        In this study, we investigate the potential use of persimmon peels (PP) in mushroom culture medium for the production of functional mushrooms. Pleurotus eryngii was cultivated in medium supplemented with PP (SMPP) at the following concentrations: 0% SMPP (control), 5% SMPP, 10% SMPP, 15% SMPP, 20% SMPP, or 30% SMPP. The total polyphenol content, DPPH radical scavenging ability, ABTS cation scavenging ability, and reducing power of P. eryngii cultivated in SMPP were investigated. P. eryngii cultured in 20% SMPP produced the highest values for all four measurements. Total polyphenol content, DPPH radical scavenging activity, ABTS cation scavenging ability, and reducing power all increased upon the addition of PP. Based on our results, we can conclude that persimmon peels are a highly valuable supplement for functional mushroom culture medium.

        This study was conducted to investigate optimum conditions for mass production of ntagonistic microbes Alcaligenes sp. HC12. Alcaligenes sp. HC12 had a potent biological control agent to control browning disease caused by Pseudomonas agarici. Alcaligenes sp. HC12 markedly showed the antagonistic activity against Pseudomonas agarici, the most destructive pathogen of cultivated mushrooms. To define the optimum conditions for the mass production of the Alcaligenes sp. HC12, we have investigated optimum culture conditions and effects of various nutrient source on the bacterial growth. The optimum initial pH and temperature were determined as pH 9.0 and 30o, respectively. The optimal concentration of medium elements for the growth of pathogen inhibitor bacterium(Alcaligenes sp. HC12) was determined as follows: 0.5% dextrine, 1.5% yest extract, 1.0% NaNO3, 0.5% KH2PO4, and 1.5% asparagine.

        This study was conducted to investigate the effects of Kojongsi persimmon peels as a mushroom substrate on antioxidant activity of Pleurotus eryngii. The Pleurotus eryngii was growth on the medium with 0, 5, 10, 15, 20, 30, 40, 50% Kojongsi persimmon peels. The Pleurotus eryngii was extracted into ethanol and their antioxidant activities were analyzed. The total polyphenol content was highest in the 20% Kojongsi persimmon peels treatment (40±0.38 mg of gallic acid equivalents/100 g) than 0% Kojongsi persimmon peels treatment (21 ±0.18 mg of gallic acid equivalents/100 g). The 20% Kojongsi persimmon peels treatment showed better DPPH scavenging activity (36.81±0.23% at 1 mg/ml), ABTS scavenging activity (39.03±0.10% at 1 mg/ml) and reducing power (0.3±0.10% at 1 mg/ml) than 0% Kojongsi persimmon peels treatment and another extract ones. Overall, total polyphenol content and antioxidant activities of extracts from Pleurotus eryngii was increased dose dependently and 20% Kojongsi persimmon peels treatment was showed better total polyphenol content and antioxidant activities than 0% Kojongsi persimmon peels treatment and another extract ones.

        The Kojongsi persimmon peels is byproduct after production of dried persimmon. This study was conducted to investigate optimal mixing ratio of Kojonsi persimmon peels as a substrate for cultivation of Pleurotus eryngii. The primary nutritive material of substrate for Pleurotus eryngii was corncob, soybean meal, beet pulp, ground corn and bran. Five to forty percent of persimmon peels were mixed with primary nutritive materials as new substrate. The chemical properties of substrate mixed with Kojongsi persimmon peels was similar to the mixture without Kojongsi persimmon peels in T-C, T-N, C/N ratio, and other nutrients. Mycelial growth time on medium with 5 to 30% persimmon peels was similar to the control without persimmon peels as 27 days but that on medium with 40% and 50% persimmon peels was delayed for 10 days. The time of pinhead formations in medium with 5 to 30% persimmon peels was 12 days, the growth time to harvest was 6 days. These results were similar to those of the control without persimmon peels. The sizes of pileus of treatments with 5 to 30% persimmon peels were tend to be smaller compared with the control. The length of stipe of 10% persimmon peels treatment was 80 mm which was shorter than that of the control with 120 mm.

        The medium used for bottle cultivation of mushrooms is made according to a specific workflow; this includes mixing the raw materials, adjusting the moisture content, placing the mixture into bottles, and sterilizing and cooling the medium. Medium composition should be kept constant throughout the year. placed in the bottle, choice of materials, moisture content, weight of the medium, bulk density, nitrogen content, three-phase medium, such as suitable conditions. To achieve constant medium composition a comprehensive model has been established in accordance with the technology developed in the work process with respect to medium compositions piecemeal. By comprehensively applying the various methods to establish medium composition, our country can expect to grow at over four seasons and overcome the many difficulties in mushroom mycelial growth periods, cultivation periods, quantity, and quality.

