, 조리시간이 경과할수록 고형물, 칼슘, 인, 마그네슘, 단백질, 총 유리아미노산, 콜라겐 함량은 점점 증가하였으며 12시간 가열에서 가장 높았으며, 이와 같은 영양성분이 사골뼈 보다 갈비뼈에서 조금 높게 용출되었다. 12시간 끓인 시료에 식염 0.8%를 첨가하여 관능 검사를 실시한 결과 색, 향기, 맛, 종합적인 맛에서 갈비뼈 시료가 사골뼈 시료보다 높은 기호도를 나타냈다. 이상의 결과들로부터 사골뼈와 갈비뼈를 12시간 가열함으로써 칼슘과 마그네슘 등 영양성분이 가용화되기 쉬우며, 사골뼈와 갈비뼈의 영양성분과 맛이 우수하므로 다양한 이용과 개발을 시사하였다.
