        This study aimed to analyze socioeconomic effect of eco-friendly free school food supply system by Seoul, which has been consistently extended since 2011. To do so, effect of eco-friendly free school food supply system on the beneficiaries, Seoul citizens, was analyzed by using ‘labor & income panel’, while that on rural society was analyzed by using the surveys on the eco-friendly agricultural product supply performance by the ‘Eco-friendly Agricultural Products Retail Center’ as well as for students, school parents, nutrition teachers and nutritionists. The results of analysis showed that eco-friendly school food supply system contributes to income redistribution among the Seoul citizens to a certain extent, provides the eco-friendly agricultural product producers in the rural society with the stable market, and positively influences them to secure stable incomes. In addition, eco-friendly free school food reduced the amount of carbon emissions through the use of environmentally friendly agricultural products resulting in environmental improvements and economic benefits. Considering such effects, free school food supply using the eco-friendly agricultural products needs to be consistently maintained in the future without politic change by political ideology and to be extended to middle school level in medium and short-term.

        본 연구에서는 음식물류폐기물 종량제 방식 중에 하나인 RFID(Radio frequency identification, 이하 RFID)기반 음식물류폐기물 관리시스템 중 개별계량방식을 사용하고 있는 공동주택의 음식물류폐기물 배출량을 조사하여 원단위를 파악하고자 본 시스템을 사용하고 있는 2년 이상 된 아파트 3곳을 조사하여 원단위를 분석하엿다. 그 결과, 아파트 2년간 1인당 1일 평균 원단위 발생량은 2016년에서 0.140kg/인/일, 2017년에 0.134kg/인/일로 산출되었으며, 2년 평균은 0.137kg/인/일로 나타났다. 계절별로는 봄<겨울<가을<여름의 순을 보였으며, 1년차보다 2년 차에 더 적은 원단위를 나타내었다. 가구원수가 적을수록 원단위가 높아지는 경향을 나타내었으며, 공급면적이 작을수록 높은 원단위를 보였다. 지금까지 생활수준이 높으면 발생량이 높다는 것과는 반대의 결과이며, 역으로 전술한 것과 같이 1인가구 등에서 발생량이 증가하는 경향과 같다. 본 결과 값들은 RFID 시스템에 기록된 2년간의 실질 데이터를 조사 및 분석한 신뢰성이 높은 데이터로서 향후 음식물류폐기물 정책 수립 시 유용한 기초자료로서 활용되기를 기대한다.

        Purpose – This research examines the short-run and long-run effect of external shocks (oil price and exchange rate) on domestic food price in Indonesia. Research design, data, and methodology – Three variables are used in this research. The variables are food price index, Rupiah’s exchange rate of Indonesia, and crude oil price from 1998 until 2015 using Vector Error Correction Model (VECM). Results - The increasing of oil price and the depreciation of Rupiah’s rate push the domestic food price in long-run, but do not impact significantly in short- term . The response of food price to oil prices shock and exchange rate shock are positive and persistent throughout the entire sample period. The exchange rate and oil price shocks have a small proportion explaining for the fluctuations of food price index but increasing over time. Conclusions - The policymaker should concern on solving the problem of oil price increase and depreciation of exchange rate on Indonesia’s food price as they are important factors that can affect the price stability. The government should not rely on food imports because the price is strongly influenced by the movements in the exchange rate.

        본 연구는 국민 영양평가 및 정책 수립에 근간이 되는 국가표준식품성분표 개정을 위해 농촌진흥청과 국립축산 과학원이 공동으로 국산 돈육의 대표 시료를 선정하고 부위별로 신뢰성이 확보된 vitamin B12 함량 데이터 구축을 위해 분석법 검증과 분석품질관리를 수행한 연구이다. Immunoaffinity-HPLC 분석법을 특이성, 직선성, 검출한계 및 정량한계, 정확성, 정밀성 등의 분석수행특성 지표를 이용하여 평가한 결과 모든 항목에서 AOAC 가이드라인 수용기준에 충족되는 것을 확인하였다. 또한 모든 시료 분석 시 in-house QC sample을 분석한 결과 QC chart의 관리한 계선 안에 포함이 되어 본 연구 기간 동안 수행된 모든 시료 분석이 관리하에 정확성과 정밀성을 나타내는 분석값 임을 확인할 수 있었다. 총 7개 primal cut과 이들로부터 세분화된 22개 retail cut의 vitamin B12 함량 분석 결과 주요 부위(평균 0.42-0.69 μg/100 g) 뿐만 아니라 같은 부위 안에 서도 세부 부위에 따라 vitamin B12 함량에서 차이가 나타났다. 특히, 삼겹살과 목심 부위에서 vitamin B12 함량이 높게 나타났으며 세부 부위에서는 삼겹살 부위의 토시살이 0.98 μg/100 g로 최고값을 보였고, 등심 부위의 알등심살과 뒷다리 부위의 홍두깨살이 0.33 μg/100 g으로 가장 낮은 수준을 나타냈다. Vitamin B12 함량은 돈육의 부위별 단백질 함량과는 유의적인 차이를 보였으나 지방 및 수분 함량과는 유의 적인 차이를 보이지 않았다. 본 연구에서 생산된 국내산 돈육의 부위별 vitamin B12 함량 데이터는 분석법 검증과 분석품질관리를 통하여 신뢰성이 확보된 데이터로 국가표 준식품성분표 개정에 활용될 수 있을 것으로 기대된다.

