        In search for several fatty acid with unusual structure in vegetable oils, we have found that unknown peaks were shown on GLC in the analysis of fatty acids of the lipids from the pulp of ripened jujube (Zizypus jujuba var. inermis) fruits. These fatty acids were identified as a series of cis-monoenoic acids with Ω-5 double bond system such as C14:1Ω5, C16:1Ω5 and C18:1Ω5, including Ω-7 fatty acid as C16:1Ω7 and C18:1Ω7, by GLC, solid-phase extraction silver ion-column chromatographic, GLC-mass spectrometric and IR techniques. First of all, total fatty acid methyl esters were resolved into saturated and branched fatty acid, monoenoic acid, dienoic acid, and trienoic acid fraction, respectively, with 100% dichloromethane (DCM), DCM/acetone (9:1, v/v) 100% acetone, and acetone/ acetonitrile (97:3, v/v) solvent system. Unknown fatty acids were included in the monoenoic fraction and were confirmed to have cis-configuration by IR. Picolinyl esters of monoenoic fatty acids gave distinct molecular ion peak and dominant diagnostic peaks, for example, m/z 317, 220 and 260 fragment for cis-C14:1Ω5, m/z 345, m/z 248 and 288 fragment for cis-C16:1Ω5 and m/z 373, m/z 276 and 316 fragment for cis-C18:1Ω5. In this way the occurrence of cis-C16:1Ω7 and cis-C18:1Ω7 could be deduced from the appearance of prominent fragments as m/z 345, 220 and 260, and m/z 373, 248 and 280. Level of total Ω-5 fatty acids amounted to about 30% in the fatty acid composition with the predominance of C16:1Ω5 (18.7~25.0%), in the semi-ripened and/or ripened samples collected in September 14 (C16:1Ω5 ; 18.7%, C14:1Ω5 ; 3.6% and C18:1Ω5 ; 3.0%), September 22 (C16:1Ω5 ; 25.0%, C14:1Ω5 ; 1.4% and C18:1Ω5 ; 2.6%), and October 7 (C16:1Ω5 ; 24.7%, C14:1Ω5 ; 7.7% and C18:1Ω5 ; 2.5%). However, the lipids extracted from unripened jujube in July and August contain these unusual fatty acids as low as negligible. It could be observed that the level of Ω-5 fatty acids in the pulps increased sharply with an elapse of ripening time of jujube fruits. Other monoenoic fatty acids with Ω-7 series, C16:1Ω7 (palmitoleic acid) and C18:1Ω7 (cis-vaccenic acid) could be detected. And in the lipids of the kernel and leaf of jujube, none of Ω-5 fatty acids could be detected.

        활성슬러지 공정을 이용하여 Kraft 펄프공장에서 배출되는 유출수에 잔류하는 만성독성의 제거가능성을 평가하기 위하여 pilot plant를 운전하였다. 독성 이외에도 폐수내의 BOD, SS, resin과 fatty acids, 색도, 그리고 AOX와 같은 오염물질의 제거효과도 측정되었다. Pilot plant는 정상상태에서 약 10주 동안 운전되었으며 운전기간 동안의 평균 F/M 비율은 0.28, 그리고 sludge age는 8.4일로 계산되었다. 평균 MLSS 농도는 4,309mg/l이었으며 이중 휘발성 물질은 57%이었다. 운전기간 동안, BOD 제거계수(k)는 $30^{\circ}C$에서 8.2/일 이었으며 BOD 제거율은 full-scale 운전시보다 3~6% 정도 낮은 84%로 나타났다. 활성슬러지 유출수의 만성독성 시험은 Dinnel 방법과 BML 방법이 활용되었으며, 시험결과 pilot plant 활성슬러지 시스템에서도 효율적인 운전을 통하여 90% 이상의 독성제거가 가능함을 알 수 있었다. Pilot plant의 진 공정을 통해서 색도와 AOX의 제거는 매우 미미하였으나 resin과 fatty acids는 뛰어난 제거율을 나타내었다.

