        In this study, we aimed to develop a fermented green rice beverage with a unique flavor and physiological function activity. With glutinous green rice and rice nuruk as independent variables, we modeled the antioxidant characteristics and α-glucosidase, α-amylase inhibitory activity of glutinous green rice fermented beverage to verify its significance. The total flavonoid content and α-glucosidase inhibitory activity were selected as Quadratic models, and DPPH radical scavenging ability and α-amylase inhibitory activity were selected as linear models. For the sensory characteristics of glutinous green rice fermented beverage, sweetness, sourness, savory taste, bitterness, throat feel, nuruk scent, and overall preference increased in preference as the amount of glutinous green rice and rice nuruk increased, but significantly decreased after the center point (p<0.01). A blending ratio of 180.00 g of glutinous green rice and 400.00 g of rice nuruk had the highest preference among all the sensory items. Based on these results, we developed a green rice fermented beverage with unique flavor and physiological function activity of rice using glutinous green rice and rice nuruk, and the optimal blending ratio was determined to be 164.04 g of white rice, 195.96 g of glutinous green rice, and 414.61 g of rice nuruk.

        This study was to identify the effects of education on Korean foods preferred by elementary students and their sustainability. A survey was conducted on 5th-grade elementary school students. Korean food preferences were classified by exploratory factor analysis as creative, healthy, or considerate, and the effects of education on Korean dietary life were classified as cognitive or emotional. Dietary life sustainability was evaluated separately. Results showed that creative and considerate preferences had significant impacts on cognitive and emotional education effects and that a healthy preference type significantly impacted the emotional effect of education. Analysis showed that creative and considerate food preference types significantly influenced dietary life sustainability and that cognitive and emotional education effects mediated these relationships. Sex was not found to have a significant moderating effect. The study shows that Korean dietary life sustainability is influenced by education on topics that promote the value and excellence of Korean food and suggests that experiential education combining practice and theory should be used to increase interest in Korean food among elementary students. Additional studies are required to determine Korean food preferences to facilitate the development of a dietary life education program that enables students to understand and maintain healthy dietary practices.

        The fall armyworm (FAW), Spodoptera frugiperda (Lepidoptera: Noctuidae), which is native to tropical and subtropical regions of the Western Hemisphere is now annually arrives in Korea. In this study, we developed loop-mediated isothermal amplification (LAMP) assay, one of the main merits of which is a rapid identification of target species. Five among 11 FAW-specific loci tested successfully provided a consistent reaction when ten FAWs, which were collected from eight localities in four countries were tested, whereas the 13 non-target species were not amplified. To increase in-field applicability of the method all life stages, reaction time, and different periods after death was tested using the quick extracted DNA. Our FAW diagnostic protocol can be completed within 30 min, from the process of extracting genomic DNA from an egg or a 1st instar larva to species determination.

        This study reviewed Korean food recipes and food culture included in English cookbooks issued in the United States from the 1930s to the early 1970s. In the 1930s cookbook, many types of soup were introduced to Korean food under the influence of the Tangban culture in the Joseon dynasty and a brief description of ‘Sinseollo’ culture. The 1940s cookbooks, introduced Korean table settings, food culture, and cooking methods depending on the use of chopsticks. In the 1950s cookbooks, Korean foods were selected to suit a Western table setting, and detailed explanations were included along with ‘cheopsu’ means the number of dishes served in Korean food. More diverse Korean food was introduced within its culture and origins in the 1960s cookbooks. The 1970s cookbooks explained, the characteristics of Korean culinary specialties that differentiated from oriental food. This study of Korean food and culture from Cookbooks issued in the United States from the 1930s to 1970s, where Eastern and Western multiculturalism coexist, can be used as baseline data to understand the identity of modern Korean food culture and the direction of the globalization of Korean food.

