        This study was conducted to investigate dietary patterns and assimilation of dietary culture of Korean descendants in Yanbian, China compared to Korean. A dietary survey was conducted using one 24-hour recall method from 730 adults over 30 years of age in Yanbian, China and 695 adults over 25 years of age in Kuri, Korea. The average number of food items consumed per day was 14 in Yanbian and 20 in Kuri and there was a significant difference between the two regions(p<0.001). The foods consumed most frequently were rice, salt, the M.S.G. in Yanbian and rice, green onion and garlic in Kuri. The foods consumed most by amount were rice, cucumber, Soju in Yanbian and rice, Kimchi and grape in Kuri. The average number of dishes consumed per day was 6.4 in Yanbian, 9.4 in Kuri and the difference between the two regions was significant(p<0.001). Total number of dishes appeared in the survey was 253 in Yanbian and 494 in Kuri. The dishes consumed most frequently were cooked-rice, beverages, Kimchi, stir-fried eggplant in Yanbian and cooked-rice, Kimchi, coffee, soybean paste stew, in Kuri. The dish groups appeared most frequently were rice, stir-fried foods, vegetables and Kimchi in Yanbian and rice, Kimchi, beverages and fruits in Kuri. Male subjects in Yanbian Consumed alcohol frequently while adults in Kuri consumed coffee more frequently than Yanbian. The major meal patterns were rice+side dish, rice+soup, rice+side dish+Kimchi in Yanbian and rice+soup+side dish+Kimchi, rice+side dish+Kimchi, rice+soup+Kimchi in Kuri. Stir-fried foods, which were consumed 46.6% of all the meals, were dominant side dish in Yanbian, but stir-fried food, seasoned vegetables and grilled food appeared aver 10% in Kuri. There results show that variety of diet of Korean-Chinese in Yanbian was lower than Kuri. Korean-Chinese tend to keep traditional Korean dietary patterns of consuming rice as staple but were adapted to Chinese dietary patterns of consuming stir-fried side dishes. Efforts should be directed toward preserving Korean traditional patterns of dietary culture among Korean-Chinese population.

        This study was performed to investigate the pattern of health food usage of the adults by food lifestyles pattern in contemporary Seoul. This study views health food consumption as a cultural practice in which people produce (and reproduce) diverse social relationships and cultural meanings. It also identifies food lifestyles and health food usage pattern of Korean adult in Seoul. This topics were discussed based on field research data collected by nutritional survey with questionnaire. To identify the relationships between pattern of health food and food lifestyles, 503 men and 437 women aged 18 to 65 years were divided into 5 groups of food lifestyles : Health Eaters, In-a-Dither, Traditional Eaters, Conscientious and People on the Go. As a substantial percentage of the subjects were used some kinds of nutrients supplement. The higher the age and family income were, the higher the percentage of health food usage was. There was the significant difference between sexes in usuage of health food. Health food usage was higher in the food lifestyle pattern of Health Eater than other food lifestyles.

        This study was undertaken to investigate meal pattern, nutrition knowledge and food preference of 438 rural middle school students living in ChunNam area. As far as nutrition knowledge is concerned, most subjects did not answer correctly on the items of basic five food groups, animal fat and vegetable oil, empty source of soft drink, nutrient requirement and water's role in energy metabolism. However they responded well on the item of iron deficiency and dietary source of Ca. Male students were significantly better in the answering the items of dietary source of energy and nutrient requirement than females, while female students were significantly better on the items of water's role in energy metabolism related to obesity. Generally the respondents did neither consume oil often nor consider consumption of salty food. Furthermore, only 38.6% of subjects drink milk daily in spite of understanding dietary source of Ca, which suggested that they should incorporate nutrition knowledge into dietary behavior. The preferred foods for most subjects were fruit, kimbab and ice cream. Contrastingly the food that they did not prefer was fermented vegetable probably due to strong flavor.

        양식산 업치의 표피 및 근육을 체색이 정상, 반백화 및 백화를 구분하여 지질함량 및 지방산 조성을 검토한 결과, 표피의 지방함량이 근육보다 높았으며, 표피와 근육의 주요지방산은 pamitic acid, oleic acid DHA 및 EPA이었다. 넙치의 표피에 있는 지방의 함량이 근육보다 높았으며, 표피와 근육에 있는 주요 지방산은 palmitic acid, oleic acid. docosahexaenoic acid, 와 eicosapentaenoic acid이었다. 넙치 표피에 들어 있는 지질 중에서, 특히 인지질에 함유된 palmitic acid, 는 정상(25.9%), 반백화(29.2%), 백화(31.0%)순으로 증가했으며, 반대로 EPA는 정상(2.9%), 반백화(2.4%), 백화(2.2%) 순으로 감소했으며, 역시 DHA도 정상(18.6%), 반백화(15.1%). 백화(14.0% )순으로 감소했다 백화 현상이 인지질 대사에 영향을 미치는 것으로 추정된다..

        양식산 넙치의 백화현상에 따른 아미노산의 비교는 넙치의 정상 표피에는 백화 표피보다 함황 아미노산 의 함량이 2배나 많게 나타났으며, 구체적으로 살펴보면 티로신은 24배, 메티오닌은 26배, 페닐알라닌은 1.6배나 많은 함량의 차이를 보이고 있었으며, 유리아미 노산으로는 포스포세린과 포스포-에탄올아민이 다소 많았다. 백화현상에서 부족된, 멜라닌 색소 형성의 중간대사 기질로써 페놀설 아미노산과 함황 아미노산의 함량의 차이에 의한 것이라고 생각되어진다.

        This paper describes to analyze the underwater ambient noise and biological noise of cultivating fishes in the fish farm cages at the seawater Tongyong-kun, KyongNam and lake of Chungju, Chech'on, ChungBuk from 10 to 19 Oct. 1997, in order to find out the characteristics of these noises. The results obtained were as follows; (1) The ambient noise around the fish farm cages at lake of Chungju was 10~200Hz frequency range, 70~105dB spectrum level. The central frequency was 50~70Hz, changing of ambient noise was getting bigger than 10~200Hz in 200Hz~2kKz frequency by wind, water current. (2) The frequency of noise source around the fish farm cage at the seawater of Tongyong-kun was 20~200Hz, spectrum level was 80~100dB while feed factory was working around the fish farm cage. When feed factory did not work, noise source was 10~600Hz frequency range, 70~90dB spectrum level. It was 10dB less than that of while feed factory was working, and then the central frequency was 70Hz. (3) The vessel noise of excursion ship had changed largely at 100dB spectrum level in 10~500Hz frequency band, and the fishing boat had 20Hz~2kHz frequency range. (4) The biological noise in the fish farm cage at lake of Chungju, which was feeding of Cyprinus carpio, 2was 10~30Hz frequency, 70~104dB spectrum level. The central frequency was 75Hz. The biological noises in the fish farm cage at the seawater of Tongyong-kun, which were feeding and swimming noise, had very different spectrum pattern by species, and the frequency band was 10~800Hz.