        Background : Tooth vitality is reflected by the health of dental pulp. Schisandrin C is a natural compound extracted from the fruit of Schisandra chinensis which has anti-inflammatory and anti-oxidant properties. The role of Schisandrin C on human dental pulp cells (HDPCs) has not been studied yet. This study examined the properties of Schisandrin C as an anti-inflammatory and anti-oxidant compound, and whether its characteristics promote mitochondrial biogenesis in HDPCs. Methods and Results : HDPCs were extracted from fresh third molars and cultured. Reactive oxidative stress (ROS) and nitric oxide (NO) formation were analyzed by a Muse cell analyzer. Western blotting and gelatin zymography were used to identify the presence of anti-oxidants, as well as inflammatory and mitochondrial biogenesis. Confocal microscopy was used for the detection of mitochondrial activity. Schisandrin C inhibited lipopolysaccharide (LPS)-stimulated inflammatory molecules; intracellular adhesion molecule-1 (ICAM-1), vascular cell adhesion molecule-1 (VCAM-1), matrix metalloproteinase-2 and -9 (MMP-2/9), NO production, ROS formation and the mitogen-activated protein (MAPK) pathway through minimizing the nuclear factor kappa B (NF-kB) translocation. Schisandrin C increased the expression of superoxide dismutase (SOD) enzymes as well as heme oxygenase-1 (HO-1) and peroxisome proliferator-activated receptor gamma coactivator 1-alpha (PGC-1a) through the phosphorylated-protein kinase B (p-AKT) and nuclear factor erythroid 2-related factor-2 (Nrf-2) pathways. The anti-inflammatory and anti-oxidant properties of Schisandrin C promoted mitochondrial biogenesis. Conclusions : These results suggest that Schisandrin C may be used as an anti-inflammatory compound to reduce oral inflammation such as pulpitis.

        미세과육 함유 사과주스의 비타민 C 첨가에 따른 저장 중의 품질변화를 조사하였다. 비타민 C 첨가 유무에 따라 저장 기간 동안 비타민 C 함량의 차이가 크게 나타났다. 비타민 C 첨가농도에 따른 당도와 산도의 차이는 크게 나타나지 않았으며, pH는 비타민 C 무첨가 구간 4.40에 비해 첨가구간에서 pH 4.30~4.29 수준으로 낮게 나타났다. 색상의 변화는 비타민 C 첨가량이 증가하고 저장기간이 길어질수록 L값과 b값이 감소하였으며, 관능평가

        사과주스의 열수 살균조건과 저장기간에 따른 이화학적 품질 특성을 조사하였다. 살균 조건에 따른 당도, 산도 및 pH는 차이가 나타나지 않았으며 색도는 살균처리구가 대조구에 비해 크게 감소하였으며 무첨가구의 색도 값이 비타민 C 첨가구(0.1%)에 비해 살균 전에 비하여 크게 감소하였다. 살균온도 에서 10분과 20분간 처리한 구에서만 일반세균과 곰팡이, 효모가 검출되었고 그 외의 처리구에서는 미생물이 검출되지 않았다. 비타민 C 함량은 살균시간

        본연구는 서양삼(西洋蔘)(Panax quinquefolium Linne) 과육(果肉)에 의한 Brassica(Brassica chinensis Linne) seed를 대상으로 발아(發芽) 억제작용을 검토하였다. 서양삼과즙(果汁)에는 발아(發芽)억제물질이 존재하고. 그 억제작용은 희석도에따라 감소하였다. 즉 희석배수가 0, 1, 2, 5, 10, 20, 50, 100일때 배근(胚根)의 길이는 각각 0, 0.32, 0.72, 3.13, 483, 16.07, 16.73, 23.50 mm이였다(CK=25.98 mm). 과육의 존재는 종배(種胚)의 성장을 현저하게 억제하였다. 수확(收穫)후 과육이 종자 표면에 부착한 시간이 0, 15, 30, 60일 때 종자 생장에 대한 억제 시간은 각각 30, 75, 135, 135일로 나타났다. 종자 썩는 비율도 높아졌다. 과육의 부착한 시간이 0, 15, 30, 60, 270일 때 종자 썩는 비율은 각각 5.47, 5.71, 19.05, 27.14, 33.33%로 나타났다. 이러한 결과는 과육에 서양삼종자휴면(西洋蔘種子休眠)을 일으키는 주요한 억제성분이 함유되어 있다는 것 을 시사하였다.

        This study was carried out for the purpose of improving the persimmon vinegar. Crushed persimmon(persimmon pulp) was used at alcohol fermentation using Saccharomyces bayanus for persimmon alcohol medium preparation. Glucose(8.39%) and fructose(7.96%) were the dominant free sugar in persimmon pulp before the at cohol fermentation. They decreased abruptly during alcohol fermentation and glucose was consumed more rapidly than fructose. Final alcohol concentration was finally reached to 8%(v/v) in 5 days for mentation of persimmon pulp. Pectinase pre-treatment of persimmon pulp resulted in tusker contents of galacturonic acid, galactose, methyl alcohol and isoamyl alcohol in main mash for alcohol fermentation than those in main mash prepared without pectinase pre-treatment. After alcohol fermentation tannin concentration was 350ppm and astringency was not perceived.
