        This study analyzed food poisoning articles in the Joseonwangjosillok to acquire historical evidence. The study method used case studies from the textual content of the Joseonwangjosillok. In all, there were fifteen cases of food poisoning in spring (60%), four cases in summer (16%), five cases in fall (20%), and 1 case during winter (4%). Most cases of food poisoning occurred during spring, followed by fall, then summer, and the least during winter. Foods that caused poisoning were as follows: twelve cases of seafood (48%), three cases of vegetables (12%), two cases of meat (8%), and eight cases of poisonous food (32%). Maximum cases pertained to seafood poisoning, which also spiked during spring. This could be attributed to the increased number of planktons as the sea temperature rose during spring. Due to the increased plankton, shellfish absorbed more toxins. The consumption of increasingly toxic shellfish resulted in more cases of food poisoning. The food poisoning frequency was the most severe during the 18th century, followed sequentially by the 15th, 16th, and 17th centuries, and was the least severe during the 19th century. Joseonwangjosillok showed that food poisoning cases happened most during social events where many guests or family members gathered to eat.

        식중독 세균에 의한 biofilm 형성을 억제하는 효과를 시 험하기 위하여 cinnamon, clove 및 lemongrass 정유의 휘 발성 성분을 분석하였다. 또한 정유의 주요 항균활성 성 분이 polyethylene과 stainless steel 표면에서 식중독 세균 에 의한 biofilm 형성을 억제하는 효과에 대하여 조사하였 다. Cinnamon 정유의 주요 휘발성 성분은 cinnamaldehyde (38.30%), linalool (9.61%), β–caryophyllene (8.90%) 및 1,3,4-eugenol (8.19%)로 동정되었다. Clove 정유의 주요 휘발성 성분은 1,3,4-eugenol (61.84%)로 분석되었다. Lemongrass의 주요 휘발성 성분은 citral의 이성질체인 geranial (19.11%)과 neral (19.23%)로 검출되었으며, citral 은 isomeric acyclic monoterpene aldehydes로서 geranial (trans-citral, 19.11%)과 neral (cis-citral, 19.23%)의 혼합물 로 분석되었다. Cinnamon, clove 및 lemongrass의 주요 성 분 중 cinnamaldehyde, linalool, eugenol 및 citral이 disc diffusion assay에 의해 시험한 6종의 식중독 세균에 대하 여 강한 항균활성을 나타냈다. Eugenol (0.1%)과 citral은 polyethylene 및 stainless steel coupon 표면에서 식중독 세 균에 의해 형성된 biofilm에 대하여 강한 억제 작용을 나 타났다. Cinnamaldehyde (0.1%)는 Listeria monocytogenes ATCC 19112와 Staphylococcus aureus KCCM 11812에 의 해 형성된 biofilm에 대해 장한 억제 작용을 나타냈다. 연 구 결과 cinnamaldehyde, eugenol 및 citral 처리에 의해 식 중독 세균에 의한 biofilm 형성을 억제가 가능할 것으로 판단된다.

