이 연구의 목적은 주거지와 소득에 따른 베이커리 제품 구매 속성과 형태에 대해서 조사하 였다. 일반적인 사항에서 전체 1,235명 중의 여성이 59.6%, 남성이 40.4%로 여성이 남성보다 조금 더 많았으며, 주거지는 서울 대도시 지역이 53.0%, 중소도시 지역이 47.0%였다. 베이커리 제품의 선호도에 서 ‘일반 식빵과 단과자 빵류’가 56.5%로 가장 많았고, ‘샌드위치류’ 26.0%, ‘천연 발효빵과 건강빵’ 24.5%, ‘케익류’ 20.6%, ‘빵과 함께 커피, 음료’ 17.2% 순이었다. 소득에 있어서는 소득이 높아질수록 ‘천연 발효빵과 건강빵’을 선호하였으며(p<0.001), 소득이 낮아질수록 ‘조각 케익’(p<0.001)과 ‘샌드위치 류’(p<0.001)를 선호하였다. 베이커리 제품의 만족도에서는 ‘품질과 맛’(M=3.76), ‘신선도’(M=3.64), ‘양 질의 재료’(M=3.40), ‘기능성 제품판매’(M=3.31), ‘영양성분’(M=3.24) 순으로 나타났으며, 주거지에 있 어서 서울 대도시 사람과 중소도시에 거주하는 사람 모두 ‘품질과 맛’(p<0.05), ‘신선도’(p<0.05)를 중요 하게 생각하였다.

이 연구의 목적은 서울 지역 소비자들의 베이커리 제품 구매자들의 구매 속성과 형태를 성별과 세대에 따라서 조사하였다. 그 결과는 다음과 같다 : 일반적 사항에서 전체 654명 중에서 남성이 46.6%, 여성이 53.4%로 여성이 남성보다 좀 더 많았다. 베이커리 제품의 구매속성에서 식생활 유형은 ‘미각 관심형’이 35.6%로 가장 많았고, 그 다음으로 ‘건강 관심형’이 35.2%, ‘편리 관심형’이 16.8%순이었다. 베이커리 제품의 구매 기준은 맛이 79.1%로 가장 높게 나타났으며, ‘영양’ 10.2%, ‘가격’ 6.6%, ‘위생’ 5.5% 순이었으며, 성별에 따라서 유의미한 차이를 나타내었다(p<0.01). 베이커리 이용 형태에서 프랜차이즈 베이커리가 71.1%, 윈도우 베이커리 13.3%, 인스토어 베이커리 8.4%순으로 이용하였으며. 성별에서 유의미하였다(p<0.001).
This study investigated the effects of freeze-dried sweet pumpkin powder on the baking of bread. Freeze-dried sweet pumpkin powder (0, 3, 6, 9, or 12%) was supplemented during the baking process and the bread volume, weight, specific volume, baking loss rate, texture, and sensory characteristics were measured. The results were following. Freeze-dried sweet pumpkin contained 4.88% water, 4.40% protein, and 4.02% ash. The L-values (brightness) of the bread were significantly lower as increasing amounts of sweet pumpkin powder were added (p<0.001). However, higher values for the a-value (redness) and b-value (yellowness) were observed (p<0.01 for both values). The volume and baking loss rate decreased when the sweet pumpkin powder was added. In contrast, the weight significantly increased as sweet pumpkin powder was added (p<0.01) and the intensity of dark brown color increased. The outer side of the bread was balanced overall, but the outer skin of the bread appeared darker as the amount of sweet pumpkin powder increased. The overall acceptability, hardness (p<0.001), elasticity (p<0.01), cohesiveness (p<0.01), gumminess (p<0.01), and brittleness (p<0.001) increased as sweet pumpkin powder increased as well. However, when sweet pumpkin powder was added at 12%, the overall acceptability value was fairly low. Sensory parameters, such as taste (p<0.001), color (p<0.001), and flavor (p<0.05) were observed when sweet pumpkin powder was used at 3% and these results were lower than the control. Overall acceptability (p<0.001) was best when sweet pumpkin powder was used at 9% and the texture was best when sweet pumpkin powder was used at 6%.
In this study, we investigated the quality characteristics and the sensory evaluation for madeleine added with peach (Prunus persica L. Batsch) juice. The pH and specific volume of madeleine were decreased with increase of peach juice, whereas the moisture and loss rate were increased. In the color of madeleine crust, L and b value were decreased with increase of peach juice, and these results showed significant differences compared to control(p<0.05). The other hand, the colors of madeleine crumb showed less significant changes compared to the control. On texture of madeleine with increase of peach juice, the hardness, chewiness, gumminess and cohesiveness were increased, whereas the adhesiveness was decreased. In the sensory evaluation with taste, color, flavor and overall preference, the madeleine with 20%(w/w) peach juice showed the highest value. Consequently, these results should provide the possibile use of peach processing in bakery industry because the addition of peach juice enhanced the quality and sensory characteristics of madeleine.
