        Vegetable oils are a rich source of bioactive substances. Phytosterols in those have been known for many years for their properties for reducing blood cholesterol levels, as well as their other beneficial health effects. Phytosterols are triterpenes that are important structural components of plant cell membranes just as cholesterol does in animal cell membranes. The aim of this study was to provide consumers with information about phytosterol contents in vegetable oils in Korea market. The contents of major phytosterols (campesterol, stigmasterol, β-sitosterol) in 50 vegetable oils of 10 kinds (perilla oil, peanut oil, avocado oil, olive oil, pine nut oil, sesame oil, canola oil, coconut oil, grape seed oil, and sunflower oil) were analyzed by gas chromatography with flame ionization detector. The average contents of vegetable oils containing 5 or more samples were in the order of sesame oil (334.43 mg/100 g), perilla oil (262.16 mg/100 g), grape seed oil (183.71 mg/100 g), and olive oil (68.68 mg/100 g). Phytosterol content of sesame oil and perilla oil was high among vegetable oils.

        This study constructed a wheat-specific primer and a probe using the internal transcribed spacer (ITS). 2 regions of wheat (Triticum aestivum) and real-time PCR conditions were established. The calibration curve showed a slope of -3.356, a correlation coefficient of 0.998, and an amplification efficiency of 98.589%. Experiments were carried out on the rice flour mixed with 50%, 10%, 1%, 0.1%, 0.01%, and 0.001% of wheat. The result showed that it was possible to detect samples mixed with up to 0.01% of wheat. As a result of checking, the wheat detection potential of rice, 34 processed foods, and seven processed foods was ascertained. The real-time PCR method using the wheatspecific primer and probe developed in this study can be used to identify the authenticity of the raw materials, such as the incorrect indication of the raw materials utilized and the unintended mixing of wheat during the manufacturing process.

        The objective of this study was to analyze proximate composition, dietary fiber, mineral content, fatty acid composition in Cheonggak (Codium fragile) in order to encourage the consumption of Cheonggak. The proximate composition of Cheonggak was found to be 5.51% moisture, 24.09% crude ash, 15.79% crude protein, 2.47% crude lipid and 45.31% dietary fiber. The major mineral content of Cheonggak was Na 8,950 mg/100 g, Mg 1,252 mg/100 g, Ca 807 mg/100 g, K 457 mg/100 g, and trace mineral content was Fe 26 mg/100 g, Mn 8 mg/100 g, Zn 0.4 mg/100 g. Palmitic acid 36.86% and α-linolenic acid 20.14% were the most contained fatty acids in Cheonggak. The ratio of saturated fatty acids to unsaturated fatty acids was 85.49% while ω-6 fatty acids to ω-3 fatty acids were 59.10%. Based on the proximate composition, dietary fiber, mineral content, and fatty acid composition, Cheonggak was judged to be a major source of dietary fiber and Mg and Ca, and it was deemed to be helpful in promoting health, including the prevention of hyperlipidemia. Cheonggak contained valuable nutrients similar to seaweed, which is produced and consumed the most in Korea. Thus, it is necessary to include Cheonggak in the food items.

        Rose (Rosa Hybrida Hort.) are of a high symbolic value and a great cultural importance in different societies. They are widely used as garden ornamental plants and as cut flowers. For the induction of mutation, gamma-rays are widely used as a mutagen. This study was carried out to establish a system for mutation breeding by irradiation of gamma-ray in rose. The rooted cuttings of five cultivar roses (Lovelydia, Vital, Aqua, Yellowbabe and Haetsal) are grown by in a greenhouse. They were two difference treatment (Before rooting gamma-ray irradiation, After rooting gamma-ray irradiation) were exposed to dose of 70 Gy using a 60Co gamma-irradiator (150 TBq of capacity ; ACEL, Canada) at the Korea Atomic Energy Research Institute. The irradiated plants were planted in a greenhouse, and investigated survival rate, mutation rate, flower buds number, and shoot length were planted after 80days. The two treatments of and growth characters was significantly reduced to 20% to 40% compared with the control. In addition, survival rate and mutation rate were ‘after rooting γ-ray irradiation (37.4~67.3% and 0.5~5.6%)’ higher than ‘before rooting γ-ray irradiation (18.3~50.8% and 0.3~3.4%)’. Mutation types were solid type, chimeric and mosaic petal mutants with various colors were induced from five rose. These results indicate that efficiency of mutation induction in rose by gamma-ray irradiation on petal colors and petal shapes in two difference treatment with rooted cutting system.
