        강원도 북부 어촌의 특이한 현상은 전쟁으로 인해 발생한 실향민에 의 한 새로운 음식문화의 형성이다. 음식으로나마 고향을 맛보고 잊지 않으 려고, 고향의 음식을 정착한 현지의 사정에 맞게 만든, “함경도 산, 강원 도 북부 작”이라는 음식문화를 형성한 것이다. 함흥냉면, 오징어순대가 대표적 예이다. 지구온난화와 남획에 의해 어획되는 중심 어종이 줄어들 거나 달라지고 있다. 어촌사람들은 산출되는 어종과 식재료에 과학기술 을 접목해 음식들을 현대화하고 고부가가치의 공산품으로서 식품을 개발 하고 있다. 해양심층수를 활용하고 붉은대게, 연어, 양미리의 다양한 조 리방법 개발이 이를 보여준다. 교통의 발전, 인터넷과 SNS의 확산은 지 역 음식문화의 새로운 형성에 영향을 주었다. 찾는 관광객을 위해 전통 음식에 기반하면서도 현대인의 취향에 부응하는 음식들을 개발하고 있 다. 닭강정, 명태강정, 대게고로케, 연어고로케 등이 그것이다. 더없이 발전 한 현대화의 시기에 옛 음식문화를 돌아보고 앞으로 만들어갈 지역의 음식 문화를 생각해 볼 시기이다. 선조들의 음식을 다시 살리고, 여기에 현대의 과학기술을 활용하여 재창조하는 것이 강원도 북부 어촌사람들이 명심해야 할 과제이다. 더불어 남북으로 나누어진 강원도 음식문화를 ‘하나의 새로운 민족음식문화’로 만들기를 소망할 뿐만 아니라 실천을 위해 노력하는 것이 접경지역 어촌사람들이 가져야 할 또 하나의 과제이자 마음가짐이다.

        In this study, we have analyzed the 2015 KNHANES to understand the nutritional and health status of Korean middle-age adults from the perspective of frequency of eating breakfast. Those that eat breakfast five to seven times a week were 76.3 percent (male) and 72.7 percent (female). Frequency of eating lunch and dinner, and eating out was significantly higher among male subjects. The higher the frequency of eating breakfast, the higher the frequency of eating lunch, dinner and eating out. Female subjects that ate breakfast five to seven times a week had lower height and weight compared with other groups, but there was no significant difference of BMI and waist circumference among the four groups. Adults that eat breakfast five to seven times a week had consumed more carbohydrates, dietary fiber, phosphorus, potassium and vitamin C regardless of gender, which validates the nutritional benefits of eating meals regularly. Male adults that ate breakfast five to seven times a week revealed lower levels of diastolic blood pressure and LDL-cholesterol compared with other groups, which validates eating breakfast regularly was beneficial to their health. In conclusion, it is necessary to eat regular meals daily relative to the nutritional status and health of Korean middle-age adults.

        The purpose of this study was to examine the relationship between the smoking and eating habits of high school students. We also presented the basic data for the effective smoking cessation and smoking prevention programs, and proper nutrition education programs. We surveyed 304 high school male students in Sokcho city. The results were as follows ; a total of 23.7% of the subjects were smokers, the smokers spent more pocket money than the non-smokers and they also spent more time on the internet or smartphone. The smokers had lower awareness of the dangers of smoking than that of non-smokers. They started drinking alcohol earlier than the non-smokers. Their water intake was higher and they preferred consumption of high-protein foods like fried chicken, but were not inclined to vegetables and sour tasting foods. These results imply that smoking habits of the subjects affected their eating and drinking habits. A matter of concern was the low intake of vegetables and sour tasting foods, which could lead to a deficiency of nutrients such as vitamins, minerals and dietary fibers. The smokers were less satisfied with their school life than the non-smokers. There was a negative correlation with the degree of awareness of the dangers that smoking can cause. Conversely, the amount of smoking and drinking habits were positively correlated. To reach a healthy adulthood, it is crucial to quit smoking and participate in smoking prevention education along with nutrition education and abstinence education for the adolescents.