        This study examines the behaviour of staple food price using Multivariate BEKK-GARCH Model. Understanding of staple food price behaviour is important for determining the unpredictability of staple food market and also for policy making. In this paper, we focus on the commodity prices of sugar, rice, soybean and wheat to examine the volatility behaviour of those commodities. The empirical results show that the own-volatility spillover are relatively significant for all food prices. The own-volatility spillover effect for sugar price is relatively large compared with the volatility spillover of other staple food commodities. The findings also highlight that the price volatility of wheat increases during food crisis more than it does when the condition is stable. Also, the own-volatility of rice and wheat in the period of the food crisis is significant and higher compared to the period before food crisis indicates that the past own-volatility effects during food crisis are relatively more difficult to predict because of the uncertainty and high price volatility. Policy recommendations that can be proposed based on the findings are: (1) a better trade agreement in food commodity trade, (2) Indonesia should not depend on wheat importation, and (3) early warning system to minimize food price volatility risks.

        With the increase in food consumption, the amount of animal and plant residues in food manufacturing has continued to increase. In particular, the residues generated from food manufacturing industries have a high recycling value because they are generated in large quantities, are homogeneous, and their recycling costs are less than that of households or small restaurants. In this study, we selected industries that produce large amounts of homogeneous animal and plant residues, including manufacturers of animal oils and fats, vegetable oils and fats, starches and glucose or maltose, and conducted material flow analysis using statistical data, field surveys, and questionnaires. In the results of material flow analysis, the amount of raw materials used in the surveyed industries was 3,029,830 tons per year, and 8,487 tons of animal and plant residues were generated through manufacturing and processing. In addition, the import substitution effect of recycling byproducts from industries into animal feed or similar was estimated to be ₩847,007 million KRW per year.

        Climate changes from global warming and reduction in agricultural land result in volatility of prices of agricultural products, causing a imbalance of food market in Korea. It is necessary to develop a transnational food industry cooperation system among Korea, China and Russia that directly or indirectly affect food industry in terms of the whole industrial network. This study analyzes the value chain and linkage in the agriculture, forestry and fisheries industries in three nations. The unit structure and the industrial patterns of three nations were derived using the World Input-output Table (WIOT) from 2004 to 2014 every five years. This paper is expected to contribute to develop food security cooperation in the northern part of the Korean peninsula and to promote the mutual growth of food industry through industry linkage and cooperation.

        오늘날 시장이 세분화되고 소비자의 욕구가 다양해진 현실에서 단순히 품질과 가격, 기능 등의 경쟁력만으로는 더 이상 비 교우위를 점할 수 없다. 소비자의 구매 욕구를 유발시키기 위해 기존의 농식품과 구별되며 독창적이고 특별한 포장디자인 의 차별화 요소가 절대적으로 필요하다. 본 연구는 삶의 여유와 인간 본연의 가치가 확대되면서 친환경과 기능성 소재 등을 활용한 응용제품 산업화에 대한 사회적 관심 고조와 더불어 신선농식품 포장 기능성 강화를 위한 닥섬유 친환경 포장디자인 개발에 따른 포장디자인에 관련한 선 행연구로서, 농식품 포장디자인 제작에 있어 영향을 주는 요소를 추출하여 요인을 분석하고 실제 적용하여 활용할 수 있는 자료를 제시하고자 한다. 먼저 자료조사를 통해 농식품 포장디자인에 관련한 국내·외 문헌과 학술전문지를 조사하고, 군집분석(Cluster analysis)을 통해 포장디자인 관련 항목을 추출하였다. 통계분석은 SPSS를 활용하였으며, 전문가들의 직관을 동원하여 중요한 요소에 대한 의견을 수렴코자 델파이기법을 이용하여 세 차례의 라운드 조사를 통해 실증연구를 실시하였다. 전문가 집단을 대상으로 추출된 포장디자인의 주요한 요소들로 49개의 항목이 도출되었으며, 이를 근간으로 중요도에 따른 클러스터링을 통해 대표적 요인으로 신뢰성, 심미성, 경제성, 환경성, 기능성이 선정되었다. 또한10가지 디자인 요소의 중 요도를 산출하였다. 이러한 요소는 농식품 포장디자인 제작 시 우선적으로 고려되어야 할 것이며, 이 연구결과를 토대로 후속 연구로 본 연구에서 추출된 디자인요소와 그 밖의 감성요소와의 관계성을 알아보고, 실제 포장디자인 적용 시 가이 드라인이 되는 포장디자인 제작 시스템구축을 하고자 한다.