        항균활성이 뛰어난 식물 정유를 이용하여 식품가공 기구 및 용기에 다양하게 사용되는 polyethylene과 stainless steel 표면에 형성된 식중독 6종의 biofilm 형성에 대한 억제 효과를 연구하였다. 식물 정유 20종의 식중독 미생물에 대한 항균활성을 disk diffusion 방법으로 평가한 결과 cinnamon > clove > lemongrass > peppermint > pine needle 순으로 항균활성을 나타냈다. Cinnamon과 clove 정유의 최소억제농도(MIC)와 최소살균농도(MBC)는 각각 0.63-1.25 mg/mL과 1.25-2. mg/mL의 범위를 나타냈으며, lemongrass 정유의 MIC와 MBC는 각각 1.25-2.50 mg/mL 과 2.50-5.00 mg/mL로 약간 낮은 항균활성을 나타냈다. 정유 3종의 biofilm 형성 예방효과는 식중독 미생물과 polyethylene 및 stainless steel에 따라 다소 차이가 있었지만, 0.5% 농도의 cinnamon, clove와 lemongrass 정유를 식품접촉 표면에 미리 코팅하였을 때 biofilm 형성에 영향을 주는 것을 확인하였다. 정유의 농도가 증가할수록 모든 식중독 미생물에 대해서 biofilm 형성을 유의적으로 억제하였으며(P<0.05), 0.5% cinnamon과 clove 정유 처리에 의해 L. monocytogenes ATCC 19112와 S. aureus KCCM 11812의 biofilm이 형성되지 않았다. Polyethylene과 stainless steel coupon 표면에 형성된 식중독 미생물의 biofilm의 제거 효과를 측정한 결과, 식중독 미생물의 종류에 따라 차이가 있었지만 정유의 농도가 증가할수록 biofilm 제거 효과는 높아졌으며, 대체로 clove 정유의 biofilm 제거율이 높은 것으로 나타났다. 본 연구를 통하여 0.5%의 cinnamon과 clove 정유는 polyethylene과 stainless steel 표면에 식중독 미생물이 형성하는 biofilm을 예방, 성장 억제 및 제거할 수 있는 천연 소재로 적용이 가능한 것으로 나타났다.

        This study investigated the antibacterial activity against Staphylococcus (S.) aureus, Salmonella (S.) typhimurium and Escherichia (E.) coli O157:H7, and skin irritation in New Zealand white rabbits using methanol extracts of Curcuma (C.) aromatica Salisb. The minimum inhibitory concentration (MIC) of C. aromatica extracts against S. aureus, S. typhimurium and E. coli O157:H7 was 0.250, 0.250 and 0.125 mg/ml, respectively, and the minimum bactericidal concentration (MBC) of the extracts against S. aureus, S. typhimurium and E. coli O157:H7 was 0.50, 0.50, 0.250 mg/ml, correspondingly. From the skin irritation test, extremely minor erythema and very slight edema were formed at 24 h after application of the extracts on the skin on abraded lesions of 2 and 1 rabbits, respectively. The primary irritation index score was estimated to be 0.13 indicating non-irritation. In conclusion, this study suggests that C. aromatica extract has the antibacterial activity against major food-borne pathogens and is not irritant to skin.

        S. aureus, E. coli, C. albicans, A. niger 등 4종의 식중독균에 대해 agar diffusion법을 이용하여 홍삼(Panax ginseng C.A.Meyer)으로부터 조제한 홍삼농축액, 조사포닌, 비수용성 분획에 대한 항균활성을 조사하였다. 그 결과, 홍삼농축액 및 비수용성분획은 E. coli, C. albicans, A. niger에 대해서는 항균활성을 나타내지 않았고 조사포닌도 고농도인 30%를 제외한 모든 농도에서 항균활성을 나타내지 않았다. S. aureus는 Gram positive 세균으로서 화농성 식중독의 원인균이면서 동시에 아토피성 피부염의 원인균으로 알려져 있는데, 홍삼농축액은 30% 농도에서 이 균에 대해 항균활성을 나타내었고 조사포닌도 7.5%에서 항균활성을 나타내었다. 홍삼으로부터 조제한 비수용성 분 획도 10~200 mg/mL 농도로 실험한 결과 모든 분획에서 항균효과를 나타내었다. 조사포닌 및 홍삼농축액의 미생물 생육저해양상을 조사하기 위해 미리 S. aureus를 접종 한 0.85% 생리식염수에 농축액 및 조사포닌을 농도별로 첨가하고 35oC, 12시간 배양한 후 생균수를 측정한 결과, 홍삼농축액은 10% 이상의 농도에서, 조사포닌은 2% 이상의 농도에서 각각 균의 생육을 억제하였다. 그러나 이러한 농도에서도 생균수는 완전히 사멸되지 않아서 홍삼농 축액 및 조사포닌의 S. aureus에 대한 생육억제작용은 살균작용이 아닌 정균 작용으로 추정되었다. 사포닌의 항균 활성 유무를 확인하기 위해 순수 분리된 ginsenoside 6종 (PT saponin, PD saponin, ginsenoside-Rb2,-Rc,-Rd,-Rf,- Rg2)의 항균활성을 50~200 μg/mL의 농도에서 조사한 결 과 모두 항균효과가 관찰되지 않아서 ginsenoside는 S. aureus에 대해서는 항균효과가 없는 것으로 사료된다. 한편 사포닌을 제외한 비사포닌 성분인 비수용성분획에 대해 상기의 4종 병원성미생물을 대상으로 항균활성을 조사한 결과 E. coli, C. albicans, A. niger에 대해서는 항균효과가 관찰되지 않았고 S. aureus에 대해서만 선택적인 항균활성을 나타내었다. 항균활성 발현 비수용성분획 중 15% methanol분획(MF-1)이 가장 높은 항균활성을 나타내어 이에 대한 최소생육저해농도를 조사한 결과 0.625 mg/mL 이었다. MF-1 분획을 질량분석기(HPLC-MS)로 조사한 결과 주요한 활성성분은 분자량 179.55 및 187.55를 가지는 물질로 추정되었다.