        In this study, 594 questionnaires administered to men and women residing in the capital metropolitan area who work night shifts were analyzed in order to study the effect of health information cognition on healing needs in accordance with the type of food selection criteria of the night worker. The results of confirmatory factor analysis in deriving food selection type identified four categories, a safety seeking type, a food exploratory type, a habitual seeking type, and a rational type, and the cognition types on health information were classified into physical cognition and psychological cognition. The need for healing, which was the investigated factor, was found to have a high correlation between questionnaire items with high reliable consistency. The results of this study were as follows. First, the food selection types of safety seeking type and habitual food seeking type had significant positive effects on the cognitive level of physical health information, and food exploratory type and habitual seeking type had significant positive effects on the cognitive level of psychological health information. In addition, it was shown that food exploratory type and rational type had significant positive effects on healing needs. As a result of this study, it was found that the cognition level of physical and psychological information was different according to food selection type, and the higher the cognitive level, the higher the healing needs. In particular, the result that the level of psychological health information significantly affected healing needs signifies that there is a demand to develop programs and menus that satisfy various needs related to healing and recovery from fatigue. In addition, further interest and study on the health and healing of night workers are required.

        This study was conducted to determine the elements that are required and that need improvement in the contents of dietary life education and the educational environment by analyzing the importance-satisfaction of a dietary life education program for dietary life education trainees. The results of the rank test for the satisfactory elements of dietary life education were in the order of competence of instructors, educational contents, time of education, educational environment and affordability of tuition. The importance-satisfaction analysis of the contents and construction of the dietary life education program showed that “suitable contents for the theme of the class”, “contents and construction of practice class”, “diversity of practice menu” and “diversity of educational contents” had high importance and satisfaction scores and therefore, could be maintained at their current levels. Meanwhile, “adequacy of class time” and “contents and construction of theory class” showed low importance and satisfaction scores, requiring a little effort. Whereas, “time and construction of group practice”, “structure of textbook for class” and “duration of course and number of classes” showed relatively low satisfaction compared to importance, requiring major efforts for improvement. Similarly, analysis of the lecture element from dietary life education showed that “professional lecture by instructors”, “lectures suitable for themes” and “lecture applicable in real life” had relatively low satisfaction compared to importance, requiring major efforts for improvement. In addition, analysis of the educational environment from dietary life education showed that “adequacy of lecture room space”, “cooking equipment”, “diversity of cooking utensils” and “sanitary condition of cooking utensils” also require major efforts for improvement. Therefore, dietary life education should not be executed with a simple delivery of knowledge but with both theory and practice classes to increase its application in real life, and active and specific efforts are required to nurture professional instructors and establish educational strategies.

        노로바이러스는 전세계적으로 모든 연령에게 급성 장염을 일으키는 주요 원인체이다. 본 연구는 국내 식품업계의 식품종사자를 대상으로 무증상 노로바이러스 감염의 유행성을 조사하였다. 2,729명의 식품종사자에서 29명 (1.06%)이 무증상 노로바이러스로 확인되었고 이 중 5명 (17.24%)은 노로바이러스 GI 양성이었고 24명(82.76%)은 노로바이러스 GII 양성이었다. 특히 유전자 염기서열 분석과 계통 분석에서 GII-4 유전자형이 가장 유행성이 높은 것으로 나타났으며 많은 수의 무증상 식품종사자는 노로바이러스 GII-4 에 감염되어있었다. 따라서 본 연구의 결과는 무증상 식품종사자가 노로바이러스 감염에 잠재적인 전파 원인일 가능성이 있음을 보여준다. 또한 이러한 결과는 노로바이러스 예방에 대한 식품업체의 교육의 필요성을 강조한다. 무증상 노로바이러스 감염에 더 많은 주 의를 기울여야 할 것이다.