The purpose of this study was to investigate American's perception and preference for Korean kimchi. A questionnaire was used to examine the perceptions of 126 males (40.4%) and 186 females (59.6%) residing in Illinois and California. Approximately 68% of the respondents had eaten Korean food. The perception of kimchi was the highest with a mean of 3.62. The respondents felt that the "Kimchi is a good side dish with cooked rice", "Kimchi (with garlic) prevents SARS", which was significantly different (M=3.06, p< .001), and "Kimchi prevents adult diseases" (M=3.24, p< .01). When evaluating the different kinds of kimchi, onion juice kimchi had the most preferred taste and also the highest overall acceptability (M=5.50, p< .05) of the second days. In the sensory evaluation by kimchi use, the best taste (p< .001) was in the order of kimchi pizza (M=6.58), kimchi dumplings (M=6.40), and kimchi chicken a'laking (M=6.33). The order for overall acceptability (p< .001) was kimchi dumplings (M=6.30), kimchi pizza (M=6.25), kimchi bacon roll, kimchi fried rice, and kimchi chicken a'laking (M=6.17).
The purpose of this study was to investigate Chinese university students' in Beijing perception for Korean Kimchi. The results were as follows: A questionnaire was examined on male 145 (45.7%) and female 172 (54.3%) college students of residing in Beijing. Nationality of Kimchi answered Korea 83.3% of all the participants, and have eaten Kimchi was 59.0%. Male purchased commercial Kimchi 39.7%, and female restaurant 44.9% (p< .05). The first answered 'it was taste' 52.1% when commercial Kimchi purchased, and packing size of commercial Kimchi was 50g 50.0%. Among the intake experience have eaten Kimchi was the highest Baechu Kimchi 79.1%, Mu Kimchi 68.4% and Oi Kimchi 63.6%, also preference of Kimchi was Baechu Kimchi 44.3%, Mu Kimchi 29.3% and Oi Kimchi 19.2% in order. After have eaten Kimchi answered good 64.6% (p< .05), Kimchi liked reason were the highest 'refreshing taste' 42.4%, unliked were 'oder (of garlic, ginger and anchovy juice, etc)' and 'too spicy' 33.3%, respectively. Improvement on consumption extention of Kimchi answered 'not too salty' 30.2%, 'not too hot' 28.5% and 'not too strong seasoning' 22.7%. Perception for Kimchi answered the highest mean (3.95) 'Kimchi is a good side dish with cooked rice'.
This study was carried out to investigate Chinese in Beijing and Shanghai perception and preference for Korean Kimchi. The results were as follows: A questionnaire was examined on male 145(45.7%) and female 172(54.3%) of residing in Beijing, and on male 139(49.5%) and female 142(50.5%) of residing in Shanghai. In foods of eating with Kimchi resulted the highest Chinese foods 40.3% on male, and Korean. Chinese foods 25.3% on female in Beijing(p< .05), Korean, Chinese foods 26.7% and 25.3% on male respectively, and Korean foods 50.7% on female in Shanghai. In Kimchi used dishes Beijing resulted high Kimchi Ramyon 61.5%, Kimchi Kuk 51.3%, and Kimchi Chigae 44.9%, and Shanghai were Kimchi Ramyon 51.2%, Kimchi Kuk 41.3%, and Kimchi Fried Rice 22.4% in order. In evaluation by kinds of Kimchi, the taste resulted high onion juice Kimchi(M=6.55) of the third days, and overall acceptability resulted high onion juice Kimchi(M=6.18) of the third days, similary in Beijing, and Kimchi added in shrimp(M=5.70) of two days, and overall acceptability resulted high Kimchi added in shrimp(M=5.70) of the third days, similary in Shanghai. In Sensory evaluation by used Kimchi, the taste resulted high in the order of Kimchi Fried Rice and Chinese style Kimchi Fried Pork(M=6.27), and overall acceptability resulted Kimchi Fried Udong(M=6.40), Chinese style Kimchi Fried Pork(M=6.27), Kimchi Dumpling(M=6.20) in Beijing, and Kimchi Chige(M=6.70), Kimchi Fried Rice(M=6.67) and Kimchi Pancake(M=6.44), and overall acceptability resulted Kimchi Fried Udong, Kimchi Chige(M=6.50), Kimchi Fried Rice and Kimchi Pancake(M=6.44) in Shanghai.

Nationality of Kimchi answered Korea 75% of ail the participants, and have eaten Kimchi was 60.9%. Male purchsed commercial Kimchi 42.2% and female restaurant 46.3a(p< .01). The first answered 'it was taste' 51.6% when commercial Kimchi purchsed, and packing size of commercial Kimchi was 200g 56.9%. Among the intake experience have eaten Kimchi was the highest Baechu Kimchi 77.8%, Mu Kimchi 58.5% and Oi Kimchi 35.7%, also preference of Kimchi was Baechu Kimchi 49.7%, Mu Kimchi 26.9% and Oi Kimchi 13.8% in order. After have eaten Kimchi answered good 54.5%(p< .01), Kimchi liked reason were the highest 'refreshing taste' 39.7%, unliked were odor(of garlic, ginger and anchovy juice, etc) and too spicy in order Improvement on consumption extention of Kimchi answered 'not too hot' 30.4%, 'not too salty' 28.6% and 'not over-riped' 21.7%. Perception for Kimchi answered the highest mean 3.51'Kimchi can be preserved for a long time' (p< .05) and 'Kimchi is a good side dish with cooked rice'.