        식품의약품안전처는 효율적인 식중독 예방 교육·홍보를 위하여 모바일 증강현실 게임인 ‘식중독잡GO’를 개발 하고 식품안전의 날 등 11개 행사에서 시범운영을 하였다. 행사장에서 ‘식중독잡GO’를 체험한 사람을 대상으로 식중독에 대한 인지정도를 설문조사를 통해 살펴보았다. 설문조사 결과 ‘식중독잡GO’ 게임 전후대비 식중독예방 3대 요령 인지도는 게임 전 51.8%에서 게임 후 78.8%로 향상되었고, 개별 식중독균 인지도는 평균 2.1배 향상되었 다. 설문조사자의 95%가 식중독 이해에 도움이 되었다고 응답하였으며, 90%가 게임이 재미있었다고 응답하였다. 따라서, ‘식중독잡GO’를 유·초·중·고등 교육에 적용을 하면 식중독균의 주요증상, 원인식품 등 식중독 예방 요령의 다양한 교육적 효과를 기대할 수 있을 것으로 사료된다.

        본 연구에서 추출 용매의 선택은 작두콩과 대두, 서리태의 추출 수율과 실험의 용이성 등을 고려하여 메탄올을 사용하여 실험을 진행하였다. 작두콩의 항균활성을 알아보기 위해 용매별, 콩 종류별 항균활성과 최소저해농도에 따른 항균활성 및 작두콩 추출물의 항균활성 효과가 가장 높은 V. parahemolyticus에 대한 증식억제효과를 실험한 결과는 다음과 같다. 용매별 항균활성에서 클로르포름, 핵산, 에틸 아세테이트 및 물 추출물은 항균활성을 확인할 수가 없었으나, 에탄올 추출물에서는 V. parahemolyticus 10 mm, S. sonnei 9 mm, 메탄올 추출물에서는 V. parahemolyticus 22 mm, S. sonnei 21 mm, L. monocytogenes 20 mm 순으로 항균활성을 확인하였다. 콩 종류별 항균활성을 알아보기 위해 V. parahemolyticus, S. aureus, S. sonnei, S. Enteritidis 등의 식중독 원인균에 시험결과, 서리태와 대두에서는 항균활성이 없는 반면, 작두콩에서는 항균효과가 있는 것으로 나타났다. 작두콩의 메탄올 추출물에 의한 최소저 해농도는 12종의 식중독 원인균에 대해 200 mg/mL에서는 대부분 항균활성이 나타났고, 50 mg/mL에서는 V. parahemolyticus, S. sonnei, S. Typhimurium만 항균활성이 있는 것으로 확인되었다. 작두콩 메탄올 추출물의 V. parahemolyticus 균에 대한 증식억제 효과는 작두콩 메탄올 추출물 0%의 경우 30시간 배양기간 동안 약 7.5 log CFU/mL로 증가하였다. 0.5%인 경우, 접종 후 1-2시간에는 2 log CFU/mL 정도 증가하다가 6시간 이후에는 더 이상 세균수가 감소하지 않고 30시간까지 접종하는 시점보다 약 0.5 log CFU/ mL를 유지하였다. 1%인 경우, 접종 후 1-2시간까지는 0.5- 1.0 log CFU/mL 정도 증가하다가 접종 5-6시간 이후부터 지속으로 감소하기 시작해서 배양 후 30시간에는 접종하는 시점보다 약 5.5 log CFU/mL로 감소하였다. 1.5%인 경우, 접종 후부터 지속적으로 감소하기 시작해서 30시간에 는 V. parahemolyticus균의 생육이 완전히 억제되었다. 2.0% 인 경우에는 접종 후부터 급속히 감소하여 약 9시간이 경 과했을 때는 V. parahemolyticus균의 생육이 완전히 억제 되었다. 따라서 작두콩에서 추출된 항균활성물질이 V. parahemolyticus, S. sonnei, S. Typhimurium 등 다양한 식중독균의 생육억제에 효과가 있는 것으로 사료된다.