        The purpose of this study is the examination of stress levels and the eating habits that are affected by stress, and the provision of basic nutritional education data for the improvement of the eating habits of students who have experienced stress-related nutritional problems. Using the BEPSI-K instruments, a questionnaire survey was administered to 327 student subjects (166 male and 161 female) in the areas of Seoul and Gangwon province. The subjects were classified into 3 groups (low-stress, medium-stress and high-stress), and 59 students (18%) belonged the high-stress group. The BMI readings of the Gangwon province students are significantly higher than those of the Seoul students. The survey results show that the lunch frequency and vegetable intake levels are lower in the high-stress group, whereas the intakes of hot spicy food is higher in this group; they also show that Gangwon province students had eating habits that are relatively undesirable compared with the Seoul students. There are significant differences between the Seoul students and Gangwon porvince students regarding residence type, household economic level, types of leisure activities and level of some stresses. The Gangwon province students ate occasionally breakfast, lunch and snacks, but their midnight snack consumption is relatively frequent compared with the Seoul students. The results of the survey indicate that the BEPSI-K score has a negative correlation with the following variables : sleeping time, economic level of household, degrees of satisfaction regarding appearance and academic achievements, lunch frequency and vegetable intakes. Desirable eating habits are essential for the maintenance of a favorable health status and for the stress-management of university students who need to be a healthy members of society in the near future. To facilitate the formation of desirable eating habits among university students, community-based nutritional assistance and appropriate nutritional education programs should be considered necessary.

        This study examined the utilization of processed food and the recognition of food labels among 257 university students (201 females and 56 males) in Seoul and Kangwon-do. The results of the study showed that the most important considered information on food labels are shelf life, nutrition facts, and price in sequential order. Female students’recognition of nutrition facts was significantly higher than that of male students (p<0.05). Female students more attentively checked the manufacturer, origin of the products, and shelf life information on food labels than did the male students. In checking out the food labels information, the most checked items on food labels were calories, trans fatty acid and cholesterol in that order and the least checked information was the sodium contents. Among processed foods, male students’consumption was dominant in instant noodles, frozen dumplings, and canned goods, while female students had more candies/chocolates. In selecting processed foods, male students showed strong preference for cheaper and quantitative products, while female students chose more tasty, brand new, well-known brand, and products of domestic origin. Frequency of canned and frozen food consumption showed a positive correlation with BMI, while candies/chocolates showed a negative correlations with BMI. Negative correlations were found in the attitude of selecting food with longer shelf life and BMI. The results of this study suggest that university students need to be well informed to make wise food choices that contribute to a healthy diet. Additionally, food manufacturers and government authorities concerned should make certain that consumers know how to use food label information more easily and effectively through proper education.

        In this study we included 298 working women in Kangwon province to investigate the life style and eating habits related to constipation. The subjects were divided into 3 groups according to Roman II criteria as follows : normal, mild constipation and constipation groups. For the result, 48.4%, 42.7%, 27.2% and 28.6% of the subjects had constipation in the order of 20's, 30's, 40's, and 50's, respectively. Constipation group had low frequency of bowel movement per week and irregular visit to toilet compared to normal and mild constipation groups. There were higher percentage of people with reading habit while sitting on a toilet, in the constipation group compare to other groups. Constipation groups had difficulty having bowel movement when sleeping outside of their home. There was a significant difference in water consumption per day among the 3 groups. But there was no significant difference in the amount of meals consumed and the number of meals with snacks per day. For the food frequency, there was lower frequency of yogurt and vegetables consumption in the constipation group. But there was no difference in how to eat fruits. From these results, we concluded that in order to treat the constipation, it is recommended to take enough water and dietary fiber, and to have physical activities for the working women.

        본 연구는 ICR-mouse를 실험군당 5마리를 공시하여 식이에 산벚나무 씨앗 기름 및 옥수수 기름을 첨가하여 배합한 사료의 섭취가 쥐의 혈중 지질 수준에 미치는 영향을 비교․ 분석하였다. 1. 산벚나무 씨앗에는 palmitic acid, oleic acid 및 linoleic acid 등이 함유되어 있으며, linolenic acid와 erucic acid가 소량 함유되어 있다. 2. 산벚나무 씨앗 기름의 항산화 값(DPPH)은 4.63%로 나 타났으며, 신장의 무게는 다른 두 군에 비해 산벚나무 씨앗 기름을 섭취한 군(1.24±0.22 g)에서 유의적으로 높았다(p<0.05). 3. 산벚나무 씨앗 기름을 섭취한 군에서 HDL-cholesterol 농 도는 가장 높았으며, 혈중 LDL-cholesterol 농도는 가장 낮았 다(p<0.05). 이상의 결과를 정리해 보면, 산벚나무의 씨앗 기름의 지방 산 조성은 다른 식물성 씨앗 등의 지방산 조성과 큰 차이가 없었으며, 혈중의 HDL-cholesterol 농도를 높여주는 반면에, LDL-cholesterol 농도는 낮추어 주는 것으로 나타났다. 따라서 산벚나무의 씨앗 기름을 현재 유지 자원으로 사용되고 있는 참깨나 들깨와 같이 식용유지 자원으로 개발하기 위해서는 Choi 등(2012)의 연구에서 지적했듯이 씨앗 기름의 항산화 효과, 산패 진행 정도 및 인체에 미치는 영향 등의 지속적인 연구가 이루어져야 한다고 사료된다.