        This study compared and analyzed the consumption and amount of red pepper used in Baechu Kimchi (cabbage Kimchi) especially the amounts used in Kimchi recipes with respect to the passage of time from the 1930s to the 2010s. In this analysis, 78 recipes for cabbage Kimchi were taken from books, daily newspapers and magazines from 1930 to 2014 and collected for comparison. The result of the study showed that the consumption and inclusion of dried red pepper powder in cabbage Kimchi increased. The average consumption of red pepper in the 1930s was 5.75 g, and the number went up to 8.83 g in the 1940s, to 13.8 g in the 1950s, and to 20.25 g in the 1960s. The amount dramatically increased from 1970 to 1980 (53.37 g) and kept rising until 2010 (71.26 g). The average consumption of red pepper in cabbage Kimchi in the 2010s is about 12 times that of the 1930s.

        The purpose of this study was to perform a functional component analysis to optimize the recipes for Korean beef main bone area. To optimize the recipes for beef leg bone broth, beef feet broth and tail broth, the quality and physiochemical properties of the dishes were comparatived and investigated. Crude protein, crude fat and moisture showed significant differences among the beef leg bone broth, Beef feet broth and tail broth (p<0.001). All free amino acids showed significant differences, with the exception of cystine and tryptophan (p<0.05). All minerals showed significant differences (p<0.01). Na content was highest in the beef leg bone broth (211.77 mg/kg), followed by beef feet broth (254.40 mg/kg), and tail broth (134.93 mg/kg). Collagen was significantly different each dish (p<0.001), but chondroitin sulfate was not. And all nucleic acids showed significant differences.

        The Riptortus-Burkholderia symbiosis is a newly emerging insect-bacterium symbiotic system. This symbiosis system has a good merit as an experimental model system to produce the non-symbiotic (apo) and symbiotic (sym) host insect. In recent reported papers, the symbionts play important biological roles for the host insects. Meanwhile, juvenile hormone (JH) is one of major hormone synthesized corpora allata(CA) to control many physiology of insect. However, the study for cross-talk mechanism between symbionts and host hormones to control important physiological phenomenon of insects is almost none. In this study, we found that Riptortus speed up adult emerging and increase egg laying on presence of symbiont Burkholderia. Also we found that hexamerin proteins, which were controlled the expression by JH, were accumulated in sym-Riptortus hemolymph compare with apo-Riptortus. According as combined results, we hypothesized that the gut symbiont Burkholderia can control JH titer to conclude out beneficial effects such as development and reproduction of R. pedestris. To verify this hypothesis, we examined measurement of JH titer, expression of hexamerins as JH response genes and RNAi for hexamerin protein during whole Riptortus life on presence or absence of symbiont Burkholderia. All results demonstrated that gut symbiont controlled JH titer of Riptortus. Controlled JH amount by symbiont Burkholderia in host midgut regulated hexamerin protein expression for speeding up adult emerging and increasing egg production.

        A study was performed on the consumption of prepackaged meals (Dosirak) sold by food service providers through Importance-Satisfaction Analysis (ISA) to determine the factors that consumers seek in quality Dosirak. According to the analysis, food service providers need to concentrate on food freshness and temperature while maintaining food taste. As for food packaging, consumers were found to prefer microwaveable plastic containers the most (29.3%). Nonetheless, they found that packaging needed improvements in securing food content during transportation and in food labeling, especially for expiration dates. The study also investigated which factors, including menu selection and advertising, affected the sales of food service provider Dosirak the most. The most important factor was determined to be price. Regarding menu selection, the quality of food seasoning and ingredients, daily specials and the variety of combination sets were found to be important. Availability of delivery (3.83/5.00), advance ordering (3.82/5.00) and discounts (3.75/5.00) were important factors in advertising. The conclusions of the study point to a consumer base that recognizes the ease and benefits of Dosirak but desires high quality food items at low cost. To expand the consumer base, food service providers must continually develop new menu items that satisfy consumer tastes and trends, maintain sanitary conditions and improve food labelling.