        The average prevalence rate (PR) for foodborne disease outbreaks (FBDOs) in the first half (F-H) and latter half (L-H) of the decade from 2001 to 2010 in Korea was 14.0 and 16.9 per 100,000 population, respectively. The number of patients per outbreak of foodborne diseases (FBDs) in the F-H of that decade was 57.6 and in the L-H was 25.4 (p < 0.05). A comparison of the 2 periods covered in this study indicates that FBDOs in the L-H most frequently involved restaurants or delis (51.5% of total cases), and in the F-H, this involvement was noted in 34.0% of total cases (p < 0.01). The epidemic patterns of microbial FBDOs show that the overall incidence of outbreaks resulting from 5 of 8 key pathogens including Bacillus cereus (+1.6%), Campylobacter jejuni (+1.5%), Clostridium spp. (+0.7%), pathogenic Escherichia coli (+8.3%), and Norovirus (+14.4%) tended to be higher in the L-H than in the F-H of the decade from 2001 to 2010. Conversely, those caused by the other 3 key agents, including Salmonella spp. ( 9.2%), Staphylococcus aureus ( 2.8%), and Vibrio parahaemolyticus ( 6.4%) were significantly lower in the L-H than in the F-H of the decade. Moreover, in the decade between 2001 and 2010, the number of patients (n) and the PR for microbial FBD increased from the F-H (n = 13,346, PR: 5.6) to the L-H (n = 33,732, PR: 13.8) (p < 0.01).

        Antimicrobial resistance and multi-drug resistance patterns have been carried out on total of 210 isolated of Salmonella spp. and pathogenic E. coli isolated from food poisoning patients on January through December 2012 in Incheon, Korea. The highest percentage of antibiotics resistance was found to the following antimicrobial agents: tetracycline 43.8%, ampicillin 34.8%, nalidixic acid 23.8%, sulfamethoxazole/trimethoprim and chloramphenicol 12.4%, and ampicillin/sulbactam 11.4%. The highest percentage of resistance was 37.5% to ampicillin for Salmonella spp. and 59.0% to tetracycline for pathogenic E. coli. Overall the multidrug resistance rates of 1 drug was 26.2%, 2 drugs 9.0%, 3 drugs 9.5%, 4 drugs 7.1%, and 5 or more drugs 12.46%. The multi-drug (MDR) strains to four or more antimicrobial agents among the resistant organisms were quite high: 15.9% and 22.1% for Salmonella spp. and pathogenic E. coli, respectively. The study implies that limitation of unnecessary medication use is pertinent in order to maintaining the efficacy of drugs.

