This study was conducted to investigate the properties of wet noodle when different concentrations of Prunus mume juice were added to the wheat flour. The characteristics of wet noodle including cooking properties, color, mechanical texture properties, and sensory quality were determined. The compositions of Prunus mume were 88.19% moisture, 0.45% crude ash, 4.04% citric acid and 0.41% total sugars. The pH of Prunus mume was 2.76. The moisture absorption rate, weight, volume and turbidity of cooked noodles added with Prunus mume juice were lower than reference sample. When the amount of Prunus mume juice increased, the Hunter L(brightness) value, a(redness) value of cooked noodles decreased but b(yellowness) value increased. Instrumental rheological characteristics of wet noodle containing Prunus mume juice were measured with a texture analyzer. The hardness, adhesiveness, cohesiveness, springiness and gumminess of wet noodle with 20% Prunus mume juice were higher than others. However, the hardness of cooked noodle decreased with the increase in the amount of Prunus mume juice into noodle. The adhesiveness, cohesiveness, springiness and gumminess of cooked noodles added with Prunus mume juice were higher than reference sample. The results of sensory evaluation of cooked noodles containing Prunus mume juice indicated that the appearance, color, taste and chewiness of the cooked noodle with 10% Prunus mume juice showed the higher preference than others. Based on cooking properties, rheological and sensory evaluation, addition of 10% Prunus mume juice suggested to be acceptable for processing wet noodle.
본 연구에서는 새송이버섯을 중심으로 품질향상 및 생산량 증대를 목적으로 적정재배사의 구조설계 및 환경조절 기술을 개발 · 보급하기 위하여 서부 경남지역의 새송이버서 재배농가를 중심으로 재배사의 구조 및 환경조절장치를 조사하였다. 또한 환경조절실태를 조사하기 위하여 농가에 위치한 2개 동의 상업용 버섯재배사를 대상으로 환경인자를 계측하였다. 본 연구에서는 이들 연구 중 환경인자 계측결과를 분석하였다. 실험기간동안 외기온은 평년과 큰 차이가 없었으나, 재배사 내부의 온도가 설정온도보다 다소 낮게 유지되고 있기 때문에 진주지역의 동절기 최저 외기온을 고려하면, 난방기 용량이나 배관에 문제가 있는 것으로 판단되었다. 난방 시 상하 재배상간 온도차가 최대 2~3℃ 정도로 높게 나타나 높이별 온도분포가 일정하지 않을 뿐만 아니라 또 최하단 재배상에서 균상이 지나치게 건조하게 되어 버섯의 발이가 잘 되지 않는 등의 문제도 종종 발생하였다. 그리고 상대습도는 재배 기간 동안 변화가 심하고, 평균상대습도도 일반적으로 알려져 인ㅅ는 것보다 발이기나 생육기에 모두 다소 높거나 낮게 유지되는 등 습도유지가 일정하지 않은 것을 알 수 있었다. 탄산가스 농도도 권장농도보다 높게 유지되는 등이 문제가 있었다. 조도는 권장조도보다 전반적으로 낮게 유지되고 있음을 알 수 있었다. 또한 버섯의 수확량은 평균적으로 병당 약 67~85 g 정도로 나타났고, 총 판매금액은 균상 구입비의 2배 이사인 것으로 조사되었다.
The effect of addition with maesil(Prunus mume) juice for extending the shelf-life of wet noodle was investigated by measuring quality changes such as total microbial count and pH. The Prunus mume juice showed antimicrobial activities against Salmonella enteritidis, Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes, and Escherichia coli. When the wet noodles containing Prunus mume juice were kept at 4℃ for 20 days, it was showed that the drop of pH was not significantly occurred during the storage. Total microbial counts for control exceeded the initial putrefactive criterion level of 1.0×106 cfu/g at 16 days of storage at 4℃. However, total microbial count of wet noodles with the addition of 10%, 20% and 30% Prunus mume juice were 3.0×102 cfu/g, 3.0×102 cfu/g, and 1.5×102 cfu/g, respectively, and these bacterial counts were still less than the criterion level ever at 20 days of storage. The addition of Prunus mume juice extended the shelf-life of wet noodle appreciably.