        본 연구에서는 한우를 이용하고 있는 초․중․고등학교 급 식소를 대상으로 한우 이용 실태 및 한우 메뉴 활용 실태를 파악하고, 이를 토대로 한우 저지방 부위를 이용한 메뉴를 개 발하여 학교급식 메뉴로서의 적합성을 평가해 보고자 하였다. 조사 결과, 학교급식에 다양한 한우 메뉴가 이용되는 것을 알 수 있었으며, 이용되고 있는 한우 메뉴들은 전반적으로 학 생들에게 인기가 있는 것으로 조사되었다. 또한 한우를 이용 한 후 모든 학교에서 학생, 학부모, 교사 모두 급식에 대한 만족도가 증가하였다고 응답하였다. 그러나 이에 비해 한우 이용 메뉴의 제공 빈도수는 높지 않았으므로, 한우를 활용한 메뉴 제공의 횟수를 높일 필요가 있을 것으로 보인다. 특히 한우의 저지방 부위를 이용할 경우 급식소에서는 다른 부위 에 비해 상대적으로 저렴하게 구매할 수 있으며, 한우 유통의 측면에서는 수급 불균형을 초래하고 있는 저지방 부위를 대 량으로 유통시킬 수 있는 한 가지 수단이 되므로, 급식소에서 의 한우 저지방 부위의 활용은 적극 권장되는 것이 바람직한 것으로 생각된다. 그러나 조사 결과, 한우 자체가 다른 육류 에 비해 높은 가격으로 형성되어 있으므로 원활한 한우 저지 방 부위 활용을 위해서는 관할지역 지원이나 정부 지원이 확 대되어야 할 것으로 사료된다. 경제적 어려움 이외에 조리법 과 관련하여 한우 저지방 부위를 급식에서 많이 활용하기 위 해서는 육질 개선(3.80), 다양한 소스 개발(3.74), 기존 메뉴를 위한 양념 개선(3.61) 등이 필요하다는 의견이 많았다. 본 연구진에서는 또한 위의 학교급식의 한우 이용 실태 조사를 바탕으로 한우 저지방 부위의 육질 개선 및 다양한 소 스, 양념 개선 등을 고려하여 급식에서 이용할 수 있는 저지 방 부위 활용 한우 메뉴 8종을 개발하였다. 개발된 메뉴의 특 징은 저지방 부위에 따른 질긴 식감을 부드럽게 만들기 위하 여 주 조리법 이외에 다양한 부 조리법을 사용하는 등 복합적 조리법을 활용하였다는 점과 메뉴에 이용되는 소스나 양념 을 다양화하였다는 것이다. 개발된 메뉴에 대해서는 다량조 리임을 감안하여 제조방법을 단순화시킨 공정도를 함께 제 시하여 추후 조리방법의 간소화를 위한 기초를 마련하였다. 개발된 메뉴의 급식 적용 가능성을 평가하기 위하여 단체급 식 종사자 및 외식업 종사자 30명의 JARS를 평가한 결과, 모 든 메뉴의 조사항목별 JARS도 모두 설정 기준을 충족하여 학교급식에 적용하였을 경우 높은 만족도를 기대할 수 있을 것으로 생각된다. 본 연구는 한우의 주요 조리법인 구이에 소비되고 있는 등 심, 안심 이외의 상대적으로 저렴한 한우 저지방 부위를 이용 한 급식 메뉴 개발의 필요성 및 타당성을 제공하는데 있어서 의미있는 시도라고 할 수 있다. 현재 한우를 이용하고 있는 학교급식의 만족도가 사용 전에 비해 향상된 것을 볼 때, 향 후 학교급식에서는 성장기 청소년들에게 영양적 가치가 뛰 어난 양질의 단백질 공급을 위하여 수입산 쇠고기가 아닌 저 지방 한우의 사용은 아직 한우 사용을 본격적으로 시도하고 있지 않은 학교급식에서도 신중히 고려해볼 만한 사항이라 고 생각된다. 이는 학생들에게 우리나라에서 생산된 안전하 고 품질 좋은 쇠고기를 섭취하게 하는 한편, 한우 제공자의 측면에서 이용 부위의 편중화를 줄이고, 다양한 부위별 판매를 이루어 한우의 수급 불균형 완화 차원에서도 도움을 줄 수 있을 것으로 기대할 수 있다. 이러한 다양한 기대효과를 거두기 위해서는 학교급식에 활용 가능한 한우 저지방 부위 를 이용한 다양한 메뉴의 개발이 더욱 활발히 진행되어야 하 며, 개발 메뉴에 대한 영양사 및 조리사 등을 대상으로 한 조 리교육이 필요할 것이다(Han & Lee 2010; 한우자조금관리위 원회 2006). 또한 한우 저지방 부위 사용 증대를 위하여 정부 나 지자체의 정책적․경제적 지원이 확대되고, 강조되어야 할 것으로 생각된다.