우수한 알카리성 식품이자 발효식품인 오이김치를 직접 제조하여 저장기간별로 글로로필, 비타민 C의 함량의 변화를 측정하고 관능검사를 실시하여 오이김치의 저장기간별 선호도를 조사하였다. 클로로필은 클로로필 a의 경우 저장 0일 52.21%, 저장 11일 20.67%, 저장 14일은 분포를 보이지 않았고 클로로필 b의 경우는 저장 0일 14.44%, 저장 11일 16.99%. 저장 14일까지는 클로로필 a와 마찬가지로 분포를 나타내지 않았다. 반면에 Phephorbide a의 경우는 저장 0일 28.44%. 저장 5일 31.20%. 저장 11일 42.63%로 증가하였으나, 저장 12일에서 14일까지는 분포하지 않았다. Phephorbide b의 경우는 저장 0일 1.25%,저장 1일 10.55%, 저장 11일 15.79%로 증가하였으며 저장 12일에서 14일까지는 분포하지 않았다. Pheophytin a의 경우는 서장 0일 2.85%, 저장 11일 3.92%, 저장 12일에서 14일까지는 소실되었고, Pheophytin b는 저장 0일 0.62%, 저장 5일 1.71%로 증가하다가 저장 11일에서 14일은 분포하지 않았다. 비타민 C는 저장 0일 2.57(mg/100g), 저장 4일 5.49(mg/100g)으로 증가, 저장 11일 2.95(mg/100g)으로 감소, 저장 14일에는 소실되었다. 관능평가는 외관, 냄새, 맛, 질감, 종합적인 맛에서 유의미한 차이를 보였는데, 저장 8일에서 가장 높은 선호도를 나타내었고, 저장 10일부터는 낮은 선호도를 보였다.
The author collected 2 species of spider mites from persimmon and citrus trees in Taegu and Chun Chon during the summer of 1961 and 1969. Tenuipalpus japonicus collected from persimmon trees and Panonychus citri collected from citrus trees in and from trifoliate orange trees. In 1958 and 1961 Dr. E. S. Lee recorded four phytophagous species, i.e. Panonychus ulmi, Tetranychus pacificus, Tetranychus urticae and Bryobia praetiosa.
본 연구는 영양성과 기능성 뿐만 아니라 소비자의 기호성이 높은 식품을 개발하고, 베이커리 제품의 부가가치를 높이고자 단호박을 동결 건조하여 버터스펀지 케이크에 단호박 분말 첨가량을 0, 3, 6, 9, 12%로 달리하여, 반죽의 farinograph, amylograph, 비중의 물리적 특성과 품질 특성인 색도, 부피, 무게, 비용적 및 굽기 손실율, 텍스쳐 등에 대한 연구를 수행하였다. 반죽의 farinogram 특성은 단호박 분말 첨가량이 증가할수록 흡수율은 약간 증가하였고, 최고점에 도달하는 시간은 조금 더 길게 나타났으며, 연화도는 첨가량에 따라 증가하다가 12%에서 다소 감소하였다. Amylogram 특성에서 단호박 분말 첨가시 호화개시온도는 대조구에 비해서 높게 나타났으며, 최고점도는 낮게 나타났다. 비중은 단호박 분말 첨가량이 증가함에 따라 높아졌다. 색도에서 crust의 L 값(p<0.01), a 값(p<0.05), b 값(p<0.001)은 대조구보다 낮아졌으며, crumb의 L 값, a 값(p<0.05)은 대조구보다 낮아졌으나 b 값(p<0.001)은 높아졌다. 부피와 비용적, 굽기 손실율은 대조구보다 감소하는 것으로 나타났으며, 부피 지수는 대조구보다 단호박 분말 첨가량이 증가할수록 감소하였고(p<0.01), 대칭성 지수는 대조구가 가장 좋았으며 단호박 첨가구는 대조구보다 낮은 경향을 보였다(p<0.05). 텍스쳐 특성에서는 경도는 단호박 분말을 첨가했을 때가 다소 높게 나타났고(p<0.05), 깨짐성은 단호박 분말을 첨가할수록 낮아졌으며 9, 12% 첨가구에서 차이가 있었다(p<0.01). 이와 같은 결과에서 단호박 분말 첨가량이 9-12%일 때 가장 좋은 최적 조건을 나타내어서 소비자의 선호도가 높은 단호박 버터스펀지 케이크를 제조하여 부가가치를 높이고 상품성을 증대시켜 베이커리 제품의 다양화와 소비자의 만족도를 증대할 수 있다고 사료된다.