        This study analyzed population density changes and taxonomic characteristics of various microorganisms, which play important roles in culture medium fermentation of Agaricus bisporus and examined changes in decompositionrelated enzyme activity secreted by these microorganisms. Various microorganisms such as thermophilic bacteria, actinomycetes, fluorescent pseudomonas spp. and filamentous bacteria are closely related to culture medium fermentation of Agaricus bisporus. The population density of these microorganisms changes and harmful bacteria disappear during thermophilic fermentation. During outdoor fermentation, Psychrobacter sp., Pseudomonas sp., Bacillus sp. and Pseudoxanthomonas sp. showed the highest percentage distribution in the different culture medium while Bacillus sp. and Psychrobacillus sp. were the most dominant after pasteurization. When analyzing the enzyme activity of microorganism during rice straw fermentation, cellulose enzymes become important at the early stage of fermentation. Increase in hemicellulose enzyme follows after decomposing carbon sources. The microorganisms that secretes these enzymes were distributed at the second and third turning stage of fermentation.

        생육실 내·외부 환경조건과 종균 배양 및 자실체 특성검 정 결과 다음과 같은 결론을 얻을 수 있었다. 먼저, 종균 배양이 외부 온도의 영향을 받는 것을 확인할 수 있었다. 배양실의 환경 조건(22oC, 65-68%, 700-1,200 ppm)을 일 정하게 하여도 외부 기온이 낮고, 건조해지는 1월(동절기) 에는 16-18일 가량 늦은 것을 확인하였다. 또한, 외부 기후에 따라 생육실 내부 환경이 영향을 받 아, 자실체 생장이 느리고 발생 형태가 다른 것을 확인하 였다. 동일한 조건(18±1oC, 85-95%, 700-1,200ppm)을 설 정한 생육실에서 재배한 버섯이 수량(무게), 길이(크기) 모두 1월에 수확한 버섯이 3월에 수확한 버섯에 비해 작 은 수치임을 확인하였고, 경도가 작아 품질 면에서도 양 호하지 못함을 확인하였다. 이는 1월 외부의 영하의 저온 과 60% 이하의 저습에 의해 생육실 내부 환경이 변화하 여 일어난 현상임을 알 수 있었다. 아울러 버섯의 특성은 일정 시일이 지난 후 외부 기후를 보완하여 실내 환경을 조절하여도 개선되지 않음을 확인하였다. 일정 기간이 지 난 후의 조치는 균의 노후화만 진행시켜 색만 변화할 뿐 크기가 커지거나 침이 형성되지 않았다. 그러므로 환경 스트레스를 받지 않도록 미리 예방하는 것이 필요하다. 환기와 생육관리를 위해 생육실 내부 환경이 외부로 노출 될 때, 외부 환경이 영향을 미치지 않도록 에어커튼 혹은 보온 커튼을 덧대어 문제가 발생하지 않도록 해야할 것이다. 특히, 동절기와 같이 외부 기온이 낮고, 습도가 낮은 시기에는 특별히 주의가 필요할 것이다.

        This study was conducted to establish replacement the corncob used in winter mushroom bottle cultivation. Corncob is unstable quality in moisture content or total nitrogen(T-N) content. Fruit body yields according to the ratio of cassava stem chips mixing were compared. After treatment-1 and treatment-2, fruit body yields increased by 8.8% and 5.4% and raw material cost decreased by 7% and 19%. The results showed that cassava stem chips could replace 33% to 67% of corncob for winter mushroom bottle cultivation.