        시민 건강을 위협하는 질병 및 식중독 오염의 감염 매개체가 되는 손에 대한 위생실태를 점검하고자 유아원, 초등, 중등, 고등학생 및 일반인 등을 대상으로 오염의 지표인 일반세균 및 대장균군과 식중독 원인균인 세균성이질, 살모넬라, 황색포도상구균, 장병원성대장균, V. parahemolyticus, Y. enterocolitica, B. cereus, C. perfringens, L. monocytogenes, C. jejuni에 대해 조사하여 다음과 같은 결과를 얻었다. 1. 일반세균과 대장균군 등의 위생세균에서 대장균군은 유치원생 2명, 초등학생 6명, 성인에서 2명이 검출되었으며, 일반세균은 유치원생의 경우 평균 3.3 log CFU/hand, 초등학생은 3.4 log CFU/hand, 중학생은 3.2 log CFU/hand, 고등학생은 3.4 log CFU/hand, 성인은 3.3 log CFU/hand로 나타났다. 2. 식중독 원인균으로 총 62주(12.4%)가 분리되었는데 그 중에서 황색포도상구균 47주(75.8%), B. cereus 8주(12.9%), C. perfringens 7주(11.3%)로 나타났다. 3. 독소 발현 확인시험은 황색포도상구균의 경우 47주 중 25주(53.2%)에서 독소를 확인하였는데 A형이 22주(88.0%), A와 B형 복합주가 2주(8.0%), A와 C형 복합주가 1주(4.0%)로 나타났으며, B. cereus는 8주 중 7주(87.5%)에서 독소 생산주를 확인하였으나, C. perfringens는 7주 모두 독소를 생산하지 않은 것으로 나타났다. 4. 항생제감수성 시험에서 분리된 황색포도상구균 47주는 ciprofloxacin, clindamycin, imipenem, rimethoprim/sulfamethoxazole, rifampin, vancomycin에 대해서는 100% 감수성을 나타냈으며, cefepime, chloramphenicol, cefotetan, gentamycin은 각각 91.5% 및 oxacillin(89.4%), tetracycline(87.2%)에 대해서도 높은 감수성을 관찰할 수 있었다. 항생제 내성은 ampicillin(91.5%), erythromycin(42.6%) 및 penicillin(95.7%)에서 매우 높게 나타났다. 2개 이상의 항생제 다제내성을 보인 균주는 총 44주였는데, 2제 다제내성 18주(40.9%), 3제 다제내성 15주(34.1%), 4제 다제내성 7주(15.9%), 5제와 6제 다제내성 각각 1주(4.5%)로 나타났다.

        One hundred isola tes of Staphylococcus aureus were obtained from feces samples of patients with food poisoning.         Despite to the reality that the outbreaks from food poisoning in Korea have been continuously increasing in the last two decades, it was very much neglected even in the public health field in Korea. Food poisoning outbreaks resulted in many cases not only in the damage of health but also in the death of many lives. However, this problem can be effectively solved by efforts through health education activities, but not solely by the legal measures. This study was carried out to provide information that can be used in planning health education programs and proposing new rules to prevent any possible outbreaks from food poisoning. The main problems contributing to food poisoning outbreaks in an institutional setting or school catering and at home were reviewed and analyzed through the epidemiological investigations and articles related to food poisoning in the last a decade (1991-2000). Accordingly, the data presented in this study are sufficient to show and prove the significant trends in food poisoning accidents in Korea. The major findings investigated in this study are as follows. The frequency of food poisoning accidents as well as the number of victims have continuously increased in Korea. The number of victims per food poisoning accident is also increased from 20 persons in 1990 to 69.8 persons in 2000. Therefore, we should realize that the group poisoning outbreaks occur more frequently and the size of group poisoning accidents is getting larger. Among four seasons, the food poisoning accidents occurred more frequently in the summer (May-September) until 1997. However, after 1997, the food poisoning accidents occurred evenly in three seasons except the winter. The most important bacteria that cause food poisoning in Korea were Salmonella spp., Vibrio spp. and Staphylococcus aureus. They occupied 85-90% of the rates of accidents and the number of victims. And, the major category of food causing outbreaks in Korea are meats, raw and undercooked sea foods and compound food as Kimbab and lunch box. Among meats, the most food poisoning accidents were caused by pork. The frequency of food poisoning accidents at individual households tends to decrease continuously. Whereas, the rates of accidents at the public restaurants and food service establishments are comparatively increasing. Therefore, we must improve the quality of the sanitation management in food service establishments through HACCP and post- administration of HACCP.

