        This study was carried out to analyse the microbiological contamination and biogenic amines(BA) content in Korea traditional soybean paste and commercial soybean paste. The results of microbiological anaylsis through Korean traditional soybean pastes(L1~L4) were 7.8 ± 0.1 log CFU/g ~ 7.9 ± 0.1 log CFU/g, commercial soybean pastes(H1~H6) were 6.2 ± 0.1 log CFU/g ~ 7.4 ± 0.1 log CFU/g for APC (Aerobic Plate Count), and L1~L4, H5, H6 soybean pastes were 2.3 ± 0.4 log CFU/g ~ 2.6 ± 0.1 log CFU/g for Bacillus cereus. But other microorganism was not dectected. Among biogenic amines, PUT(putrescine), TYR(tyramine), HIS(histamine), PHE(2-Phenylethylamine) were dectected high level and CAD(cadaverine), TRY(tryptamine), AGM(agmatine) were dectected medium level and SPD(spermidine), SPM(spermine), NOR(noradrenaline), SER(serotonin) were dectected low level. Dectected contents of biogenic amines were higher in commercial soybean paste compared to the traditional soybean paste.

        본 연구에서는 대표적인 즉석섭취식품 5종(김밥, 초밥, 회, 샐러드, 샌드위치)에 대한 미생물 모니터링 검사를 실시하여, 이들 제품에 대한 위생 안전성 확보를 위한 기초자료를 제공하기 위해 진행되었다. 이를 위해 전국의 대형 백화점, 할인점, 슈퍼 등지에서 판매되는 즉석섭취식품 5종, 총 440품목을 수거하여 위생지표세균 검사 및 식중독균 검사를 실시하였다. 제품별로는 초밥이 20.4%로 가장 높은 미생물 검출율을 보였으며, 그 다음으로 13.3%의 김밥, 12.5%의 회, 6.9%의 샐러드, 2.8%의 샌드위치의 순서로 나타났다. 검출된 미생물을 살펴 보면 황색포도상구균이 6.6%로 가장 많이 검출되었으며, 다음은 2.7%의 대장균군, 2.3%의 리스테리아균, 0.7%의 바실러스 세레우스균, 0.5%의 대장균 순서로 검출되었으며, 장염비브리오균과 살모넬라균은 검출되지 않았다. 검출된 황색포도상구균의 정량분석 결과는 전체적으로 200~5,500 cfu/g 의 분포를 보였으며, 평균적으로는 600 cfu/g을 나타내었다.

        We investigated the intake trends of street foods for middle school, high school and colleges students through the survey study. In addition, the factors affecting the students' consumption of street foods and their perception toward hygiene status of street vendor were studied. The levels of total aerobic bacteria, coliform groups and enterobacteriaceae in Kimbab, eomuk, and eomuk-kukmul were counted using 3M petrifilms. More than ninety seven % of the respondents had experienced street foods. All the respondents ate street foods 1 to 5 times a month. Forty percent of the respondent stated that 'good taste' and 'time-saving convenience' were their reason for eating the street foods. Their favorite foods were ddokbokgi and various fried foods. All the students responded that frying oil, drinking water, and soy sauce as well as the street vendors' attire and their cooking tools in street vendor were unsanitary. Forty percent of the respondents ranked frying oil as the most unsanitary substance. Eighty percent of the respondents responded that an enforcement of hygiene should be imposed on the street foods vendor. There were significant differences (p〈0.001) among the student's age in the opinion related to the reasons of eating street foods, hygiene enforcement, existence of street foods and interest of hygiene status of street foods. High correlation (p〈0.05) between the frequency of street foods and snack intakes was shown, regardless of student's age. The result shows that those who eat snacks more than once a day tend to eat street foods more frequently. Aerobic plate counts in Kimbab in 5 different vendors exceeded 105/g and contamination levels of enterobacteriaceae or coliform in Kimbab exceeded more than 103/g, which did not satisfy the microbiological standards. In conclusion, although the respondents thought that the sanitation of street foods was poor, most of them want the street food vendor to be maintained with better hygiene condition. This indicated that the regulation for safe street foods should be enforced and educational information about the preparation and serving for safe street foods should be provided to street food vendor.

        Korea market of food service industry has been increased greatly since early 90's with the emergence of professional catering business and the expansion of school food service. Because of the characteristics of food service establishment, feeding many people at a time, there is always a high potential of foodborne outbreak which requires special sanitary management to prevent. Currently, many catering businesses are interested in HACCP(Hazard Analysis Critical Control Points), a new sanitary management system, and are trying to develop HACCP Plans for their food service establishment. Microbiological hazard analysis, a most important step for developing HACCP Plan, provides also basic information for evaluating sanitary aspect of prepared foods and their materials. There are not extensive data of microbiological hazard analysis for food service operations, especially for prepared foods and raw materials, which are helpful for developing a HACCP Plan. The extensive microbiological hazard analyses for 65 prepared foods and 51 raw materials selected from a couple of food service establishment were performed in this research. These results will provide useful information to determine hazards for developing a HACCP plan, and also to understand sanitary status for prepared foods and raw materials in food service establishment.