        본 연구는 지역 특산물인 감과피를 이용한 버섯배지 개 발을 위한 기초자료로서 감과피의 이용 가능성을 검토하 고자 수행되었으며 감과피는 경상남도 산청지역에서 곶감 을 생산하고 남은 것을 수거하여 건조한 후 사용하였고 공시균주는 ASI 2312를 사용하였다. 대조구는 혼합배지:콘코브:톱밥(220:65:15, v/v)을 혼합한 기본배지를 사용하 였고 기본배지 중 혼합배지를 5%, 10%, 15%, 20%, 30%, 40%, 50%의 건조된 감과피 처리구로 대체한 처리 구를 시험구로 사용하였다. 대조구인 기본배지에 비해 시 험구인 5%, 10%, 15%, 20%, 30%, 40%, 50% 감과피 처 리구의 T-N 함량은 감과피 첨가량이 증가할수록 감소하 는 경향을 나타내었으며 T-C 함량은 큰 차이가 없었고 C/ N율은 감과피 첨가량이 증가할수록 증가하는 경향을 나 타내었다. 감과피 첨가량이 균사생장에 미치는 영향을 조 사한 결과 대조구보다 감과피가 첨가된 모든 시험구에서 균사생장이 느리게 나타났다. 감과피 첨가량에 따른 배양 일수는 대조구인 혼합배지에 비해 감과피를 30%까지 첨 가하여도 배양일수와 초발이 소요일수에는 뚜렷한 차이는 없었지만 감과피 첨가량이 증가할수록 배양일이 길어지는 경향을 보였으며 혼합배지에 비해 감과피 첨가비율이 증 가할수록 갓의 직경은 감소하고 대의 길이는 길어지고 직 경은 감소하는 경향을 나타내었다. 수확 후 동결 건조한 큰느타리버섯의 수분, 단백질, 조회분 함량은 대조구와 시 험구에서 유의성 있는 차이를 나타내지 않았지만 조지방 함량은 감과피 첨가량이 증가함에 따라 증가하는 경향을 나타내었고 β-glucan 함량은 대조구에 비해 10%와 15% 감과피 첨가구에서 높게 나타났다. 따라서 대조구와 비교 했을 때 15% 감과피 첨가구는 자실체 수량도 높게 나타 나고 β-glucan 함량도 높게 나타났기때문에 감과피 첨가 비율은 15%가 가장 적합한 것으로 사료된다.

        This study was carried out to investigate optimal mixture of persimmon peels for Pleurotus eryngii cultivation. The 5-50% of persimmon peels was mixed with mushroom growing medium for Pleurotus eryngii cultivation. Mycelial growth of persimmon peels treatment were 74-165 mm (28 days) and slower than that of control (treatment without persimmon peels) as 160 mm (28 days). Mycelial growth time of 5-20% persimmon peels treatment were similar to control as 34 days but that 30-50% of persimmon peels treatment were delayed for 17 days. The time of pinhead formations in control and 5-50% persimmon peels treatment were 11 days, the growth time to harvest were 6-7 days. The sizes of pileus of 15% persimmon peels treatment was tend to be smaller compared with control. The length of stipe of 15% persimmon peels treatment was 124 mm which was longer than that of the control with 118 mm. The thickness of stipes of 15% persimmon peels treatments was 48 mm which were tend to be thicker than that of the control with 47 mm. Thirty percent of persimmon peels treatment was better than other treatment comparing with control.

        This study was carried out to develope mushroom growing medium for Pleurotus eryngii cultivation using persimmon peels. Total nitrogen, carbon source and protein of commercial cultivation medium used in this study was 1.34, 53.9 and 0.09 %, respectively. The C/N ratio was 40.22. The total nitrogen was increased by increasing mixing ratio of persimmon peels. The carbon source and protein was no significant difference by increasing mixing ratio of persimmon peels. In column test, mycelial growth of 15% persimmon peels treatment was similar with control, but mycelia of 20-50% persimmon peels treatment was growed slowly compared with control. To investigate yields of fruiting body, 15% of persimmon peels was mixed with commercial cultivation medium. The fruiting body of 15% persimmon peels treatment was no significant difference yield compared with control. But, the chemical contents of 15% persimmon peels treatment were the higher than control.