        The contamination levels of food poisoning bacteria was investigated from 350 samples of beef, 338 samples of pork, and 350 samples of chicken during the period from March 1996 to October 1998. The contamination levels of pathogenic organisms were higher in refrigerated meat than packed frozen meat and were relatively higher in chicken and packed meat than in beef. The highest level detected for each of the various pathogens was : less than 10,000 cfu/g for Staphylococcus aureus : less than 0.9 MPN/g for Salmonella and Literia monocytogenes: 7MPN/g for Campylobacter jejuni /coli. In the comparisions of cross- contamination ratio of tested meat for four species food poisoning bacteria 14.3% of beef, 23.5% of pork and 55.0% of chicken were contained only one species of pathogen, whereas 2.7 of beef, 5.6% of pork and 14.7% of chicken contained two species and 2.3% of pork contained a total of three species. Generally, pathogens was encounted higher isolation freguency in packed frozen chicken meat than in chilled chickens.

        The prevalence and serotype of food-borne pathogens was investigated from 888 samples of chilled meat, 222 samples of packed frozen meat and 117 samples of imported frozen meat during the period from March 1996 to October 1998. Isolation rates of pathogens associated with food poisoning were revealed in order of Staphyloccus aureus, Campylobacter jejuni/coli, Listeria monocytogenes and Salmonella spp, but Escherichia coli O157:H7 was not isolated in all of the meat samples. Amusingly, Cczmpylobacter jejuni/coli were isolated highly in refrigerated meat, but was not isolated in packed frozen meat. L. monocytogenes was encounted higher isolation frequency in packed frozen chicken meat than in refrigerated chicken meat. In the distribution of serotypes of isolates, most isolates of Sta. aureus classified as enterotoxin type C and D. All of the Salmonella spp. isolated from pork were diagnosed group A and most of isolates from chicken meat were grouped B and D. Most of L. monocytogenes isolated from chicken meat were grouped type 1 and a few number of isolates classified as type 4.

        The main problems contributing to food poisoning outbreaks in institutional settings and a home were reviewed and analyzed through the epidemiological investigations of food poisoning. The major documented factors included improper holding temperatures, inadequate cooking, poor personal hygiene, cross-contamination and contaminated equipment, food from unsafe sources, failure to follow food hygiene policies, and lack of education, training, monitoring and supervision. Usually more than one factor contributed to the development of an outbreak. (1) Use of improper holding temperatures was the single most important factor contributing to food poisoning. They included improper cooling, allowing a laps of time (12 hours or more) between preparing food and eating it, improper hot holding, and inadequate or improper thawing. Food thermometers were not used in most of the instances. (2) In inadequate cooking, the core temperature of food during and after cooking had not been measured, and routine monitoring was limited to recording the temperature of plated meals. Compared with conventional methods of cooking, microwave ovens did not protect against food poisoning as effectively. Centralized food preparation potentially increased the risk of food poisoning outbreaks. (3) Poor personal hygiene both at the individual level (improper handwashing and lack of proper hygienic practices) and at the institutional level (poor general sanitization) increased the risk of transmission. Person to person transmission of enteric pathogens through direct contact and via fomites has been noted in several instances. (4) Obtaining food from unsafe sources was a risk factor in outbreaks of food poisoning. Food risks were high when food was grown or harvested from contaminated areas. Possibilities included contamination in the field, in transport, at the retail site, or at the time it was prepared for serving. (5) Cross-contamination and inadequate cleaning/handling of equipment became potential vehicles of food poisoning. Failure to separate cooked food from raw food was also a risk factor. (6) Failure to follow food hygiene policies also provided opportunities for outbreaks of food poisoning. It included improper hygienic practices during food preparation, neglect of personnel policies (involvement of symptomatic workers in food preparation), poor results on routine inspections, and disregarding the results and recommendations of an inspection. (7) Lack of formal and in-service education, training, monitoring, and supervision of food handlers or supervisors were critical and perhaps neglected elements in occurrences of food poisoning.