        To identify subspecies and stocks of minke whale meats purchased from Korean markets during 2005-2007, we first obtained their complete sequences of mitochondrial DNA cytochrome b and control region sequences, and compared these sequences to the corresponding sequences of the common minke whale (Balaenoptera acutorostrata), obtained from GenBank. From analyses with partial cytochrome b sequences (383 bp) and non-coding, partial control region sequences (463 bp), Korean mink whale meats are identified as products from the North Pacific minke whale (B. a. scammoni). In addition, the sequences of the partial control region from these meats showed G at site no. 298 and G or A at site no. 463, and the meats appeared to originate from the J stock within this subspecies. Thus, because the J stock has been protected since 1986, implementation of strict regulation measures to reduce their accidental fisheries by catch seems urgent. In addition, B. a. scammoni is distinct from B. a. acutorostrata, with an average Jukes-Cantor distance of 2.21% in the complete control region sequence analysis (935 bp) and 1.31% in the complete cytochrome b gene sequence analysis; the current results support the current subspecies classification, although further sequencing analyses with nuclear genes are necessary.

        The neurotrophin plays an important role in the development, differentiation and survival of the nervous system in vertebrates. It exerts its cellular effects through two different receptors, the Trk receptor tyrosine kinase neurotrophin receptor and the p75 neurotrophin receptor, a member of the tumor necrosis factor receptor superfamily. Trk and p75 neurotrophin receptors utilize specific target proteins to transmit signals into the cell. An ankyrin-rich membrane spanning protein (ARMS) was identified as a new p75 interacting protein and serves as a novel downstream target of p75 neurotrophin receptor. We sought to delineate the interaction between p75 and ARMS by deletion constructs of p75 and green fluorescent protein (GFP)-tagged ARMS. We examined the interaction between these two proteins after overexpressing them in HEK-293 cells. Using both Western blot analysis and immunocytochemistry followed by confocal laser scanning microscopy, we found out that the intracellular domain of the p75 neurotrophin receptor was important for the interaction with ARMS. The results from this study suggest that ARMS may play an important role for mediating the signals from p75 neurotrophin receptor into the cell.

        EGCG [(-)-epigallocatechin gallate], is a major component of green tea has been considered as a major antioxidant constituent. It has been considered as potential chemopreventive and chemotherapeutic agents. However, very little is known about the cellular actions by which EGCG mediates its therapeutic effects. Various aspects of antioxidant activity of EGCG were evaluated in this study. EGCG itself did not show significant cytotoxicity. Significant 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity was observed in all ranges of concentration (0.8-100μ/mℓ used in this study. Protective effect of EGCG against hydrogen peroxide induced cell death was observed. Relatively high lipid peroxidation inhibitory activity were detected ( IC50was about 20μg/mℓ). EGCG also dose-dependently enhanced the activities of superoxide dismutase (SOD), catalase (CAT) and glutathione peroxidase (GPX) in V79-4 cells. In concentrations of 100μ/mℓ of EGCG, activities of SOD, CAT and GPX were measured as 36.9 U/mg of protein, 22.9 U/mg of protein and 17.8 U/mg of protein, respectively. When these values were compared with those of the control groups (24.9 U/mg of protein, 14.9 U/mg of protein and 11.7 U/mg of protein), the relative increases were calculated as 48, 54 and 52%, respectively. Taken together, our findings suggest that EGCG can act as an antioxidant by scavenging radicals and enhancing antioxidant enzyme activities.