        The button mushroom, Agaricus bisporus, is one of the major economical crops cultivated in Korea. This mushroom showed the 5th production to 11,493 M/T in 2014. Several fungus are known as the causal agents of diseases of the cultivated button mushroom (Agaricus bisporus) and oyster mushroom (Pleurotus ostreatus). Cladobotryum mycophilum is the causal agent of cobweb disease of commercial mushrooms. Early symptoms were noticed as round, fleshy, yellowish brown lesions on mushroom caps. Late symptoms progressed when the parasitic fungus formed white cobweb circular colonies on dead or damaged pinheads, spread on the surface of the casing, and covered entirely fruiting bodies. A Gram-positive bacterium was isolated from mushroom media that markedly showed the antagonistic activity against Cladobotryum mycophilum, the most destructive pathogen of cultivated mushrooms. The HC57 strain was selected as antagonistic bacterium by inhibition zone method and it was identified as Bacillus subtilis by the cultural, morphological and physiological characteristics, and analysis of the 16S rDNA. The isolated bacterium is saprophytic but not parasitic nor pathogenic to cultivation mushroom. The isolated bacterium for Cladobotryum mycophilum cell, was sufficient for inhibition in vitro. Inoculation of the isolated bacterium prevents the development of bacterial disease in Cladobotryum mycophilum. Control efficacy of browning disease of strain HC57 treatment was 71% on Agaricus bisporus. The optimal culture medium for the antagonistic bacteria growth was determined as follows: 1.5% Xylose, 2% Soytone, 1% NH4H2PO4, 7 mmol CaCl2, and 0.5% Histidine at pH 6.0 at 25℃. The suppressive bacterium may be useful in future for the development of biocontrol system and the construction of genetically modified edible fungi resistant to the disease caused by Cladobotryum mycophilum.

        This study was carried out to investigated optimum additive ratio of barley flour for substitution of rice bran atcultivation of winter mushrooms. Mycerial growth was faster according to increase of barley flour ratio than those of controls, butonly some slow at the addition of 10% barley flour. Yields of fruiting body show the highest to 165.4g/850ml of medium whichare the addition 30% of barley flour and not significant difference of yields up to the addition of 70% barley flour. Diameter ofpileus was the highest at the addition of 30% barley flour. Hardness of pileus and stipes were the highest at the addition of 10%barley flour. The L value of stipes were the hight at the addition of barley flour, but the L value of pileus were decreased at theaddition of barley flour, but there was no significant difference in the a-value and the b-value.

        This study was carried out to investigated optimum mixing ratio of Korean cultivation Salvia miltiorrhiza forproduction of functional oyster mushroom. Mycerial growth was slow at addition of Salvia miltiorrhiza, and significant differenceby increase of Salvia miltiorrhiza. Yields of fruiting body show the highest to 139.5g/850ml of medium which are addition 5g/bottle of Salvia miltiorrhiza but rapid decrease by increase of Salvia miltiorrhiza. Diameter of pileus and thick of stipes were higherat addition Salvia miltiorrhiza than those of the controls. Thick of pileus and length of stipes were the highest at addition 30g, and20g and 30g of Salvia miltiorrhiza. The L value of stipes were the highest at addition 20g and 50g of Salvia miltiorrhiza and theL value of pileus were the highest at addition 30g of Salvia miltiorrhiza, but there was no significant difference in the a-value andthe b-value.

        버섯 세균갈성색무늬병원균인 Pseudomonas tolaasii에 대한 길항미생물로 보고된 Pseudomonas azotoformans HC5 균주의 배양적 특성과 대량 배양을 위한 최적배양조건을 설정하였다. HC5 균주의 생육온도는 10~20oC, pH는 6.0~9.0의 범위에서 왕성한 생육을 보였다. 대량배양을 위한 효율적인 영양원 선발을 위하여 기본배지에 탄소원 fructose 등 18종, 무기질소원 NH4Cl 등 6종, 유기질소원 peptone 등 6종 그리고 아미노산 asparagine 등 11종을 각각 1%씩 첨가하였고, 무기염류 13종을 1 mM 농도로 첨가하여 각각에 대한 생육에 미치는 영향을 조사하였다. 또한 선발된 각각의 영양성분들에 대한 최적 농도를 조사하기 위하여 각각의 성분을 최소 0.1%에서 최대 4.0%까지 배지에 첨가하여 배양 후 생육정도를 조사하였다. 그 결과, 대량배양을 위한 생육최적조건은 온도 15oC, pH 6, 탄소원 0.6% adonitol, 유기질소원 1.5% yeast extract, 무기질소원 0.8% NH4H2PO4,아미노산 0.2% asparagine 그리고 무기염류는 5 mM MgSO4에서 왕성한 생육을 보였다.