        Retrospective study on the comparison of outbreaks of food poisoning for food hygiene in Korea and Japan. The average value of morbidity rate by year in Korea during the period of 1971 to 1992 was 2.9 per 100,000 population, and that of Japan was 29.1. The mean value of mortality rates in case of food poisoning by year in Korea was 2.33%, and that of Japan was 0.07%. When compared the rates of morbidity and mortality between Korea and Japan during the same period, the morbidity rates of Japan were much higher than those of Korea (p$lt;0.0l). However, mortality rate of patients in Korea were much higher then those of Japan (p$lt;0.01). Resulting from comparative observation of food poisoning by preparing facilities between Korea and Japan. The highest list the places where the outbreaks occurred was home-made foods accounted for 48.8% of the total cases in Korea and that of Japan was restaurants accounted for 33.0%. Causative foods in Korea, the most common incrimination vehicles were seafood, meat and animal products and grain and vegetables, including mushroom. However, in the case of the common incrimination vehicles Japan were unknown and other foods, seafood, vegetables and meat and animal products etc.. Food poisoning of pathogenic substance in Korea were 60.9% of bacterial food poisoning of the total cases showing that Vibrio species, Salmonella spp., Staphylococcus app., pathogenic E. coli, Clostridium app. and other app. were 33.3%, 26.2%, 16.3%, 5.3%, 0.4% and 18.5%, respectively. On the other hand, in Japan, major causes were Vibrio app. (45.7%), Staphylococcus app. (23.7%), Salmonella app. (16.8%), pathogenic E. coli (3.8%), Clostridium app. (0.2%) and other app. (9.6%).

        Background : Schisandrae Fructus (Omija) has been widely used for medicinal herbs because it is known for its various medical functions and antimicrobial activities. This study was conducted to investigate the antimicrobial activities of extracts from Schisandrae Fructus against six foodborne pathogens (Bacillus cereus, E. coli, Listeria monocytogenes, Salmonella enteritidis, Staphylococcus aureus, Vibrio parahaemolyticus) and figured out the efficient extraction methods. Methods and Results : Traditionally, Schisandrae Fructus is soaked or boiled in water when people drink it like tea. In this study, we extracted Schisandrae Fructus by soaking in water and ethyl alcohol for 24 hours, ultrasonicating in methyl alcohol and water for 60 minutes, and boiling in water for 30, 60, 90, 120 minutes. Each extract used for paper disc test that estimates antimicrobial activities by measuring the inhibition zone. The blank discs that absorbed with extracts were placed on the agar plates that smeared with each foodborne pathogen, then incubated overnight at 37℃ incubator. Then, antibacterial extracts formed clear zones around the disc. In this study, Vibrio parahaemolyticus was the most sensitive to the all kinds of extracts and methyl alcohol extracts that were obtained by ultrasonicating showed the most strong antimicrobial activities against six foodborne pathogens (23, 12, 29, 18, 23, 28 ㎜). Hot water extracts and soaking extracts in water showed the similar results, and the extracts that was boiled for 60 minutes was the best results (13, 8, 21, 10, 13, 17 ㎜) against all the pathogens. Conclusion : The extracts from Schisandrae Fructus inhibited the growth of six foodborne pathogens. Soaking and boiling in water are good methods for drinking Schisandrae Fructus like tea because they showed antimicrobial activities in the paper disc test. According to this study, the best boiling time for effective antimicrobial activity is 60 minutes.