        The disposal of food waste has raised environmental concerns. The use of food waste disposers can be a convenient measure to manage household organic wastes. This device can be introduced to resolve the inconvenience of separating food wastes and implement the policy for converting food wastes into resources. However, the use of disposer has been prohibited in Korea unless the total solid recovery rate is greater than 80% (by dry wt.). Therefore, it is important to separate solid portions from disposer wastewater as much as possible to meet the standard. The objective of this study is to examine the control factors such as sieve size of screen, coagulation, RPM of centrifuge on solid-liquid separation. The result revealed that the use of sieve less than or equal to 0.3 mm could meet the total solid recovery rate of 80% (by dry wt.). Also, the coagulation filtrate recirculation using a coagulant, PAC, improved the solid recovery rate of 11.0% (by dry wt.) in using the sieve of 0.6 mm. This led to the total solid recovery rate of 79.3% (by dry wt.). Although RPM variation of centrifuge hardly influences the total solid recovery rate, when the separated solid residue is processed to compost or feedstock it is good because of low moisture content.

        In this study, we examine the relationship between climate change and food productivity using empirical econometric methods. The existing literature shows that natural hazard caused by climate change has a negative impact on food productivity since the natural disaster devastates farmers and food supply. The conventional study however considered only the correlation between food productivity change and climate condition such as optimum air temperature rather than the association between food productivity and climate change. Agricultural area, crop per unit area and crop productivity are known as the most important factors in food productivity. Thus, we explore the relationship between the three factors and climate change. We analyze the carbon dioxide concentration level in the atmosphere as a proxy for the climate change since the level of carbon dioxide in the atmosphere affects global temperature. We found that agricultural area, crop per unit area and crop productivity are negatively associated with climate change.

        Food waste, a putrescible form of waste, comprised of 30% of the total municipal solid waste stream in Daejeon Metropolitan City (DMC) in 2012. Proper management of food waste is a challenging task for local government. This study was conducted to determine material flows when treated food waste in various recycling facilities. Material flows in the recycling processes were collected by site surveys, field trips and discussion with operators and governmental employees. Material flow analysis (MFA) was conducted to quantify the flow of food waste from generation to disposal for the year 2012. MFA along with its mass transfer coefficients were determined based on the inputs, outputs and waste fluxes. According to the mass transfer coefficient results, treatment efficiency for the dry and wet feed manufacturing facility was found to be higher than other treatment facilities. Water consumption was higher for the composting site, resulting in large volume of wastewater (mass transfer coefficient 1.539). While large amounts of screening materials such as plastic, chopsticks, aluminum foils, and bottle caps were generated at the composting site, mass transfer coefficients (0.312) at the dry and wet feed facility were relatively high, implying effective treatment of food waste occurring. The results of this study help to facilitate waste management policy decision-makers in developing effective food waste management techniques in DMC.

        Even though consumers’ concern about food-safety certified or environment-friendly chicken meat becomes one of the main issues of food consumption in Korea, university students’ interest about food-safety certified or environment-friendly chicken meat was not often discussed. We realized that the cafeteria of university is one of the largest consumption points for the chicken meat of university students, and tried to analyze university students’ consumption of food-safety certified or environment-friendly chicken meat at the cafeterias of university. The object of this paper is to conduct survey analysis about the students' behavior for consumption of food-safety certified or environment-friendly chicken meat at the cafeterias of university and to measure WTP(Willingness-to-pay) for the food cooked with foodsafety certified or environment-friendly chicken meat. The results present that most of students show higher preference of environment-friendly chicken meat than food-safety certified chicken meat, and that they can pay 1,329.9 Korean won for food cooked with environment-friendly chicken meat.