        본 연구는 지역 특산물인 감과피를 이용한 버섯배지 개발을 위한 기초자료로서 감과피의 이용 가능성을 검토하 고자 수행되었으며 감과피는 경상남도 진주시에 소재한 진주단감원예조합으로부터 건조된 것을 수집하여 사용하 였고 공시균주는 큰느타리 2312를 사용하였다. 대조구는 시판혼합배지를 사용하였고 건조된 감과피 5%, 10%, 15%, 20%, 25%, 30%이 첨가된 시판혼합배지를 시험구 로 사용하였다. 대조구인 시판혼합배지에 비해 시험구인 5%, 10%, 15%, 20%, 25%, 30%의 감과피가 첨가된 시 판혼합배지의 총질소 함량은 감과피 첨가량이 증가할수록 증가하는 경향을 나타내었으며 총탄소와 유기물 함량은 큰 차이가 없었고 C/N율은 감과피 첨가량이 증가할수록 감소하는 경향을 나타내었다. 감과피 첨가량에 따른 시험 관 내에서의 균사생장을 조사한 결과 대조구인 시판혼합 배지보다 감과피가 첨가된 모든 배지에서 균사생장이 느 리게 나타났다. 시험구의 혼합배지 중 5% 감과피가 첨가 된 배지에서 균사 생장이 가장 빨라지만 감과피 첨가량이 증가할수록 균사 생장속도는 느려지는 경향을 보였다. 감 과피 첨가량에 따른 배양일수는 대조구인 시판혼합배지에 비해 감과피를 30%까지 첨가하여도 배양일수와 초발이 소요일수에는 뚜렷한 차이는 없었지만 감과피 첨가량이 증가할수록 배양일이 길어지는 경향을 보였으며 시판혼합 배지에 비해 감과피 첨가비율이 증가할수록 갓의 직경과 두께는 감소하고 대의 길이는 짧아지고 굵기는 굵어지는 경향을 나타내었다. 따라서 감과피를 배지자원으로 이용 하기 위해서는 감과피 첨가량에 따른 혼합배지의 조성비 가 필요할 것으로 생각된다.

        느티만가닥버섯 수확후배지 발효사료 급여가 산란계에 미치는 영향을 조사하기 위하여 도준농산에서 수거한 느 티만가닥버섯 수확후배지를 Bacillus subtilis EJ3 배양액 과 혼합하여 2주 동안 발효시킨 것을 공시사료로 사용하 였다. 실험동물인 12주령된 Hy-line brown 갈색계 24수는 시판사료 급여구인 대조구(T0)와 5(T1), 10(T2), 15%(T3) 의 버섯수확후배지 발효산물이 첨가된 시판사료 급여구인 시험구로 나누어 12주 동안 공시사료를 급여하였다. 12주 동안 평균 산란율은 대조구에 비해 5% 버섯수확후배지 발효산물 첨가구에서 증가하였다가 버섯수확후배지 첨가 량이 증가할수록 감소하였다. 사료섭취량은 대조구와 5% 버섯수확후배지 발효산물 첨가구에서는 큰 차이를 보이지 않았지만 버섯수확후배지 발효산물 첨가량이 증가할수록 약간 증가하였다. 사료요구율은 대조구와 5% 버섯수확후 배지 첨가구에서 비슷하게 나타났으며 10% 버섯수확후배 지 첨가구부터는 버섯수확후배지 첨가량이 증가할수록 높 게 나타났다. 산란량과 산란율은 대조구보다는 5% 버섯수 확후배지 첨가구에서 높게 나타났다. 총 12주의 사양시험 기간 동안 난중, 난각강도, 난각두께, 난황색 모두 5% 버 섯수확후배지 발효산물을 첨가한 처리구에서는 대조구와 큰 차이가 없었지만 버섯수확후배지 발효산물의 첨가량이 증가할수록 감소하는 경향을 나타내었다. 계란의 내부 품 질을 평가하는 기준인 난황색은 5% 버섯수확후배지 발효 산물 첨가구에서는 대조구와 차이가 없었으나 10% 이상 의 버섯수확후배지 발효산물을 첨가한 처리구에서는 난황 색이 대조구에 비해 낮게 나타났다. 계란의 내부 오염 지 표인 육반과 혈반에서는 처리구간의 차이는 없었으며 외 부 품질 기준인 난각색도 처리구간에 차이를 나타내지 않 았다. 그러나 계란의 포장과 수송과정에서 계란의 상품성 에 영향을 미치는 요인인 난각중과 난각 두께는 5% 버섯 수확후배지 발효산물 첨가구에서 대조구보다 높게 나타났 다. 버섯수확후배지 발효산물의 급여구에서 산란계의 가스 발생량은 버섯수확후배지 첨가량이 증가할수록 암모니아 가스 발생량이 감소하는 경향을 나타내었다.