Objective : To evaluate the cognitive perceptual performance in relation to the instrumental activities of daily living in Korean elderly women living in Seoul, Pundang, and Kwang-ju county.Method : To evaluate the cognitive perceptual performance, LOTCA-G battery was employed while IADL by Lawton and Brody was used to evaluate the instrumental activities of daily living. T-test, ANOVA, correlation analysis, and multiple regression analysis were used to ana-lyze the accumulated data.Results : The total cognitive perceptual performance score (LOTCA-G) and the total instrumental activities of daily living score (IADL) generally demonstrated a high correlation : (1) From observing the correlation of each items, the ability to use the telephone demonstrated a positive correlation with orientation, concentration, visuomotor organization, perception, memory, thinking operation and praxis (2) While shopping demonstrated a positive correlation with think-ing operation, visuomotor organization, orientation and memory (3) Food preparation demon-strated a positive correlation with orientation, thinking operation, visuomotor organization, con-centration, memory and praxis (4) While house keeping had a positive correlation with ori-entation, memory, visuomotor organization, thinking operation, concentration and perception (5) Laundry demonstrated a positive correlation with all of the items except visuomotor organization (6) While the mode of transportation demonstrated a positive correlation with all of the items including orientation and memory (7) Responsibility for one’s own medication demonstrated a positive correlation with orientation and thinking operation (8) The ability to handle finances demonstrated a positive correlation with orientation and all of the items.Conclusion : Cognitive perceptual performance was found to be significantly correlated with the instrumental activities of daily living skills. In particular, orientation and thinking operation, which are the items of cognitive perceptual performance affected the instrumental activities of daily living the most. Thus, orientation, perception, visuomotor organization, thinking operation, memory, praxis, concentration and cognitive perceptual performance need to improve not only so elderly women may live independently in the community but so as to offer them a high stand-ard of livin.
본 연구에서는 양봉사 내부환경을 보다 효율적으로 조절할 수 있는 환기팬 작동방식을 구명하기 위하여 시뮬레이션을 통해 얻어진 환기팬 작동방식에 대한 연 구결과를 양봉사에 직접 적용하여 실험을 실시하였으며, 양봉사 내부의 온도 및 습도변화에 대한 시율레이션과 실험결과를 비교 · 분석하여 양봉사 설계시 양봉사 열환경 해석 프로그램의 적용성을 검토하고, 실험결과를 이용하여 환기팬 작동방식별 양봉사 내부환경의 조절 성능을 분석하였다. 기 개발된 양봉사 열환경 해석 프로그램은 앞으로 양봉사 설계에 적절하게 이용할 수 있을 것으로 판단되었다. 외부기온이 비슷한 조건에서는 환기팬 작동방식 B의 경우가 A의 경우보다 양봉사의 내부온도가 대체로 더 낮았으며, 평균적으로 벌통 내부는 2.8℃, 양봉사 내부는 2.1℃ 더 낮았다. 이것은 Lee 등(1998b)이 제시한 환기팬 작동방식에 따라 양봉사 내부의 승온억제를 최고 2.8℃까지 할 수 있다는 내용을 뒷받침하는 실험결과이다. 환기팬 작동방식 A와 B 모두 꿀벌이 월동하기에 적합한 상대습도 범위 (50~75%) 였으나, 방식 B가 A 보다 양봉사 내부 습도의 최고 및 최저편차가 약 2%, 평균습도가 약 5% 적게 나타나 습도환경조절에 있어 좀 더 안정적인 것으로 판단되었다. 따라서 환기팬 작동방식 B는 A 에 비하여 양봉사 내부환경조절 성능이 더욱 우수하고 효율적인 것으로 판단되었다.