        The Purpose of this paper is to analysis on consumer’s purchasing behavior and intention of local food. To analysis consumer’s purchasing behavior, a series of homemaker surveys were conducted. The sample size of the survey is 416 respectively. As a survey result, consumer’s purchasing behavior shows that purchasing ratio of local food and buying place is various type. By decision tree model analysis showed that consumer’s purchasing intention is enough to establishing local food system in region. Therefore, strategies for regional consumption are needed expression of the place city and county of origin, diversification of purchasing item and buying area, and sustainable improvement for safety and trust on local food.

        Recent climate change has led to fluctuations in agricultural production, and as a result national food supply has become an important strategic factor in economic policy. As such, in this study, panel data was collected to analyze the effects of seven meteorological elements and using the Lagrange multipliers method, the fixed-effects model for the production of five types of food crop and the seven meteorological elements were analyzed. Results showed that the key factors effecting increases in production of rice grains were average temperature, average relative humidity and average ground surface temperature, while wheat and barley were found to have positive correlations with average temperature and average humidity. The implications of this study are as follow. First, it was confirmed that the meteorological elements have profound effects on the production of food crops. Second, when compared to existing studies, the study was not limited to one food crop but encompassed all five types, and went beyond other studies that were limited to temperature and rainfall to include various meterological elements.

        This study was conducted to investigate the physicochemical characteristic of Carthamus tinctorius L. seed and to assess its total phenol content, total flavonoids content and antimicrobial activity. The moisture, crude protein, crude fat, crude ash and carbohydrates of the Carthamus tinctorius L. seed were 5.58, 37.16, 13.69, 3.52, and 40.05%, respectively. Total amino acid in Carthamus tinctorius L. seed was 391.99 mg%. The major free sugar of Carthamus tinctorius L. seed were fructose(3.29%) and sucrose(1.74%). Linoleic acid(79.46%) was a major fatty acids in the crude fat of Carthamus tinctorius L. seed. The K and Ca contents were the highest in Carthamus tinctorius L. seed. Total phenol and total flavonoids contents of the ethanolic extract were 55.52 ± 0.99 mg GAE/g and 78.69 ± 0.91 mg QE/g, respectively. The extract from Carthamus tinctorius L. seed showed growth inhibitory effect on Staphylococcus aureus, Salmonella typhimurium, Escheria coli, Candida albicans, Bacillus cereus, Listeria monocytogenes, Vibrio parahaemolyticus, and Clustridium perfringens. These results indicate that the Carthamus tinctorius L. seed extract can inhibit food pathogen associated with total phenol and total flavonoids contents.

        The spatial variability in the food chain structure of an estuary environment (Nanakita estuary, Japan) was investigated using fatty acid. Potential organic matter sources (terrestiral plants, macroalgae, benthic microalgae, dinflagellates and bacteria), sedimentary organic matters and benthic invertebrates (Nuttallia olivacea and Nereidae) were sampled in four locations with different tidal flat type. The main objective of the present study was to determine the origin of sediment and the food sources of N. olivacea and Nereidae along with small-scale spatial variability. The origin of sedimentary organic matters were mainly the fatty acid of bacteria and benthic microalgae. Especially, The organic matter of terrestrial plant origin was found the highest in station C. The diets of N. olivacea and Nereidae were found to be dominated by diatoms and terrestrial plants. Whereas, macroalgae and dinoflagellates showed little influence to benthic invertebrates. Moreover, according to principal component analysis, it is showed that benthic invertebrates in the same region are using the same food without relation with species. On the other hand, the N. olivacea and Nereidae of station D clearly contrasts with station B in terms of main food sources. From these results, it is suggested that food competition of benthic invertebrates revealed high a connection between small-scale spatial variability and food source in estuary.

        본 연구에서는 양식어종으로 매우 부가가치가 높은 철갑상어의 영양성분 분석과 중간수분식품 개발을 위해 건조시 온도와 당 및 염 침지 조건에 따른 품질특성을 조사하였다. 철갑상어의 일반성분은 수분 73.2%, 단백질 19.9%, 지방 5.7%, 회분 1.1% 및 가용성 무질소물 0.1%였으며, 주요 무기성분으로는 K, P 및 Mg 으로 그 함량은 각각 317.70 mg/100 g, 259.88 mg/100 g 및 29.78 mg/100 g 순이었다.