        Mushroom is cultivated as one of the major economical crops in many areas in Korea. The total production has steadily increased from approximately 198,563 M/T in 2009 to 208,941 M/T in 2012. Several fungus are known as the causal agents of diseases of the cultivated button mushroom (Agaricus bisporus) and oyster mushroom (Pleurotus ostreatus). Trichoderma harzianum is the causal agent of brown blotch disease of commercial mushrooms. Colonization of mushroom caps by the bacterium results in development of brown or cream lesions on pileus and stipe. These lesions are slightly concave spots and can be round or spreading. Antagonists against Trichoderma harzianum, CAM33 were selected and their control efficacy of green mould disease was investigated in this study. The CAM33 strain was selected as antagonistic bacterium by inhibition zone method and it was identified as Bacillus methyrotrophicus. by the cultural, morphological and physiological characteristics, and analysis of the 16S rDNA. The isolated bacterium is saprophytic but not parasitic nor pathogenic to cultivation mushroom. The isolated bacterium for Trichoderma harzianum cell, was sufficient for inhibition in vitro. Inoculation of the isolated bacterium prevents the development of bacterial disease in Trichoderma harzianum. Control efficacy of browning disease of strain CAM33 treatment was 77% on Agaricus bisporus. The optimal culture medium for the antagonistic bacteria growth was determined as follows: 3.0% Saccharose, 1.5% Soytone, 1.0% (NH4)2HPO4, 10 mmol MgSO4, and 2.0% Glutamic acid at pH 6.0 at 25°C. The suppressive bacterium may be useful in future for the development of biocontrol system and the construction of genetically modified edible fungi resistant to the disease caused by Trichoderma harzianum.

Several fungus are known as the causal agents of diseases of the cultivated button mushroom (Agaricus bisporus) and oyster mushroom (Pleurotus ostreatus). Cladobotryum mycophilum is the causal agent of cobweb disease of commercial mushrooms. Early symptoms were noticed as round, fleshy, yellowish brown lesions on mushroom caps. Late symptoms progressed when the parasitic fungus formed white cobweb circular colonies on dead or damaged pinheads, spread on the surface of the casing, and covered entirely fruiting bodies. A Gram-positive bacterium was isolated from mushroom media that markedly showed the antagonistic activity against Cladobotryum mycophilum, the most destructive pathogen of cultivated mushrooms. The HC7 strain was selected as antagonistic bacterium by inhibition zone method and it was identified as Bacillus altitudinis. by the cultural, morphological and physiological characteristics, and analysis of the 16S rDNA. The isolated bacterium is saprophytic but not parasitic nor pathogenic to cultivation mushroom. The isolated bacterium for Cladobotryum mycophilum cell, was sufficient for inhibition in vitro. Inoculation of the isolated bacterium prevents the development of bacterial disease in Cladobotryum mycophilum. Control efficacy of browning disease of strain HC7 treatment was 78% on Agaricus bisporus. The optimal culture medium for the antagonistic bacteria growth was determined as follows: 3% Soluble startch, 10% Soytone, 1% (NH4)2HPO4, 1 mmol KCl, and 0.5% L-asparagin at pH 6.0 at 30°C. The suppressive bacterium may be useful in future for the development of biocontrol system and the construction of genetically modified edible fungi resistant to the disease caused by Cladobotryum mycophilum.

        Five to thirty percent of persimmon peels were added to mushroom medium to investigate mycelial growth. Mycelial growth on the medium with persimmon peels was 82~96 mm (28 days) and was slower than that of the control without persimmon peels as, 100 mm (28 days). Mycelial growth time on medium with 5 to 15% persimmon peels was similar to the control without persimmon peels as 28 days but that on medium with 30% persimmon peels was delayed for 4 days. The time of pinhead formations in medium with 10 to 20% persimmon peels was 8 days, the growth time to harvest was 10 days. These results were similar to those of the control without persimmon peels. The sizes of pileus of treatments with 10 to 30% persimmon peels were tend to be smaller compared with the control. The length of stipe of 10% persimmon peels treatment was 89 mm which was shorter than that of the control with 90 mm. The thickness of stipes of 10 to 20% persimmon peels treatments were 40 to 46 mm which were tend to be thicker than that of the control with 42 mm.
